Method
• Pre-heat the oven to 200°C/Fan 180°C/Gas Mark 6
• Place the salmon fillets on a square of foil. Drizzle with
olive oil and season with pepper and the juice of 1 lemon.
Wrap tightly and bake for 15 minutes
• Grate the rind from the other lemon and juice. Mix the
lemon rind with the crème fraîche, olive oil and season
with black pepper and mix well
• Chop the cauliflower into florets. Trim and thinly slice the
scallions, then slice the avocado
• Put the rocket into a large bowl and layer the avocado,
cauliflower and scallions. Drizzle with a little lemon juice
and serve
