Saag Aloo
There's nothing like a homemade curry on a chilly night; and a nice warming
bowful of saag aloo on the side (spinach and potaotes). Just like curries, you
can make this as spicy or smooth-tasting as you like; this version is flavourful
rather than hot, so if you like chillies than add some more for heat. This recipe
works equally well with either 'true' spinach, perpetual spinach (also known as
leaf beet), or chard: if using leaf beet or chard, chop the stems up finely, and
add a miniute or two to the cooking time.
Serves 4 as a side dish
500g potatoes, peeled
200g spinach or leaf beet, washed & torn
2 tbsp sunflower oil
1 small onion, finely chopped
2 garlic cloves, peeled & sliced
chilli, deseeded & finely sliced
½ tsp each mustard seeds & cumin seeds
½ tsp each turmeric & minced ginger
½ tsp each sea salt & black pepper

Cut the potatoes into smallish pieces 2-3cm long (the smaller they are the quicker they'll
cook). Heat the oil in a pan and add the seeds; when the mustard begins to pop, add
the onions, garlic, chilli and spices. Cook over a medium heat for a couple of minutes,
then add the potatoes, salt and pepper. Stir well, add a splash of water, cover and cook
for 10 minutes or until almost tender. Stir in the spinach and cook for another minute with
the lid on. Serve with your favourite curry, rice or naan bread and chutneys (all available
in the Farm Shop).
