is time of year at the winery is busy in a different way. harvest is done, pruning is
happening, but more importantly pairings are happening. What do we mean?
WineS: Our winemaker Etienne is coming up with some outstanding wine blends.
For example, he paired/blended Grenache wine with Syrah to come up with an outstanding
Grenache/Syrah (to be released in a year). he is also
working on some other amazing reds including a red
made exclusively for our Wine Club.
FooD: Chef Clay has created a new winter menu
for the Creekside Grille, beautifully paired with Wilson
Creek wines. Stop by and taste his new creations with
some of your favorite wines. Additionally, we just had a
fun and interactive “Wine and Food Pairing 101” class
for members. We ate, drank, paired… then ate and
drank and paired some more.
valentineS: We have created a wonderful
four-course dinner paired with select wines. e dinner
will be in our barrel room, so the ambience will be
romantic and memorable. is evening in our
restaurant will have very limited seating and will
fill up quickly.
WeDDinGS: it is the time of year for wedding
preparation wedding and bookings. We are busy
working with brides - showing them the beautiful
grounds and great wedding packages. We are amazed at
how many brides are checking out the winery and
choosing Wilson Creek to host their wedding.

couPleS: We are noticing a lot of couples simply
enjoying the grounds, restaurant, and wines. Maybe it’s
the time of year, or the weather, or that people are
staying closer to home when they travel. it is fun
to see so many couples enjoying a romantic day in
Southern California Wine Country.

“
ese are two very
important words that
are absolutely critical in a
successful marital relationship.
Our Father Gerry Wilson gave us that advice many
years ago. We have passed that same advice on to every
wedding couple we meet. e “yes dear chardonnay”
was created with those very words. My wife Jenifer is a
huge Chardonnay fan! She enjoys the big, buttery, oaky
Chardonnays that are very expensive and take a long
time to make. i went to the Winemaking Team with a
clear goal: how can we make a Chardonnay Jenifer likes?
We set out on a mission three years ago. We broke down
her favorite wines scientifically. en we went to the
tasting profile and found our wines to be very nice but didn’t have the bolder
components that her favorites possessed. Our hero and winemaker Etienne calmly and
assuredly indicated to us that we have the grapes, and we have the capability, but if we
wanted to achieve Jenifer’s wine profile we would to have to work a little harder and
spend a little more money. As any good husband knows, price is no object in making a
wife happy! We had to pick the grapes at the correct time and hand sort the clusters to
eliminate the weak ones. We spent money on new Oak Barrels and actually fermented
in those barrels. We cellared and aged the wine in both new and one year-old oak barrels for an additional nine months over our regular Chardonnay. A year later we all
agreed that after all the extra work we should name it “yes dear” and dedicate it to all the husbands in the world who know what it takes to make a
good wife happy. Remember; “happy Wife, happy life!”. So finally the grand moment was upon us. We ceremoniously
presented Jenifer with her first glass. She smelled it, she tasted it, and she spoke one word; “Perfect”. i was the happiest man on this planet. To the
Winemaking Team: from the bottom of my heart, i thank you. For our “extended family” Wine Club members, please enjoy this big, bold
Chardonnay, and as you do, remember the true blood, sweat, and tears that went into your bottle! And more importantly, give your own spouse a big

To a sold out crowd, “this new Year’s Eve
was the most memorable party of the year!” proclaims Rosie
Wilson. Dressed as a festive Court Jester and as the Mardi Gras king, Rosie
and Gerry brought in the new Year with flare! Guests were adorned with
colorful feather masks and danced the night away to Audiocast.

haiti reScue effortS Wilson Creek partners to send medical supplies to Haiti

gathered up medical supplies for future missions to haiti.

Rutabaga
Bring salted water to a boil, and cook rutabaga to
medium firmness. Remove from water and reserve at
room temperature. in the same pot heat apple juice,
honey, cinnamon, and cayenne. Add rutabaga,and cook
over medium heat to a syrupy consistency. e rutabagas
should be soft but not mushy. if the glaze reduces too
quickly, add water.
Escarole
heat butter until slightly melted, then add garlic. Before
garlic browns, add escarole, toss to coat, and season lightly
with salt. Cook approximately 20 minutes over medium
low heat, adding a little water if pan gets dry. Add lemon
and adjust salt. Optional though recommended, add a
little crushed red chili pepper.

heat skillet to medium heat. Season trout with salt and
pepper, then dredge in cornmeal, shaking off excess; it is
not necessary to coat the skin. Add 2T butter, sauté until
golden brown beginning with flesh side down. Turn,
cooking through, total cooking time is approximately 7
minutes. Repeat with other fillet.

Wilson Creek Winery Family. I have been an extended wine member for about four years.
e Almond Champagne is our family favorite. We have introduced this to all our friends
and family, and it has become a big hit at all our events, even at Sand Drag Races. is
year we ordered two cases of the Almond Champagne with our custom labels. Shout out
to Sarah Utley for taking care of that for us. Awesome! Wanted to share with you that
Almond Champagne does go with anything.... Even making the
traditional family tamales at Christmas time. My daughter Jamie
Myers and myself, along with my husband Jim and my mother
in-law, were enjoying the "taste". A great big THANK YOU to
Gerry, Rosie, Bill and "staff".

e 2008 “Yes Dear” Chardonnay has a medium straw color.
it has floral orange blossom and bright fruit aromas that are
enhanced by a touch of vanilla and toasty oak. e wine has
a ripe, rich fullness and broad smooth texture in the mouth
with ripe fruit flavors and layers of creamy vanilla and sweet
oak that linger in the finish.
