Issue 21 ~ February, 2015 Love is in the Air FEBRUARY’S WINE OF THE MONTH DECERO 2012 MALBEC MENDOZA ♦ ARGENTINA February’s Wine of the Month is a real find to Flight 102’s cellar! Our first featured Malbec comes from the Argentinian Winery known as Decero, meaning “from scratch”. This single vineyard beauty delivers intense aromas of blackberry and violets while delivering flavors of the darkest berries and bitter cocoa. The finish is polished and “exquisitely balanced” and is the perfect gift for Valentine! Pick up a bottle and a pair it with a gift certificate from Flight 102 or better yet, bring your sweetheart in for a true Flight 102 experience! Either way, it’s a win-win situation! Located at 3500 feet, in the renowned Mendoza appellation of Agrelo, our one-of-akind Remolinos Vineyard takes its name from ‘Remolinos’ – whirlwinds which keep the grapes dry and in perfect condition before being handpicked each vintage Soils Yield Canopy Harvest Date Selection Steps Sandy clay loams over gravels. 3.5–4.0 tons per acre. Leaf plucking of east facing canopy; cluster thinning to 1-2 clusters per shoot. Handpicked March 21st – April 25th, 2012. Cluster selection when picking & second sorting within the small boxes. Chef Basile has been busy in the kitchen! There is definitely something for everyone on our menu! Check out these three new culinary creations made just for you! Let’s start with a beautiful dish featuring Ono straight from the land where palm trees sway! Yep, that’s right Poached Hawaiian Ono takes its rightful place on the menu and is artfully displayed nestled atop aged jasmine rice, winter vegetable broth, braised celery, brussel sprout leaves, and finished off with fennel. This is an absolutely delightful dish! Fish not your dish? No worries! Check out the new Flank Steak. Pictured here cooked to rare perfection, this savory masterpiece is rubbed in ancho chili powder and served over Moroccan couscous with roasted red pepper, charred green onions, chimichurri sauce and balsamic reduction. The ultimate pairing comes in the Ventisquero “Grey” Cabernet Sauvignon from Chile. Thankfully, we were able to secure a few more cases of this liquid gold so all of our “Grey Lovers” fear not because this smoky, smooth cab is sticking around for a few more weeks! If you loved that news, guess what? There’s more…a new dessert and its chocolate decadence to say the least! In my opinion, one of Chef Basile’s most incredible desserts this amazing dark Chocolate Lava Cake is served alongside Orange/Marscapone ice cream with candied orange peel, moscato/orange gelee and topped with bitter cocoa powder. Oh and there’s some Italian meringue served with it too! Enjoy this beautiful displayed confectionary wonder with a glass of our most popular Italian Moscato d’Asti, Bricco Riella. Definitely some sweets for the sweet! February’s Wine Tasting takes us to one of the wine world’s hidden gems! If you have not had occasion to indulge in the luxury of a South African cabernet sauvignon than you are missing out! Fear not! We’ve got your covered! Join us on Monday, February 23, 2015, at 6:00 p.m. as Kevin Blais from Heritage Cellars takes us through the region that is South Africa. Unable to export their beautiful wines due to Apartheid, it was not until the 1990’s that the country was able to open up to the world market and experience a renassaince of its own. Known for their lovely Chenin Blancs and sultry Cabernet Sauvignon, this country will open up a part of your pallet you didn’t know you had! Reservations are required as seating is limited to 50 people. Tickets are $20 per person and include tasting of 5 wines, light hors’douvres and a new found love of South African Wines! One Stroke Certified Instructor Kathi Eastman will be joining us on Monday, February 16th from 6 pm to 9 pm. Creativity will flourish as we are guided on painting our very own glass spring candle holder. Kathi has been a certified One Stroke Instructor since 2004. Over the past 13 years, Kathi has taught hundreds of paint students in several states. One Stroke Painting is designed for any skill level. The One Stroke technique is an easy way to learn color, highlight and shading all in one stroke. Tickets are $45.00/person – and must be prepaid to reserve your spot & includes all materials & supplies, UNLIMITED glasses of house wine and light hors d’oeuvres. Performance begins at 7:00 pm. Lupe’s new CD will also be available for purchase that evening. Then, on Saturday, February 14th, beginning at 7 pm, an evening full of smooth jazz and romantic ballads from jazz guitarist, Freddie Franken and Chicago vocalist Judith Honesty and bass player, Tyke Hendershot. A truly amazing musical performance! Did we mention that Chef Basile will have a special Valentine’s dish artfully prepared and sure to please you and your Valentine? Just this Valentine’s weekend only, indulge in a butter poached 8oz Lobster Tail and London Broil* prepared the way you like it with the perfect glass or bottle of wine!
