EleCare Recipe Book ® This recipe book is only to be distributed to a parent or guardian whose child has been prescribed EleCare® Includes: Recipes suitable for both younger and older infants (eg. Purées, custard, risotto and casserole) EleCare® Unflavoured with LCP EleCare® Unflavoured EleCare® Vanilla INTRODUCTION EleCare is a medical food which has been specially formulated for infants or children who are allergic to, or unable to tolerate certain foods, infant formulas or even breast milk. It contains all the nutrients your child needs for normal growth and development, when taken in the amount determined by your Doctor or Dietitian. Once your child has been settled on EleCare for a period of time, your Doctor or Dietitian may allow certain solid foods to be introduced into his or her diet. This is done over time to understand which food(s) your child could be allergic to, and also add variety to your child’s diet. This recipe book has been designed to include creative ways in which EleCare may be used during the introduction of solids into your child’s diet. As each child’s food allergies may vary, it is essential that you consult your Doctor and/or your Dietitian as to the appropriate management of your child’s allergies and the use of this recipe book. To maintain a nutritionally balanced diet for your child, EleCare can be added to boost the nutritional value of basic foods until a wider range of foods can be tolerated. Choosing when to introduce solid foods into your child’s diet should be discussed with your Doctor or Dietitian. Some useful tips before you start using these exciting EleCare Recipes: • It is important that your child consumes the prescribed number of scoops of EleCare each day • The number of scoops/grams of EleCare your child needs per day should be determined by your Doctor or Dietitian. This can be given either as a drink, or added to foods • If most of your child’s daily allowance is added to food rather than given as a drink, it is important to offer your child water after meals as adding EleCare to food makes it very rich and concentrated • EleCare powder may be difficult to mix into certain foods. To overcome this, make EleCare powder into a paste by mixing 1 tablespoon water (20 mL) per scoop (9.4g) of powder before adding to food • EleCare should not be added before baking, microwaving (at high heat), cooking or freezing as important nutrients can be lost • In general, it is advisable to add EleCare just before serving We hope this recipe book will help to introduce some variety to your child’s diet and at the same time, assist in managing your child’s condition. Last but not least, we hope you will have fun with these recipes! Nutritional values are approximate and will vary based on brands, quantities and substitutions. Recipes are for ages 6 months and up. NOTE: The recipes found in this book follow three stages of infant feeding from first solids to self-feeding. You may use either EleCare Unflavoured, EleCare Unflavoured with LCP or EleCare Vanilla in these recipes, depending on what your doctor has prescribed (EleCare Vanilla is indicated for children over 1 years of age only). Steam or microwave pumpkin until very soft. Ingredients: 1 cup pumpkin, cut in 2cm dice 1 scoop EleCare per serve 2. Place pumpkin into a mini food processor or blender, and purée until smooth, adding extra water if necessary. Leave in the bowl to cool completely. Add EleCare and blend until smooth. Serve within 1 hour or refrigerate until needed. 4. When required, reheat second serve gently in the microwave on 30% power, stirring frequently, until slightly warm; stir in a scoop of EleCare and serve. Note: * Purée may be frozen before adding EleCare. To freeze, put into a small covered container and store in the freezer for up to 1 month. Thaw in the refrigerator or microwave; add EleCare after bringing to room temperature. • It is advisable to begin introducing your infant to one vegetable at a time. Allow 2-3 days between new vegetables, to establish clearly that it does not cause problems. If infant rejects the food, leave for a few days and try again. Infants can be conservative and so you may need to try to introduce a new vegetable many times before it’s accepted • Nutrition content of Purée will vary depending on the vegetables used. 5 Recipes for Young Infants - Purée Texture and/or made with single ingredients RICE CEREAL Prep time: 5 minutes Cooking time: 5 minutes + 15 minutes cooling time Makes: approximately ½ cup; 1 serve Ingredients: 1 tablespoon ground rice ½ cup water 1 scoop EleCare 2 teaspoons water, extra Nutrition content per serve Energy Protein Total fat Saturated fat Carbohydrate Sugar Sodium Potassium 6 368kJ 2g 2g 0.7g 15g 0.4g 20mg 96mg Method: 1. Combine rice and water in a small saucepan and stir over a medium heat unti boiling. Simmer gently for 2-3 minutes. 2. Pour into a bowl and allow to cool for about 15 minutes, stirring occasionally. 3. Mix EleCare and extra water until smooth; stir into cereal and mix well. Serve within 1 hour. Recipes for Young Infants - Purée Texture and/or made with single ingredients APPLE (OR PEAR) PURÉE Prep time: 5 minutes Cooking time: 5 minutes + cooling Makes: cup; 2 serves Method: 1. Peel, quarter and core apple or pear. Cover and microwave on HIGH power for 2 minutes, or until soft. Ingredients: 1 large pear or apple (or other suitable fruit^) 1 scoop EleCare per serve 2. Place apple or pear in a mini food processor or blender and purée until smooth. Remove half the purée and store for later use*. Place banana, water and EleCare into a blender. Ingredients: ¼ cup sliced fresh, ripe banana (or other suitable fruit^) ¼ cup water 1 scoop EleCare 2. Blend until smooth and frothy. Recipes for Young Infants - Purée Texture and/or made with single ingredients APPLE (OR PEAR) FOOL Prep time: 5 minutes Cooking time: 5 minutes + cooling Makes: ½ cup; 1 serve Ingredients: ¼ cup water 2 teaspoons ground rice 1 scoop EleCare ¼ cup puréed cooked pear or apple (or other suitable fruit^) Nutrition content per serve (based on Apple Fool) Energy Protein Total fat Saturated fat Carbohydrate Sugar Sodium Potassium Method: 1. Place water and ground rice into a saucepan and stir over a medium heat until boiling. Simmer for 1 minute, pour into a bowl and cool. 2. Stir in EleCare and mix until smooth. Place fruit purée into a serving bowl, add EleCare mixture and swirl through the purée. Serve or refrigerate for up to 1 hour. Note: Please check with your Doctor or Dietitian on the fruits considered suitable for your child ^ 435kJ 2g 2g 0.7g 19g 6g 20mg 133mg • This recipe can not be frozen. • The nutrition content will vary slightly with the fruit chosen. 9 Recipes for Young Infants - Introducing more variety and texture RICE PORRIDGE Prep time: 5 minutes Cooking time: 5 minutes + cooling Makes: ½ cup; 1 serve Method: 1. Combine rice and water in a small saucepan and stir over a medium heat until boiling. Simmer gently for 2-3 minutes. Ingredients: 3 tablespoons rolled rice ½ cup water 1 scoop EleCare 2 tablespoons of prepared EleCare*, extra 1 teaspoon brown sugar 2. Pour into a bowl and cool, stirring occasionally. Serve with brown sugar and extra prepared EleCare. Serve within 1 hour or refrigerate until needed. If refrigerated, reheat gently in the microwave on 30% power until room temperature. * Standard dilution for infants younger than 1 year of age is one level scoop (9.4g) to 60mL of water (i.e. 0.67kcal/mL) Recipes for Young Infants - Introducing more variety and texture CHICKEN & VEGETABLE SOUP Prep time: 5 minutes Cooking time: 10 minutes + cooling Makes: 300mL; 3 serves Ingredients: 1 cup pumpkin cut in 1cm dice, or other accepted vegetable^ 1 tablespoon finely diced celery 20g minced chicken breast fillet 1 cup water 1 scoop EleCare per serve 1 tablespoon water, extra Snipped chives to garnish Method: 1. Place pumpkin, celery and water in a small saucepan and bring to the boil. Cover and simmer very gently until pumpkin is tender. Add chicken and cook 2-3 minutes longer. 2. Use a spoon or potato masher to break up the pumpkin and any lumps of chicken so the texture is uneven. Pour into 3 containers, cover and cool. 3. Mix EleCare with extra water until smooth. Stir into only one serve of soup and serve sprinkled with chives. 4. Refrigerate the remaining 2 servings of soup for 3-4 days, or freeze. In general, potatoes, sweet potatoes and carrots are suitable. • When refrigerated, reheat gently in the microwave on 30% power, stirring frequently, until just warm. Add EleCare and serve. • Soup may be frozen before adding EleCare. To freeze, put the soup into a covered container and store in the freezer for up to 1 month. Thaw in the refrigerator or microwave; add EleCare when just warm. 11 Recipes for Young Infants - Introducing more variety and texture CHICKEN & PUMPKIN PURÉE Prep time: 5 minutes Cooking time: 5 minutes + cooling Makes: ½ cup; 1 serve Method: 1. Cover pumpkin and microwave for 1 minute on HIGH. Add chicken and microwave on HIGH for 30 seconds longer. Ingredients: ½ cup diced pumpkin 1 tablespoon chicken breast mince 1 scoop EleCare 2. Purée vegetable in a mini food processor or blender until fairly smooth, adding a little water if necessary. Add EleCare and mix until smooth. Serve within 1 hour or refrigerate until needed. If refrigerated, reheat gently in the microwave on 30% power until room temperature. Note: • Purée may be frozen before adding EleCare. To freeze, put the plain purée into a small covered container and store in the freezer for up to 1 month. Thaw in the refrigerator or microwave; add EleCare after bringing to room temperature. • Once baby has accepted a range of vegetables, combinations of those can be used in this recipe. For example, pumpkin and sweet potato can be combined with broccoli or peas. 12 Recipes for Young Infants - Introducing more variety and texture APPLE JELLY Prep time: 5 minutes Cooking time: 5 minutes + cooling Makes: cup; 2 serves Ingredients: 1 cup clear apple juice 2 teaspoons powdered gelatine 2 scoops EleCare Nutrition content per serve Energy Protein Total fat Saturated fat Carbohydrate Sugar Sodium Potassium 425kJ 4g 2g 0.7g 18g 14g 42mg 171mg Method: 1. Pour the juice into a small saucepan and sprinkle with gelatine. When the gelatine is absorbed, place over a medium heat, bring to the boil and simmer gently for 2 minutes. 2. Cool completely. 3. Stir in EleCare and mix well. Rinse two small moulds with cold water or spray lightly with rice bran oil spray and pour in the jelly mixture. Refrigerate until set. Note: • Use any fruit juice which infant accepts for these jellies. You can also use a combination of juice and fruit purée. Boil the juice with the gelatine and then combine with the fruit purée before cooling and adding EleCare. • Boiling the gelatine is important as it allows the added sulphur dioxide to evaporate. 13 Recipes for Young Infants - Introducing more variety and texture ELECARE CUSTARD Prep time: 5 minutes Cooking time: 5 minutes + cooling Makes: approx 300mL; 3 serves Ingredients: 2 tablespoons ground rice 1 cup water 2 teaspoons sugar 3 scoops EleCare Nutrition content per serve Energy Protein Total fat Saturated fat Carbohydrate Sugar Sodium Potassium 14 343kJ 2g 2g 0.7g 15g 3g 20mg 85mg Method: 1. Place ground rice and water into a small saucepan and stir until boiling. 2. Simmer gently for 30 seconds. Remove from heat, stir in sugar and allow to cool. 3. Stir in EleCare. Serve as needed, or cover and store in the fridge for up to 2 days. * For Pear Custard: Stir ¼ drained chopped canned pears into about of custard mixture. * For Apple Custard: Stir ¼ cup apple purée into about of custard mixture. * For Banana Custard: Fold sliced banana through the cooled custard mixture just before serving. * Check with your Doctor or Dietitian to ensure these fruits are appropriate. Recipes for Older Infants and Children VEGETABLE RISOTTO Prep time: 5 minutes Cooking time: 15 minutes + cooling Makes: ¾ cup; 2 serves Ingredients: 2 tablespoons white rice 1 cup water ¼ cup grated carrot ¼ cup grated zucchini 1 scoop EleCare per serve Nutrition content per serve Energy Protein Total fat Saturated fat Carbohydrate Sugar Sodium Potassium 423kJ 2g 2g 0.7g 18g 1g 24mg 110mg Method: 1. Place rice and water into a small saucepan. Bring to the boil on a medium heat and simmer gently for 5 minutes. Add carrot and zucchini and simmer until rice is tender. 2. Pour into a bowl and cool. Remove half the risotto to a container and store in the refrigerator for up to 3 days. 3. Stir EleCare into remaining risotto and mix until smooth and serve. Note: • When required, reheat second serve gently in the microwave on 30% power, stirring frequently, until slightly warm; stir in a scoop of EleCare and serve. • Use any vegetables your infant has accepted for this risotto – the only consideration is that the vegetable should cook in the same time as the rice. Note also that the nutrition content will change slightly. 15 Recipes for Older Infants and Children BABY BIRCHER MUESLI Prep time: 5 minutes Makes: cup; 1 serve Method: 1. Combine rice with apple juice; cover and refrigerate overnight. Ingredients: 2 tablespoons rolled rice ¼ cup apple juice 1 tablespoon finely grated peeled raw apple 1 scoop EleCare Small slice of apple to garnish (or other suitable fresh fruit^) 2. To serve, warm to room temperature in the microwave on 30% power, stirring frequently. Stir in grated apple and EleCare; mix until smooth. Serve topped with a slice of apple. Heat a little oil in a small saucepan and cook lamb and celery over a low heat until lamb changes colour and celery is soft. Ingredients: ½ cup finely diced lean lamb 1 tablespoon finely diced celery 1 tablespoon diced carrot 1 tablespoon corn kernels 2 teaspoons ground rice ¼ cup water ¼ cup mashed potato, still warm 1 scoop EleCare per serve 2. Add carrot, corn, ground rice and water; mix well. Bring to the boil and simmer gently for 5 minutes, or until carrot is tender and meat cooked. Pour into two serving bowls and allow to cool. Add enough water to potato to make it quite smooth. Stir in EleCare. Spoon over lamb filling and serve. Note: • When required, reheat second serve gently in the microwave on 30% power, stirring frequently, until slightly warm. Make another serve of mashed potato with EleCare and spoon on top of lamb. • Veal may be used in place of lamb in this recipe. 17 Recipes for Older Infants and Children CHICKEN & BROCCOLI CASSEROLE Prep time: 5 minutes Cooking time: 15 minutes + cooling Makes: 2 serves Method: 1. Heat a little oil in a small saucepan and cook chicken over the heat until it changes colour. ½ cup finely diced chicken breast fillet 1 tablespoon diced carrot ¼ cup chopped broccoli florets 2 teaspoons ground rice ¼ cup water 1 scoop EleCare per serve 2. Add carrot, broccoli, ground rice and water; mix well. Bring to the boil and simmer gently for 5 minutes, or until carrot is tender and chicken cooked. Pour into two serving bowls and allow to cool. When cool, stir EleCare into remaining casserole and serve. Note: • When required, reheat second serve gently in the microwave on 30% power, stirring frequently, until slightly warm. Add EleCare and serve. • This casserole can be topped with mashed potatoes, as for the Shepherd’s Pie. • Diced lamb or veal may be used in place of chicken in this recipe. Also, any vegetable your child can tolerate can be added for variety. 18 Recipes for Older Infants and Children MEAT BALLS Prep time: 5 minutes Cooking time: 15 minutes + cooling Makes: 5 balls Method: 1. Heat a small amount of oil in a small saucepan. Add garlic and meat and stir over the heat until meat changes colour and juices have evaporated. Ingredients: ¼ clove garlic, optional ½ cup finely diced meat (e.g. chicken breast fillet, veal or lamb) ¼ cup plain mashed potato 1 scoop EleCare Gluten free breadcrumbs Chopped chives (optional) 2. Add to mashed potato; mix well. Allow to cool. 3. Mix in EleCare (and chives if preferred). 4. Roll into small balls. Roll in breadcrumbs and serve. Steam or microwave potato and broccoli until soft. Mash potato until smooth. Break up broccoli and stir into potato with corn and EleCare. 2. Shape into small patties and coat with breadcrumbs. Note: Please check with your Doctor or Dietitian on the vegetables considered suitable for your child ^ 540kJ 6g 3g 0.8g 18g 2g 83mg 509mg 19 Recipes for Older Infants and Children RUSKS Prep time: 20 minutes Cooking time: 30 minutes Makes: approximately 16 Ingredients: 1 cup cooked white rice 1 teaspoon rice bran oil 1½ cups rice flour Water for mixing Nutrition content per rusk Energy Protein Total fat Saturated fat Carbohydrate Sugar Sodium Potassium 20 Method: 1. Place rice, oil and flour into a food processor and mix well. 2. Add sufficient water to form a dough which can be pressed together. 3. Preheat oven to 200°C and line a baking sheet with baking paper. 4. Press dough into finger shapes and place onto baking sheet. 5. Bake for 20 minutes. Recipes for Older Infants and Children ELECARE ICE CREAM Prep time: 5 minutes Freezing time: approximately 2 hours Makes: approximately 750mL Ingredients: 2 cups water 12 scoops EleCare 2 tablespoons rice bran oil ½ cup caster sugar Method: 1. Place all ingredients into a blender and process until smooth. 2. If desired, pour into ice cream moulds and freeze. 3. Alternatively, pour into a shallow dish and freeze for 1 hour. Remove from freezer and scrape frozen ice cream out from the dish and mix until smooth. Return to freezer and leave to freeze. Serve cut into chunks or scraped into spoonfuls. This will depend on many factors, including whether your child is eating any foods and the age of your child. NEVER change the concentration or quantity of formula given until you speak with your Doctor or Dietitian. Professional advice should be followed before using an infant formula. Introducing partial bottle-feeding could negatively affect breast-feeding. Good maternal nutrition is important for breast-feeding and reversing a decision not to breast-feed may be difficult. Infant formula should be used as directed. Proper use of infant formula is important to the health of the infant. Social and financial implications should be considered when selecting a method of feeding.
