This issue of TriadWeddings is sure to get your creative juices flowing as you plan your own fairytale wedding. We

the perfect Southern Soirée! Known for her vintage, super-Southern and eclectic project ideas, Leigh
demonstrates how to think outside the box while still adding lots of personal touches by making each detail
unique and your own (beginning on page 24). We also fell in love with this outdoor bridal shower thrown for bride Rachel Cox. Rachel was an English major in
college so with the help of Melissa Lewkowicz, owner of Events By Design, the shower was themed around books, words,
and quotes, with a nice dash of color so the setup would stand out against the trees. Check it out beginning on page 28.
You’ll also meet local rental companies ready and waiting to create the perfect setting for your wedding,
and even help you save money in the process (beginning on page 40). From brand new tents, tables, chairs, china,
glassware, flatware, linens, stages, dance floors, lighting and candelabras to benefits including easy cleanup and no storage
hassles, hiring a rental company can make a huge, stress relieving difference in the lives of the bride and groom.
So, sit back, take a deep breathe and get ready to be inspired as you begin planning your own dream wedding. Real Triad

A Southern Soiree’
DIY Inspiration Perfect for any Southern Celebration!
By Leigh Pearce, Leigh Pearce Weddings | Photography by Elizabeth Larson Photography
Before choosing colors and a design for any project, I select a venue. For this Southern soiree’, I chose
the beautiful Willow Oaks Plantation because of its rolling hills and picturesque views. It’s important
to choose a venue that is already esthetically pleasing and goes with the style of event you’re planning.
Don’t make your venue work with your wedding style; make your style work with your venue! 24 | www.TriadWeddings.com
Wedding Style
After selecting Willow Oaks Plantation, the first thing I did was create an inspiration board of design ideas that would work
well in the beautiful antebellum setting.
The tablescape was based around a clean, simple color palette with pops of color. I visited Dolce Dimora and choose
an ivory linen with delicate detailing and a smoky blue-grey border that was understated and elegant. I then picked an
eclectic mix of fine china chargers, dinner plates, and cake plates in cream and robin’s egg blue. The hammered flatware
and cutlery, provided by Partymakers, was a perfect match to the china because of its rustic simplicity. The last piece of the
design puzzle from Dolce Dimora was a silver set of salt and pepper shakers shaped like birds to add a touch of whimsy
and interest to a typically mundane and standard part of a dining table.
In my opinion, chairs are the skeleton of a successful tablescape design. So, it was a no brainer when Partymakers
mentioned they had just purchased some new mahogany chiavari chairs.

Rustic, homemade chalk boards replaced traditional escort cards and directed
guests to their tables. Tip: when you DIY your own chalkboards, spray the
chalk with hairspray to avoid smudging. The last piece of the tablescape puzzle
and the most important in terms
of design was the flowers! With the
talents of the team at Just Priceless, we
showcased a mix of flowers in cream,
buttery yellow, peach, and pale pink.
Just Priceless also provided an eclectic
mix of mismatched vases. Each vase
had a unique touch – lacy appliqués,
pink velvet ribbon, and bronzed wire
flowers – which added the perfect
touch of whimsy.

”
There are a few keys to successfully designing and
planning the perfect Southern soiree. It’s so important to think outside of the box while honoring
some of your favorite family traditions. Add lots of
personal touches by making each detail unique and
your own. Lastly, enjoy the process! You only get
married once, so why not have fun doing it!? About Leigh Pearce
Leigh Pearce Weddings serves the Triad and its
surrounding areas with professional wedding

design inspiration comes from anything vintage
and we love a good ol’ fashioned Southern
wedding. There’s nothing traditional about us, but
we know all the etiquette tips and tricks in order to

“I begin planning the design for a wedding or event by

The maid of honor had already selected an idyllic clearing

Can a Chevy pick-up truck symbolize a marriage?
For newlyweds Jamie Stroud and Brady Wittkamper, it can. And, it bodes well. A pick-up is sturdy, solid, there
when you need it. A trusted companion. Ready to get you through the toughest situations. The pick-up featured
prominently in the Wittkampers’s wedding photos is a family heirloom. The 1976 Chevy belonged to Jamie’s great
grandfather, Wesley Poplin, before being passed down to her grandfather, Vernon Poplin.

It’s still in the family and parked on the farm. And now, it’s been
enshrined in family lore since it’s the backdrop for Jamie’s stunning
and unexpected bridal portrait.
Just as special as the family truck is the location where the shots
were taken. The picturesque setting is the Poplin family farm in
eastern Wilkes County. Once home to Jamie’s late grandparents,
Patty and Vernon Poplin, it is now where Jamie and Brady have
started their life together.
Crucial to getting the perfect shot was photographer Kathy Miller
of One Shot Photography. “Kathy is full of ideas,” said Jamie. “And
I had a few of my own.”
Jamie discovered Kathy’s work at Southern Bride, where she found
her wedding dress. After checking out her website, Jamie knew Kathy
was the right choice.
“I had always dreamed of doing outdoor bridal portraits,” she
continued. “The studio ones just aren’t me.”
The truck is fitting for another reason besides being an icon in Jamie’s
family: Brady is a race car assembly mechanic for Front Row Motorsports in Statesville, N.C. In fact, it was Brady’s love of racing that
brought him from his native Indiana to North Carolina. After attending
racing school in Sonoma, Calif., Brady took a job with Ganassi Racing
in Concord, N.C. A friend from work introduced him to Jamie, who was
looking for a date to her senior prom. She got more than a date to her
2004 prom; she also found her husband.
Fall/Winter 2011 | 37
Jamie and Brady were always in touch, if not always a couple, during the next
seven years. But, once they started dating seriously, they both knew. It took
just two months before Brady proposed.
The newlyweds love many of the same things: the outdoors (Jamie works
for the 4-H program with the Cooperative Extension Service in Wilkesboro),
dinners out, live music and working together on their “new” home which has
been in the family for years.
Their love for the outdoors was reflected in their outdoor wedding, which
Jamie describes as “rustically elegant.” The couple invoked rural simplicity in
their choice of green and white hydrangeas for their floral arrangements and
a color scheme of chocolate brown and “Niagara blue,” a color close to teal.
Any outdoor wedding calls for a Plan B, and Jamie and Brady planned to move
their ceremony to the reception tent if it rained. But, Plan B wasn’t needed.
“It was cold and rainy the entire weekend,” said Jamie. “And, suddenly Saturday
afternoon, the clouds broke and the sun shone through.”
Jamie and Brady had five attendants each, and they involved their young
nieces, nephews and cousins in the ceremony, too. Jamie’s bridesmaids wore
Alfred Sung gowns, which Jamie chose specifically for their “vintage feel.” In
fact, Jamie intentionally mixed what she calls “formal and country touches” to
make the ceremony and reception reflective of her and Brady. They’re traditional, family-focused and outdoorsy.

Jamie was born and raised in Wilkes County and said she was excited to show
off the beauty of the area to her and Brady’s out-of-town guests. You don’t
always have to travel far for a “destination wedding.” Sometimes, the destination
is the place you call “home.”

Partymakers | Kori Brazda Photography
Every bride and groom wishes
to have a memorable wedding,
but many couples are limited by
budget constraints. However, since
it’s always less expensive to rent
wedding accoutrements than to
buy, a professional party rental
company can help wedding couples
create magical memories without
breaking the bank.
“Styles and products are always changing
with the seasons; we can help keep
you ahead of the curve with constantly
updated merchandise. It’s an affordable
means to amp up your next private party
or reception,” explained Jon Stewart,
Let’s Party!
Great Reasons to Hire a Party Rentals Company
By Cindy Hodnett
director of sales for Hauser Rental Service.
“We have brand new tents, tables, chairs,
china, glassware, flatware, linens, stages,
dance floors, lighting, candelabras, and
much more,” said Emily Reynolds, an event
specialist and designer for Partymakers.
“Our variety of items helps us offer options
that fall within any budget.”
“Hiring a rental company, especially in this
economy, is a huge benefit,” explained Mark
Whitesell, general manager for Grand Rental
Station/Party Plus. “No one has the money to
purchase all the linens, china, glassware, etc.
for an event that might happen one time a
year or once in a lifetime.”
AVS Catering & Banquet Centre is a
caterer/banquet centre that also provides
access to party rental supplies. Justin
M. Lee, the banquet centre and rentals
manager explained, “We are a full service
catering company that also has a full
Happy Rentz
service rental department. We have our

own 8,000 sq. ft. banquet facilities, but we
can also bring everything we offer to the

customer’s location.”
Hauser Rental Services
Reduce Wedding Planning Stress
Most wedding couples agree that the convenience factor is a big consideration
when choosing a party supply rental company. For a happy event that can also
be very stressful, rental companies can make a huge difference in the prewedding lives of the bride and groom.
“There are major benefits to hiring a rental company,” Reynolds said. “The first is
that we offer delivery, set-up, tear down and pick-up, all of which give the bride’s
family more time to be together before and after the wedding. The second is that
no one has to clean dishes after the event! However, most important, renting is
cost efficient and environmentally friendly.”
Teri Hodgin of Happy Rentz agreed. She added that a professional party rental
company can also reduce pre-wedding preparation anxieties. “A good rental
company should have the sole goal of making this event easy and stress free,”
Hodgin said. “We ask many questions to find out what is going to make our
bride’s happy day a success. Easy and stress free is what it’s all about.”
“Hiring a rental company allows the party planner (bride) to focus on other
AVS Catering & Banquet Centre
aspects of the event,” said Mark Venable of Triad Event Rentals. “Knowing that
the logistics and details are being handled by an expert gives the bride peace
of mind and allows for a more enjoyable event. Let the expert handle the
details of the event and then sit back and relax.” Create a Custom Look
In addition to alleviating some of the stress associated with planning a wedding,
party rental companies can also help bridal couples create a signature ceremony
and reception. Rental specialists will work with the bride and groom to customize
party packages to complement the style of the couple.
“There are endless ways in which customers can use party rental accessories to
make their event unique,” Venable said. “What’s most important is to have an idea
in mind and don’t be afraid to think out of the box. Tents, custom linens, creative
lighting, various chair options and elegant china are just to name a few. Whether
it’s a simple wedding ceremony or an extravagant black-tie affair, the possibilities
Grand Rental Station
are endless.”
“Bring your ideas to the rental company,” Whitesell said. “If you have pictures
with something specific, that helps as well. We are in the business to make our
customer’s event special and to individualize it.”
“Set up an appointment to visit the rental company’s showroom,” Reynolds said.
“It’s important to look at the actual items in the warehouse that will be rented.
A couple should never book with any company unless they are satisfied with
their service and the quality of the merchandise.”
“There are various ways of using rental accessories to personalize the look and
feel of your event,” Stewart said. “Our staff is diverse and experienced, and can
offer you an array of advice. We have associates that make on-site consultations
at no charge to assist in preparing you for your event. We also have in-house
staff that can help you choose what décor will help you achieve the atmosphere
you are striving for.”

Getting Started
The options available through party rental
companies are as varied as the wedding couples
who choose them. All of the party rental specialists
Grand Rental Station
recommend that bridal couples start with an initial
consultation to see which rental company best
meets their needs.
“There are no specific requirements in regard to
hiring a rental company,” Venable said. “However,
you should book your event as soon as possible
after selecting your dates.”
“There are five months of the year that we absolutely recommend early planning – April, May, June,
September and October,” Hodgin said. “Everyone in
this industry is moving and a-groovin’ during those
months.”
“There is a limited number of rental companies; ask
about the availability of the items you are looking
to rent as soon as you can. Then you can sit back,
relax and watch the company help turn your event
into what you imagined.”Whitesell said.

Sarah & Neil
October 16, 2010 at Chinqua Penn Plantation
By Monica Young | Photography by Punam Bean
And the bride wore black. Simply because, in Sarah Franzheim-Chase’s grandmother’s
words, Sarah looks “like death on a pale horse in white.”
I tried on a lot of dresses in a lot of colors, including white. It just
“
felt odd to start my married life in a color I never, ever wear. I think
some of the older crowd was a little shocked. My dad, who was
afraid it would be garish, said it was very classic.
”
From the start, Sarah Franzheim and Neil Chase wanted a wedding that reflected their own sense
of fun and spontaneous style. They opted to forego many staid Southern wedding traditions and
actively sought vendors who embraced their vibe and vision for their special day. The couple, who
began dating (lust at first sight, Sarah exuberantly admits on her part) while students in 2005 at
Western Carolina University, planned their wedding for over a year.
They opted to hire an out-of-state photographer after visiting Punam Bean’s blog.
“There was just one photo I saw, and I just knew she would get us.”
Photography, according to Sarah and Neil’s rationalization, is the most important element since all
that is left are memories and photographs.

A myriad of mishaps and misfortunes could have ruined their special autumn day.
Just three weeks before the wedding potential problems with their chosen venue
arose. Wedding planners Susan Marie Cook and Summer Harpold of Coordinated
worked tirelessly to iron out issues while securing back-up facilities.
“On the very first wedding we did, we had to find a new reception hall the day of
the wedding. The pastor’s wife decided the night before the wedding that she didn’t
think secular music and dancing was appropriate in the fellowship hall. We took care
of it and thought that if we could handle this, we could handle anything,” said Cook.
This level of confidence, professionalism and listening to their vision made Sarah
and Neil feel comfortable with Susan Marie and Summer, who offer wedding

Sarah’s flowers, designed by Designs North Florist in Greensboro, surpassed
anything she dreamed that they could be. Lush red roses spiraled in a tight
arrangement that incorporated her late maternal grandmother’s locket, something
that Sarah opened and shut incessantly as a child. A gold elephant charm that
her paternal grandmother gave Sarah after taking her on a safari to Africa when
Sarah was 13 was also included. This personal touch ended up being even more
poignant than Sarah could imagine when planning the flowers.

”
Sarah felt the presence of her grandmothers in the singing of the birds as the Reverend
Robin Renteria pronounced Sarah and Neil as husband and wife.
While at first it appeared otherwise, luck was on Sarah and Neil’s side when it came to getting
a room at the luxurious Proximity Hotel in Greensboro before they jetted off to the British
West Indies for their honeymoon. When they made their reservations eight months before
the wedding, Sarah and Neil discovered that High Point’s fall furniture market would be taking
place at the same time; and no vacancies remained, even so far in advance. Sarah and Neil’s
names were put on a waiting list. Six weeks before the wedding an opening popped up, and

Sarah and Neil opted to forego the bridal bouquet toss, a garter toss or
traditional parent dances. Instead, they danced to a rendition of blues song
Taj Mahal’s “Lovin’ in My Baby’s Eyes” that Sarah’s songwriting cousin and uncle
adapted and performed. Fun-loving Neil promised Sarah 60 seconds of serious
for photography’s sake and then they spent the rest of the song twirling,
adding a few do-si-dos and laughing.
After visiting plenty of drive-through windows after less than satisfying
wedding receptions, Sarah and Neil knew that they wanted hardier fare for
their guests. So, they opted for fried chicken and pot roast along with other
soul food selections prepared by Above & Beyond Catering.
While the entire wedding was all Sarah and Neil hoped it would be, one special
moment stood out for Neil. Before the wedding, Neil and Sarah had a special
moment to see one another for the contemporary “first look” tradition. They
basked in each other’s preparations for the ceremony.
It was pretty amazing. It was a hint of a culmination
“
of a year and a half of planning.
”
Sarah, who her wedding planners say had the most specific vision of any bride
with whom they have worked, was not afraid to look beyond tradition. This
took finding vendors who appreciated her bold style.
“We loved working with them. We were so impressed with Sarah’s style and
choices. Everything meshed together,” said Susan Marie.
“I would advise brides to go with their gut when it comes to choosing vendors.
Don’t just go with the first vendor you meet, and don’t be afraid to change
if someone doesn’t get it. There are a lot of vendors who want to make you
happy and want to make you feel great about what you want,” said Sarah.

Another important reason to have a
bridal portrait done is because it gives
you the opportunity to do a trial run
through your entire “look” for your
wedding day. Make sure that your
hair and make-up look exactly how
you want them too. You may find that
despite how much you love that fire

classic color may work better with the
style of your dress. Many brides make
small adjustments to what they plan to

Aimee & Kyle
October 10, 2010 at Proximity Hotel
By Page Leggett | Photography by Carisa Chee Photography
Aimee Dorrell and Kyle Jackson’s marriage seems to have been preordained. The Dorrell and Jackson families have
known each other since Aimee and Kyle were four years old, but they didn’t start dating until college. And even
then, it happened almost by accident … like fate was nudging them together but wasn’t going to rush it.
Aimee and Kyle, high school classmates who didn’t know each other well, enrolled at

East Carolina University (ECU) in 2002. Aimee joined a sorority and needed a date for
a sorority event. Being new on campus, she hadn’t met many people. She thought,

The couple went out for breakfast and then walked around Duke
Gardens in Durham. (They were living in Raleigh at the time.) Kyle
found a bench suitable to his purpose and suggested they sit. He
got down on one knee, pulled out the engagement ring and asked
the woman he had known since childhood to be his wife.
Then, came the planning.
Many a groom has found himself stunned by the logistics involved in
pulling together a wedding. Kyle expresses the sensation most grooms
have felt when he said, “I had no idea how much was involved in the
wedding-planning process.” But, he had confidence in his bride and
her choices. As an assistant property manager at a student apartment
community, Aimee has to be good with details.
I knew with Aimee and her mom being
“
the planners they are, that everything would
get done, and the day would be just what we
wanted.
”
“I really wanted to be involved with choosing the photographer and
the music but other than that, I trusted Aimee to decide on all the
little details.”
The flowers are among those many details. The florists at Just Priceless
in High Point put some samples together, and Aimee chose daisies
and lilies in pink, green and white for the bridesmaids and a bridal
bouquet of assorted white flowers. For a natural touch twigs or small
branches were incorporated into the bridesmaids’ bouquets.
Aimee chose a color scheme right for the season – “spiced wine and
gray,” she said. Her seven bridesmaids dressed the part in knee-length,
halter-style dresses in a spiced wine color, which Aimee said was
“perfect for fall.”

Wedding Style
Finding a dress – one of the biggest tasks on any bride’s
to-do list – turned out to be a snap. “It was the first one I
tried on, and I just knew it was the one,” said Aimee.
The dress that seemed predestined to be hers was a onepiece, strapless, A-line gown with a sweetheart neckline
and corset closure. It featured a ruched bodice and gentle
gathering at the side skirt. Beaded embellishments and
Swarovski crystals added texture and sparkle to the neckline
and hip.
Choosing the place for the wedding and reception turned out to be easy, too.
We visited a couple of places, but the staff at Proximity Hotel
“
really made us feel welcome and showed a genuine interest in
us and what we wanted the feel of our wedding to be.
”
Aimee and Kyle, an illustrator/graphic designer, agreed the choice of their wedding photographer was crucial.
I think one of the most impor“
tant things to spend a good bit of
your budget on is photography.
The day goes by fast, and all
you will have when it’s over are
the pictures to look back on.
”
Kyle and Amy agree they made a great choice
in selecting Cari Chee, owner of Carisa Chee
Photography, as their photographer. “She was
amazing,” gushed Aimee.
“Tastes As Good As It Looks”
Actually, the whole wedding was amazing. Aimee said, “It was perfect – more
than I expected, and I don’t think I would have changed anything. Everything
went as planned, and all our vendors were on time and just as excited as we
were. The staff at Proximity made the day perfect.”
And, of all the planning that goes into making this day perfect – the dress
shopping, choosing the florist and caterer, finding the dress and veil – it all, in
the end, comes down to just one thing: who you’re planning to share the rest
of your life with.
In the end, Aimee’s most memorable part of the big day was a simple moment.
The most memorable part … for me was when
“
I turned the corner and saw Kyle’s face at the end of
the aisle. He was smiling from ear to ear and, even
though there were over 100 people there, all I saw
was him.

The Engagement Party
The Engagement Party is the traditional inaugural event to kick off the festivities. While the
bride’s family normally hosts this party to introduce the groom and his family to their family
and friends, the engagement party can also be hosted by friends, either of the family or of
the bride and groom. This invitation can reflect the personalities of the young couple or the
tone of the event itself. For example, a playful invitation such as Prentiss Douthit’s “ParTay”
or “Woo Hoo” could work very well for a relaxed event; a more conservative bordered card
from Faux Designs or a beautiful floral design from Odd Balls might be more appropriate for
a dressy cocktail party or dinner.

The Wedding Invitation
Benjamin Craig Stationers, Inc.
Several months before the wedding, the bride and her mother will need to begin researching invitations. There
is no better place to take care of this happy task than at a reputable stationery boutique where the staff is
well-versed in current papers and styles, printing techniques, fonts, budget management and etiquette both
for wording and navigating often challenging family situations. Wedding invitations should be sent six to eight
weeks prior to the wedding.
Parties Honoring
the Couple
Parties honoring the couple can range
from showers, picnics and backyard
barbecues to luncheons, teas and dinner
parties. Hosts for these parties may
choose a theme-related invitation for
their event, or they may choose one that
is more reflective of the couples’ tastes,
the time of year or the party’s venue.
In any event, the choice of invitation is
exclusively the hosts’. Those honoring a
couple with a party will always be aware
of and sensitive to preferences; therefore,
the bride and her mother should never
presume to insert themselves in the
selection of party invitations, unless they
are specifically invited to do so.
The Bridesmaids’ Luncheon
Benjamin Craig Stationers, Inc.
The Bridesmaids’ Luncheon normally takes place the day before the
wedding and can be hosted by friends of the family, the bride’s mother
or other family members. This event normally kicks off the wedding
weekend, and is a special time for the bride; her bridesmaids; other
wedding participants such as readers and program attendants; and her
family, including sisters, grandmothers, and aunts. The invitation for this
event should certainly reflect its joyful tone! Again, it can be playful,
featuring a colorful graphic of a bride and her maids, or it can feature
a more sophisticated floral design, a feminine border or a more serious
bridal graphic.

The evening before the wedding, the groom’s
parents traditionally host a Rehearsal Dinner.
Often there is also a party, which follows and
includes out-of-town guests, who may not have
been invited to the dinner. The groom’s family will
choose this invitation; it should be mailed within
days of the wedding invitation, and should never
compete with the wedding invitation.

will host a dinner for out-of-town

receive invitations to both events;
the guest list should always be
closely coordinated with the
bride’s mother, as she receives
replies from those who have
accepted the invitation to attend
the wedding. Family members or
friends may also want to host a
brunch the morning following the
wedding. Again, the guest list for
an event such as this will have to
be generated by the number of
affirmative responses the bride’s
mother receives for the wedding.
Without a doubt, stationery professionals figure prominently in the exciting days leading up to
a wedding, particularly in light of the many party-related activities that are associated with a
couple’s deciding to get married. Working hand-in-hand with a reputable, experienced stationer
results in a beautiful invitation, illustrative of the event. Perhaps even more importantly, that
working relationship insures incomparable peace of mind!

Traditions, symbolisms and how today’s bridal

The wedding cake is a tradition that
began back in the Roman Empire.
Certainly the Romans were not in the

the heads of the newlyweds to bring

Saving the
Top Tier
With multi-tier cakes, most couples decide to
freeze the top tier for their one year anniversary. This tradition has its roots in the late 19th
century when grand cakes were baked for the
christening of a child. It was expected that the
christening would occur soon after the wedding
ceremony, so the two ceremonies were often
linked, as were the cakes. When three tier
cakes became popular, the top tier was often
saved and used for a christening. Over time,
the wedding cake has become less associated
with christenings. The reason for saving the top
tier has expanded. Whatever the reason, when
the top tier is finally consumed, it serves as a
reminder of the happy occasion for the couple.
Lucky Charms
The custom of baking gold or silver charms into
a beautiful cake is usually reserved for showers.
Each charm baked into the cake has a special
meaning attached. Special luck will fall on the
guest who receives a charm. Be sure to instruct
your guests to pull on the attached ribbon to
take the charm out before they bite into it!
The meaning behind the charms are traditionally:
heart for true love, ring for upcoming engagement, clover, shamrock or horseshoe for luck,
flower for growing love, wishing well for wishes
granted, anchor, airplane or ship’s wheel for travel
and adventure, highchair or baby carriage for
children, rocking chair for long life, coin purse or
money bag for good fortune, wedding bells for
upcoming marriage, telephone for good news,
and picture frame for happy life.

In Victorian times, the white icing on a wedding cake symbolized purity and virginal

At the time, ingredients for the wedding cake were much harder to acquire, especially for
the icing. White icing meant that only the finest refined sugar was used, and so the whiter
the cake, the more affluent the families involved were perceived!
Another reason that the whiteness of the cake was considered pure was the association
of the cake with the bride. Originally, wedding cakes were called bride cakes. This not
only emphasized the bride as the main focal point of the wedding, but also created a link
between the bride and the cake. In fact, even today, the link is being reinforced as many
couples are requesting wedding cakes be made to match the colors associated with the

Cutting the Cake
Perhaps the most well-known wedding tradition is the cutting of the cake. Originally,
it was the sole duty of the bride to cut the cake to share with guests. As cakes became
grander, the task became quite formidable, particularly when the icing had to be strong
and rigid enough to support the upper tiers. It became a joint task more out of necessity
than symbolism. Now the first piece is cut by the bride with assistance from the groom. It
has come to symbolize the first task together in the couple’s life as husband and wife and
is a vital image for the wedding photographer to capture.
Immediately after the cutting, the bride and groom feed each other the first slice. This
action symbolizes their commitment to one another. Some couples turn this special
moment into a cake fight, so if that’s not your style, be sure to discuss this with your
partner beforehand!

A groom’s cake has its roots in the South, and although it used to be viewed as an added
and unnecessary expense, this once-neglected cake has been making a huge comeback.
Intended to be a gift from the bride to the groom, the groom’s cake is usually dark (often
chocolate or liquor-soaked) and designed with a nod toward what’s traditionally considered “masculine”.
The groom’s cake can serve many purposes, from dessert at the rehearsal dinner to an
alternative choice to the bride’s cake at the wedding. It’s customary for the groom’s
cake to be displayed next to the bride’s cake and later cut and put into boxes for guests
to take home. And believe it or not, legend has it that single women are supposed to
sleep with a slice under their pillow the same night they receive it-and if they do, they’ll
dream of their future husband. Boxed slices of groom’s cake can also serve as your
wedding favors. If you go this route, take advantage of the opportunity to get creative
with the packaging – an additional way to reflect your wedding style.
A current creative trend in groom’s cakes is to have the cake reflect the groom’s interests
and hobbies. Whatever you decide, gifting your new husband with his own cake is something you should do because you want to-not because you feel obligated.

Sleek, Simple, Sophisticated
& Understated…Less is More!
By John Herron, Herron House Flowers
As I begin to write this article I think of all the
changes that I have seen in the floral industry.
The floppy brim bridesmaids’ hats and daisy
bouquets of the late 1960’s and the earth tone
colors and horrible tuxedos of the 1970’s. The
excess and grandness of the 1980’s and 1990’s,
wedding cakes covered with flowers and
cascade bouquets that got bigger and bigger.
Well brides, welcome to the 21st century!
Brides’ choices in this new century have been shaped
by the present economy. Brides are saying things like
sleek, simple, sophisticated and understated. In other
words “less is more”. To save money on flowers and
decorations, brides are choosing one site wedding
and reception venues and opting to pick up their
wedding flowers. This saves money on labor and
installation. I have noticed a big increase in the last
few years of customer “pick-up” weddings.
Color, the major design element, is really interesting
to follow. Flowers in any shade of green from moss to
lime are really hot. Pinks come in second; watermelon
is very popular. Tangerine (never say orange!) and
corals are third. These look great against blues, purples
and wine colors. Shades of purples and dark reds are
also extremely popular including wine colors such as
merlot, cabernet and jewel tones such as amethyst.

Wedding Style
Brides in this new century have done their homework with flower selection and are asking for
a unique array of blossoms for their weddings. Roses, gardenias and stephanotis have taken a
backseat to flowers such as cymbidium orchids, peonies, hydrangea, ranunculus and gerbera.
I loved the simplicity of Kate’s lily of the valley bouquet at the Royal Wedding. What a statement
that less truly is more!
Finally, centerpieces - silver containers are out and glass containers are in! Cubes, cylinders, bulb
bowls, trumpets and bubble vases are all extremely popular. Glass pebbles, river rock, coiled
metallic wire and submersible led lights are all great accessories for vases. Flowers above the
water and flowers submersed, anything goes! And there are other options for your vases such as
fruit (Granny Smith apples are great), twigs, moss, branches, birds and butterflies (faux of course).
One of my favorite blogs for centerpiece ideas is StyleMePretty.com.
The rest is up to you. Take time to explore all the possibilities with the floral design and visual
aspects of your special day. Have fun with color! Best wishes!

Floral Planning Tips
Book your floral designer early in your planning process – six to eight months preceding the
wedding. Find one that is not only talented and knowledgeable in the floral industry, but one
the most beautiful flowers your budget can handle.
A good starting point is to visit floral shops so you can get a feel for the designer’s style. Also,
ask friends and family for referrals. Nothing compares to the first hand experience of people
you know and trust.
Ask to see photographs or live examples of the florist’s work. If you view photographed samples,

that is also agreeable and flexible. The goal of your floral designer should be to provide you with
verify that they are of the florist’s actual work, rather than just samples the florist says he or she
can do.
From classic all-white formal arrangements to unique designs featuring brightly colored flowers,
Just Priceless
wedding bouquets today are more and more about the personality and character of the bride.
Fall is the ideal season to play off nature and the fiery colors its foliage has to offer including reds,
oranges and greens. Roses continue to be a favorite with brides and are available year round. For
fall, consider deep reds, burnt oranges, bright yellows and peach colored roses – perfect for a
colorful autumn wedding.
If you’re planning for a winter wedding, second to roses, the most popular and traditional
wedding flowers are orchids. These delicate blooms are available from winter white to hot pink
to purple and vary in price ranges.
Fall and winter are remarkable seasons to use unique design elements such as berries, fruits,
feathers, magnolia leaves, cinnamon sticks and more. Talk with your floral designer about your
options and together, you’re sure to create beautiful designs.

What’s Hot in Flowers
Calla Lilies
Despite being called a lily, the calla lily is not considered a “true lily” and
belongs to a different genus of flowers. The indigenous range of the
calla lily is throughout Southern Africa. Calla lilies are the hottest flower
to use in bridal bouquets right now. Its elegant shape is perfect for the
classic bride, and many wedding accessories can be found with the
calla lily motif.
Gerbera Daisies
Gerbera daisies have quickly become the fifth most popular flower in the
world for floral arrangements. They are related to sunflowers and come
in an amazing array of colors. Sometimes the petals on the same flower
can even come in different colors! They are native to South America,
Africa and tropical Asia.
Hydrangeas
Hydrangeas are some of John’s favorite flowers to grow in his garden at
home! They come in a variety of colors and are indigenous to North and
South America and South East Asia. They can easily be dyed with food
coloring to produce any color. They also dry extraordinarily well, making
them ideal for home design and perfect for brides who want to preserve
their bouquets naturally. Fall/Winter 2011 | 75

Most are herbaceous perennial plants 0.5–1.5 metres tall, but some resemble trees
up to 1.5–3 metres tall. They have compound, deeply lobed leaves, and large, often
fragrant flowers, ranging from red to white or yellow.
Ranunculus
Members of the genus include the buttercups, spearworts, water crowfoots and the
lesser celandine. They are mostly herbaceous perennials with bright yellow or white
flowers (if white, still with a yellow center). A few species have orange or red flowers.
The petals are often highly lustrous, especially in yellow species.

Jackie & Zack
July 10, 2010 at Graylyn
By Monica Young | Photography by sadie higs photography
Jackie Fitzgerald’s parents moved to Clemmons in 1999. As a young professional, Jackie was enjoying New York
City, but decided to follow the rest of her family south after her sister and her fiancé moved to North Carolina, too.

While out one night in Charlotte, Jackie, who is in corporate communications with Bank of America, met Zack,
a consultant with SunGard Financial Systems. Five years later, the pair married at the Graylyn estate in WinstonSalem in an event that brought northern friends and family down for elegant southern hospitality.

One element that especially appealed to Jackie and Zack was that if it rained on the day of their wedding, the interior of Graylyn
would still make a lovely place for a wedding. As their day approached, the forecast did not look as if the sun would shine in their
favor. During the week before, Jackie was distraught that thunderstorms seemed imminent.
“I was so resigned to it by the time of the rehearsal dinner. However, as the guests arrived, there was such great energy that it didn’t even
matter anymore,” said Jackie, recalling the moment that she realized that they weren’t gathered for the weather but for the wedding.

Zack watched as Jackie came down
gown from Nitsa’s.
I found it [the dress] the first day at the first store, which
surprised me. I love shopping and thought I’d milk this and
explore every option. Another surprise was that the ones
I thought I would like weren’t the right style for me.
“Since this gown was part of a trunk show and wouldn’t be at the store the next week,
it just felt like fate. We did visit another store before buying it, but Nitsa’s was such a
wonderful experience,” recalled Jackie.
The bridesmaids’ dresses all came from White House Black Market and were of different
designs. Jackie wanted simple, affordable, elegant dresses since everyone was traveling
to the wedding from different cities. She instructed the five bridesmaids to choose a black
satin, knee-length dress from the White House Black Market in their area. Ironically, every
woman chose something different because the stores carried various styles in the fabric.
Both the bridal gown and black bridesmaids’ dresses made the floral designs pop. When
it came to planning this aspect of the wedding, Jackie felt flummoxed.

Zack wanted for their guests’ enjoyment.

Catering – An Art Unto Itself
What is the definition of catering? How do you pick the right caterer for you?
By Anna Currie, exclamations catering & event specialist
To cater? What does that word mean? To many, it means the delivery or drop off of food to
an event. Everyone seems to be a caterer these days! In the age of Food Network, Top Chef
and Hell’s Kitchen a lot more folks are interested in the “food industry”. “I can cook so I am
sure I can cater” or “ I have a restaurant, therefore we can cater.” We hear this all the time.
What a lot of people do not seem to understand is that catering is an art all unto itself.
The love of the “art” of catering started at a very young age for me! It was what I wanted to do when I
“grew up”. From my grandmother’s kitchen and my mother’s apron strings to a degree in food service
management/marketing and now 29 years in the catering industry, I love the catering business! I have a
passion that is very hard to explain. Catering excites me! How, you say? It makes me “smile” when a client
is happy! It makes me “giddy” when we come up with a new idea for presentation! It makes me “well-up”
when we are nominated for a new catering award! It just plain excites me! Maybe that is why we named
our catering company exclamations! You see, in our eyes, you should be excited when you have a catered
meal…when an event goes off without a hitch…when your ideas happen better than even you ever

It could be your wedding dress, bridesmaid dress, colors, flowers, etc. It is amazing that
even if you do not have any idea what you want, the pictures you bring will actually
help us formulate a theme for your wedding!
• Make sure the caterers you are speaking with have a license and a high health rating.
Don’t be afraid to ask to see the kitchen and storage areas. A good caterer will be proud
of their commissary.
• Get bridal references from the caterers you like. Talk to those brides. They will be very
willing to tell you all about their special day! You might get recommendations for other
services this way as well.
• Be honest and realistic with yourself and the caterers you are speaking to. Have some

ideas in mind and see what the caterer can recommend based upon those ideas.
• Look at pictures and proposals from previous events of the caterers you like. Look for the
“art” in catering, not just food on a plate. We firmly believe that presentation is everything.
Great food is great food but your guests will eat with their eyes first and then their taste
buds! If it looks good, it will most likely taste good as well.
• Look for different and unique ideas from the caterers you visit; things that can set your
wedding apart. They will be able to help you come up with ideas that will fit you and your
groom’s personality and style. Always remember, this is YOUR special day! It is not the
caterer’s day. A good caterer should be able and willing to guide you AND inspire you.
