leeks, white part only, small-diced
low sodium chicken stock
heavy cream
salt
ground white pepper

preparation
1.Heat small stock pot over medium heat. Add butter and leeks.
Cook about 5 minutes, or until leeks are translucent.
2.Add chicken stock, mashed potatoes and heavy cream to pot.
Stir to combine.
3.Simmer soup 8-10 minutes. Season with salt and white pepper.
Remove pan from heat.
4.Pour soup into blender. Purée on high until smooth. Serve warm,
or reserve in refrigerator to serve cold later.

bacon, cooked, diced, divided
white cheddar cheese, finely shredded, divided
green onions, finely chopped, divided

1.Preheat oven to 325˚F.
2.In medium bowl, combine egg yolks and heavy cream. Whisk to combine.
Add mashed potatoes. Mix well.
3.Grease six 5-oz. ramekins. Sprinkle 2 tsp. bacon in bottom of each ramekin.
Top bacon pieces with 1 tsp. cheese and 1 1 ⁄2 tsp. green onions.
4.Pour potato custard mixture into ramekins, leaving 1⁄2 inch from top on each.
5.Place ramekins in pan of water and place in oven. Bake in water bath
34-36 minutes, or until just set. Remove from oven. Let rest 20-30 minutes.
6.Before serving, spread 2 Tbs. cheese evenly over top of each ramekin.
7.Place under broiler and cook 2-3 minutes, or until tops are browned.
Remove from broiler.
8.Garnish with 1 ⁄2 tsp. green onions and 1 tsp. bacon and serve immediately.

1.In medium bowl, combine crabmeat, liquid eggs, mayonnaise, lemon juice,
Worcestershire sauce, Old Bay® seasoning, dill and bread crumbs. Mix well.
2.Form mixture into 14 balls of about 1-oz. size. Place on sheet pan. Chill at
least 1 hour, but no more than 1 day.
3.Coat chilled balls in hash brown potatoes. Make sure potatoes stick
to ball and cover completely. Wrap each ball tightly in plastic wrap.
Chill at least 20 minutes.
4.Preheat deep fryer to 350˚F.
5.Place chilled potato-crusted balls in deep fryer. Cook 2-4 minutes,
or until golden brown. Remove from fryer. Drain and serve immediately.

Let chill at least 10 minutes.
4.Heat medium sauté pan over medium heat. Add potato cake. Sear about
3-4 minutes per side, or until golden brown. Remove from pan.
5.Place cake in deep fryer. Cook about 2-3 minutes, or until golden brown.
Remove from fryer. Drain and serve immediately.

3.Pour oil into small saucepan. Add chili flakes and garlic. Heat over low heat

4.Brush potato wedges with chili garlic oil and place wedges on grill.
Grill potatoes enough to mark all cut sides.
5.Remove from grill. Transfer wedges to sheet pan. Place in oven.

foil and finish on grill. Heat about 15 minutes, or until potatoes are tender.
