BE IN GOOD TASTE DECEMBER 2015 All that Glitters MacArthur Center sparkles this holiday season ON THE COVER The holidays are upon us, and for the next month BE IN GOOD TASTE DECEMBER 2015 it’s a bevy of happy happenings with family and friends. This is the time of year when there is a sparkle in the air, and everything takes on an ethereal feel. The glittery gingerbread house ornament, shown on the cover, is found at Dillard’s and seems to capture the feeling of sweet dreams very nicely. Read more in the Shopping List column on page 2. This time of year our favorite drink is the seasonal Peppermint Mocha, a delicious blend of coffee, chocolate and mint. If this doesn’t get you in the spirit, little else will. Be In Good Taste - 1 Sometimes things pop up in places you’d never expect. Shopping List Fabulous foodie finds from Patrick Evans-Hylton The perfect bowl for the pumpkin soup you want to serve at an upcoming dinner party; candles to illuminate a quiet evening at home – and fill the air with the delicious notes of the season; fun coasters for a tailgate. But, like many of you, I don’t have time to run all over the place looking for items. For my upcoming seasonal soirées, I was happy to find all sorts of things pop up at MacArthur Center. I recently walked through the mall with a friend who helped me find an assortment of great items perfect for my holiday gatherings with family and friends. With my trusty iPhone in hand, I took photos of some of the items we found, and share them with you here. Cookbooks Champagne Flutes Food-centric Ornaments AT BARNES & NOBLE AT TCC AT DILLARD’S AT DILLARD’S Not only do champagne and other bubbly beverages look better in long, tall flutes, but there is a reason behind the design. It allows for the bubbles to travel from the bottom to the top (more information can be found in the “An Entertaining Idea” on page 5). I love the variety of flutes found at Dillard’s. Deck the halls with these food-centric ornaments and decorations: an adorable, sparkly gingerbread house and a Santa statue holding a plate of holiday cookies and mug of hot cocoa are adorable and feed the soul of every foodie. As gifts for others or for yourself, this trio of cookbooks is great for the holidays and throughout the year. My picks: Betty Crocker’s The Big Book of Cookies; Cookie Love by Mindy Segal with Kate Leahy; and Baking with Kids by Leah Brooks. Summer Sausage, Virginia Peanuts, Sharp Cheese Ball AT HICKORY FARMS Put out a nice spread at any holiday function for family and friends to enjoy, whether it’s an informal gathering or something a little more formal, like a Champagne Cocktail Party (see “An Entertaining Idea,” page 5) My picks are the savory summer sausage, so delicious cut thinly and served on small points of dark bread spread with a little flavored mustard (my recipe for a cranberry and herb infused mustard is below). I also love the classic large gourmet peanuts from Virginia Diner, and the richly flavored Sharp Cheese Ball, which is great smeared on water crackers. Recipe: Cran-A-Licious Dijon Mustard – In a medium bowl, add 8 ounces of a good quality Dijon mustard, 2 ounces of a whole berry cranberry sauce, 1 teaspoon finely chopped fresh rosemary and 1/2 teaspoon freshly ground black pepper. Stir to combine well and serve at room temperature. Store any leftovers refrigerated in a sealable container. #macfoodie #macfoodandwine Be In Good Taste - 2 AT P O T T E R Y B A R N Lobster Ornament Benefit Candles Quotable Bowl Vanilla is one of my favorite fragrances, and the spiced vanilla notes of these glittery candles – accented with a bit of cinnamon – make for delicious entertaining. I especially love that half of the purchase price of these votives are donated to St. Jude Children’s Research Hospital. Just the right size for ice to chill splits of champagne or other wine, bottles of craft beer and artisan sodas, this quotable bowl from Pottery Barn is not only functional, but fabulous, with the inscriptive quote that tells us the reason for all seasons: family. Invitations, Memento Book, Decorative Pen AT PAPYRUS I can spend a long time in Papyrus looking at all the creative cards and other gifts. I grabbed the sparkly pineapple (the colonial icon for hospitality) note cards to send some quick correspondence to others, and several Glitter Is My Favorite Color notebooks with decorative pens to have when I host a party for folks to take down tasting notes for the wines I’ve served (and other information too). #macfoodie #macfoodandwine I love fun and whimsy – and I also love lobsters. There are tons of great, glitzy ornaments to adorn trees at Pottery Barn, but this sparkly lobster-shaped ornament caught our eye. It would be a fun giveaway to guests at a Feast of the Seven Fishes dinner you are hosting to help folks remember the evening. Are you indulging in lobster this holiday? Here is a delicious compound butter recipe to try; just cut off a small medallion and place on top of the piping hot shellfish right before serving. Recipe: Orange Spice Compound Butter – In a small bowl, combine 4 tablespoons unsalted butter that has been softened, 1 teaspoon orange zest, 1/2 teaspoon crushed red pepper, 1/2 teaspoon salt and 1/4 teaspoon freshly ground black pepper. Mix completely and shape into a log with wax paper, rolling tightly. Refrigerate for at least 2 hours or freeze for up to six months. Pickle Ornament AT NORDSTROM In the style of classic European glass Christmas ornaments, this hand-blown classic, shaped like a pickle, keeps up an American tradition that is at least a century old. Since the late 19th century, folks have been placing a pickle ornament somewhere in a Christmas tree with the understanding that the first child who spies it gets an extra gift from Santa. Gift Bags AT GARDEN GAZEBO Whether you are giving a bottle of wine, sparkling cider, craft beer or other beverage, these adorable canvas bags, complete with festive greetings and a place to write the recipient’s name with a white marker, are just the thing. Be In Good Taste - 3 AT W I L L I A M S - S O N O M A Cooks’ Tools, Initialed Spatulas Peppermint Bark Champagne Opener Williams-Sonoma is always one of my first stops at MacArthur Center, but especially this time of year. I love the assortment of Cooks’ Tools, from whisks to potato mashers and more, as well as the spatulas adorned with bold initials. I’m including some of these Cooks’ Tools in the stockings of other foodie friends who love to cook, and tying one of the spatulas to the package as a functional decoration. One of my favorite flavors of the season is Peppermint Bark, and the offering from Williams-Sonoma-in an adorable decorative tin-is always a winner. This chocolate treat, studded with crushed peppermint candy, is great to eat on its own, but I also like to chop it up and sprinkle on a big dollop of whipped cream floating on some hot cocoa, or dusting the top of an ice cream sundae or speckled on top of frosted cupcakes (perhaps made with the Cupcake Kit from Nordstrom). The sound of a champagne cork popping is one of my favorite sounds anywhere because it means something special is about to happen. This handy opener helps in pulling the cork so that you are just moments away from a flute full of bubbly. This is an instrumental tool at a Champage party, like the one in the “An Entertaining Idea” on page 5. Cupcake Kit Tower of Sweets Sparkling Apple Juice AT NORDSTROM AT HARRY & DAVID AT HARRY & DAVID Because treats are part of the holidays, and because diets are part of the New Year, we love diminutive desserts; an opportunity to indulge a bit without going overboard. Cupcakes often fit the bill, and this kit, with 24 cupcake cases and 24 toppers, really makes the season bright – and delicious. Sometimes the greatest gift is that of time. For years I’ve included this tower of sweets on my shopping list to give to folks with a sweet tooth. But I also have one or two at home to open up and set out when guests drop by without notice. Included: Milk Chocolate Moose Munch Gourmet Popcorn, Milk Chocolate Truffles, Yogurt-Covered Pretzels, Lemon Shortbread Cookies and Chocolate Mini Mints. Although champagne is one of my favorite imbibes this time of year – well, actually any time of year – I do love to have a little non-alcoholic bubbly from time-to-time. This sparkling apple juice at Harry & David is great for those times, and for letting others who aren’t tippling join in the festivities. #macfoodie #macfoodandwine Be In Good Taste - 4 Gift Cards Bottles, Mugs, Tea and More Seasonally-Scented Candles AT STARBUCKS AT TEAVANA AT YANKEE CANDLE While you are treating yourself to a little pickme-up, grab a few of these holiday cup-shaped Starbucks gift cards, which double as an ornament for a miniature tree or décor on a Christmas package. Not only do tea, and accessories related to tea, make a great gift, they are also useful to help de-stress ourselves during this busy season. I found several things I love at Teavana - some for me and some for others. These include a wonderful golden Swell bottle, fancy baroque mugs, twinkly boxes to house tea, fun mugs, gift sets perfect for giving, and a delightful holiday blend, Joy. I love the ambiance that a beautifully-scented home creates when guests arrive. Out of all the array of fragrant candles available at Yankee Candle, the Sparkling Cinnamon, Christmas Cookie and Snowflake Cookie scents really set the mood for a fun evening, whether I’m hosting a Cookie Exchange or just having some folks over for a sweet treat and hot cocoa (see my hot cocoa recipe in Take 5, page 9). The holidays are here, and it’s time for entertaining. Whichever holiday you celebrate, it’s time to gather family and friends and showcase your hosting skills. AN ENTERTAINING IDEA Celebrate the Season with a Cocktail Party that Sparkles I love a cocktail party because the majority of tasks can be done in advance and waiting in the wings; just put out your creations and replenish throughout the evening. I especially love a cocktail party where I keep things simple, and for me that’s offering a small, but impressive lineup of food and beverages. That means seasonal meat - like cured sausage - and cheese. It also means some vegetables and dips. And of course something sweet like cake or cupcakes for ease. For beverages I often just serve Champagne and champagne cocktails this time of year; if I put out more it’s a sparkling fruit juice for folks who don’t want to imbibe. The temptation is to use disposables, but I prefer to use nice, real plates, platters, flatware and glasses and put them in the dishwasher. I start the party with a nice invitation sent to my guests; look below in the “MacArthur Must-Haves” section for something I found at Papyrus. The theme is as simple and elegant as anything else, and it’s usually just “Sparkle.” That way there isn’t a lot of decorating to do and there aren’t any biases towards one holiday or the other – this keeps things simply and about taking time at the end of the year to break bread (and pop a champagne cork) with folks I care about. #macfoodie #macfoodandwine Be In Good Taste - 5 Have yourself a healthy little Christmas No doubt the holidays are a time to indulge, but you can indulge in something a little bit healthier. Consider a carefully crafted vegetable platter with a “dip bar” for folks to dunk then dine the crudité. You’ll want to present a dish that has plenty of color, as well as variety. Also, make sure the vegetables are cut and chopped into one or two bite pieces. And think outside of the slice; trim down those green onions. Cut the carrots on an angle. Use a small cookie cutter to make shapes (stars are awesome this time of year) from slices of zucchini, squash and the like. Pare down the broccoli into cute little florets and offer grape tomatoes rather than tomato wedges. When presenting your platter, arrange in a flow and direction; don’t just dump the veggies on the plate. Classic vegetables to serve include: • celery, outside peeled and cut into fingers • carrots, cut on an angle • baby carrots • broccoli florets • cauliflower cut into small pieces • radishes cut in half Some more unusual offerings include: • sugar snap pea pods • eggplant, squash, zucchini, cut into shapes • red, yellow and green bell peppers cut into strips • yellow teardrop tomatoes • fennel wedges • kohlrabi rounds • grape and small cherry tomatoes • large portabello mushroom caps cut into quarters • green beans • jicama fingers • endive wedges • blanched miniature asparagus spears Dip into these dips: • Tomato or tomatillo salsa, pico de gallo • Garlic, roasted red pepper or classic hummus • Cocktail sauce spiked with some grated horseradish • Mashed avocado mixed with Greek yogurt and dill until smooth • Lemon zest and lemon pepper pureed with cottage cheese • Roasted garlic cloves pureed with herbs and low-fat cream cheese • Minced cucumber with garlic powder and mint mixed in yogurt Keep in mind – Greek yogurt is rich and thick and makes a great substitute for more calorie-laden options like mayonnaise and sour cream. Note: life is diverse and so is your palate. A classic tray of meat and cheese is also a nice offering for family and friends. Look under the heading of “MacArthur Must-Haves” for our quick-and-easy and oh-someaty idea from Hickory Farms. We found all sorts of great platters and bowls at Dillard’s, Nordstrom, Pottery Barn, and Williams-Sonoma. #macfoodie #macfoodandwine Be In Good Taste - 6 Be the host with the most Offer guests an assortment of delicious dishes during your cocktail party. But remember, variety doesn’t mean a thing if you run out of food before the last champagne cork is popped, so plan accordingly. For years I ran my own catering business, An Entertaining Idea, (catchy name, huh?) and here are some guidelines I used to make sure each and every soirée attendee was sated. Remember to round up your estimates. Don’t be tempted to round down. If you are having your party during the dinner hour, increase your portions because folks are potentially looking at your offerings as a meal, not just party food. And, the longer the fête lingers, the more food you’ll need to keep replenishing. Bread/ crackers: Canapé-sized portion, 4-6 per person, per hour Dips, cold: 1-2 ounces per person, per hour Cheese: Cubes or portion on bread/crackers, 3-5 per person, per hour Dips, hot: 2-3 ounces per person, per hour Deli meat/ cold-cuts; Hot meat/ beef, chicken, pork: Canapé-sized portion, 4-6 per person, per hour Vegetables, fruits: Canapé-sized portion: 4-6 per person, per hour Also of note – Cake: 8-inch round, two-tier cake, 20 servings 9x13-inch sheet cake, 36 servings How dry am I: the brut of the Champagne matter You’ll hear many words and phrases when talking about sparkling wine, and we don’t just mean “bubbly.” Champagne, capital “C”, is a sparkling wine made traditionally with chardonnay (blanc de blancs) or pinot noir (blanc de noirs) grapes and gets its fizz from a technique called méthode champenoise. According to laws, it must come from the Champagne region of France, otherwise, it may be called champagne, lower case “c.” From Spain there is Cava, and from Italy there is Prosecco as well as spumante/asti. Otherwise, the drink may just be called sparkling wine, depending on the grapes, method and origin. Here are some other terms you may hear: Brut – this is a dry sparkling wine, and perhaps the most common. It’s a good sparkling wine to pair with food. Extra Brut means very dry. Like other white and rosé wines, sparking wines are best enjoyed chilled, with around 45F being a good medium temperature. Chill the champagne in the refrigerator about three hours before you need it or in a bucket of ice water for about a halfhour. The bottle should never be placed in a freezer. Once opened, keep in an ice bucket to maintain temperature while enjoying. Extra Dry – this is a moderately dry sparkling wine, and is good to enjoy on its own, such as an aperitif. Demi-sec means moderately sweet. Demi-Sec – this is a moderately sweet sparkling wine, and is a good finish to a meal or paired with sweets. #macfoodie #macfoodandwine Be In Good Taste - 7 Take your sparkle to another level A classy and classic way of enjoying Champagne is with a Champagne Cocktail. Here is my favorite recipe: Ingredients Sugar cube Angostura or Peychaud’s bitters Champagne Lemon Twist Method Place the sugar cube in the bottom of a champagne flute and sprinkle 2-3 dashes of bitters on the cube; do not crush sugar cube. Fill the flute with sparkling wine, squeeze a lemon twist on top, and drop in as a garnish. Optional: add 1 teaspoon Cognac to flute before adding champagne. Sweets for the sweet Put a delicious ending to the evening with a signature dessert to share. I love to do a 2-tiered round cake or even a large sheet cake. Who doesn’t love cake? For cocktail parties, I don’t get into too many elaborate desserts because I want to do as much as I can in advance and have time to mingle and munch with my guests. What I do, however, if offer a spiked whipped cream for folks to generously dollop on top of their slice of cake. Here is a favorite recipe for this time of year: MACARTHUR Recipe: Peppermint Patty Whipped Cream Start by placing a medium metal bowl and metal whisk in the refrigerator the morning of your party. Finely crush some peppermint bark (we love the offering from Williams-Sonoma; see the information about it in the Shopping List section), place in a bowl, cover, and set aside. Mid way through the party, slip into the kitchen and pour 1 cup of heavy cream into the bowl along with 1/3 cup confectioners sugar and 2 teaspoons peppermint schnapps. Whisk vigorously until soft peaks form, about 5 minutes. Gently fold in the crushed peppermint bark, cover, and refrigerate until you are ready to bring out the cake. MUST HAVES Here are some items I found at MacArthur Center that are five must-haves for your glittery gathering; photos and details are in the Shopping List on page 2: - A variety of champagne flutes from Dillard’s The best glass for serving sparkling wine is a champagne flute, which is a tall, elongated glass designed to facilitate the flow of bubbles and concentrate the flavors and aromas of the quaff. - Family-quote vessel for icing splits from Pottery Barn - Sparkling apple juice for non-imbibers from Harry & David - Classic munchies, including beef summer sausage, Virginia Diner gourmet peanuts and Sharp Cheese Ball from Hickory Farms Don’t miss my cranberry/herb-infused mustard recipe in the Shopping List section. - Glitter Is My Favorite Color notebook with glitzy topped pen for taking wine notes, sharing recipes, and exchanging holiday greetings from Papyrus Splits are smaller bottles of wine. #macfoodie #macfoodandwine Be In Good Taste - 8 TAKE 5 Glitzy Gourmet Gift Ideas for your Five Types of Foodies I agree that it is better to give than receive, but you do want to make sure you give the right gift. I recently walked through MacArthur Center with a friend and got lots of ideas for gift-giving for the fabulous foodies on my shopping list. Some items are going to be hostess gifts, others are destined to be gifts for Hanukkah, and some for Christmas. But each is going to be tailored to the recipient’s special interest. I like to put together a small, thoughtful collection and present them in a fun container. You probably have friends and family with similar tastes, so here are my thoughts to help inspire you: 1 Coffee & Tea Fanatic: In a tote we saw at Kirkland’s we added a pound of Christmas blend coffee from Starbucks, a pound of Joy, a seasonal tea from Teavana, and two gorgeous ceramic-withgold bottomed cups noted at Williams-Sonoma. Recipe: Hot Cha Cha Cocoa Mix – in a large bowl add 2-3/4 cups powdered milk, 2-1/4 cups confectioners sugar, 1-1/4 cup Dutch-processed cocoa powder, 2 teaspoons ground cinnamon, 2 teaspoons cornstarch and 1 teaspoon table salt and whisk to combine. 2 Cookie Monster: Santa isn’t the only one who loves Christmas cookies! In a white snowflake bag from the bookseller, we added Betty Crocker’s The Big Book of Cookies. Along with a dozen sugar cookies in a decorative tin from Mrs. Field’s we included an adorable ceramic “Milk for Santa” bottle from Dillard’s. 3 Cuckoo For Cocoa: We found some great sealable glass jars from Kirkland’s with a write-on chalkboard paint nameplate on the front to which we are going to add my Hot Cha Cha Cocoa Mix (recipe follows). We’ll put that in a large holiday bag from Papyrus with a sampler box of chocolate from See’s Candies and a fun Santa-saying mug we spied at Nordstrom. #macfoodie #macfoodandwine Divide into thirds and add to three separate sealable ziptop bags, along with a half-cup of white chocolate chips. Add a tag to each bag that says “Add a 1/2 cup of my Hot Cha Cha Cocoa Mix to a mug with 1 cup hot water, stir, top with miniature marshmallows and enjoy!” Be In Good Taste - 9 4 In The Spirits: Who doesn’t love an imbibe at the holidays? For our wine, beer and whiskey lovers, in a plaid bag we found at Barnes & Noble at TCC we added a bottle of White Chocolate Martini Mix and Cocktail Rimming Sugar from Harry & David, some beautiful wine glasses from Dillard’s and a fun heavyweight beer bottle opener that caught our eye at Brookstone. 5 Souper Comfort: Some beautiful, colorful, polka-dotty bowls from Papyrus are perfect for comfort food lovers; maybe they will fill it with some tomato soup, which wold be great topped with my Herb Garden Oil (recipe follows). We add the bowls in a large bag, also from Papyrus, along with some gorgeous soup spoons we found at Pottery Barn that we will tie together with some fun twine, and, for inspiration, a copy of Chicken Soup for the Soup: Merry Christmas!: 101 Joyous Holiday Stories that we picked up at Barnes & Noble at TCC. Recipe: Herb Garden Oil, from my cookbook, Dishing Up Virginia – place 1 cup packed basil leaves, 12 whole chives, 1/4 cup packed mint leaves, several sprigs of thyme and oregano on a cutting board. Press down on the herbs with the back of a spoon to lightly bruise. Combine the herbs with 1 teaspoon lemon zest and 1 teaspoon whole black peppercorns in a quart-sized glass jar. Heat 3 cups extra-virgin olive oil to 175F in a medium saucepan over medium-high heat. Remove the saucepan from the heat and pour the olive oil over the herbs in the glass jar. Seal and let stand for 2 days. Strain the infused oil into another sealable glass container; discard the herbs, lemon zest and peppercorns. GETTING SOCIAL Foodies – show us what you’ve got Maybe it’s a great piece of cookware from Williams-Sonoma, a treasured cookbook from Barnes & Noble at TCC or a tasty treat from Mrs. Field’s. Perhaps its hors d’oeuvres you’ve made for a gathering at home and presented on a platter from Pottery Barn, or a cocktail served in highball glasses from Dillard’s. However you get your foodie on from one of the great stores at MacArthur Center, let us know! Share your fabulous finds at MacArthur Center by posting your photos on social media using the hashtags #MacFoodie and #MacFoodAndWine – I’ll be checking them out from time-to-time. We may use one of your photos in an upcoming issue of Be In Good Taste and reward you for your efforts. #macfoodie #macfoodandwine Be In Good Taste - 10 foodies MARK YOUR CALENDAR There is always something going on for foodies at MacArthur Center.
