Emerald, derived from the word
smaragdus, meaning green in
Greek
A cousin of the aquamarine,
the emerald has always been
a mysterious stone. In ancient
civilizations, the emerald has been
linked to fertility and the Earth
Goddess. It was reputed to be
sacred to the Goddess Venus
and women in labor often wore
emeralds to ease the pain.
The emerald, a symbol of rebirth,
is believed to grant the owner
foresight, good fortune, and youth.
Emeralds in their natural state are
deep green and almost always
have visible inclusions. It is
surprisingly common for emeralds
to contain flaws and veins of
chemicals called inclusions. These
little imperfections are an accepted
feature of the stone. A natural
emerald without flaws is very rare
and of course, expensive!
The stone is fragile and needs to
be maintained with great care.
Emeralds are found in Colombia,
Brazil, Africa, Russia, Pakistan and
Zambia.

is chrysoprase, an bright applegreen variety of chalcedony
(cryptocrystalline quartz), often
called Australian Jade.

Strawberry Jam-Filled
French Toast
Dont forget to make Mom breakfast!
1/4 cup fat-free cream cheese (from 8-ounce container),
softened
1 tablespoon powdered sugar
8 teaspoons strawberry preserves
1/2 cup fat-free cholesterol-free egg product
1/2 cup fat-free (skim) milk
1/2 teaspoon grated orange peel
1/2 teaspoon vanilla
8 slices French bread (sliced 1/2 inch thick)
1 tablespoon powdered sugar, if desired
Directions
1. In small bowl, mix cream cheese, 1 tablespoon powdered sugar and the orange peel until well blended. Spread 4 slices of the
bread evenly with cream cheese mixture.
2. Spread 2 teaspoons preserves on each remaining slice of bread. Top each with 1 bread slice spread with cream cheese, making 4 sandwiches.
3.In shallow bowl or pie pan, mix egg product, milk and vanilla until well blended.
4. Heat 10-inch nonstick skillet or griddle over medium heat or to 375°F. Dip each sandwich into egg mixture, turning to coat
both sides. Cook in hot skillet 3 to 4 minutes on each side until golden brown. Sprinkle each sandwich with powdered sugar.
