THIS MONTH’S FEATURED RECEIPE - Tasty Stuffed Tomatoes
Ingredients














8 medium sized tomatoes
Olive oil
2 shallots, finely sliced
1 clove garlic, crushed
450gr minced lamb
2tsp ground cumin
1 tsp ground coriander seeds
1/4 tsp chili flakes
1 tsp crushed or ground sumac
Large handful baby spinach leaves
50gr toasted pine nuts
2 tbsp. chopped fresh coriander
2tbsp chopped fresh mint
Juice of 1 lemon

Directions
Preheat oven to 180C, slice off the top of the tomatoes and reserve to make a lid. Scoop out the center of
the tomatoes with a teaspoon, reserve the flesh.
Heat about 2 tablespoons olive oil in a large frying pan and add the shallots and garlic and cook over low
heat until tender. Increase the heat to medium then add the reserved tomato and spices and cook for a minute. Add the lamb and cook, stirring occasionally for about 8-10 minutes, or until starting to brown.
Break up any lumps with a fork, drain off fat.
Add the spinach and pine nuts and continue to cook for 2 minutes, or until the spinach has wilted. Add the
herbs and lemon juice and season to taste with salt and pepper. Set aside to cool.

Divide the mixture between the tomatoes and transfer the tomatoes to an oiled roasting dish. They should
sit closely but not touching. Bake in oven for 15 minutes, then add the lids and cook for 5 more minutes.
