A Palate-Pleasing Path toward a Culinary Career
Doing What She Loves
I
t’s not unusual to find a person who
really likes chocolate, but PVCC culinary
arts student Alex Hollis takes her passion
for it to a whole new level. “I’ve always
loved chocolate – the smell, the taste, the
way it melts. Chocolate makes people smile,
and sometimes I’ll give it to my friends just
to make their day.” She said that her interest
in the confection intensified when she was
at the grocery store with her mother one day
and saw some of the large bricks of chocolate
that professionals use. She bought a block

and some molds, and her first batch of
homemade gourmet chocolates was born.
Getting Serious
At The Covenant School, she found even
further inspiration. “I had a teacher who
taught us about fair trade products, like
coffee and bananas – things that come mostly
from South America and the Ivory Coast of
Africa. I did a project on fair trade cocoa and
learned the importance of our food sources
and the ethics behind them.” Alex said she
had found her calling. “I knew I wanted to go
to a culinary school out of high school, but
they can be really expensive. My mom and I
were hoping that PVCC would offer a program
so I could start there. I graduated from high
school in May 2013, and PVCC launched
their culinary program later that fall. It worked
out perfectly!”

Hunter grew up in Martinsville and from a
young age had an interest in both mechanical
and electrical engineering, but wasn’t certain
what he wanted to do with it. “Halfway through
undergraduate school, I knew I wanted to go
into teaching sometime in the future.” Hunter
received a Bachelor of Science degree in
Mechanical Engineering from Virginia Tech,
worked for a few years in the fiber optics
industry, and then attended Penn State to
earn a Master’s degree in Materials Science
and Engineering. He worked in several facets
of engineering in the private sector along
the way, but never abandoned his goal of
becoming a teacher. “I enjoy helping people
and giving back to the community,” Hunter
Hunter said that technology can have a
favorable impact on quality of life, and he
speaks with great enthusiasm about the
future of alternative energies. “Because of
technology, there is continuing advancement
in the way we collect and produce energy,
and I’d like to see more knowledge of that
in the community. Education is the key to
societal improvement, among all ages and
demographics.” He also said that he sees
great strides in biomedical engineering,
which combines both chemical engineering
and materials science, robotics and digital

feeling intimidated by math. “When a student
just thinks about a system without trying
to put ‘math’ into it, they can understand it
and gain the self-confidence that they need
to problem-solve. One of the great things

Submit an Online Application to PVCC.
Go to www.pvcc.edu and click on “Apply Now” to complete the Virginia Community
College System (VCCS) online application. After completing and submitting your
application, you are officially admitted to PVCC, and you will receive a student ID
number and username on your confirmation page. Print this page or write down this
information for your records. After applying, go to Step 2 if you are enrolling in a degree
or certificate program; otherwise, go to Step 4 if you are simply taking classes without
pursuing a degree or certificate.

The first step is to complete the FAFSA (Free Application for Federal Student Aid)
online at www.fafsa.gov. Indicate PVCC’s school code 009928 on this form. Also
complete the “Summer Financial Aid form” which is available online at www.pvcc.edu/
financialaid or contact the Financial Aid Office.

Students who plan to apply for financial aid or pursue a degree or certificate at
PVCC requiring math or English courses must take placement tests. These tests are
administered in the Testing Center at PVCC (Main Building, Rm. M607). See Center
hours at www.pvcc.edu/hours. There is no fee to take the placement tests. You can
prepare for these tests by reviewing placement test information.
Possible exemptions from taking some or all of the placement tests include:
• SAT scores (within two years) of at least 520 in math and/or 500 in BOTH
Critical Reading and Writing
• Certain ACT scores (consult with PVCC’s Admissions & Advising Center)
• Successful completion of certain college-level math and/or English courses
• AP test scores of 3 or higher in English and/or math
After taking your placement tests, you are required to attend a SOAR session (Student
Orientation, Advising and Registration) if you are a high school or home school 2014
graduate or if you are a first-time college student with an interest in pursuing a degree
or certificate at PVCC. See page 3 of this schedule for SOAR dates. If you completed
college credits at another school, you are not required to attend SOAR. Instead, make an
appointment with an advisor in the Admissions & Advising Center.
When to send official transcripts to PVCC: This is necessary if you want to receive
transfer credit for previously completed college coursework obtained outside the Virginia
Community College System. Only students applying or entering allied health programs
(nursing, surgical technology, emergency medical services, sonography or radiography) need to
send high school transcripts. Send your official academic transcripts along with a completed
Transcript Evaluation Request Form at www.pvcc.edu/transcripteval to the mailing address
above right. If you attended another Virginia community college, the completed Transcript
Evaluation Request Form is still required, but we do not need an official transcript.

Culinary Arts will prepare you for an entry-level
professional position as chef, sous chef, pastry
chef, personal chef or line cook at a casual or
fast-food restaurant, hotel, resort, country club

Sweet Dreams
After she graduates from PVCC with
her associate degree, Alex would like
to enroll in a four-year culinary school,
or transfer to the University of Virginia
to pursue a business degree while
working for a local chocolate company.
“I’d like to be a chocolatier in my own
shop someday, probably in a bigger city,”
she said. “I’d also like to work for a fair
trade company and do some work in
the countries that source these foods.”
She offered some advice to students
who might be considering going into
the culinary arts field. “Just take some
cooking classes with PVCC, even if
they’re not for a degree, to see how you
like it. And get a good pair of shoes. It’s a
lot of hard work and a lot of time on your
feet.” And for Alex, it’s exactly where she
wants to be standing.
The Associate of Applied Science degree in Culinary
Arts blends professional and technical classes in
culinary arts with general academic classes to help
prepare students for jobs in the foodservice industry,
such as baker, caterer, chef and food service manager.
Culinary classes are held in state-of-the-art teaching
facilities at the PVCC Jefferson School Center, and the
program includes a required internship as well as a
free information session that must be attended prior

Philosophy
Learning from the Pros
Alex said that she truly enjoys her
classes, especially the professional chef,
Professor Eric Breckoff, who teaches
them. “He is an excellent instructor, and
shows us exactly what’s expected of us
in class as well as what we’ll need to
know in the future.” She said that one
of the highlights has been a visit to her
class from a former White House chef.
In addition to her culinary classes, which
are held at PVCC’s Jefferson School
Center in downtown Charlottesville, Alex
takes classes on the main campus such
as English, math and humanities as part
of her program of study. “This is my first
public school experience, and I really like
the diversity of students here. All of the
faculty are also extremely nice, and they
go out of their way to help you.”

has published a book entitled A Squid’s
Story: My First Four Years in the United
States Navy. He said that he hopes to
make it the first in a trilogy about his
naval experience. He has also kept his
musical talent alive by playing bass

Shenandoah Valley.

job in his field would be leading an install
team or doing a network installation from
the ground up, or possibly leading a
network security team – all goals that his
associate degree from PVCC will help
him obtain. John and his wife have two
children, and he hopes to secure a job in
the future that allows him to spend time
with his family. “No matter what you’re
doing – whether it’s your school or work
or hobby – the key to being successful at
it is to be happy with yourself while you’re
doing it.”
PVCC offers Associate of Applied Science degrees
in Computer Technology and Information Systems
Technology, as well as a Career Studies Certificate
in Computer Network and Support Technologies.
These programs also prepare students for technology
certifications desired by employers, such as
Network+, A+, CWNA, Security+, Linux+ and
JAVA. The College also offers an Associate of
Science degree in Computer Science, which prepares
graduates for transfer to a four-year college or
university to complete their bachelor’s degree.
