Polugar is a more ancient type of spirit, and quite different Restoring An Era of Craft Distillation from modern vodka, more akin to legendary Russian breadwine, the noble father of vodka. Polugar is produced in accordance with an authentic recipe from the 18th century, using carefully selected grains and naturally pure water, and distillation in copper pot stils. Russian production of historic breadwine was stopped in 1895 when the state decided to monopolize grain distillation. Therefore, to produce the exquisite Polugar spirits, Rodionov and Sons restored an old distillery tucked away in a forest in Poland. Each Polugar selection is distilled three times in copper pot stills that were meticulously reproduced from 18th century drawings. Single Grain Range Infused Range The distillate undergoes a labor-intensive and expensive eggwhite purification process, a popular method used by the Russian aristocracy in the 1700s. Further purification ensues using birch wood charcoal. Shake vigorously, and strain into an old-fashioned glass. Top with two or three dashes of Angostura bitters. Lovell Bros. Sour Mash Whiskey Hand-crafted American Classic • 150 year-old Recipe Homemade spirits have been a way of life for the Lovell family for some 150 years. They shut down their bootleg operation in the 1960s, but in 2012, Carlos decided to get back into the distilling business–legally, this time. He founded Ivy Mountain Distillery with his daughter Carlene with the sole purpose of producing the best sour mash whiskey on the market. Ivy Mountain Distillery utilizes the same basic copper steam still and boiler design used by the Lovell family thru the early 1960s. The double thumper barrel wash system between the still and the condenser provides a second distillation of the spirit on a single run. The end result is a cleaner, smoother and ultimately more superior whiskey. The key ingredient, however, is the sweet Blue Ridge Mountain water drawn from Annandale Springs which runs through the family’s property. The sole purpose of this pure, original water source is for Lovell Bros whiskey production, from mash preparation to final product proofing. Historical documents reference the Annandale plantation and horse farm on the site, predating the Civil War. As Master Distiller, Carlos is a true virtuoso. He simply knows when the rare hickory cane corn is ready for fermentation and how to distill Georgia’s finest corn whiskey. Carlos Lovell, 84, and his brother, Fred, 82, learned the ways of making outlawed corn liquor from their father, Virgil Lovell. When asked how it felt to be back making whiskey, Carlos Lovell answers, “I think it’s a great part of American history. But fifteen minutes into the drive, the man has barely uttered ten words from behind the wheel, and frankly, his deep, jowl-draped frown has silenced me in fear that the wrong question might land me in the ditch. The only sounds in the cab are Rush Limbaugh on the AM radio and the moan of the Chevy’s V8 pulling us up the narrow Habersham County mountain roads. Carlos Lovell is eighty-six, and this interview was definitely not his idea. I don’t think he even knows my name or whom I’m with; he never asked. He refers to me as “that reporter fella”—even when I’m standing five feet from him. He tells his employees I “ask too many questions.” At any rate, I get the feeling the old man would much rather be working. Besides, he has never been much of a talker. For almost half his life, his family’s income—not to mention his freedom— depended on discretion. Lovell was a moonshiner. At age sixteen, he started cooking illegal liquor and selling it by the truckload throughout North Georgia, right under the noses of local authorities. He and his brothers learned the practice from their father, Virgil, who himself had learned it from his uncle. Off and on for a hundred years, beginning in the 1860s, remote patches of these timberlands were thick with the warm scent of boiling corn and the thump, rattle, and hiss of a Lovell copper still. The Lovells were far from alone. Since the eighteenth century, alcohol was a common by-product of some American farms, not unlike butter or cheese that came from excess milk. Barrels of whiskey were more valuable than silos of corn. Some farmers kept it for themselves; others sold it. In colonial times, whiskey was bartered as hard currency. But in 1862, to help pay for the Civil War, the federal government reinstated an old tax on distilled spirits (President Jefferson Davis outlawed the production of liquor to save grain for the Confederate Army). After the war, homemade spirits were a major, if illegal, commodity in the devastated agrarian South. By 1880 the Internal Revenue Service was seizing about 1,000 illegal stills a year. In 1924, the height of Prohibition, 13,023 moonshine operations were broken up across the U.S., and 2,824—more than a fifth of them—were busted in Georgia alone. The prevalence of illicit booze in Georgia gave rise to the mythical Southern moonshiner in a souped-up jalopy, racing police through twisted mountain roads, past still fires strewn like Christmas lights across the Smokies and by Appalachian springs spouting pure white lightning. Even today, it’s not unheard of for hunters in these parts to stumble upon a woodland still—since 2011 the Georgia Department of Revenue has dismantled eleven, most of them small operations evidently used for private consumption. Karoline, 30 years old, finished viniculture studies in Geisenheim in 2008, and is in charge of marketing and the vineyards; Dorothee, 28, is in charge of the maturing wine and cellar. Everything has been renewed: classification by estate, local vineyard and vintage designation, and modern label design that is color-coded. “We enjoyed wine early. Wehlener Sonnenuhr Riesling Kabinett The Peter Nicolay Estate was established in the early 1800s, and owns vines in some of the most prestigious vineyards of the Mosel region. Showing slatestone notes, this Kabinett is upfront yet complex at the same time. The nose is citrusy. The taste is well balanced in natural sweetness and acidity. The finish has pleasant acidity, making this Riesling lovely to drink on its own. The wine is easy and fresh with some tannic structure as well.” Wine Enthusiast, June 2013 Guastella Wine Sicilian Fine Wine • Variety & Complexity Guastella Wine is produced exclusively from grapes grown in the enchanting Jato Valley in Sicily’s Guastella district from which the company takes its name. The winery meticulously manages every detail– from the vine to the bottle, in order to create the highest quality product that embodies the distinctive character of fine Sicilian wine. Vineyards of Azienda Guastella comprise 42 of the 94 hectares. In addition to the traditional autochthonous grape varieties of Catarratto, Grillo, Insolia, and Nero D’avola, Guastella has vines of international grapes, such as Syrah and Chardonnay, to exhibit the full potential provided by Sicily’s enviable climate and fertile soil. The D’Arrigo family has been cultivating grapes and making wine in Sicily for three generations starting with their grandfather Gioacchino D’Arrigo, who devoted his life to the cultivation of vineyards, the first planted in Contrada Guastella in 1940. Guastella Catarratto Catarratto grapes capture the soil’s mineral essence providing a crisp, clean mouthfeel. The generous levels of alcohol allow the wine to store well. Catarrato is noted for its deep yellow hue and nutty aroma when introduced to the glass. The taste is compared to Viognier. The finish offers a lingering flavor of crisp pear with scents of lemon and bitter orange. 13% alc/vol Guastella Grillo Grillo is the quintessential Sicilian grape varietal, as it is particularly well suited to the hot and dry Sicilian climate. The grape was born from grafting Zibibbo with Catarratto rootstock– confirming its introduction in the north during the late 19th century. The wine has a rich golden hue, and is characterized by its gentle herbaceous flavor, showing hints of floral notes. The higher alcohol content allows for storing quite nicely. 13.5% alc/vol Guastella Insolia Insolia is one of the most important ancient white grapes of Sicily and Italy. Long cultivated in the province of Palermo, with the origin traced back to the Greeks, Insolia has a strong nutty character and some acidity. Vintners take note of its universal ability to stand up to, as well as complement, a substantial range of dishes. 13% alc/vol Guastella Chardonnay The Chardonnay grape is a completely natural crossing of Pinot and Gouais Blanc varietals, and is French in origin. Chardonnay was planted in Sicily in the 1980s, and today, is grown ubiquitously throughout the world. Sicily’s soil and climate impart beautiful characteristics to the wine: incredibly full-bodied with bright yellow and greenish hues. The nose is full of flowers, and the acidity is softened by the soil’s minerals that are enhanced by the limited water in the Sicilian climate. This Chardonnay has found an ideal home on the island, the younger member of the wine family produced there. 13.5% alc/vol Guastella Nero d’Avola Guastella’s Nero d’Avola wine is a Sicilian native. The hue is tinged with violet. The nose offers a medley of red fruit aromas. On the palate, flavors of currants, sour cherries, blackberries and a sweet hint of cocoa saturate its full-bodied texture. Its fine structure is supported by balanced tannins. An exceptional red paired with pasta, roast meats, cold meats and cheeses. 13.8% alc/vol Guastella Syrah The Syrah grape was originally from Persia, and it was brought to Sicily from Egypt by Agathocles, the tyrant of Syracusa, in 310 BC. The varietal thrives in the island’s dry, arid climate. When the topsoil around the vines becomes encrusted from the baking sun, the moisture deep in the soil is protected, allowing minerals smooth delivery to the roots. The hue is dark cherry. The nose, a nutty oak that is reflected on the palate. The wine is succulent, full-bodied, rich and chewy with soft tannins. A delicious wine with considerable character. 14% alc/vol Grans-Fassian Riesling Treasure of the Mosel Grans-Fassian Estate is located in Leiwen, along the Mosel Valley, one of the oldest wine regions in Germany, and viticulture‘s best location since 1624. The Mosel Valley is known for its impressive steep sloped vineyards with soil primarily made up of slate. Riesling comprises 90% of the 27 acres of vineyards. The steep, south and west facing slopes of the Mosel Valley bring about the perfect microclimate for Riesling wine. As a result of cooler weather, the grapes mature at a slow rate, giving rich flavors while still preserving a vivid acidity. The slate soil absorbs the warmth from the sun during the day and redistributes the heat to the vines at night. The roots are deeply embedded in the soil where they are able to reach enough nutrients and water.This creates vibrant wines with high minerality. Piesporter Goldtröpfchen Goldtropfchen is one of the bestknown individual vineyards in the Mosel. This south-facing site has deep, grey-blue slate weathered soil. The temperatures can reach Mediterranean levels, and the stony slate soil offers the Riesling vine ideal growing conditions. The soil’s richness in quartz and minerals gives the wine a characteristically mineral taste and vivid acidity, with plush fruitiness resonating throughout. Not surprisingly, the site is called Goldtröpfchen (golden droplet) with ideal conditions for a high concentration in the small-berried grapes to mature into a precious wine. Trittenheimer Apotheke This world-renowned winegrowing site is situated across from Trittenheim on the right bank of the Mosel River. The vineyard is perched on an extremely steep, southwest-facing slope with grey-blue slate soil. The rocky terrain absorbs and stores the sun’s heat during the day and releases it slowly to the vines during the night. The very mild climate grants latematuring Riesling grapes sufficient time to collect minerals, natural glucose and extracts. The peachy aroma is typical of these very subtle and filigreed wines with their vibrant elegance. Leiwener Laurentiuslay Dhroner Hofberg This traditionally steep-sloped site in the Mosel Valley between Trittenheim and Piesport is one of the best in the region. This purely south-facing site, with a gradient of 30-60%, enjoys sufficient precipitation throughout the year, supplying optimal water to the vines.This results in vibrant wines with a spicy flavor, scented body and finesse.
