Scoop out the center of the tomatoes with a teaspoon, reserve the flesh. Heat about 2 tablespoons olive oil in a large frying pan and add the shallots and garlic and cook over low heat until tender. Increase the heat to medium then add the reserved tomato and spices and cook for a minute. Add the lamb and cook, stirring occasionally for about 8-10 minutes, or until starting to brown. Break up any lumps with a fork, drain off fat. Add the spinach and pine nuts and continue to cook for 2 minutes, or until the spinach has wilted. Add the herbs and lemon juice and season to taste with salt and pepper. Set aside to cool.
