This fiscal year has inaudibly moved
past the midpoint. Our BYC just keeps
on chugging successfully along – only
occasionally muttering, ‘I think I can, I
think I can’. I, and likely some of you, need
something to look forward to. Switching
metaphors, like that tenacious old mule
perpetually chasing a carrot, we like to
anticipate something desirable just over the
horizon. With this in mind, I’ve e-mailed
2015 ([email protected]) and posed the
question: “Hey 2015! What have you got in
store for us this year?” Much to my surprise I
got a response, all-be-it, it did land in my junk
mail box.
“Hi Mike” wrote 2015. “Please understand
that I have only been on the job for a month
now. Here is what I am thinking for the
BYC. 2014 told me there are some really
cool annual events like the Crosthwait
Tournament, Annual Kick Off Regatta and
the Big Bang so let’s do those again. All of
my ancestors said that you have terrific
committees with talented volunteers
who consistently come up with fun and
interesting activities. So I am relying on
them to keep providing exceptionally good
stuff for you. 2014 procured several new
staff members who are in full swing and
full of vim and vigor. They will provide
outstanding culinary treats and first class
service to your membership, so I have
no work to do there. Here is what I am
bringing to the party. First is the grandest,
not to mention most expensive, addition
to your Club’s amenity infrastructure that
anyone has seen in years. 2014 made some
commitments and set expectations that
I must somehow fulfill. 2014 said that if
you build it they will come. I have a team
working on this ambitious endeavor and
so you should see a big celebration out by
the pool sometime mid-year. A second
colossal thing that I am hoping to motivate
thru its metamorphosis is a move by the
Pram Fleet. They want to abandon their
old tired shed and move into a new Sailing
Center that will reside on land generously
loaned by your membership. This center

will not only provide continued education
for youth, but will offer adult small boating
activities that are not currently available at
your Club. I hope this gives you and your
friends something to look forward to Mike.
It certainly sounds like your group has a
very good thing going down there on Snead
Island. Now please do not bother me further
as I have a few billion other people to look

Yes, I know – WOW! Had I any idea there
would be a response to my e-mail, I would
have asked about the stock market this year
and where the big Tarpon would be running.
Please accept my belated thanks to the
many basin residents who lit up their boats
for the holidays. Your individual contribution
was noted by many. No ‘at-a-boys necessary
for the many who worked tirelessly donating
their time making the Club holidays special,
because they seemed to be having the most
fun. I very sincerely hope all of you who
attended the annual Commodores Gala had
a fantastic evening. Watch your e-mail for
activities not posted on the calendar so that
you don’t miss a single thing.

I want to thank everyone for coming out to the Meet the Chef night as well
as participating in the Italian buffet. It was a pleasure to formally meet my
“customers”! One question that seems to recur during my career and was asked
several times at “meet the chef” is, “what do you really like to cook” or “what is your
specialty?” My answer is always the same and is simply that – “I Just love to cook.”
Which is always followed up by, “no really, what do you like to cook the most?”
My honest answer is still the same- I am a chef because I love to cook- I have no
specialty to really speak of, other than an affinity for really good food and its proper
preparation and, of course, the consumption of great food.
We also had a great time at the Commodore’s Gala with my rendition of a
Caribbean themed menu. Coming up we have the Valentine’s Day Dinner, which
should be a great evening. I look forward to cooking for you in your Club very soon
and as always, if there is ever anything I can do or make for you, just let me know
For your special Valentine, try my favorite chocolate truffle recipe, very simple
to make. These European-style hand-dipped and rolled chocolates are superb and
make great gifts! Enjoy your day – Chef Brian
CHOCOLATE TRUFFLES
(32 Truffles using a #70 scoop)
½ cup heavy cream
1 lb. semi-sweet dark chocolate, chopped
4 tbsp. unsalted butter, softened at room
temperature
2 tbsp. liqueur of choice (Grand Marnier,
Chambord, Frangelico, etc.)
Chopped nuts, chocolate sprinkles, cocoa,
specialty sugars, etc. to roll the truffles in
Melted dark coating chocolate to dip some
of the truffles in
Melted white chocolate in a pastry bag
fitted with a fine point to decorate the
dipped truffles
Pour heavy cream in a heavy saucepan. Cook over
medium-high heat just until it comes to a boil. Add chopped
chocolate, reduce heat to low, and stir in until melted. When
chocolate is melted, remove from heat, add the butter and
continue to mix until you have a thick cream chocolate sauce.
Mix in the liqueur of choice and pour chocolate ganache
onto a plain sheet pan (avoid non-stick pans) and refrigerate
10-15 minutes or until firm.
After the ganache is set, scoop into truffles onto a pan
lined with parchment paper, scraping with a small sorbet
scoop (numbers 40, 60, 70, or 100, depending on desired
size), leveling the scoop on the lip of the pan, and refrigerate
5-10 minutes before continuing the process. Dip in melted
chocolate (decorate with the white chocolate after the dark
chocolate sets) or roll in various toppings and refrigerate
again before boxing or serving.

be made 48 hours prior to function or account will be
charged. Meals may be picked up in lieu of attending,
if Club has not been notified prior to 48 hours. This
applies to all BYC events and special functions

Around Your Club
Our season is upon us, and reservations are the number one way
members can help assure they have a greater experience at the
BYC! Please make them as far in advance as you can, so that we can
adequately purchase, prepare and staff for events. In an effort to
provide great service to all parties, reservations for ala Carte dining
for parties of 16 or more will be provided a limited menu to choose
from. As our kitchen prepares our foods ‘ala Minute’, we are not
designed to easily accommodate parties of this size from our whole
ala Carte menu. If you frequent other FCYC Clubs, you will notice
that our dinner menu is more extensive than most, this helps assure
we can serve all in a timely manner.
The first 7 months of our fiscal year have been great. Our
member count is up…welcome all new members and welcome back
to our returning Club members! Our comment cards relating to
food, beverage and service are coming in very favorably. I hear
many positive comments, and as members return home to BYC
from other clubs, the comments of being glad to be back at your
FEBRUARY 2015
home Club are overwhelming. We are so happy that you, the
members are enjoying our Club! Momentum builds, so look for
more fun and exciting things to do heading your way. Especially
now that our busy Social Season has finally gotten underway!
Please be aware, that as we plan and print our Calendars 2
months in advance, sometimes things change. We really try not
to cancel events, or change them in anyway once they are printed,
but on rare occasions we have no choice. We do not build much
leeway into prices for events to accommodate for market change.
But, change the market does….We do not feel printing “Market
Price” on events is reasonable, so unfortunately we must adjust a
price here or there to protect the Club. We apologize in advance,
but please consider that as we post 2 months of Calendars in the
newsletter, the coming month is there so you can plan in advance.
Please understand that we may need to adjust a price, or change/
cancel an event if necessary.

Thank you again to the many that volunteered their time to decorate and undecorate the Club for
Christmas. Many clubs pay professionals for this daunting task, but all of our volunteers helped save
the Club lots of money.
Seasonal winners include Anita Stein for the “Ugliest Christmas Sweater” and the Great Mates for
the “Best Decorated Tree. Bob Finck won the Entertainment Committee “Basket of Cheer” drawing.
The basket was put together by volunteer donations and the sales raised almost $1000 dollars for
new decorations and committee events. Congratulations to you all!
Enough about the past…here is what the future holds. On February 14th we celebrate Valentine’s
Day with class at BYC! Enjoy a beautiful evening with your sweetie and a first class dinner
accompanied by romantic harp music. The benefits of membership become clear on such events,
since as members we don’t have to fight for reservations at a restaurant and not know the level of
service we will receive in the public arena. This is a night not to be missed. Last year, our harpist
even got engaged at our Club Valentine’s evening! You never know what might happen at BYC!
February 28th we bring the sights and sounds of Mardi Gras to the Club. This New Orleans-style
event is sure to be a hit. The Porchdogs will be playing and they will rock the Club with their special
sound and the dance floor will be the place to be! Seafood gumbo, Jambalaya, and all the flavors
of New Orleans will be savored at this party. (Decorating will begin at 12 noon Saturday and all
volunteers are welcome to help decorate!).
March 14th we bring back the ever-popular Country Western Night. The Gamble Creek Band will
be cranking out Country, Western, and Southern Fried Rock featuring Kim Betts. We plan to offer
“line dancing” lessons and rumor is there will be a mechanical bull just waiting to try and toss you!
So you might want to start practicing your bull riding skills now!!
By member interest, one of our biggest nights will be our April 18th event featuring the Journey
cover band “Don’t Stop Believing”. The dance floor is sure to be rockin’ with some “lovin’, touchin’,
and squeezin’ “. Seating is limited to the first 200 so we can ensure room for a dance floor. This will
be an epic event much like the “Eagles” so be sure to reserve your spot!
As always, for all events get your reservations in early! It helps the Club plan and it assures you a
place at our ever growing and highly attended events!!!
Future events under discussion are as follows (as suggested by members) including, but not
limited to, a sock hop type event, quality murder mystery, casino night, lip synch/karaoke/ talent
show, and many more! Your ideas and suggestions are invaluable to us and as a committee, we will
consider this list seriously as we want to provide you, the backbone and members of BYC, events that
you find fun and entertaining.
A sneak peak at the second half of this new year’s calendar include an outdoor “Island Fusion”
party, the Long Run Part 2 (Eagles), a Motown event and surprises yet to be announced! Get ready,
as this is going to be a fun-filled 2015 at BYC!
In addition, have you ever thought of joining the Entertainment Committee? Do you have creative
ideas? Like decorating? Want to be more involved with your Club and meet fun, interesting people
like those of us on the committee? We meet the first Tuesday of the month at 6:30pm and would
welcome you joining us...even if it’s just for one meeting to see if it’s a fit for you! – Troy

FEBRUARY 2015
The first half of the fiscal year exceeded expectations.
We have reached the “Break Even Point” on Operating
Income months ahead of usual. We had budgeted for a
loss of $-33,671 and had $-21,557 loss at this time last year
(see chart). This is largely due to increased dues revenue
attributable to a great job of member retention and
recruitment plus good operating results for December.
Member spending and participation are good. While
the percentage of members using the Club is slightly
down, with membership up there are about 400 members
actively using the Club (about the same as last year).
Monthly spending averaged $122 per membership per
month on food and drink.
Our total capital funds have reached $ 966,236 at
12/31/14 an increase of 13.8% from this point last year.
In Summary, your Club has positive income and
more than adequate financial reserves. Thanks to all
the members for supporting the Club and the Staff for
operating it so well. – Jack

Sportfishing Fleet
Pat Bustle
An exciting event is coming on February 26th at 6:30 p.m. to the BYC,
the Sportfishing Fleet will be hosting Bubba Blackwell & Lisa Rollins
who were involved in and starred in the TV show “Catching Hell” on
the Weather Channel. If you’re not familiar with the show, it featured
commercial spearfishermen here on the Gulf Coast. In addition, Bubba
owns a custom spearfishing gun company. This will be a great event
and opportunity at our Club to learn about spearfishing. Bubba and
Lisa free dive and scuba dive spearfish and will speak
on these aspects of spearfishing, both recreationally
and commercially. The evening will be filled with great
conversation and stories and I encourage all to attend.

Great Mates
The elegant evening in Paris with the Great Mates is coming up this
month on Saturday, February 21st at 6 p.m. in the evening. This is
the first Community Outreach event for the Great Mates since Rock
the Kasbah in March of 2012. We are excited at the return of this one
event of the year thanks to Community Outreach Chair Keri Hockett.
Everyone who attended these events in the past had a great time as
the Great Mates can throw one heck of a great party! We hope you
will don your elegant cocktail fashions, come and enjoy some fine
French cuisine, and dance your heart away at the upcoming Gala.
Please help us make it a success. We will have silent auctions and
table sponsorships available to help raise funds for our Scholarship
Program and other community events. Remember the Great Mates
is a 501c3 organization so any donations made are tax deductible and
receipts are provided. Please reach out to Keri if you can help with
the silent auction, decorating or even setting up the day of the event.

We really enjoyed hearing Nigel Mould teach us about the Mote
Marine Laboratory Dolphin Program. It is truly a privilege to have
a resource such as Mote Marine in our community. In March we
are going to meet at the Sarasota Polo Club on Sunday, March 29th.
The charge is $25 per person and food is included! Thanks to Keri
and Steve Hockett for a generous shrimp boil along with other sides
provided by the Great Mates. Please BYOB or other drinks. The
Appalachian Trail speaker we had planned for February is now going
to speak in April. Since we have the upcoming Gala, we decided to
cancel the regular February meeting and move Steve Adams and his
stories of his hikes to the April 16th meeting. We hope to see you as a
visitor or as a member at an upcoming Great Mates event or meeting.
All are welcome!! Remember…membership is a dollar,

Sail Fleet
Racing - The racing fleet’s fall results are final. We had eight
boats participate in our Fall Series, which ended in December. First
place spinnaker honors go to the j24 Blackstar owned by Franklin
Yanamoto followed by Tom Grubb’s Silver Streak in second place and
Harumph skippered by John Hargreaves in third place. In the non
spinnaker class Flyer owned by Ron Ciamaga led Special K skippered
by Bob Klement for the series.
This year’s New Years Day Red Eye Regatta was won by Black Star
and once again followed by Silver Streak in second place. – John
Cruising - Did you get an opportunity to enjoy
the Christmas lights on the boats in the basin?
This time there were more boats with lights than in
previous years, including ours.
Over the weekend of January 16 through 18,
David Laber and Leslie Ripp led a group of more
than a dozen sailboats to Pasadena Yacht and
Country Club. Next month I will provide the list of

the event. The February cruise is to Sarasota Yacht Club and it will be
led by Carl and Barbara Bretko. More opportunities for shopping at St.
Armand’s Circle for the ladies and for the men to treat their Valentines!
Next month Joe and Casey McClash will lead us to a mystery location.
For the past several years they led the March cruise to Tampa Yacht and
Country Club. This year the docks there are being rebuilt so we cannot
continue the tradition, at least this year.
Jack Gorman has organized a “Sailors Without Boats Cruise” on
January 31. It is designed to allow any member to spend a little time
on a sailboat to see if they like it. It follows the New Member Brunch in
the morning.
If you have not attended one of the monthly Sail Cruise Fleet
dinner meetings, you may want to give it a try. We meet on the first
Wednesday of each month at 6:30 pm, usually in the Commodore’s
Room. Last month we had over 40 people there. There was lots of
conversation and connecting. As mentioned before, you do not need
to sail or even have any boat, as all are welcome. Frequently we have
a program of general interest such as cruises taken by one of the
members. If you do have a boat and would like to join in the fun we
have on our cruises, come to a meeting and learn more about it. If you

It’s about time we had a cruise to one of our
FCYC brothers, so this month we are going to the
Venice Yacht Club on February 20 - 21st. VYC
has an outgoing cruise that same weekend so they
can accommodate six of us. This will be a limited
cruise so “first come, first served” will be the order
of the day. If you would like to participate, please
let me know a.s.a.p. by email (rciamaga@hotmail.
com) and give me the following information which
is needed by the VYC dock master: Boat name,
beam, draft, your name and your mate’s name,
and your BYC member number (for charges at the
club).
The theme for this cruise will be single malt
scotch tasting. I’ll bring several of my favorites and
we’ll enjoy them on “Gracia”...cigars are optional.
For the ladies, there will be wine on another boat
– unless, of course, you have a cigar chomping,
whiskey swigging mate in which case she is invited.
On another note, have any of you tried
using a product called “Barnacle Buster”? A
company, Seaflush, advertises a device that
fits onto the top of sea strainers that accepts
the Barnacle Buster solution. The procedure
is to close the sea cock, remove the cover
of the strainer, and attach this device. One
then pours the solution in while the engine,
generator, or AC is running to fill the cooling
water lines. Shut off the engine, generator,
or AC and let the solution soak for an hour or
so. Restore the strainer to normal and turn
on the engine, etc., to flush out the barnacles.
It looks good on their website demo film and
I wonder if any of you have tried this. If so,
let me know what your experience has been
as I would like to share that with our fleet

Dock Talk
Ken has shared with all of us the Club’s Survey results, and we stand ready to
serve you and address your areas of concern. Along with our “Dock” duties, we
(Jeff, Sebastian, and I) are also the whole maintenance team at the Club. Please
know there are always 2 of us scheduled every day, so that we can handle the
maintenance needs and fuel ups, pump outs and assist in docking. We try to limit
our maintenance duties on the weekend as we understand that the traffic on the
water is heavier then. Even if you don’t see one of us, we are here. Please use your
radio and/or cell phone to hail us.
We have recently replaced some older deck boards on the far side of the basin;
we plan to put some stain down to help the aesthetics there. I am working on
getting the BYC skiff running again, and we are purchasing a work float for
maintenance and member use. If you have needs or concerns with your basin slip,
docks, or finger pier, please let Ken know at Clubmanager@bradenton-yacht-club.
org, and if it is something we are responsible for, he will get it on our schedule.

In Memory of
Maxwell Erik Grablin
Last month, the BYC family lost Maxwell Grablin, a
wonderful boy with a beautiful soul – the son of Karin &
Patrick Grablin. Our hearts were shattered with the news
of his tragic accident. Max grew up at BYC: from his first
Thanksgiving as an infant, to dancing on the dance floor
as a toddler, to celebrating his 4th birthday with a party at
the BYC pool, to always making a beeline for the popcorn
machine as a young boy, Max felt at home at BYC and we
regarded him as one of our own. A more recent visit to
the Club by this 12-year old blue-eyed blonde entertained
several of us as we watched him intently trying to get a
photo of a pelican resting in our basin. His zest for life and
caring heart were – and should be – an inspiration to us
all.

Greetings to all! Happy February! The weeks are flying by in my world! I
have been very busy in the New Year and have lots of new business coming
our way. As an event planner, time goes by faster than normal because I am
booking business sometimes a year out. I have booked our first wedding for
March of 2016! Most of the wedding inquiries coming in now are for 2016.
Rest assured, I am eager to book events for you all as well! February is a great
time to renew vows, or just show the love of your life how much you care. Call

I will be attending at least one Bridal Show in March. As time permits, I also
am planning on getting plenty of photos on our website of events that have
taken place at the Club recently to Showcase BYC. I am also getting active with
the Chamber of Commerce. The Chamber events that I have attended have
been interesting and informative, and I am making new contacts daily!
