eucalyptus on the nose. Continued plum and waves of spice
combine in a gentle and layered palate. Cigar box comes
through on the finish along with mineral and gentle hints of
earthiness’

The winemaker’s notes: ‘A clear departure from our
sultry and wanton `06 South bay offering, this is not a
“ kiss me, I’m yours, Chardonnay”. Tight and nervy
in its present youthful state, it delivers exotic spice,
roasted grain, orange peel, mineral undertones and a
hint of smoke while unveiling a bewitching
complexity of bready lees, toasted nut, vanilla
custard and ripe stone fruit that fan out and caress the
palate with a lingering wisp of toffee as an
afterthought leading to an appealing finish. Artfully
crafted with a deft handling of oak and sustained by a
marked acidity, this `07 is destined to strut its
alluring features with authority for the next 3-5 years.

Darryl Brooker,
Hillebrand Winery
Australian Darryl Brooker is an internationally recognized
winemaker who has brought to Niagara over 12 years of
experience from wine regions at home and abroad. His travels,
qualifications and curiosity for cooler climates led him to Niagara
where he has spent the past several years as head winemaker for
two of the region’s celebrated wineries, Flat Rock Cellars and
Hillebrand Winery.
The Canberra-born winemaker got his first start working in
the vineyards for Mountadam Vineyards in the Barossa Valley.
Some of Darryl’s credentials include a Wine Science degree from
Charles Sturt University, a Wine Business degree from Adelaide
University and no shortage of work experience in wineries and
vineyards all around the world.
Darryl’s marked interest in cooler climates saw his first two
Canadian crushes at Flat Rock Cellars in 2003 and 2004. He
has more recently been established as the Senior Winemaker of
Hillebrand Winery where he spent his next six vintages. It is here
that Darryl’s work on the Trius brand resulted in numerous awards
and accolades year in and year out. He was also responsible for the introduction of the brand’s first blended white
wine. Since his arrival in the Niagara region, Darryl has taken on a leadership role in setting the bar even higher
for premium wines of Ontario. He is also a proud recipient of the Tony Aspler Cuvée Award of Excellence for his
contribution to the wine industry in Ontario.
Guided by his will to explore all the world wine regions, and maybe his admitted affinity for making red wine,
Darryl has most recently taken on a position at the prestigious CedarCreek winery in British Columbia’s
Okanagan Valley. As a key representative of the Niagara wine region, Darryl’s contributions as a winemaker in
the areas of leadership, innovation and viticultural standards are both acknowledged and appreciated throughout
the Ontario wine industry. Congratulations to Darryl Brooker, and all the best in your new endeavors!

Linda Bramble
Niagara’s Wine Visionaries
Linda Bramble believes that anyone who can taste and smell
and has the interest, can become a connoisseur of fine wine. Her
contributions to the wine community have won her awards from
the Niagara Grape and Wine Festival as Business Person of the
Year (2001), the Woman in Gastronomy of the Year (2002), and
she has been inducted as a professional associate into Brock
University’s Cool Climate and Oenology Institute (CCOVI)
(2007), a fellow in the Ontario Hostelry Institute (2006) and the
Ducati dei Fruili (2004). In March, 2008, she was awarded a
Lifetime Achievement award for her contributions to the Ontario
wine industry, awarded by Brock University at the Experts’
Tasting.
After graduating from the University at Buffalo with a Ph.D. in
philosophy and education, Linda taught at Brock University in
St. Catharines, Ontario, then Concordia University in Montreal.
When she returned to Niagara because of her husband’s career, she
became the Program Director for the Niagara Institute, a center
for the study of leadership. While there, she, along with three others, started a regional magazine and her beat
became the burgeoning wine industry.
From that point on, she was hooked. She gathered credentials from the Wine and Spirits Education Trust,
the International Sommelier Guild and became a sommelier and teacher of sommeliers. During that period
she wrote five books on wine, food and wine travel, and contributed regular articles to several national and
international publications. When Brock opened its wine institute, (CCOVI) she re-joined the Brock faculty to
teach wine appreciation and excellence in wine sales and service.
