Welcome to the Qantas Wine Guide.
Some wine lovers are already aware of Australia’s
most popular grape varieties as so many of them

grace international wine merchants’
shelves. You may have tried a South
Australian shiraz, or a cabernet sauvignon from Western Australia’s
Margaret River. You may know the
beautiful semillons from the Hunter
Valley, or the sprightly sauvignon
blancs, from here and New Zealand,
that have taken the world by storm.
But in recent years, our winejudy sarris

with grapes less common to our
terrain, such as temprenillo, nebbiolo and areneis. On
the following pages of the Qantas Wine Guide, produced
in conjunction with Gourmet Traveller WINE magazine,
we introduce you to some of Australia’s most innovative
winemaking families – small producers who are having
great success with exciting new wines.
You will also meet the panel of experts who have
selected the fine local drops you will enjoy during your
journey. Not all the wines we showcase are available on
your flight; instead, your flight attendant will
offer a carefully chosen list that marries well
with the delicious dishes crafted by worldrenowned chef Neil Perry. So sit back and
enjoy a taste of what Australia has to offer.

qantas wine panel
What’s your flavour?
The Qantas Wine Panel knows variety is
the spice of life – but which variety?
T
he vagaries of variety are well known to the Qantas Wine Panel.
The unique traits of each grape type influence many of their
decisions as winemakers, wine show judges and wine selectors for
Qantas’ inflight service. Questions they ponder include: what
varieties respond best to a particular site? What needs to be done to
bring out a variety’s best features? Should it sing solo or would the
wine work better as a blend? When it comes to their Qantas duties,
another question must be posed: what varieties will consumers find
most satisfying? Wine is not immune to fashion and the Panel is
finely tuned to both industry trends and what Qantas customers
expect to experience inflight.
“We aim to have a strong
selection of varieties and
blends that we know customers enjoy,” says biodynamic
winemaker Vanya Cullen,
“such as shiraz, cabernet sauvignon and blends of the two,
as well as sauvignon blanc
and semillon blends.”
That means putting aside
personal preferences. “Riesling and semillon are varieties
I love to drink,” says Stephen
Pannell of the SC Pannell
label. “But when it comes to
putting them on a plane, if either were to go
up against sauvignon blanc I’m pretty sure
most travellers would go for the savvy.”
It also means the Panel are introducing
Qantas customers to exceptional examples
of emerging varieties in Australia.
When the passionate wine selectors are

asked to nominate the variety they’d plant
Below: Stephen
in their desert-island vineyard, Pannell says,
Pannell.
“It’s not fair to just pick one variety because
it would depend on where I was living. If I lived in McLaren Vale, it
would have to be grenache.” Of course, he’s speaking from his
grenache-loving home in that very Vale. “But if it could be anywhere, it’d be somewhere I could make great nebbiolo. I never tire
of it. It is usually the first wine I reach for when I have been on
holidays drinking beer.”
As purveyor of the country’s best pinot, Tom Carson’s answer is
unsurprising. “If pushed, I’d go for pinot noir,” he says. “Achieving
greatness in a pinot noir is my lifelong challenge.” Cullen’s answer is
also no shock. As custodian of a pioneering Margaret River vineyard, she nominates cabernet sauvignon.
Finding small, quality-obsessed producers who explore a variety’s full potential is a real focus for the Panel and makes the Qantas
Wine Program the world’s most diverse inflight wine selection.

WINE SERV ICE
Natural Selection
When it comes to the labels that make
your Qantas First and Business wine lists,
it’s survival of the tastiest.
A
s you sit there enjoying a glass of one of Australia’s best wines,
take a moment to think about how that particular product
came to join you onboard.
After making it through the rigorous scrutiny of Qantas’ regular tasting panel sessions, a selected wine joins about 350 different
offerings that the airline has available at any one time. A determination to source limited-allocation wines from the country’s best producers means Qantas can offer a diverse and eclectic line-up of wines
that is without peer anywhere in the world.
Qantas strives to ensure that even the most frequent of flyers is
presented with exciting new wines to enjoy each time they fly. The
numbers involved per annum are staggering: 750,000 bottles of
table wine for First and Business; 150,000 bottles of Champagne;
25,000 bottles of stickies and fortifieds.
Another key objective of the Qantas Wine Program is to
provide customers with a spread of choices across varieties to ensure
a satisfying accompaniment to the food menu. In First there is a
choice of three red wines, generally a cabernet sauvignon-based
wine, a shiraz and a varietal option like pinot noir. The selection of
whites may include a classic chardonnay, a zesty sauvignon blanc
and an iconic Australian riesling or semillon. International Business
offers a second option, adding a counterpoint to shiraz and chardonnay, which have proved to be the star players in the Business cabin.
If you’re hopping across to New Zealand, you might even notice
that space has been given to notable wines from our trans-Tasman
neighbours. Now some might say that’s taking diversity a bit too far,
but even the healthiest of international rivalries is overpowered
by the determination of everyone involved in the Qantas Wine
Program to deliver the best inflight wine experience possible.
v
Experts take flight
Keep a close eye on your flight attendant’s
lapels and your vigilance may be
rewarded with a greatly enhanced
food and wine experience. If you spot
a bunch of shiny silver grapes, it means
you’re in the capable hands of a graduate
from the Qantas Sommeliers in the Sky
program – an innovative and exhaustive wine education
course that ensures Qantas flies with some of the best palates
in the sky. Developed in association with Wine Australia’s
online education program, Australia: World Class, the
Sommeliers in the Sky training ensures the flight attendant’s
wine knowledge reaches a level comparable to that of top
restaurant sommeliers. Only graduates of the Advanced
level of the course wear the coveted silver badge, so if
you see one you can be sure that you’ll be getting the
best, most knowledgable, wine service anywhere.

Food + wine
Perfect Match
Qantas chef Neil Perry says that his stellar
meals always shine brightest when they
are paired with a good wine.
Photography by earl carter.
S
ome chefs can be so singularly focused on the action in the
kitchen that they can’t see much beyond the stove, but Neil Perry
has a more holistic view of what makes a great dining experience.
That’s especially true when it comes to wine. Perry’s restaurants
have always had an enviable reputation for the quality of their
wine service, and his Sydney restaurant Rockpool was recently
recognised as having the best wine list in New South Wales at the
prestigous Fine Wine Partners/Gourmet Traveller WINE Australia’s
Wine List of the Year Awards.
Perry is particularly focused on the synergy between wine and
food – not just in his restaurants but also with the menus he designs
for inflight dining. “Elegant, restrained wines go well with simple
and sophisticated food and robust styles go with gutsy food,” he says.
“The Qantas Wine Panel does a wonderful job in finding a diverse
range of wines that give us great food-and-wine matching options.”
He also understands the importance of a good sommelier to the
fine dining experience. “You need people who have superior product
knowledge and passion to bring a wine list to life. Having a strong
wine list without a sommelier to help navigate it is like getting the
best possible produce and not having a chef to do anything with it.”
That’s why Qantas provides sommelier-level wine training to key
cabin crew – to ensure customers get sound advice and quality information about the wines and food being served inflight.
Perry is an advocate of tapping into this knowledge, whether in a
restaurant or at 30,000 feet.
“Give your sommelier an indication of what styles you normally
enjoy – if you’re in a restaurant also add what you’re prepared to
spend – then put yourself in their capable hands. A rewarding foodand-wine experience is always the result. To me it is a shame to have
v
to eat without a glass of good wine.”

Worth the Weight
Economy customers can expect a smoother
flight with Qantas’ new 187ml wine bottles
and rapidly expanding range of wines.
Photography by ben dearnley.
I
t’s only a minor change – in fact you probably won’t even notice it
– but the consequences are seriously significant. Each year, Qantas
flies a staggering 5.5 million 187ml wine bottles for service in Economy. As of earlier this year, each and every one of them is now being
made from recyclable PET plastic instead of glass. This equates to a
weight reduction of 120g per bottle, which may not sound like a lot
but as a result Qantas have reduced the overall weight they carry
each year by 660,000kg. Lighter flights mean a lot less fuel is burned,
and a better outcome for the environment.
Another exciting development has been the explosion of diversity in the wines available in the 187ml format. Qantas has worked
closely with key players in the wine industry to showcase an
Economy wine providing unmatched for quality, versatility and
variety anywhere in the world.
A quick scan of the wines on offer reveals some of Australia’s
most sought-after labels shrunk down to size. McLaren Vale icon
Wirra Wirra supplies its excellent Scrubby Rise wines, a chardonnay
and a rich red blend, while their near neighbours at Coriole have
bottled their Redstone shiraz exclusively for Qantas in the new format. One of Australia’s most popular whites, the bistro classic La
Biondina from Primo Estate, has found even more fans inflight, and
St Hallett has discovered their Poacher’s Blend white is just as well
received on the plane as it is at parties. The trend towards cooler
climate reds isn’t restricted to fine-dining restaurants, with Qantas
customers enjoying the finesse and elegance of Mount Langi Ghiran
Billi Billi Shiraz and Barwang Vineyard’s outstanding cabernet
merlot from its elevated site in the cherry-farm-dotted highlands
around Young, New South Wales.

wine Producers
Meet your Makers
Qantas wine suppliers talk about the
inspirations behind their top drops.
Clonakilla
Tim Kirk must be thankful for his
father’s foresight. In 1972, John
Kirk decided to plant shiraz in rather marginal conditions around
Murrumbateman, near Canberra. Then, in the mid-80s, he planted
viognier – a variety almost unheard of in Australia at the time, and
that had almost died out back in its homeland, the Rhône Valley.
In 1991, while visiting the Rhône, son Tim had an epiphany on
the road to Côte Rôtie: “There are moments in a winemaker’s life
when you become transfixed by the beauty of what’s in the glass
before you,” he says, as he recalls tasting from barrel the legendary
single vineyard wines of Guigal. “They had extraordinary complexity of perfume, wonderful silkiness and inherent sensuality. They
were quite moving. I thought at the time that if I were ever able to
produce a wine from our humble vineyard which got close to that
level of complexity, refinement and beauty, I would be very happy.”
His dad’s inspired varietal choice meant Kirk had the materials
to give it a good try. The result is Clonakilla Shiraz Viognier, Canberra District, the pinnacle of the style in this country and a wine
James Halliday described as “an icon, one of Australia’s best”.
Each vintage, Kirk feels he’s closer to perfecting shiraz-viognier
co-fermentation – a process that enriches the aroma and texture of
shiraz. Winemaking techniques that work well for him include letting ferments run their natural course and leaving them on skins for
a week or two upon completion. Ultimately, he says the key is in the
characteristics shiraz displays in cool-climate conditions.
“Personally, I think the floral, musky dimension that viognier
adds is better suited to the spicier, more savoury aromatic profiles
found in cooler-climate shiraz,” says Kirk. Anyone who has ever
tasted the fruits of his labour would no doubt agree.

Woodlands
When David and Heather Watson planted the Woodlands vineyard
at Wilyabrup in 1973, they were amongst the first wine growers to
see the potential in Western Australia’s Margaret River region.
The Watsons were in good company, with the family properties
of Qantas Wine Panel members Stephen Pannell (Moss Wood, now
owned by the Mugfords) and Vanya Cullen (Cullen) close by. These
pioneering viticulturists were inspired by the wines of Bordeaux,
and were excited by studies conducted by agronomist Dr John
Gladstones that indicated Margaret River could potentially do great
things with cabernet sauvignon.
It soon became evident that this was pretty special dirt. In 1981,
David’s Andrew Cabernet Sauvignon took the title of Best Red Wine
at the National Wine Show, becoming the first red from Margaret
River to win a national trophy. But by the early 1990s, the Watsons
shelved winemaking so they could focus on raising their children.
The wine bug is infectious, however; in 2002 their son Stuart
grabbed the winemaking reins and injected new energy and ideas.
“We’re using more sustainable practices in the vineyard,” he says,
“such as hand weeding, no under-vine herbicides, and composting
with our own marc. It is such a beautiful place I would like to think
we can keep it that way for future generations.”
Watson is passionate about his vineyard: “I like people to get to
know the character of our site and the mindset of the people who
made the wine. Woodlands cab sav has a slight minty taste, soft tannins and a bit of the spice cabernet can get in Wilyabrup.”
With Woodlands wines going from strength to strength, it seems
the Watson’s early vision is in very good hands.

test of perfection
Winemaker Greg Follett
checks on the progress
of one of Lake Breeze’s
cabernet vintages.
Lake Breeze
As Greg Follett steps out the door each morning, he is reminded
that his is no ordinary job – surveying the vineyard, he sees dirt first
worked by his great grandfather and now managed by his brothers.
“We were all born and bred here,” says Follett of the Langhorne
Creek property that is home to his family’s Lake Breeze label. “We
know it and love it, and we understand that it’s here thanks to the
hard work of those who came before us. We hope our kids will one
day want to carry on the tradition.”
The Folletts have been growing grapes in South Australia’s Langhorne Creek region since the 1880s, but a full century passed before
they began making wines under their own label. Shortly after Follett
completed his winemaking studies, the family prepared to turn
their quality fruit into something even more special.
Follett is particularly passionate about cabernet sauvignon and
the distinctive way it expresses itself in Langhorne Creek. “Climatically, we’re a little cooler than nearby McLaren Vale, and a touch
warmer on average than Coonawarra,” he says. “That allows us to
get lovely ripe, sweet fruit characters while still retaining varietal
traits and the firm structure that makes cabernet so attractive.”
This is how he describes the unique features of Langhorne Creek
cabernet sauvignon: “There is a minty, eucalypt character and a
little choc-mint note too, that I reckon is pretty typical in cabernet
from around here.”
Follett feels that cabernet’s counterparts in its traditional Bordeaux home, such as malbec and petit verdot, have great potential
in the region. More surprisingly, he also feels there’s a place for a
rather maligned white. “It may not be fashionable,” he says, “but we
can produce pretty good chardonnay here in cooler years.”
Convincing the world of that may take a little time, however.
Perhaps that’s a job for his kids.

ALL IN THE FAMILY
Left to right: Joel,
Fred and Carlo Pizzini
are understandably
proud of their family’s
groundbreaking wines.
PHOTOGRAPHY by lake breeze and pizzini.
Pizzini
The Pizzini family learned firsthand that trailblazing isn’t without
its challenges. Twenty years ago they decided to try planting classic
Italian varieties nebbiolo and sangiovese, which were at that stage
virtually non-existent in Australia.
From a miniscule 12 buds of nebbiolo, the Pizzinis undertook a
painstaking grafting program that eventually produced 6000 vines
over a five-year period and led to their first planting of five acres.
“After planting the vineyard, the next challenge was how to
manage these varieties in order to produce quality wine,” says Joel
Pizzini, who shares winemaking duties with his father Fred. “For the
first five years our nebbiolo vineyard seemed to be suffering from
adolescence – excessive growth patterns and bi-annual cropping
meant we got a huge crop one year and almost nothing the next.”
Much experimentation was needed to perfect both the nebbiolo
and the hyper-vigorous sangiovese. Finally, results began to match
expectations and the Pizzinis were ready to take their groundbreaking
wines to market – even if the market wasn’t quite ready for them.
“Our first commercial releases were the 1997 sangiovese and the
1994 nebbiolo,” recalls Pizzini. “Both moved very slowly as little was
known about these varieties in Australia at the time.”
But the Pizzinis knew they were onto something special and their
persistence has paid off – their wines, now including such varieties
as pinot grigio and arneis, are very highly regarded in Australia.
“We were confident. If you set out to showcase the varieties’ finest
qualities you can’t go wrong.”
Pizzini has strong opinions on how those qualities should best
be experienced. “With our Italian heritage it is unthinkable that
you would ever have a beautiful meal without a glass of wine.

Tastings
AUSTRALIAN WHITES
2006 Brokenwood Indigo
Vineyard Chardonnay
– Beechworth, NSW
An intensely flavoured chardonnay
with ripe peach, fig, toffee, nut and
marzipan creating a multi-layered
bouquet. The palate is equally
vigorous and fulsome, topped off
with a burst of lemon-fresh acidity.
2007 Brokenwood Semillon
– Hunter Valley, NSW
Brokenwood is among Australia’s
most highly regarded wineries, and
its semillon shines. Sourced from
ancient vines, after a year in the
bottle this has opened out with
aromas of straw, thyme and lemon
pith. A taut, citrus palate leads to
a satisfying conclusion.
2006 Coldstream Hills Reserve
Chardonnay – Yarra Valley, Vic
Aromas of ripe nectarine, melon
and guava meld with nougat,
grilled nuts and crème caramel
characters. The palate is rich and
refined, its intense peaches-andcream complexity tamed by a touch
of toasty oak and a thread of zesty
acidity on the finish.
2006 Crawford River Riesling
– Henty, Vic
An absolute masterpiece. The
bouquet is a complex amalgam of
mineral, almost earthy, characters
with lots of floral aromatics, subtle
lemon zest and pink grapefruit.
The mouth fills with the same
flavours, restrained by a fine
filament of mineral acidity.
2006 Cullen Chardonnay
– Margaret River, WA
Cullen produces some of Australia’s
most serious wines. Aromas of
peach, fig and pink grapefruit leap
from the glass, with a hint of roast
almond, lime marmalade and wild
ferment funk. A medium-weight
wine with a flavour that flows
gracefully to an impressive finish.

2006 Cullen Cullen Vineyard
Sauvignon Blanc Semillon
– Margaret River, WA
This multi-layered gem is sourced
from the original Cullen Vineyard,
now run biodynamically, with the
sauvignon component undergoing
partial barrel fermentation to
subdue its more herbal notes and
add depth, length and complexity.
2006 Curly Flat Chardonnay
– Macedon Ranges, Vic
Generous flavours of pink
grapefruit, white nectarine and
custard apple are overlaid with
nougat, toast and preserved lemon.
The palate is rich and complex but
in no way overblown – any excess is
held back by a tight, lemon acidity
and a fine layer of spicy oak.
2007 Edwards Wines
Semillon Sauvignon Blanc
– Margaret River, WA
Semillon provides fresh aromas of
just-squeezed lime and lemon zest
with hints of gooseberry and hay.
On the palate it gives the wine
depth, length and a mineral acidity,
while sauvignon fills the frame with
lovely passionfruit and nectarine.
2006 Evans & Tate Chardonnay
– Margaret River, WA
Benchmark chardy with regional
hallmarks: a peaches-and-cream
bouquet and a seductive palate that
is an intense but nimble mix of
fruit, oak and subtle winemaking
artifices. A fine thread of acidity
and toasty oak tannins give breadth
and length to this quaffable wine.
2007 Ferngove Cossack Riesling
– Frankland River, WA
Frankland River is home to some
wondrous rieslings; Ferngrove’s
Cossack is one. It boasts fresh lime
and lemon aromas, with a lift of
passionfruit and pink-lady apple.
The palate is tight and lean with
intense citrus flavours, and the
finish is acid-bright and vigorous.

2006 Giaconda Estate Vineyard
Chardonnay – Beechworth, Vic
A challenging, complex gem. Rich,
almost tropical fruit characters of
guava, rockmelon and fig dominate
the nose, with biscuit, butter and
toasted almond adding depth and
interest. Potent and complex, its
boisterous flavours will harmonise
over the next few years.
2006 Giant Steps Tarraford
Vineyard Chardonnay
– Yarra Valley, Vic
Innovative winemaker Phil Sexton
has made a stellar chardonnay here.
Ripe flavours of fig, melon and
white peach are enhanced by
buttery malolactic character and
a discreet background of lemonspiced oak. Delicious.
2008 Grosset Polish Hill Riesling
– Clare Valley, SA
This release confirms Jeffrey
Grosset’s right to the title of
Australia’s Riesling King. Sweet
citrus aromas and mineral
characters exude subtle spice,
while flavours of ripe apricot
and lemon sorbet dance with
the fresh grapefruit acidity.
2007 Grosset Rockwood
Vineyard Riesling
– Clare Valley, SA
Made exclusively for Qantas,
this has all the hallmarks of a
great Grosset: aromas of fresh lime,
apricot and pink-lady apple, and
a lemon-fresh palate. Its tight
structure and acidic edge guide
the wine to a lingering finale.
2008 Grosset Semillon
Sauvignon Blanc – Clare Valley
& Adelaide Hills, SA
A deliciously crunchy, savoury
dry white. Semillon gives it
backbone, with exotic fruit flavours
of guava, nectarine and lychee
coming from the sauvignon. Lean,
fresh acidity entwines the two
components for a slaty finish.

2005 Hardys Eileen Hardy
Chardonnay – Australia
The fruit sourced for Hardys’
top chardonnay is multi-regional,
creating a complex potpourri
of grapefruit, rockmelon and
nectarine, with hints of roasted
cashew nut and malt extract. The
rich yet restrained palate shows
a gentle amalgam of pure fruit.
2005 Henschke Peggy’s Hill
Riesling – Eden Valley, SA
Sourced from a network of Eden’s
finest growers, this has fresh floral
aromas against a background of
talc and wet-stone characters.
A whole basket of juicy citrus
fruit is crammed into the tight,
linear structure, flowing to an
ethereal finale.
2006 Howard Park Chardonnay
– Great Southern, WA
Howard Park’s leading chardonnay
sees white peach, pink grapefruit
and other citrus aromas mixing
happily with nougat and bakehouse
characters. The palate echoes these
energetic flavours, their exuberance
gently curtailed by an acidity that
flows to a mouth-watering finish.
2007 Howard Park Sauvignon
Blanc – Western Australia
Howard Park is a maturing West
Australian star. Half the fruit for
this crisp sav blanc is sourced from
Margaret River and half from
Pemberton, along the south coast
of the state. It offers cool citrus,
grassy edges and tropical nuances,
while bright acid adds freshness.
2006 Knappstein Ackland
Vineyard Watervale Riesling
– Clare Valley, SA
This subtle, almost shy riesling has
fresh aromas of lemon blossom,
nectarine and lemon zest with hints
of damp slate. A tight, grapefruitlike acidity enshrouds the wine,
which will release its grip as the
flavours build and grow over time.

2005 Leeuwin Estate Art
Series Chardonnay
– Margaret River, WA
For over 25 years, Art Series has led
the way for Australian chardonnay.
“Peaches and cream” is the most
apt description of this oh-sodrinkable drop. Add crushed nuts
and fresh nougat and you have
a wine of great character.
2007 Lenton Brae Semillon
Sauvignon Blanc – Margaret
River, WA
Freshness and intensity are the
hallmarks here. Herb garden
aromas lead the way, with a hint of
spicy oak in the background. This
judicious use of oak gives the wine
a triple bill: shape, texture and
length. Impressive stuff.
2004 Leo Buring Riesling
– Eden Valley, SA
This riesling shows all the
characters that set the Eden Valley
apart from its Clare Valley rival –

Tastings
2005 St Hallett Blackwell Shiraz
– Barossa Valley, SA
Named after St Hallett winemaker
Stuart Blackwell, this shiraz sits –
only just – below the iconic Old
Block. Licorice, tar and leather
flavours wrap around a core of rich
dark berry. Bold and powerful, the
palate is controlled by sweet
vanillin oak and fine tannins.
2005 St Hallett Faith Shiraz
– Barossa, SA
As with the Blackwell shiraz above,
licorice, tar and leather flavours
wrap around a core of rich dark
berry to create a traditional Barossa
shiraz. These seemingly disparate
flavours are meshed together by
sweet vanillin oak that carries the
wine through to a final flourish.
2004 St Hallett Old Block Shiraz
– Barossa, SA
Old Block is a legendary Barossa
shiraz, and has been for almost
20 years. The 2004 follows the
vintage’s lead with sweet spice
and raspberry flavours alongside
blackberry and sweet licorice
characters. Full, fine tannins lead
to a seemingly everlasting finish.
2006 Stonier Reserve Pinot Noir
– Mornington Peninsula, Vic
Geraldine McFaul’s Reserve label
is on top form. It’s made from the
oldest vines, crop thinned to give
ripe, juicy and highly flavoured
fruit – dark cherry, strawberry and
rhubarb compote and ripe plum
with a dash of exotic spice from the
high-quality oak. Simply delicious.
2001 Tatachilla Foundation
Shiraz – McLaren Vale, SA
Power and potency are this wine’s
hallmarks. It has a dense bouquet
of blackberry and dark plum, with
a generous overlay of warm earth,
bitter chocolate and licorice. The
palate is equally robust, offering
Cherry Ripe characters and a firm
backbone of fruit and oak tannins.

2002 Taylors St Andrews
Cabernet Sauvignon
– Clare Valley, SA
Cool years in warm regions make
for excellent wines. Cassis and
blueberry flavours with a touch of
bouquet garni give way to classic
Bordeaux-like cigar box characters,
with a lick of Clare Valley warm
earthiness adding a regional stamp.
2004 Thomas Hardy Cabernet
Sauvignon – Western Australia
The flagship cabernet of the Hardy
range, this is, unsurprisingly,
outstanding. Trademark roasting
herbs, gravel, cassis and earth
aromas are apparent, with berrysoaked flavours and majestic
tannins threading through the
palate and trailing off the finish.
2004 Tim Adams The Aberfeldy
– Clare Valley, SA
This big, bold shiraz is without the
heavy-handed oak of many of its
peers. Intense blackberry, dark
plum and dried sour cherry
flavours sit in perfect balance with
the firm tannin structure to create
a substantial wine of exceptional
depth, length and harmony.
2006 Torbreck Cuveé Juveniles
– Barossa Valley, SA
Dave Powell originally made this
Rhône-style blend for Parisian wine
bar Juveniles. The mix of grenache,
mourvèdre and shiraz is bottled
young, without a stick of oak. Sweet
red berry dominates the nose, while
the palate is as rich and fruity as
grandma’s Christmas cake.
2005 Torbreck The Struie Shiraz
– Barossa Valley, SA
Fruit from an old shiraz vineyard in
the Eden Valley adds depth to the
unbridled potency of the Barossa
component to create this bold but
stylish red. Sweet prune and pickled
plum aromas overlay intense briary,
smoky characters with hints of
nutmeg, clove and Christmas pud.

2005 Turkey Flat Butchers Block
Shiraz Grenache Mourvèdre
– Barossa Valley, SA
This blend is typical of the great
Châteauneuf-du-Pape wines of the
Rhône Valley. It has dense aromas of
spice, plum, sandalwood and bitter
chocolate, while the palate brims
with opulent flavours of plum and
cherry, leading to a powerful finale.
2004 Wirra Wirra Vineyards
Woodhenge Shiraz – McLaren
Vale, SA
A super-rich bouquet of ripe
boysenberry and wild blackberry
mingles with sweet, spicy plum cake
and licorice allsorts. The flavours
are compact and tightly knit, with a
firm framework of finely wrought
tannins controlling the finish.
2004 Wolf Blass Black Label
Cabernet Sauvignon Shiraz
Malbec – Langhorne Creek, SA
A standard bearer for this famous
name in Australian wine, blended
from cabernet sauvignon, shiraz
and malbec. Crafted with modern
hands and an eye on tradition, it is
rich with dark fruit, mint, leaves
and earthy, sweet tannins.
2006 Wolf Blass Grey Label
Cabernet Sauvignon
– Langhorne Creek, SA
The Grey Label was the first wine
Wolf Blass released – a cab sav in
1967. Cut to 2006 and this makes a
big impression, with deep dark fruit
and rich, regional chocolate dressed
in punchy oak and finishing with
a hearty chew of tannins.
2005 Woodlands Colin Cabernet
Sauvignon – Margaret River, WA
This family operation is regularly
among its region’s first division. Its
top cabernet is a seamlessly crafted
take on the renowned regional
style. Cassis, cedary oak and gentle
leafy roasting herbs mix through
fine sturdy tannins, leaving an
earthy trail through the finish.

2005 Wynns John Riddoch
Cabernet Sauvignon
– Coonawarra, SA
This historic winery is in stunning
form, as evidenced by its flagship
cabernet. Ripe cassis, dark berry,
mint and oak lead to an elegant
palate. Impressive tannin depth and
impeccable balance make this one
of Australia’s great cabernets.
2006 Yalumba Bush Vine
Grenache – Barossa, SA
The Barossa has a cache of dry old
grenache vines, many untrellised
and grown as ‘bush vines’. Ripe
plum and raspberry jam aromas
meld with mocha and hints of
smoked meat, leading to a generous
palate. Velvety tannins add a
delicious chewiness to the finish.
2006 Yalumba Hand Picked
Tempranillo Grenache Viognier
– Barossa, SA
For conservative Yalumba, this is
cutting-edge. In Spain, grenache is
blended with tempranillo (as
garnacha), but adding viognier is a
first. Dense black fruits lead to
cherry, ripe apricot and smoky oak
aromas, and on to a juicy palate.
2002 Yalumba The Octavius
– Barossa, SA
Yalumba’s top Barossa shiraz has a
bouquet of wild blackberry, black
plum, coconut and cherry, overlaid
with a veneer of charry oak, aniseed
and baked brick. The chalky
tannins are prominent, but the
intensity of the fruit from the cool
vintage provides superb balance.
2003 and 2005 Yering
Station Reserve Pinot Noir
– Yarra Valley, Vic
It’s astounding to think it’s less than
20 years since this historic winery
was reborn, yet its reserve wines are
already among Australia’s finest.
Voluminous dark cherry and ripe
damson absorb sweet mocha oak,
leaving a dark chocolate aftertaste.

2004 and 2005 De Bortoli
Noble One Botrytis Semillon
– Riverina, NSW
Spot on with ripe Roquefort, this is
Australia’s benchmark dessert wine.
A rich peaches-and-vanilla-cream
character is intensified by the
botrytis, leading to a luscious,
lingering conclusion.
2007 Josef Chromy Botrytis
Riesling – Relbia, Tas
This sweet riesling from northern
Tasmania is superb for its freshness
and concentration. Intense citrus,
superb fragrance and aromatic lift
get the mouth watering. A smooth,
rich palate with impeccable sugaracid balance freshens through the
finish with bright, crunchy acidity.
2002 Lillypilly Family Reserve
Noble Blend – Riverina, NSW
A blend of sauvignon blanc,
semillon, muscat of Alexandria and
riesling. Botrytis, aka noble rot,
results in a bouquet of butterscotch,
candied citrus peel, ripe apricot
and cumquat and a hint of toffee.
Super-rich texture fills the mouth;
gentle acidity cleanses the finish.
2006 Lillypilly Noble Blend
– Riverina, NSW
A core of sauvignon blanc
blended with semillon, muscat of
Alexandria and riesling provides
irrestible aromas of candied citrus
peel, butterscotch, cumquat and
ripe apricot. A sublime honey-rich
texture fills the mouth, while citrus
acidity cleanses the finish.
2008 Mount Horrocks Cordon
Cut Riesling – Clare Valley, SA
Stephanie Toole has challenged the
way Australians think about dessert
wines with a riesling-based
technique that sees fruit cut and
allowed to hang on the vine to
concentrate the flavour. Lots of
fresh pineapple and apricot,
checked by lemon-bright acidity.

Baileys of Glenrowan Founder
Series Liqueur Muscat
– Rutherglen, Vic
A caramel-rich bouquet of orange
marmalade, dried fruit and rose
leads to candied fruit, toffee and
roasted almond flavours. The finish
balances sweetness, acid, alcohol
and barrel-aged rancio characters.
Grant Burge 20-Year-Old Tawny
– Barossa Valley, SA
It has taken Grant Burge two
decades to enter the Barossa elite
– about the same time it’s taken his
tawny to mature in its old oak
barrels. Its rich bouquet is of dried
fruit and walnut with a hint of
complex rancio character. The
harmonious finish is pleasantly dry.
Morris of Rutherglen Old
Premium Liqueur Muscat
– Rutherglen, Vic
An intricate bouquet of brandied
prune, spiced plum, crème caramel
and a dusty spice cupboard greets
the nose here, while the texture
has a dense, treacle-like consistency.
The gently warming finish seems
pleasantly endless.
Morris of Rutherglen Old
Premium Liqueur Tokay
– Rutherglen, Vic
Time in oak gives this tokay its
deep olive-green hue. Molasses,
cold tea and crème caramel
flavours are lifted by a touch of
aniseed and five-spice. The rich
finish is restrained by fresh acidity,
leading to an impressive conclusion.
Penfolds Bluestone Aged 10
Tawny – Barossa Valley, SA
This classic tawny boasts a bouquet
of crème caramel, boiled fruitcake
and roasted chestnut, while its
warm surge of a finish delivers
a dusty rancio character. It is
mellow, mild and deeply satisfying
– a delicously restorative beverage
to enjoy inflight.

2007 Nautilus Estate
Sauvignon Blanc –
Marlborough, South Island
A poised sauvignon blanc with
classic Marlborough flavours of red
capsicum, lemongrass and currant
bud. The wine achieves an exquisite
balancing act between fruit/alcohol
sweetness and knife-edged acidity
to give a dry and lingering finish.
2007 Saint Clair Riesling

A Marlborough riesling made
in a classic Kiwi style with a
suggestion of sweetness to balance
the crisp, mouth-tingling acidity.
It’s a concentrated wine with
pronounced lime and citrus
flavours in addition to an
intriguing hint of mineral salts.
2007 Saint Clair Pioneer Block 2
Swamp Block Sauvignon Blanc
– Marlborough, South Island
Saint Clair’s trademark complexity
shines through in this impressive
Wairau Valley-fruit white. A
tantalising mix of gooseberry, green
capsicum and currant blossom
flavours combine to create a
powerful yet subtle wine.
2007 Stoneleigh Sauvignon

South Island
The reflected light and retained
heat of stony, free-draining
Marlborough sites help to boost
ripening, resulting in a wine with
strong flavours of passionfruit,
guava, nectarine and citrus. A
delicate, bone-dry sauvignon blanc.

2006 Framingham

appealing spice and perfume while
gaining an extra dimension of wild

2006 Peregrine Pinot Noir

A dense yet elegant wine with an
