Exceptional with veined cheeses; consider it for a romantic dinner and also for a birth gift for its laying-down potential of several decades. TASTING NOTES “The colour is intense due to the good ripeness of the grapes. Product sheet Grape varieties : 100% chenin blanc The nose of white flowers mixed with cooked apple and juicy pear, then slight candied quince and spice. Soil : Vines of 70 years old on Beige St George shale with phtanite veins around the town of Rochefort sur Loire. In the mouth, fresh lime, orange liqueur and the honey of botrytis with an impressively long finish.“ Winemaking : Pneumatic pressing, static settling after 12 hours. The fermentation takes place in barrels, 50 % new wood. Aged for 9 months. Analysis : 12.5% alcohol - 177 g/l residual sugar The vines are pruned according to the Guyot system. The vineyard follows the principles of Integrated Pest Management with no synthetic plant protection products, and no chemical fertilisers. Harvest is made in boxes of 25 kg, three selections were necessary.
