RECIPE FROM KAYCEE’S KITCHEN WWW.RAISINGCLOVERS.COM Chicken Tortilla Soup * Freezer Meal & Crock Pot Recipe * *This is my go-to recipe when I want something easy, healthy & delicious! Ingredients: 1lb chicken breast, fat trimmed 15oz can sweet whole corn kernels, drained 15oz can diced tomatoes, drained 5C chicken stock (or broth) 3/4C onion, chopped 3/4C green or red pepper, chopped 2 large carrots, sliced 2 celery stalks, sliced 1 serrano pepper, minced (optional-I skip this) 2 cloves garlic, minced 1/4 tsp chili powder 1 1/2 tsp salt, divided 1 tsp ground pepper, divided TOPPINGS: Monterey Jack cheese, shredded (2c.) Chips (add some to soup) (Plus any other topping you’d like. See my suggestions below) Directions: • To your slow cooker add first 13 ingredients plus 1 tsp salt and 3/4 tsp ground pepper. Cook on high for 4 hours or low for 8 hours. • Prior to serving, remove chicken breasts. Transfer chicken to the bowl of a stand mixer fitted with a paddle attachment for easy shredding. Alternately you may shred chicken by hand with two forks. Chicken is really easy to shred after cooking in the liquid so long. • Season chicken with 1/2 tsp salt and 1/4 tsp pepper. Return shredded seasoned chicken to slow cooker bowl. Stir gently. • I personally like to add some crushed chips and a handful of cheese to the soup mix before serving. It thickens the soup a bit. If you are going for ultra healthy, skip this part. • If serving immediately, divide among bowls. Top off with a generous helping of shredded cheese and seasoned tortilla strips. Soup may be stored in the fridge for up to several days. • If freezing, label containers well with soup name and date. Tips: Again, I add cheese and some crushed chips to thicken the soup. It’s super yummy! If freezing-Mix all ingredients except chicken stock, cheese and chips -- and put in a ziplock. I even just put all the salt and pepper in the bag instead of dividing it. I do put the bag of cheese in between my double bagged soup mix and stick it in the freezer, too. I put a label on the chicken broth in the pantry, so I don’t use it in another meal. Sometimes I do the same with some extra chips. Goes Great With: Serves: 6-8 Additional toppings: avocado, cheese, sour cream, extra chips and cilantro. Adapted by: Kaycee
