I was reminded of this watching the Grand Depart of the Tour De France over the weekend and a banner saying ‘parlez-vous Yorkshire’? Those of you familiar with the dialects and accents of the UK will know Yorkshire, and indeed many parts of the country, have a particular language which gives important identity to those hailing from that area and also a wonderful diversity that is a rich part of the country I come from. I know these regional differences will be true of all our nations, whether it be language dialects, cuisine, traditional sports or history, diversities exist which adds so much strength and value to that nation as a whole. Naturally, within the collective strength that is NATO, there is important diversity within our union which makes us stronger as a result. Indeed, one of the great pleasures for me of serving with NATO is seeing at first hand the many national celebrations that take place at SHAPE, typified in this edition by an article on the Italian National Day. National identity, customs and traditions will also be the over-riding theme at our annual SHAPE Fest on 5th and 6th September (don’t forget to include it in your diary) with a huge variety of food, drink and entertainment on offer. Well, we all have our summer holidays to enjoy before then so I wish bon vacances and relaxing family time to everyone and to Holland and Germany in particular, bon chance for the World Cup semi-finals! * ‘Silky shorts’ refers to football players and the attire they wear. Football is considered by some as a less physical and robust game typical of the south rather than rugby league which is dominated by clubs from the north. Folk from the north sometimes look at us southerners as being a bit soft! It’s all good humoured banter but does highlight some interesting cultural differences within our country. I know a lot of SHAPE Trips and Tours focus on London and attractions in the south of England but I would recommend you venture further north if you can (Yorkshire Dales, Peak District, Lake District and the Scottish Highlands to name a few). The scenery is gorgeous (as you will have seen from the ‘Tour’ on television), you’ll get a very warm and friendly welcome from the locals and, if you’re lucky, a serving of my favourite Yorkshire dish: pork pie, mushy peas and mint sauce with fruit cake and cheese to follow! This day, each year, Italians around the world commemorate the 1946 referendum, held for the very first time by universal suffrage, in which the Italian people were called upon to decide on the institutional form of our State and to elect the members to the Constituent Assembly. The participation in the poll resulted in a stunning 90% and the final result determined the founding of the Republic of Italy and the end of the monarchy, which had been the previous political system for 85 years. The title chosen for this year’s Republic Day celebrations is “The Armed Forces, their values and traditions from WWI to the European Defence,” combining our past and our future with the 100th anniversary of WWI and the Italian Presidency of the European Council. The Festa della Repubblica Italiana has a tradition of symbols: the Three-colored Flag and the Parade of the Armed Forces. Rather than just being one of the emblems of our State, the Three-colored Flag is a symbol of freedom, of the identity of the Italian people, based on the principles of fraternity, equality SSAC Congratulates recent NAUI Advanced Scuba Diver graduates! and justice. After the Republic was established, a Presidential Decree identified the provisional design of the new national flag, which was then confirmed by the Constituent Assembly on 24 March 1947 and included in our Constitution. The first Parade to celebrate the second anniversary of the Republic took place in 1948 in piazza Venezia, in Rome. Since 1950, with few minor changes and few suspensions in between, the Parade takes place along the magnificent scenery of Via dei Fori Imperiali and is presided over by the President of the Italian Republic in his role as Supreme Commander of the Armed Forces. The Prime Minister and other high authorities also attend. Here at SHAPE, the celebration was hosted by the ITA NMR Major General Giuseppe Antonio SPINELLI - who addressed the Italian military personnel and their families and guests and read formal messages by the President of the Italian Republic and the Minister of Defence. The event took place at the SHAPE Club and was followed by an Aperitivo or cocktail reception, which offered a replete Italian experience. Most importantly, the Republic Day represented an important occasion to recall the deeds of the Italian Armed Forces during the past and present centuries and to reinforce the bond of the Italian Community at SHAPE. By Megan Gilliland (USA - Civ) The SHAPE Flea Market/Brocante was held early on Sunday, June 29 June in the parking lot of the 200 area. This reoccurring event is organized by SHAPE Morale and Welfare Branch. “The Flea Markets are held every summer to help Group II activities raise funds,” said David Herbert, Morale and Welfare Branch Operations Supervisor. “Vendor spots are sold for 20 euro, and the money goes back to the SHAPE community through the hosting Group II activity.” Flea Markets, or Brocantes, are held nearly every weekend in local towns surrounding SHAPE, and are a popular way of shopping in Belgium. “This is the only SHAPE event where the local community is welcomed on campus to experience our international community,” said Herbert. Summer is rotation season for many countries, and the SHAPE Flea Market/Brocante is a wonderful resource whether you want to sell some of your belongings before heading out, or you need items for your new home in Belgium. The remaining SHAPE Flea Markets for this summer are July 27, August 24 and September 28. The events are open to SHAPE cardholders from 0600 - 0800, after the gates are open until noon for the public. Vendor permits are on sale at the Event Center (Building 303) the Wednesday prior from 0830 to 1130. After that, permits can be purchased from Morale and Welfare Operations (Building 207). This particular Sunday morn- ing, vendors had toys, books, antiques, baby gear, clothing, pottery, collectables, furniture, small appliances and much more. SHAPE Community Life 9 July 2014 5 News Gallery Polish Garden Party By LTC Miroslaw OCHYRA (POL – A) It has become a tradition in the Polish Community to gather at the Polish National Military Representative’s house every June for a Garden Party. This year was no different when the entire Polish Community at SHAPE gathered at Colonel Jerzy Jankowski’s residence on a beautiful sunny Belgian day. All in all, it was a wonderful time to exchange stories and experiences of living and working in Belgium. News Gallery NCO and Junior Ranks BBQ By Megan Gilliland (USA - Civ) The inaugural SHAPE NCO and Junior Ranks BBQ was held June 27 at the pavilion area behind the Military Directorate Group building. Hosted by the senior enlisted leadership from SHAPE, the event was open to all enlisted personnel and their families. Food was plentiful at the event. The hosts provided grilled hot dogs, hamburgers and chicken. The Spanish NMR prepared a large pot of paella, and most attendees brought a homemade dish creating an array of international choices. The German NCO Association had cotton candy and slushy machines to make treats for the kids to enjoy. While the adults socialized and listened to live music, children played in one of the large bouncy houses provided by Outdoor Recreation. The purpose of the event was to bring the international non-commissioned officers at SHAPE together and enhance relationships. “This is a prime opportunity for our SHAPE NCOs to meet and build relationships in a less formal environment,” said Command Chief Master Sgt. SHAPE Community Life 9 July 2014 7 SHAPE Healthcare Cooking outdoors was once only a summer activity shared with family and friends. Now more than half of Americans say they are cooking outdoors year round. So whether the snow is blowing or the sun is shining brightly, it’s important to follow food safety guidelines to prevent harmful bacteria from multiplying and causing foodborne illness. Use these simple guidelines for grilling food safely. From the Store: Home First When shopping, buy cold food like meat and poultry last, right before checkout. Separate raw meat and poultry from other food in your shopping cart. To guard against cross-contamination — which can happen when raw meat or poultry juices drip on other food — put packages of raw meat and poultry into plastic bags. Plan to drive directly home from the grocery store. You may want to take a cooler with ice for perishables. Always refrigerate perishable food within 2 hours. Refrigerate within 1 hour when the temperature is above 90 °F. At home, place meat and poultry in the refrigerator immediately. Freeze poultry and ground meat that won’t be used in 1 or 2 days; freeze other meat within 4 to 5 days. Thaw Safely Completely thaw meat and poultry before grilling so it cooks more evenly. Use the refrigerator for slow, safe thawing or thaw sealed packages in cold water. For quicker thawing, you can microwave defrost if the food will be placed immediately on the grill. Marinating When using a cooler, keep it out of the direct sun by placing it in the shade or shelter. Avoid opening the lid too often, which lets cold air out and warm air in. Pack beverages in one cooler and perishables in a separate cooler. Keep Everything Clean Be sure there are plenty of clean utensils and platters. To prevent foodborne illness, don’t use the same platter and utensils for raw and cooked meat and poultry. Harmful bacteria present in raw meat and poultry and their juices can contaminate safely cooked food. If you’re eating away from home, find out if there’s a source of clean water. If not, bring water for preparation and cleaning. Or pack clean cloths, and moist towelettes for cleaning surfaces and hands. Precooking Precooking food partially in the microwave, oven, or stove is a good way of reducing grilling time. Just make sure that the food goes immediately on the preheated grill to complete cooking. Cook Thoroughly Cook food to a safe minimum internal temperature to destroy harmful bacteria. Meat and poultry cooked on a grill often browns very fast on the outside. Use a food thermometer to be sure the food has reached a safe minimum internal temperature. MEATS A marinade is a savory, acidic sauce in which a food is soaked to enrich its flavor or to tenderize it. Marinate food in the refrigerator, not on the counter. Poultry and cubed meat or stew meat can be marinated up to 2 days. Beef, veal, pork, and lamb roasts, chops, and steaks may be marinated up to 5 days. If some of the marinade is to be used as a sauce on the cooked food, reserve a portion of the marinade before putting raw meat and poultry in it. Cook all raw beef, pork, lamb and veal steaks, chops, and roasts to a minimum internal temperature of 145°F as measured with a food thermometer before removing meat from the heat source. For safety and quality, allow meat to rest for at least three minutes before carving or consuming. For reasons of personal preference, consumers may choose to cook meat to higher temperatures. However, if the marinade used on raw meat or poultry is to be reused, make sure to let it come to a boil first to destroy any harmful bacteria. SAFE MINIMUM INTERNAL TEMPERATURES Transporting · Whole poultry: 165 °F When carrying food to another location, keep it cold to minimize bacterial growth. Use an insulated cooler with sufficient ice or ice packs to keep the food at 40 °F or below. Pack food right from the refrigerator into the cooler immediately before leaving home. · Poultry pieces: 165 °F Keep Cold Food Cold Keep meat and poultry refrigerated until ready to use. Only take out the meat and poultry that will immediately 8 be placed on the grill. SHAPE Community Life 9 July 2014 · Ground poultry: 165 °F · Ground meats: 160 °F · Beef, pork, lamb, and veal (steaks, roasts and chops): 145 °F and allow to rest at least 3 minutes. SHAPE Healthcare GROUND MEATS require 4 to 6 hours burning time. Cook all raw ground beef, pork, lamb, and veal to an internal temperature of 160°F as measured with a food thermometer. Cooking may require 10 to 12 hours or more and is difficult to estimate. A food thermometer must be used to determine POULTRY Cook all poultry to a safe minimum internal temperature of 165°F as measured with a food thermometer. NEVER partially grill meat or poultry and finish cooking later. REMEMBER! Always refrigerate perishable food within 2 hours. Refrigerate within 1 hour when the temperature is above 90 °F. Reheating When reheating fully cooked meats like hot dogs, grill to 165 °F or until steaming hot. Keep Hot Food Hot After cooking meat and poultry on the grill, keep it hot until served -- at 140 °F or warmer. Keep cooked meats hot by setting them to the side of the grill rack, not directly over the coals where they could overcook. At home, the cooked meat can be kept hot in an oven set at approximately 200 °F, in a chafing dish or slow cooker, r on a warming tray. Serving the Food When taking food off the grill, use a clean platter. Don’t put cooked food on the same platter that held raw meat or poultry. Any harmful bacteria present in the raw meat juices could contaminate safely cooked food. In hot weather (above 90 °F), food should never sit out for more than 1 hour. the meat’s safety and doneness. There are many variables such as outdoor temperature, the size and thickness of the meat, and how fast the coals are cooking. Does Grilling Pose a Cancer Risk? Some studies suggest there may be a cancer risk related to eating food cooked by high-heat cooking techniques as grilling, frying, and broiling. Based on present research findings, eating moderate amounts of grilled meats like fish, meat, and poultry cooked — without charring — to a safe temperature does not pose a problem. To prevent charring, remove visible fat that can cause a flare-up. Precook meat in the microwave immediately before placing it on the grill to release some of the juices that can drop on coals. Cook food in the center of the grill and move coals to the side to prevent fat and juices from dripping on them. Cut charred portions off the meat. Leftovers Refrigerate any leftovers promptly in shallow containers. Discard any food left out more than 2 hours (1 hour if temperatures are above 90 °F). Safe Smoking Smoking is cooking food indirectly in the presence of a fire. It can be done in a covered grill if a pan of water is placed beneath the meat or poultry on the grill; and meats can be smoked in a “smoker,” which is an outdoor cooker especially designed for smoking foods. Smoking is done much more slowly than grilling, so less tender meats benefit from this method, and a natural smoke flavoring permeates the meat. The temperature in the smoker should be maintained at 250 to 300 °F for safety. Use a food thermometer to be sure the food has reached a safe internal temperature. Pit Roasting Pit roasting is cooking meat in a large, level hole dug in the earth. A hardwood fire is built in the pit, requiring wood equal to about 2 1/2 times the volume of the pit. The hardwood is allowed to burn until the wood reduces and the pit is half filled with burning coals. Home & Away From SHAPE, With Love: Wish I Had Known (Part II) By Judy Rae Merhar (USA-Civ) Vinegar the “cure all” Calcium buildup in water can be a problem. When our dishwasher started leaving a chalky residue on our glasses, I was told to put in a small amount of vinegar. Voila clear! When my coffee pot started making sounds that rivaled Darth Vader, a mixture of water and vinegar, it now purrs with content! Vinegar’s miraculous cures extend beyond the kitchen. Having trouble getting your windows streak free-vinegar. Do you find after washing your hair it feels dirty? Next time you shower, mix equal parts warm water and vinegar and wash the calcium grime away. Vinegar is my trusted side-kick in Belgium! Marche Populaire/ADEPS Every weekend for three years our family has taken part in organized walks throughout Belgium. The organization is called ADEPS. They have a website where you can choose based on the walk’s location and length (they even note the walks that are stroller/wheel chair friendly). The walks are great, but the community tents that provide food and drinks afterwards complete the experience. The Château de Pierrefonds Do you have children that wish to be knights or princesses? Are you a fan of the BBC series Merlin? The castle used in this popular tv series is less than two hours away in France. Last summer we took our kids and their visiting cousins. Not only did they enjoy the castle, but the village just below has a handful of quaint restaurants, a beautiful park, complete with a playground, pond, and a fountain to toss your coins and make a wish. Although, once there you may find your wishes have already been granted :) Thalys train to Paris/ Amsterdam From Mons you have direct access to Paris. Once a day the high speed train Thalys will whisk you to the City of Light in just over one hour. If you hop on Thalys in Brussels, you can be in Amsterdam in just under two hours. The saying holds true, “it’s not the destination, but the journey”. Thalys is a sweet ride, but keep in mind it’s much less expensive if you book at least three months out (or if you’re over 60)! Brunch at SHAPE Club Complimentary aperitifs It isn’t unusual to go out to dinner and have the host or hostess bring you a complimentary after dinner drink. It’s never to be expected, but when offered, I’ve learned it’s good manners to accept, even if you only take a sip. It’s the establishment’s way of saying thank you and to please come back. Our family has been to the last three Mother’s Day brunches at the SHAPE Club. It’s worth every penny. The food, decorations, and entertainment for kids makes this a great gift for Moms. You can take advantage of their brunch at Easter too! rThalys Train Mini Golf - Le Bois d’ Hasnon A few summers ago I stumbled onto a wonderful gem, mini golf! Just one kilometer outside the Ottawa gate sits a tiny slice of rMini Gold - Le Bois d’Hanon summer heaven. In my opinion this spot is near perfect for both kids and adults. My ten and five year old could spend hours attempting to get a hole in one (which no one ever has!), while my teenagers aren’t keen on mini golf, they are on the soda pop and sundaes you can order at the counter! And I find happiness sitting at tables shaded by trees while sipping a glass of wine or coffee. A personal highlight was attending a Pink Martini concert last year. The Belgian Comic Strip Center in Brussels The Belgians have over 700 comic strip artists. As a result, they have a wonderful museum dedicated to “the world’s Escape! Home & Away rRyanair ninth art”, comics. If you like Tintin, Lucky Luke, and the Smurfs, you have the Belgians to thank. Nestled in a beautiful art deco building (by Belgium’s own Victor Horta), you’ll find not only Belgian comics, but comic strips from all over the world. It was here I learned a Smurf stands three apples tall and saw a model of a Smurf home! You’ll also find a wonderful gift shop and bistro too nestled within the museum. Old or young, its worth getting lost among comics. Ryanair It’s cheap, no frills, and gets you from point A to B, safely. Our family loves Ryanair. Louvre-Lens This museum is not only great for the art that adorns it’s walls, it also happens to be walking distance to the the Lens football stadium. And if you have children, they’ll be happy to know both the museum and stadium are walking distance to a McDonald’s. Troc rOne of the furniture set we bought from Troc It’s the place to go if you’re looking for antique treasures. Second hand goodies are in abundance. We recently purchased a traditional Belgian oak dining room set for a fraction of the cost had we been in the States. For a reasonable fee, they deliver too! I’ve also found tapestries dating from the 18th century and remnants from World War II. Home & Away Two Museums In Paris That Nobody Heard Of, But Are “Totally Worth It” W By Sebastian Illie (ROU - Civ) hile most people will immediately think of the Louvre when you say the words: “Paris” and “museum,” and some might even bring up the Orsay; in this article I want to talk to you about two other, less known museums that are as much worth your time as the consecrated tourist traps. Nothing however is further from the truth, as the building houses works of giants such as Pablo Picasso, Henri Matisse, Amedeo Modigliani, Alberto Giacometti, Maurice Utrillo and so on. You’ll basically be taken on a tour of all the artistic currents of Europe starting from the late 19th century to today’s world. The architecture of the building itself is spectacular. The museum is housed in the Tokyo Palace (Palais de Tokyo) which was constructed for the International Exhibition of Arts and Technology of 1937 in a style specific to modernist architecture. The structure also houses the Museum of Cinematography and the courtyard also houses a great café and restaurant. Without further ado, I present to you the Museum of Modern Art of the City of Paris (Musée d’Art Moderne de la Ville de Paris). You may want to know exactly why you should visit this museum. Well first of all, it’s FREE. That’s right! There is no entry fee for the entire permanent exhibition. While some temporary exhibitions may still require some payment, the permanent collection is more than enough to make up a fulfilling visit. You might expect a free and relatively obscure museum like this to only have niche and second hand works of art. It is also in a very good location. By that I mean it is very close to the Eiffel Tower, just on the other side of the Seine River, close to the lesser known museums such as the Guimet Museum, and the four museums housed in the Palais de Chaillot (the large building just opposite of the Eiffel Tower). The museum is never crowded; probably because a lot of people prefer to go to the Orsay and the Pompidou Centre when it comes to modern art. If you ask me, they don’t know what they’re missing, yet, their loss is your gain as you will never have to wait an hour or more to get in. rAmedeo Modigliani, c.1918, The woman with blue eyes The second museum worth a visit is The National Museum of rRaoul Dufy, The Electricity fairy rRaoul Dufy, 1914, Le Cavalier arabe (Le Cavalier blanc) 12 SHAPE Community Life 9 July 2014 Escape! Home & Away monastery of Cluny (hence the former name of the museum). Combining medieval gothic architecture with later Renaissance additions, the former Hotel de Cluny brandishes a unique and complicated architectural style that sometimes resembles a mosaic of the different time periods it went through. There are even Roman era ruins to be found in its cellars. It’s very easy to get through. While some museums can eat up an entire day, or even days in the case of the Louvre; the Middle Ages Museum can be finished in roughly two hours (even less, if you’re a fast one who doesn’t waste much time on every exhibit) leaving you free to explore more of Paris on that same day, while also leaving you satisfied after having seen first hand some of the finer treasures of the Middle Ages in Western Europe. rVaults of the gothic chapel the Middle Ages, or the Cluny Museum (former name Musée national du Moyen Âge). The first reason that you should venture to this one is that it’s close to other important landmarks. In this case, the Latin Quarter, which is the neighborhood on the southern side of the Seine. Its opposite Notre-Dame Cathedral, and the place where you can find, among other things, the Sorbonne University. I’ll conclude by urging you to try to distance yourself a little from the pack the next time you’re in Paris, and give these two, or just one of them, a chance. Nobody is denying that the Louvre, the Orsay and the other landmarks are spectacular and worth seeing, but sometimes, even the more obscure museums can prove to be worth your time. So why not try to make your trip to Paris a little more “adventurous” next time and go visit something not a lot of people know about. The Lady and the Unicorn tapestries are, without a doubt, the piece de la resistance of the museum. Made in the 1500s, they are probably the most well known and iconic examples of medieval western European art, and most likely one of the most famous images of unicorn that have influenced the depiction of these mythical animals up to the present day. In my opinion, for these alone the museum is worth a visit. There is a large collection of medieval treasures. By this, I am referring to a plethora of religious items such as caskets, priestly staffs, rings etc. carved out of ivory, smelted out of gold and silver and placated with precious stones. To these you can also add a multitude of wood and stone sculptures, more tapestries and delicate painted glass decorations, taken from cathedral windows. The architecture is also breathtaking. I try to get to as many games as possible in as many countries as possible and hope to see lots of goals scored. Last season I made it to 31 games and saw teams from a dozen different countries play. I was however disappointed in my goals total. I was hoping for 100 but fell short by one. Of all those games there was only one where a goal wasn’t scored and that was Swansea City against Napoli in Europa League action. I’m always very optimistic at the beginning of a new season because every team starts out in first place before a game is played. The Dragons downtown, as I’m sure you’re aware, were relegated and will now play in the second division. On the positive side, the competition will not be as good so we should win more games than last season but on the negative side we will not get to see the big teams downtown like Anderlecht, Standard Liege and Club Brugge is league action. Still, the fair weather fans who only come to watch the big teams will be weeded out and only those of us who truly support Mons will be found in the tribunes on those cold winter nights. rThe Belgians celebrating a goal. I ’m a little depressed. As I write this I am still recovering from the USA’s loss to Belgium in the last 16 of the World Cup. Had we been beaten by a few goals, it would have been easier to take but being so close (2-1 final score) where we almost scored an equalizer in the last minute makes it a bit tougher to take. I admit that Belgium was The new schedule hasn’t been published yet, but if you are interested in catching a game, they will be playing against Pro League team KAA Gent downtown on July 11th, which is Friday night. The World Cup will just about be over so come downtown for a live game. The Pro League or Division One schedule is out now. The season starts on Friday, July 25th with the only game that night being Standard Liege hosting Sporting Charleroi. All the other games will be played the next two days with the Belgian champions hosting newly promoted Mouscron-Peruwelz on Sunday afternoon. In other sports (as if any others mattered)... With July comes the grand daddy of cycle racing – the Tour de France. This year it’s starting off in England, up in the city that has a mediocre football team. Of course you know that I’m referring to Leeds (United). The tour starts on July 5th and the riders pedal around the British Isle for a few days before crossing the English Channel/La Manche for Stage 4, which will begin at Le Touquet-Paris Plage. On that day it will end in the city of Lille. rAmerican GK Tim Howard, “Chief of Defense”. the better team and had the most shots at our goal but the best team doesn’t always win. Still, I’m happy that Belgium is still in the World Cup. They have a tough game vs. Argentina, which will have already been played by the time you read this, and I wish only for good things for the team. Thus far the World Cup has been very entertaining and I have enjoyed most of the games but I’m more of a guy who likes to be at games. This coming weekend RAEC Mons will be hosting the Belgian champions, Anderlecht in a pre-season friendly. The following day the riders will jump into their saddles in the Belgian town of Ypres to commemorate the anniversary of the First World War. They’ll travel south, crossing into France for a bit and end this 155.5 kilometer leg in Arenberg Porte du Hainaut. This town is about a 40 minute drive from SHAPE, so get your GPS out and get yourself over there on Thursday, July 10th. The next day it starts in Arras, not really too far away, and then heads to Reims in the Champagne Region. After that the peloton heads south, so you’d have to travel a lot further if you still want to get out there and see the race. Track and field is a sport that gets very little coverage between these pages, mainly because there isn’t a lot of it in Belgium. The only event that I am aware of, which is one of the IAAF Diamond League event, is the Memorial Van Damme. This will take place on September 5th (which really isn’t a Sport long time from now) up in Brussels. In the past Olympic and World Champions have competed at the tournament including Usan Bolt last year.
