makes 8 Take this versatile crȇpe recipe in a sweet or savoury direction, depending on what you fancy. 3 large free-range eggs 50gwholewheatflour 75gplainflour(youcanusejustonetypeofflourifyou’drather) 250ml milk 1pinchofseasalt olive oil To prepare your batter • Placealltheingredients,exceptfortheoil,inablenderandblitzuntilsmooth,thenpourintoabowl • Leavetoonesidefor15minutes To cook your crȇpes • Placealargenon-stickfryingpanonamediumheat • Addasmalldrizzleofoilandtiltthepanaroundsotheoilcoatsthesurface • After1minute,pourin1ladleofthebatter • Liftthepanoffoftheheatandtiltitsothatthebatterspreadsalloverthebase • Placethepanbackontheheatfor1to2minutes,oruntilitstartstocomeawayfromthesidesandyoucan removeiteasilyfromthepan • Oncegoldenunderneath,flipthecrȇpeoverandcookfor1furtherminuteuntilcookedthrough • Servestraightawaywithyourfavouritetopping Choose one of the following directions to take your crȇpes For a sweet filling (serves8) optional:25gnuts,suchaswalnuts,pistachios,almonds 250gfat-freeGreekyoghurt 3tablespoonsrunnyhoney,plusextratoserve ½teaspoongroundcinnamon 4ripebananas 300gblueberries JAMIESHOMECOOKINGSKILLS.COM Recipe © Jamie Oliver. Photography © JOEL, Dan Jones To top and serve your sweet crȇpes • Chop the nuts, so they are a mixture of coarse and fine (if using) • Mix the yoghurt with the honey and cinnamon • Peel and slice the bananas and mix with the blueberries • Each time a pancake is ready, spoon in some of the chopped fruit and fold the pancake in half, then in half again • Top with a spoonful of yoghurt and a drizzle of honey • Sprinkle over the chopped nuts (if using) and serve immediately For a savoury filling (serves 8) olive oil 150g baby spinach 8 rashers of higher-welfare smoked pancetta or streaky bacon 16 ripe cherry tomatoes or 4 regular tomatoes 1 lemon 160g mature Cheddar or feta cheese sea salt and freshly ground black pepper To top and serve your savoury crȇpes • Finely slice the pancetta or bacon • Halve the cherry tomatoes or roughly chop the regular tomatoes • Roughly chop the spinach • Coarsely grate the Cheddar or crumble the feta • Place a large non-stick frying pan on a medium heat • Drizzle in a little oil and add the pancetta or bacon • Cook for 4 to 5 minutes until golden and crisp • Add the cherry tomatoes and chopped spinach • Cook for a further 3 to 4 minutes until everything has cooked down • Squeeze in the lemon juice, then remove from the heat • Each time a pancake is ready, sprinkle over some of the cheese and leave to melt for a few minutes • Spoon in some of the spinach mixture and fold the pancake in half, then in half again • Serve immediately JAMIESHOMECOOKINGSKILLS.COM Recipe © Jamie Oliver.
