A parade of guild members and children in traditional attire passes through the old town and gathers in front of the opera house, where the Böögg is set alight to music and cheering. April is the month for film lovers in Buenos Aires. Hoyts Abasto cinema and other venues citywide (some open-air) showcase the best of recent Argentine and international feature films and shorts. From the provocative to the surreal, children’s movies to Argentine new cinema, dozens of genres are represented. Melbourne’s Royal Exhibition Building and Carlton Gardens burst into colour at this four-day meeting: a multi-hued display of textile art, quilting, appliqué, and much more for the budding hobbyist. Take lessons in quilting, go shopping for the best in textiles, and see displays of superb traditional and contemporary quilts from Australia and around the world. never is Japan more beautiful than during the cherry blossom season, when even Tokyo puts on the pink. Traditional cherry-viewing parties (hanami) feature in Tokyo’s parks, including Ueno and Sumida parks and Shinjuku Gyoen gardens, where the Prime Minister hosts his hanami. Boating around the cherry-lined moat of Chidorigafuchi Castle is another popular part of the celebrations. Traditional new year (Songkran) in Thailand follows the Buddhist calendar and brings many religious observances, making temples a lively place to visit in mid-April. But prepare to get soaked during more secular festivities, when crowds run riot on city streets armed with water pistols and buckets for good-natured water-throwing mayhem. Japan blooms into life in April when every park fills with cherry blossoms and parties take place in its shade. Browse the arts and crafts market, enjoy local food specialities, ride the giant ferris wheel, and enjoy live music at this popular family event. The largest photography fair in Latin America is a chance to admire the works of renowned photographers and those who are up-and-coming. Some 100 artists exhibit their works by taking over an entire floor of the city’s vast Shopping Iguatemi complex, which is transformed into nearly 30 galleries. Nearly all of the 100-odd vineyards surrounding Geneva throw open their cellar doors to the public just once a year. It’s a chance to enjoy a day out in the countryside, with wine and food tastings and the opportunity to sample the first of the previous autumn’s vintage. The market’s location is important, as it determines the fare served at this impressive eatery (the daily menu appears on a board outside). Apart from the guaranteed freshness of the ingredients, the changing menu ensures a new dining experience every time. Ideally situated in the historic quarter by the Kamenita Vrata gate, Trilogija’s snug interior offers guests outstanding dining with a friendly and historic ambiance. Try the black tiger shrimp risotto with mango and spinach, orechiette pasta with spicy sausage, roasted bell peppers and white beans, or simply enjoy the seasonal differences, such as mushrooms in autumn and asparagus in spring. Take the side streets from here towards Rådhuspladsen (Town Hall Square), starting up Læderstræde to check out its myriad independent boutiques and have a reviving kaffe og kage (coffee and cake) in one of its cafés. Spend the evening at Tivoli, the world’s second oldest amusement park and home to flower gardens, lakes, pavilions, lights, music, theatre, and rides. Enjoy a dusk amble before dining on hearty Danish fare at Restaurant Grøften. Party in the Meat-packing District – once home to Europe’s highest concentration of butchers, Kødbyen is where the coolest bars and galleries are found. Here she takes us on a nostalgic tour of the old town. The Escalade In 1602 a housewife spotted some of the Duke of Savoy’s troops attempting a surprise attack on Geneva by scaling the defensive walls with long ladders. Legend has it she ran for her largest pot, which happened to contain scalding hot vegetable soup, and beat them over the head with it. On or around December 12 every year the Escalade is celebrated with a torch-lit procession of medieval soldiers, drummers, and cavalry through the old town. Tearooms sell chocolate soup pots, ‘Les Marmites’, full of marzipan vegetables, to commemorate this event. The old town of Geneva is a labyrinth of cobbled streets, alleyways, historical sites, fountains, art galleries, antique shops, tearooms, and great places to eat. All of this nestled amongst the more serious, flag-bedecked government buildings. As a young, new arrival, I rented a tiny studio in Rue de la Cité. It was all so foreign, magical, and enthralling – and it still feels that way. Having said that, there is nothing frivolous, pretty, or quaint about the old town of Geneva. There is a solemnity to the Swiss reflected in their architecture, and it is this purity and austerity that I love. I start my tour at the foot of the old town at 1 Place de la Madeleine. In the very cold winter months this is home to a charming and antique carousel. Here you are never far from the influence of Lake Geneva and the feel of life as one long holiday. 5 Burgener Art Framers: The Burgener family have been selling original drawings and watercolours of Geneva for three generations, which make wonderful, original gifts. Towering over the old town in the heart of the city lies 6 St Peter’s Cathedral, Geneva’s most impressive architectural treasure. Buy a ticket for the tower and enjoy the best panoramic view of the city. 2 Restaurant Le Mortimer: Geneva is a university town, and this haunt for students is famous for its cheap but tasty ‘Petite Cuisine’. It has a lovely terrace lining the rampart wall in the summer. The old Roman market square of 3 Place du Bourg-de-Four is my favourite part of the old town. 4 La Clémence is the café in Geneva to see and be seen. Here, the well-heeled dressed in fur and leather mingle with hoodie-clad students to sip hot chocolate or drink an apéritif on the year-round terrace. No tour of a Swiss city would be worth its cheese (!) without mention of a great place to eat fondue. I ate my first ever fondue in 7 Les Armures. What I love about this eatery, apart from its wood-panelled interior, serious Swiss waiters, and starched-to-within-an-inch-of-theirlives white tablecloths, is their speciality: the tomato fondue. Looking and sounding as if she’s walked straight out of a David Lynch film, Del Rey conjures up images of lost highways, Fifties Americana, and grime-tinged glitz and glamour in this sultry, sumptuous set of songs. Diab has forged and expanded the notion of Mediterranean music, blending Western rhythms with Mediterranean and Middle Eastern styles. He’s been called rebellious for challenging everything in Middle Eastern show business; but, equally, he has been labelled brilliant. He was prolific from the start. His 1983 debut, Ya Taree’, was followed by a trio of recordings: Ghanny Men Albak, Hala Hala, and Khalseen. But it was 1988’s Mayaal that set Diab on his way throughout the Middle East. His style, dubbed ‘Pan-Mediterranean’ by critics, added flamenco and rai touches enhanced by Western pop, all woven tidily together by traditional Arabic rhythms. Criticism followed Diab for years, his challenges to the Arabic entertainment establishment – from hairstyle and appearance to music style, presentation, and financial project scale – earning as much criticism as praise. His venture into music videos, the first Egyptian artist to do so, was met with rebuke from several circles, as their groundbreaking bombast unnerved some. But one thing that has never been questioned is his talent. In 1997, he won three awards at the Annual Arabic Festival, earning nods for Best Video, Best Song, and Best Artist of the Year. The following year, Diab received a Triple Platinum Award for the sales of Nour Alain and also received a World Music Award in Monaco. He’s maintained his staying power as well, with El Lilade topping the Arabic music charts for 22 weeks in 2007, earning him a slew of further honours, including another World Music Award for Best Selling Middle Eastern Artist. Opening this month, the first major survey of Damien Hirst’s work ever held in the UK can be visited at Tate Modern. Sponsored by the Qatar Museums Authority, the exhibition will provide a journey through two decades of Hirst’s iconic works. It will also form part of the London 2012 Festival, the culmination of the Cultural Olympiad. One of the most prominent artists to have emerged from the British art scene in the 1990s, Damien Hirst first came to public attention in London in 1988 when he conceived and curated Freeze, an exhibition of his own work and that of his friends and fellow Goldsmiths College students, staged in a disused London warehouse. The exhibition brings together over 70 of the artist’s works, including sculptures from the early 1990s such as The Physical Impossibility of Death in the Mind of Someone Living, in which he suspended a shark in formaldehyde; and Mother and Child Divided, a four-part sculpture of a bisected cow and calf. Also on show will be important vitrines, such as A Thousand Years (1990), in which the cycle of life is represented by a cow’s head, flies, and insect-o-cutor. a room-sized representation of a real pharmacy. To accompany the exhibition, the artist’s iconic diamond-covered skull For the Love of God (2007) will be shown in the Turbine Hall. Presented as a free display to coincide with the opening 12 weeks of the Damien Hirst exhibition, the work will be housed in a special viewing room from April 4 to June 24, 2012. Cabinets displaying rows of pills, instruments, and medical packaging will also be on display, as well as paintings made throughout Hirst’s career from his spot, spin, butterfly, and fly series. In addition, two major installations will be on view: In and Out of Love (1991), an installation with live butterflies, which has not been shown in its entirety since its creation; and Pharmacy (1992), For the Love of God is a life-sized platinum cast of an 18th century human skull, covered by 8,601 flawless diamonds, and inset with the original skull’s teeth. At the front of the cranium is a 52.4-carat pink diamond. A reminder of the fragility of life, the work can be viewed as a glorious, devotional, defiant, or provocative gesture in the face of death itself. International Dance Day is officially April 29 every year, to commemorate the birthday of Jean-Georges Noverre (1727-1810), the creator of modern ballet. The celebration at UNESCO will take place on April 25, 2012, with the World Dance Alliance, International Theatre Institute (ITI), and its Dance Committee. Born of Flemish-Moroccan parents in Belgium, multi-award-winning choreographer Sidi Larbi Cherkaoui has a creative base at Toneelhuis in Antwerp, and is also an associated artist of Sadler’s Wells in London. For several years he was part of the Les Ballets C de La B collective. In 2010 he launched his company, Eastman, which is in residence at Toneelhuis. His 2010 show Babel, choreographed together with Damien Jalet, triumphed at the Laurence Olivier Awards 2011 winning Best New Dance Production, and Outstanding Achievement in Dance for the set design by Antony Gormley. “I like to think of a dance performance as a celebration of co-existence, a way to give and make space and time for each other. Oryx April 12 insight 47 Award-winning wildlife cameraman Doug Allan was determined to find out if orcas – killer whales – really did work co-operatively by making waves to swamp ice floes and knock seals into the water where they could be easily picked off. Words by Ron Toft, photography by Doug Allan “I had first heard about this behaviour way back in 1976, but details were sketchy and pictures non-existent.” While filming in the Antarctic for BBC TV’s Life series, Doug actually witnessed this behaviour for himself; but the seal escaped “and the sequence was frustratingly unresolved”. The following season, however, while working on the frozen continent again – this time for BBC TV’s recently screened blockbuster Frozen Planet series – fortune smiled on Doug, his fellow cameraman, and the two marine biologists who were tagging orcas to shed light on their movements. polar filmmakers of his generation. “During a three-week period in Marguerite Bay, we saw a staggering 150 waves generated by orca pods and 23 attacks on seals. What’s more, we filmed nearly every one of them! The first adult book Doug read, when he was 10 or 11, was a condensed, Reader’s Digest version of Jacques Cousteau’s The Silent World. “It was that kind of excitement, that raw physicality, that led to everything I’ve done.” “Obtaining definitive proof of a unique, almost mythical behaviour for the first time is the sort of thing that comes along perhaps only once in a lifetime.” During the past 35 years, Doug has worked extensively in the earth’s ‘freezers’, making him one of the most experienced Doug dived throughout his marine biology BSc degree course at Stirling University in the ’70s. “I learned enough about science to know that working at the sharp end of it wasn’t really for me.” He also knew he didn’t want to work at a desk or in a laboratory. oryxinflightmagazine.com 48 insight B “Doug Allan seems to be immune to most of the limitations that govern other human beings” – Sir David Attenborough Oryx April 12 insight Fascinated by an article in a diving magazine about the work of the British Antarctic Survey (BAS), Doug applied for a posting with the organisation, but was unsuccessful. “At the same time I was turned down, I was offered a diving job in the Red Sea. While there, I was contacted again by BAS and told an unexpected vacancy had cropped up. One of their diving officers had pulled out a year-and-a-half into a two-and-a-half-year posting on Signy Island. Was I interested in taking over from him? I didn’t need asking twice!” Doug was blown away by the frozen continent – the landscapes, the wildlife, and the photographic opportunities. A succession of other BAS contracts saw Doug spending more and more time in the Antarctic. It was while working there in 1981 that he first met legendary TV wildlife broadcaster Sir David Attenborough. “I saw very clearly for the first time that wildlife filming involved so many things that turned me on. It seemed to be worthwhile, it involved travelling, there was a glamorous, adventurous aspect to it, and wildlife filmmakers were a great bunch of people.” Doug has a thing about big animals, especially big mammals. “They are charismatic, easier to film than small creatures, and generate good footage,” he says. “What’s more, you can develop a relationship with a big mammal. Don’t ask me to explain what I mean – it’s just an understanding, mutual respect, an affinity of some sort. It’s an indefinable something that passes from the mammal to the cameraman and vice-versa. “In polar regions there is nowhere to hide, either above or below the ice, so you have to move slowly and carefully, always keeping a respectful distance from the mammal you are filming so it doesn’t feel threatened. This ‘camaraderie’ doesn’t always work, however, for all creatures are individuals. Like us, they have both good and bad days. The skill is in recognising their moods and knowing when is a good time and when is a bad time to take things to another level.” the bear in the water was just lovely. We knew we had something special.” Ones to watch Doug Allan’s first book – Freeze Frame: A Wildlife Cameraman’s Adventures On Ice – was self-published in February 2012 at £25 (US$40) in hardback. It’s a portfolio of 70 long and short illustrated stories. “Every picture tells a story,” says Doug. “I’ve just given the ones in my book a chance to tell theirs.” www.dougallan.com One close encounter of a mammalian kind that still brings Doug out in a cold sweat was when a walrus, sporting half-metre-long tusks, held him in a vice-like grip with its flippers. Instinctively, Doug thumped the juvenile with both fists and “kicked like hell. I certainly didn’t hang around to see what it would do next! If the walrus had reacted to my blows by tightening its grip and dragging me under the water, I would have been history.” Another assignment involved securing underwater footage of a swimming polar bear. “Initially we didn’t have much success. Finally, we got a day when everything fell into place. We came across a swimming bear that we were able to approach very closely. “Most bears veer away from you when you head towards them, but this one was different. I filmed the bear using a remotely controlled camera attached to the tip of an eight-foot pole. The reflection of 49 Award-Winning Doug has filmed sequences for some of TV’s biggest and best-known wildlife documentaries, including the BBC’s critically acclaimed series Frozen Planet, Ocean Giants, Blue Planet, Planet Earth, and Life. He has won four Emmy and four BAFTA awards, as well as several Wildscreen Pandas. Down the decades, Doug has been chased by only a couple of polar bears – luckily not far from the safety of his cabin. “They are formidable predators and can touch 30kph when they need to, albeit for a very short period. Polar bears commonly investigate research base cabins because they can smell cooking and suchlike. We always alarm the area around cabins – not so much for our personal safety but to keep bears away from our skidoos. Given the chance, they may chew handlebars and eat the seats. The last thing you want to find in the morning is a knackered skidoo!” One of Doug’s ambitions is to make a series of films showing how top wildlife cameramen obtain the footage that enthrals audiences all over the world. “The programmes would profile different types of filmmakers, including an underwater specialist, a time-lapse expert, and someone who uses big lenses in Africa. Each would be given a filming task – something they had always wanted to do but with a little bit of jeopardy involved. And as they tackled that task, they would have a camera crew looking over their shoulder.” This year promises to be a memorable and busy one for Doug. “I’ve been to Antarctica again, I’ve received my second Polar Medal at Buckingham Palace from HRH The Prince of Wales, Freeze Frame has been published, and I am undertaking a Life Behind The Lens lecture tour in support of my book. Not, that is, unless you take the back road. Words by David Abram Delhi, India’s effervescent capital, is on a roll. With its ritzy new Metro line, air-con mega-malls, and mountain ranges of glass-sided skyscrapers, the city has seen a dramatic transformation over the past couple of decades. Yet for all its futurism, the past is never far from the surface in this most ancient of metropolises. Medieval Afghan gateways crumble on intersections; onion-domed Sufi tombs huddle under flyovers; and stone walls from the age of the Mahabharata litter the fringes of parking lots. Delhi’s present incarnation is merely the latest in a long evolution of seven successive cities spanning three-and-a-half millennia, from the implacable red sandstone seat of the British Raj to the semi-mythic Indraprashtra, founded in 1450 BC. The most resplendent of all of these, however, was the one constructed by the Mughals on the banks of the River Yamuna, where in the 1630s Emperor Shah Jahan erected the mighty Red Fort, or Lal Qila. From the fort’s shield-shaped crenellations, you can gaze down the hectic thoroughfare immediately in front of it, Chandni Chowk, to the geometric carpet of flat, concrete rooftops where the Mughal city of Shahjahanabad once stood. A still more astounding view extends from the 40-metre minarets of the mosque dominating the skyline to the southwest, the mighty Jama Masjid, whose vast central courtyard accommodates 30,000 worshippers who gather for prayers at Eid. The Mughals were ousted by the British, but their culinary legacy endures in the narrow streets radiating from the great mosque, where in winter local cognoscenti come in search of a dessert once served in the courts of the emperor oryxinflightmagazine.com 52 delhi to mumbai Ahilya Fort South of Mandu on the banks of the Narmada River at Maheshwar, the warrior-princess Ahilya Bai founded a fortress in the 18th century. One of her descendants still lives in the sandstone citadel and has transformed the building into a heritage guest house. © Arun Sagarspark /flickr – daulat-ki-chaat – a heavenly froth whipped from creamy buffalo milk, saffron, sticky raw sugar cane, and pistachio, wrapped in pounded silver and served in a leaf bowl. The Ahilya Fort is a masterpiece of understatement and traditional style. Antique doors open on to plant-filled courtyards festooned with scented creepers. Exposed beams, distempered walls, and locally woven textiles lend an earthy feel to the rooms, some of which have wonderful jharokha balconies suspended over the water – the perfect vantage point for watching life on the waterfront, where Hindu pilgrims take cleansing dips in the river at dawn and dusk. Palaces and Tigers Half a day’s journey southwest of Delhi is the flamboyant capital of the Mughal’s principal Hindu allies in India, Jaipur. Founded by the Rajput King Jai Singh in the 18th century, the ‘Pink City’, capital of modern-day Rajasthan, takes its nickname from the salmon-coloured hue of its old walled centre. The streets are no less frenetic than Delhi’s, but the city as a whole retains a more authentically Indian feel, with camels plodding through the traffic and flocks of parakeets wheeling above roofscapes of domed palaces. Its most photographed building is a graceful, seven-storeyed façade called the Hawa Mahal, or ‘Palace of Winds’, behind whose delicate, pierced-stone windows the ladies of the court used to observe life in the street market below. On the northern outskirts, Amber is the jewel in the crown of the region’s royal abodes – a fantasy fortress-palace clinging to the rim of a sheer escarpment. Elephants painted in swirling pastels transport visitors uphill to the main gateway. Inside, a series of interlocking courtyards and apartments enclose ever more exquisite chambers, or mahals, plastered in elaborate mirrorwork and murals, with cusparched windows opening onto dreamy vistas of hills and desert. As many of the palace’s wall paintings illustrate, the Maharajas who built Amber were keen hunters, and one of their favourite tiger-stalking spots was a tract of low hills, grassland, lakes, and forest a day’s ride to the southeast, known as Ranthambore. Today, the former royal reserve is protected as a national park. It is one of the last places in India where you’re guaranteed a sighting of a wild tiger, and the only one where the big cats sprawl under domed cupolas on the lakeside, or splash after chital deer through lotus blooms in the shallows. The pair, it is said, loved to while away their evenings in the domed pavilions erected on the palace’s rear terrace, as the sun set over the chequerboard of mustard fields and mango orchards spread across the valley floor below. The Western Ghats After a day’s bumpy drive southwest from Mandu, the great, flat-topped ramparts of the Western Ghat mountains loom into view on the western horizon, tracking the limits of the Deccan 53 Plateau. Over the past decade, an unlikely cash crop has been introduced to this wild country. It may be an exaggeration to call it the subcontinent’s Napa Valley, but grapes thrive in the tropical climate of the countryside around the city of Nashik, in Maharashtra state, and a handful of pioneering vineyards have sprung up in the area to supply the burgeoning demand among India’s affluent classes for wine. Production in the 40 or so wineries established here doubles every three years, and quality is increasing with every vintage. Delhi empty expanses of scrub. In the 14th century, a dynasty of Afghan warlords carved out a kingdom from this inhospitable terrain, founding a city high above the banks of the Narmada River at a place now known as Mandu, near Indore. The weed-choked tombs, tumbledown palaces, and deserted mosques surviving today barely hint at the splendour of the former capital, Shadiabad, ‘City of Joy’. But few archaeological sites in India preserve as much mystique. One spot, in particular, stands out for its romantic setting. For longer journeys, however, Indian-made ‘land cruisers’ such as the Chevrolet Tavera or Toyota Qualis can be hired from Kalka Travels (www.carrentaldelhi. com), and Avis (www.avis.co.in). Opt for a package with a driver – Indian roads are not for the uninitiated. “HKV” Hauz Khas Village Set deep in the leafy green belt of affluent south Delhi, Hauz Khas Village (HKV) offers a typically Indian mix of ancient ruins and top-drawer shopping. The enclave, built around the 14th and 15th century remains of the Second Delhi Sultanate, holds a fascinating collection of medieval tombs, madrasas, and a large water tank. But it’s the chic boutiques and café stores that most Delhi-wallas come for, many of them housed in characterful old period buildings. This is also one of the best places in the city to shop for antiques, ethnic jewellery, and the latest salwar kameez (tunic-andtrousers garment) made from traditional blockprinted textiles. If you really feel like splashing out, rent one of the Maharaja of Udaipur’s classic or vintage cars for the trip, such as a 1947 Buick or 1955 Cadillac, available though Sarthi Travels and Tours, Udaipur (www.sarthitravels.com). City Palace, Udaipur One prominent brand, Sula, even boasts its own Californiastyle tasting complex, concert amphitheatre, and boutique spa, where ‘beautiful people’ from the city come for weekend tasting trips. megalopolis The phenomenon is symptomatic of a country whose economic rise over the past 15 years has been meteoric – a boom spearheaded by the megalopolis sprawling along the coast on the far side of the mountains from Nashik. India’s largest city and financial centre, Mumbai (formerly known as Bombay), is a city often bypassed by visitors, but it’s worth bracing the heat and fast-paced traffic for a glimpse of its grandiloquent British buildings to watch a Bollywood blockbuster in one of its splendid Art-Deco cinemas, or mingle with the rivers of commuters streaming Victoria Train Station, Mumbai through the city’s awesome 19th century railway stations. Moreover, although it has become a byword for modernity, Mumbai holds one of the great treasures of ancient India. On Elephanta Island, an hour’s boat ride across the harbour, long-forgotten Hindu kings hollowed cave temples from cliffs of solid basalt, decorating them with sensuous deities, demons, and mythical beasts. Elephanta’s pièce de résistance is a spellbinding triple-headed Shiva. Chubby-lipped, heavy-eyed, and fierce, the sculpture represents the three aspects of Hinduism’s wrathful god. It is an image that stays with you long after you leave it, and whose essential power somehow encapsulates the boundless drive that has always defined this gloriously multi-faceted country, from ancient times until the cyber era. العاصمة الهندية المتألقة دلهي ازدهار ًا كبير ًا هذه األيام ،حيث شهدت المدينة التي تتباهى اآلن بمترو األنفاق الفخم الجديد ،وناطحات السحاب بواجهاتها الزجاجية والتي تغير ًا تشبه لكثرتها سالسل الجبالُّ ، جذرياً خالل العقدين الماضيين. وبالرغم من معالمها العمرانية مستقبلية الطابع ،ال زالت هذه المدينة العريقة التي تضرب جذورها في أعماق التاريخ القديم محتفظة ببعض أروع معالمها التاريخية. بوابات أفغانية ويشاهد زوار دلهي ّ متداعية من القرون الوسطى عند مقببة تقاطعات الطرق ،وأضرحة َّ ألولياء صوفيين في ظل جسور خرسانية ،إضافة إلى أطالل أسوار حجرية تعود إلى عصر ملحمة “ماهابهاراتا” الهندوسية تحيط بمواقف المسماة “الل الحمراء” المنيعة ّ قلعة” في ثالثينات القرن السابع عشر. ويستطيع المرء حين ينظر عبر فتحات سور القلعة ،مشاهدة حي “شاندي شوك” المزدحم أمام القلعة مباشرة بأسطح منازله الخرسانية التي ُمرقَّ طة ومتناسقة تبدو وكأنها سجادة َ هندسياً والواقعة في نفس المكان الذي كانت تشغله مدينة َ “ش َجن أباد” المغولية في الماضي .ويظهر مشهد بانورامي آخر مذهل حين نطل على المدينة من مآذن “مسجد الجمعة” الضخم التي تقف شامخة على علو 40 متر ًا لتهيمن على األفق المعماري الجنوبي الغربي للمدينة .وتتسع الباحة المركزية للمسجد لنحو ثالثين ألف مصل في صالة العيد. ورغم أن البريطانيين أسقطوا حكم المغول إال أن مطبخهم العريق ال يزال في كل مكان ،وفي األزقة الضيقة المتفرعة عن المسجد الكبير المكتظة بعشرات المطاعم وأكشاك الطعام ومتاجر الحلويات التي يبحث الذواقة المحليون في الشتاء عن فيها ّ حلوى “دولة – كي – شات” التي كانت تقدم يوماً ما في القصر اإلمبراطوري، وهي عبارة عن مخيض رغوي ِ القوام يصنع من حليب الجواميس وال َّزعفران وسكر قصب السكر الخام والفستق الحلبي ملفوفة بأوراق فضية رقيقة وتقدم في قصعة من أوراق الشجر. قصور ونمور باالنتقال إلى الغرب من دلهي في رحلة تستغرق نصف يوم ،تجد مدينة “جايبور” المزدهرة التي كانت عاصمة الهندوس الحلفاء الرئيسيين للمغول في الهند .وتستمد “المدينة الوردية” التي أسسها “جاي سينغ” ملك مقاطعة “راجبوت” في القرن الثامن عشر ،والتي أصبحت اليوم عاصمة والية “راجستان” الهندية ،اسمها من وسطها المحاط باألسوار القديمة ذات اللون المائل إلى الوردي .ورغم أن شوارع هذه المدينة ال تقل صخباً وازدحاماً عن شوارع دلهي ،إال أنها تتميز بطابع هندي أصيل ،حيث نشاهد الجِمال تخترق الشوارع الببغاوات ترفرف فوق وأسراب من َّ أسطح القصور المقببة .إال أن أكثر معالم المدينة استقطاباً للتصوير هو قصر الرياح The palaces were originally noble residences built in a Baroque style with ornate façades. Ferstel is today home to Café Central, the Olivarium deli, and French restaurant Beaulieu, amongst others. Other arcades include Palais Harrach for handbag boutique Bree, and Palais Dietrichstein for the Doblinger, one of Europe’s largest purveyors of sheet music. As Vienna celebrates what would have been the 150th birthday of the artist Gustav Klimt, a major cultural programme of exhibitions across the city is getting under way. Words by David Atkinson “It all just came together in Vienna around 1900,” says Kerstin Krenn of the Wien Museum. The assistant to the curator is standing next to Klimt’s 1902 portrait of Emilie Louise Flöge, the fashion boutique owner who became his lifelong companion. “Vienna is still best known for this period in its history, the collision of tradition and modernity, even though the other periods were as important to the life of the city,” she adds. The museum is hosting Klimt: The Wien Museum Collection from May 15 to September 16, one of ten Klimt-themed exhibitions in Vienna this year. The scale of the programme is testimony to Klimt’s legacy as the defining figure of the era. His face adorns billboards around the city, and images of his best-known works are everywhere from T-shirts to tea towels. For someone born in 1862, he appears very much alive. He is also omnipresent through physical manifestations of his work. A walking tour of Vienna’s central First and arty Sixth districts takes in a slew of buildings touched by Klimt’s hand. It is an ideal way to soak up the atmosphere of turn-of-the-century Vienna and appreciate Klimt’s developing style from his youthful irreverence to the mature, gold-leaf ornamentation of works that now command huge prices at international auction. It has around 800 coffee houses, of which 150 are ‘classic’ venues where the waiters still dress in black, the tables are marble-topped, and the atmosphere quietly refined. Some are also concert cafés, where coffee drinking is accompanied by piano music. In particular, the image of a nude Egyptian queen raised eyebrows at the time. The museum hosts Klimt at Kunsthistorisches Museum, an exhibition of works from Klimt’s middle period, until May 6. The Kiss (1908) Finally, Vienna takes its coffee very seriously. Popular varieties include the Melange, a mocha with steamed milk and foam, and the Einspänner, a large mocha with lots of whipped cream. Workers renovating the museum in the late 1990s subsequently uncovered rare sketches by Klimt for these ceiling paintings. These conceptual drawings are now on display in a dedicated Klimt room, a visit to which is included in the guided tour of the theatre. Nearby is another example of the young artist’s early works: the 1890 commission for the stairway of the Kunsthistorisches Museum. Café Museum is known as the favourite hideaway for the Belle Époque crowd – Klimt and his contemporaries gathered there. They also gathered at Café Spell, one of several coffeehouses restored to their former glory in the 1980s. For something more contemporary, Café Drechsler first opened in 1919 but was remodelled in 2007. A live DJ replaces the pianist several nights a week. to paint frescoes over the twin stairways of the Burgtheater. The pictures were to depict the history of European theatre, and the trio of young artists created a series of huge ceiling images, including the death of Romeo and a scene from Shakespeare’s Globe Theatre in London. Klimt even included his only self-portrait in the latter, a tongue-in-cheek image of the young man in an Elizabethan ruff collar. Courting controversy By the early 1890s Klimt’s style as an artist was evolving. He wasn’t afraid to court controversy as an artist, and his rebellion against the forms of classical art forced him to renounce a major commission for the University of Vienna in 1894. Instead of retreating, however, he went on to become a founding member of the Secession, a co-operative of young artists opposed to the stuffy art establishment, in 1897. The Secession building, one of the best-known examples of Viennese art nouveau, remains an independent exhibition space for new art movements with its white façade and gold-crowned dome. Klimt submitted two designs for the building in 1897, and the slogan above the main entrance reads: ‘To every age its art, to art its freedom’. Klimt’s 1902 Beethoven Frieze, a sprawling work dedicated to the composer Ludwig van Beethoven’s Ninth Symphony, remains on display in the basement gallery. Nobody was indifferent to him,” says Beate Murr, of the MAK Collection of Contemporary Art, who curates the exhibition Gustav Klimt: Expectation and Fulfillment (until July 15). The exhibition displays Klimt’s designs for the mosaic frieze to be displayed in the dining room of Stoclet House in Brussels. “Klimt is a bit overexposed at times but, when I look at the butterflies in the Stoclet Frieze, the precise quality of his work is the mark of a truly great artist.” This quality is most readily identified in The Kiss (1908). Klimt was fascinated with sensuality, and his depiction of Adam and Eve, adorned with woven patterns of gold, floral motifs, and kaleidoscopic colours, is said to be an attempt by Klimt to express the intensity of his feelings of love towards Emilie Flöge. The work takes pride of place today at the Upper Belvedere, surrounded by the largest collection of Klimt paintings in the world – 22 of his works, including many from his so-called ‘golden period’. The museum hosts the exhibition 150 Years of Gustav Klimt from July 12 to January 6, 2013. The Kiss, displayed on a blood-red background in the centre of the Klimt room, attracts the quiet reverence of a place of worship, while visitors talk about having an ongoing dialogue with the painting, the changing light throughout the day constantly reveals new details amid the swirling gold leaf. A lasting legacy Klimt died in February 1918 following a stroke. His friend and contemporary Egon Schiele, who would die the same year, aged only 28, sketched Klimt’s face in the mortuary, an image currently on display in the Leopold Museum as part of the exhibition Klimt: Up Close and Personal (until August 27). “The young will go their own way. Perhaps they will disregard me,” wrote Klimt. They didn’t. Stately Vienna still revels in its Belle Époque heyday, and Klimt’s legacy at the vanguard of the movement is more alive than ever. 23 Number of districts in Vienna, of which the Sixth district is considered the arts quarter and the First is home to all the major historical sites. 700 Hectares: the area of land under vine within the city limits. No wonder it’s a region where people, rich or poor, live by the maxim ‘one must eat well’. The Maghreb is blessed in having all of these in great abundance, resulting in one of the most resplendent cuisines in the world. Moroccan tagines cuisines, thanks largely to the influence of its imperial cities, which filtered into the home. The diffa (banquet) is designed to showcase the abundance and generosity of the court at its most decadent, and along with an array of salads, the feast will probably include b’stilla – a delicate flaky pastry pie filled with pigeon or chicken enriched with eggs and almonds, and dusted with cinnamon and sugar; mechoui – a well spiced lamb cooked whole on a spit and then dipped in bowls of freshly ground cumin and salt and eaten with the fingers; tagines, which could take the form of anything from djej emshmel – slow-cooked chicken infused with olives and preserved lemons – to the lamb, prune, and sesame stew that cookery writer Paula Wolfert describes as looking when served, ‘like a starry night’; and of course the tender, fluffy couscous steamed above it, followed by platters of fresh and dried fruits, and cakes and pastries enriched with almonds and flower waters. Algerian cuisine has strong Berber and Ottoman Turkish influences and is generally more rustic and hearty than that of its neighbours. Its version of chakchouka, for B Exotic staples range from pomegranates and preserved lemons to chilli peppers and couscous. oryxinflightmagazine.com © Tim Lucs /flickr 72 maghreb © Giampaolo Cianella /istockphoto Souq al Turk, Tripoli example, comes from the Chaoui tribe in the Aurès mountains, and comprises shredded rougag (the native flat bread) topped with an earthy lamb and chickpea stew (elsewhere shakshuka features a rich tomato sauce with eggs poached in the top, and is eaten for breakfast). The national dish of couscous studded with raisins, saffron, and fresh mint tends to stand alone, while stews and main dishes are scooped up with semolina kesra, a flat bread baked in an earthenware pan that creates a distinctive pockmarked appearance. Tunisian food is defined by its heat and piquant sauces. Harissa – a spicy, chilli pepper paste – is used much like tomato ketchup in northern Europe – on everything; kerkennaise blends capers, tomatoes, coriander, garlic, and parsley to serve with fish and seafood, while mloukhia, the local version of salsa verde, is served with tender slices of lamb and beef. Flavour combinations tend to be punchy rather than long-cooked and mellow, which gives Tunisian cuisine a distinctive freshness. Benghazi Benghazi is the second biggest city in Libya. Located on a lagoon that opens onto the Mediterranean, it occupies an enviable position surrounded by white sand beaches and pristine water fringed by palm trees. It was originally an ancient Greek settlement associated with the mythical gardens of Hesperides – a sort of paradise tended by nymphs – due to the lushness of the Jebel Akhdar, literally ‘the Green Mountain’ just north of the city. It later became an important Roman city, and although Benghazi is now mainly Muslim, the atmosphere of its heritage continues to permeate the fabric of the place. Central Benghazi is where you will find the best shopping, sights, restaurants, and hotels, along with an eclectic architectural landscape ranging from the former residence of Omar Pasha Mansour El Kikhia (now the Baital Medina al-Thaqafi museum), an excellent example of residential Ottoman architecture, to the domed Benghazi Cathedral built in the 1920s during the Italian era. For sheer atmosphere the medieval medina with its Maydan al-Hurriya (Freedom Square) and the covered Souq al-Jareed where you can snack on local street food such as fil fil mashi (stuffed peppers), and the Italian quarter famed for its pasta dishes such as megetta (a thicker, freshly made spaghetti) cooked in tomato sauce, are not to be missed. Shakshuka Crowd-pleasers like brik – deepfried savoury pastries – and the country’s famed doigts de fatma – deep-fried spring rolls stuffed with prawns, capers, preserved lemon, ricotta, and harissa – are more reminiscent of Asian cookery than anything else. By contrast Libyan food enjoys an especially strong Italian influence from the days when it was an Italian colony. If couscous provides the backbone to nourishment elsewhere, pasta is an equally important staple here, ranging from a spicy Bolognese-style sauce over hand-cut spaghetti noodles called megetta to more elaborate pasta squares steamed over chunks of lamb and chickpeas. Tunisians are B Nothing is more important to a Maghrebi host than sharing the bounty of his table. Oryx April 12 also big grazers, their version of mezze or tapas being kemia, which might comprise a small bowl of shorba (soup) and a selection of appetisers such as stewed baby octopus, merguez (spiced sausages of lamb or beef), a selection of vegetable salads and mb’atten – sliced potatoes stuffed with meat and herbs and fried. Like most cuisines, the more layers you peel away the more you discover. And as the region develops, a modern take on its cuisine will no doubt emerge. At the entrance to the jetty is an iconic and much-photographed pearl oyster sculpture. Rumaila Park is located opposite the Corniche. It is hugely popular with city dwellers, especially in the evenings in the cooler months, when the lawns are covered with picnicking families. Before oil production began 60 years ago the population was around 25,000; now it nudges 1.7 million, and continues to grow as the country expands into areas of business, education, sport, and leisure. For centuries nomadic Bedouin wandered the gravelled plains of the interior with their sheep and camels, while coastal people fished for pearls – the main source of Qatar’s pre-oil wealth. Get on a bike instead: the Velib system (taken from the French words for bicycle and freedom) is among the best anywhere. There are 20,000 bicycles available across the city for just a few euros. The tourist office supplies a free map detailing all the stations, where machines have instructions in several languages. Bicycles are free for the first half-hour, then a small fee is charged even for several days of use. Bring your own helmet – they aren't supplied, because French law doesn’t require you to wear one. Admire the city’s passing buildings, but take a spin through its street life, past cafés and parks and department stores, and the city really comes alive. The surrounding countryside also has plenty of mountain biking trails. For the best view over town, ask how to get to the Valhalla Curve, where the mountains inspired Norwegian artist Edvard Munch’s most famous painting, The Scream. Then Utoquai heads along the lakefront past promenades lined with purple and yellow pansies, while Mythenquai takes you right out along the western shores of the lake and into the wooded countryside. In Zurich, the Hauptbahnhof (main train station) does the same for just CHF27 per day. The city also has some 300 bikes available between May and October at various points around the city. They’re completely free of charge; all you need is a valid ID and CHF20 refundable deposit. WHERE Some 100 Oslo Citybike stands around the central area allow you to borrow bikes for up to three hours. WHY Oslo is a very outdoors city in summer, with plenty of parks and scenic coastal routes ideal for cycling.
