With Growth Comes Change

I’ve never met anyone who said “I love change. Bring it on!”
Instead, we often get comfortable in our everyday life and resist
change when it knocks on our door. Although change can be uncomfortable at first, and often unwelcomed, it is essential that
with growth, there is change.
To say that KCBS has grown in the past five years is like saying
“I’m not fat; I’m just too short for my weight.” What started as
a small group of barbeque hobbyists has now turned into a world
wide society of barbeque enthusiasts. Take the Bullsheet for example; what used to be said in a one page newsletter now takes
nearly 50 pages of newsprint.
It’s no surprise that things have changed. Nor should it be a
surprise that they will continue to evolve as the society does. What
makes this change so difficult is the fact that there is no one else
to lead the way. There are no Lewis and Clark barbeque gurus out
there blazing a trail for us to follow. KCBS is the Lewis and Clark
of barbeque and it’s our trail that is blazing forward.
With that in mind, what are some changes we can look forward
to in 2012? Well, for starters we can welcome four new members
to the board. Steve Farrin, Dave Compton, Jeff Stith and George
Mullins will all serve on the KBCS Board of Directors for the first
time. They will bring new ideas, view points and opinions to this
organization that will promote change. In fact, the four actually
ran under a “CHANGE KCBS” type slogan.
There will be more than changes to the Board of Directors in
2012. Our judges can now take part in a CBJ Continuing Education Program on the KCBS website. This continuing education
not only provides judges a chance to sharpen their skills, it is a
great study tool for those judges who are preparing for their Master Judge exam. Another helpful feature of the CBJ Continuing
Education Program is the judge can know immediately if he has
answered a question incorrectly. In addition, the rule will be referenced for the judge to use for follow up.
For KCBS contests, a new Organizer’s Guide has been completed. This Organizer’s Guide covers topics such as Contest Budgets,
Sponsorships, and KCBS policies and procedures, just to name a
few. It also includes sample time lines, sample applications for
Teams and Judges and contests supply suggestions. The Organizer’s Guide will be used as a guide for the new contest Organizer.
These are just a few of the exciting changes for 2012 and it’s
only March. Who knows where the rest of the year will take us
and what changes we will see. Regardless of how you feel about
change, try to keep an open mind as we all work towards a successful year. And remember, as Ralph Waldo Emerson said “Do
not go where the path may lead; go instead where there is no path
and leave a trail.”

Grant-in-Aid Available
The Education and Philanthropy Committees of the Kansas City Barbeque Society Board of Directors are pleased to announce that your
Board of Directors has approved a minimum of $15,000 be allocated
annually in a grant program for children of KCBS members, with awards
ranging from $1,000 - $5,000. Grants will be awarded to children of
current KCBS members, with the requirement that parents must have
been a member/s in good standing for a minimum of three years. A special committee of members from both the Philanthropy and Education
Committees will accept applications beginning February 1, 2012, and
ending on April 1, 2012. Consideration will be given for admission to
both college and post-secondary technical schools. Applications should
be addressed to Grant-In-Aid Committee, Kansas City Barbeque Society,
11514 Hickman Mills Drive, Kansas City, MO 64134. Applications and
other required documents must be received in the KCBS office no later
than April 1, 2012. Applicants may use the application included in this
issue of The Bullsheet or may obtain an application by calling the KCBS
office at 1-800-963-5227. The Grant-In-Aid Committee will review the
applications to determine the recipients, report its recommendations to
the KCBS Board of Directors for final decisions at its May meeting, and
will notify recipients no later than May 31, 2012.

The 2012 KCBS Board of Directors
I am absolutely thrilled to be a part of the board for this
year and also, to be serving KCBS as president again! The election was remarkable. With 4 brand new board members elected,
there is representation from each side of KCBS -- approximately 4 individuals who organize or have organized events, 5 individuals who cook, 1 dedicated judge (though many of us are CBJs)
and 5 contest reps. Committee chairs are in place and we are
working for KCBS!
In addition to committee assignments, three of the new board
members agreed to serve in the following positions, Steve Farrin
as the Cooks Advocate, Dave Compton as Judges Advocate and
Jeff Stith as the Organizers Advocate. Cooks and cook teams
never really had a direct contact to the board -- you do now!
Jeff and Dave will assist the committee chairs for Judges and
Sanctioning on issues that may arise with an individual judge or
organizer.
It’s looking like a great year for KCBS!

BOARD OF DIRECTOR’S MEETING
January 13th, 2012

No KCBS members called in.
President Candy Weaver called the meeting to order @ 4:05 p.m.
With the meeting, being held in conjunction with the Annual Meeting
in San Diego, numerous KCBS members were in attendance. KCBS MEMBER REQUESTS TO SPEAK: Randall Bowman re: new contest in Gainesville, GA competing with an
established contest in Cummings, GA.
Lew Miller re: conflict of Sam’s Club contests w/two contests in Iowa,
and request to be CBJ Instructor.
BOARD MEMBERS PRESENT: President Candy Weaver, Don Harwell,
Arlie Bragg, Tana Shupe, Wayne Lohman, Mark Simmons, Mike Budai,
Randy Bigler, Paul Kirk, Mike Lake, Merl Whitebook (by phone), Gene
Goycochea, and Executive Director Carolyn Wells.
Recitation of the KCBS Mission and the Board Pledge: MINUTES: Tana Shupe
Tana Shupe moved that the Board approve the Minutes of the meeting
held on December 14, 2011. Seconded by Wayne Lohman, the motion
passed unanimously.
MARKETING COMMITTEE REPORT: Mike McCloud/Tana Shupe Due to changes in sponsor priorities, a second tour does not seem feasible, but will look toward 2013 for a second tour. Mike will announce confirmed sponsors of the 2012 GABT at the banquet on Saturday evening.
Mobile application is now live with focus on events (i.e. directions),
events, and CBJ classes.
Suggested the board consider funding the goody bag opportunity on a
national level, as it could encourage more participation with sponsors.
Suggested the board allocate funds to officially attend specific trade
shows that could be of benefit to KCBS (i.e. food shows, licensing and
tailgating shows). Mike suggested a $20,000 budget.
MMA has been developing a special program that would allow organizers to sign up teams and judges on-line and would include additional
functions to make organizers’ work easier and would enhance the integrity and credibility of KCBS.
FINANCE COMMITTEE REPORT: Mike Budai
Finance Committee members are: Candy Weaver, Carolyn Wells, Kim
Collier, Mark Simmons and Mike Budai.
1) The Finance Committee recommends adopting the attached financial statements. Seconded by Mark Simmons, motion passed unanimously.
2) Motion to adopt the attached preliminary budget. Seconded by
Wayne Lohman, motion passed unanimously.
SANCTIONING COMMITTEE REPORT: Wayne Lohman
The Sanctioning Committee recommends approval of all new and existing contests listed in the January New/ Change Request Report pending
discussion by the Board. Wayne moved to accept report, including contests from January/New/Change Report. Seconded by Mark Simmons,
motion passed unanimously.
At the December meeting, we tabled the Columbus, GA and Grandview, MO request to be sanctioned as they were in conflict with two existing contests who met the 2012 requirements. The contest in Grandview
was approved as a Competitor’s Series with the understanding that it will
be a “ribs only” contest.
Discussion between the Columbus and Calhoun, GA, locations resulted
in agreement between the two sites that they were located far enough
from each other to be able to attract teams from other locations and
states. The two contests are 174 miles apart and located close to different states. We recommend sanctioning both contests.
Also, attached to the report is a request from Ben Lowenstein to be appointed to a Professional Promoter status. Review of his past organized
contests and his good standing with KCBS, we recommend granting his
request. (Request attached.) Wayne recommended Ben Lobenstein be

is going OK, it is a lot of work to get setup and handle all of the issues. I motion that elections that require a vote of the entire membership be
handled by an independent firm such as, but not limited to Votenet Solutions. This independent firm would be hired to run the entire election
from setup, management, day to day administration to the final results. Seconded by Tana Shupe, the motion passed unanimously.
CBJ REPORT: Mike Lake (See Attached)
Continuing education program is now on-line and can be viewed during
this annual meeting. Mike’s final report for 2011 reflected that 2,838
students attended CBJ classes, 847 were KCBS members, 1,974 new
members were added, and there were 15 comps for the media. Mike also confirmed that a teleconference of CBJ instructors is planned
in February in conjunction with the BOD Strategic Planning meeting.
MEMBERSHIP REPORT: Gene Goycochea
Gene reported that membership continues to increase and that the
membership as of January 9, 2012 is 15,061.
PHILANTHROPY REPORT: Arlie Bragg
Philanthropy Reports applications will begin running in the February
Bullsheet for all Grants and Grants-in-Aid and an email blast will be sent
to all members.
RULES COMMITTEE REPORT: Randy Bigler
On rule number 8 we have no consequences listed on the rules, for
a team caught using one of the banned cooking techniques (i.e. ParBoiling, Deep Frying or Sous-vide). Randy made a motion that if any of
the banned processes is discovered before the team turns in, they would
receive zeros, and if discovered after turn-in the team would receive ones
for that entry. Seconded by Gene Goycochea, the motion passed unanimously.
Discussion on rule number 14 was withdrawn.
REP COMMITTEE REPORT: Mark Simmons & Randy Bigler
Mark Simmons: For our last report this BBQ season, I wanted to give
you some helpful statistics...
2011 Statistics
Total Contests: 415
Cancelled Contests: 35
Total Teams who competed: 14,635
Average # Teams at a contest: 39
Average Attendance 8,594
Average Prize Money: $9,183
881 rep assignments
Monies paid out in 2011: 3,000,000+
Over two dozen charities benefited from barbecue contests.
We grew over 10% last year and our numbers for contests this year look
very good. We received 4 new reps in 2011 and a 5th rep has almost
completed their RAT training to be recommended to the BOD for their
approval.
The Rep Committee met by conference call on January 5th ... Our biggest point of discussion revolved around the process to attract new rep
candidates. We have many people who volunteered. This is a very serious position and very visible to the organizers, cooks, judges and table
captains so it is critical that we enlist those candidates who put the best
foot forward for KCBS...We are preparing a more structured and objective
process as we do expect to bring several new candidates in the next few
months.
There is continuing review of the Rep manual and it is expected that a
revision will be available to the BOD in the next month or so. Mark made
a motion to approve Rep Manual updates, and amendments to correct
duplicate numbers. Seconded by Mike Budai, ayes were unanimous.
It has been a pleasure to work with the Board of Directors in 2011 and
very educational. I would like to express my appreciation to our contest
reps who have served KCBS well in 2011. I would also like to thank the
rep committee for their volunteer work and input and to the Co-Chair,
Randy Bigler who has contributed much to the committee, the rep program, and given much valuable input.
The Rep meeting Saturday, from 1:00 p.m. - 2:30 p.m. will include a
“best practices” forum with a panel of seasoned reps. It should be interesting and helpful. We look forward to a great 2012.
EDUCATION COMMITTEE REPORT: Paul Kirk
Because the report was received after the 72-hour deadline, there is no
formal report from the Education Committee. However, to keep the board
updated, the report as sent is attached.
COMPUTER PROGRAM REPORT: Mike Budai
KCBScore Contest Program Committee members are: Candy Weaver,
Carolyn Wells, Stephen Smith, Kevin Keeling, Steve Grinstead, Scott
Grinstead and Mike Budai. Mike made a motion to accept the report as
submitted. Seconded by Randy Bigler, motion passed unanimously.

has reviewed draft 1 and compiled a change list. On December 22 I met
with InDevX to review the changes. InDevX sent the Committee Draft 2 on
December 30 with the changes. After reviewing draft 2, the committee
met on January 9 and created a new change list. I met with InDevX on
January 10 to go over the new changes. If the next draft has addressed
all of the committee’s changes we should be able to started the testing
phase.
It should be noted that InDevX has lost their lead programmer as of
the release of Draft 2. I am meeting with the InDevX team and the new
programmer next week. My hope is that this personnel change won’t slow
us down too much.
OLD BUSINESS
KCBS Foundation: The Kansas City Barbeque Society Foundation has been incorporated
and has received EIN number and Non-Profit Charter number from the
State of Missouri. When Tony Stone passed in late August, his daughters
indicated his wish that in lieu of flowers, donations be made to KCBS to
a foundation for education in his memory.
Attached is a list of donors and amounts. Funds have been deposited
in a separate account. Donors have received tax letter acknowledging
donation. I understand there is a concern as to whether this is a Private
Foundation or a Public Charity. My understanding from conversation with
legal was that we would not have a problem being considered a Public
Charity. I have emailed him asking for this in writing. It is off to a slow
start.
Regional Representation: As the motion was tabled at the December meeting to add to the bylaws
that 6 directors of the BOD will be from six regions, I motion that the
new attached breakout of five regions from Carolyn Wells be accepted as
the regional breakout of the regions to be placed on a special members’
election. Carolyn states, it is cut to 5 regions, but membership numbers
are at 19-21% per region. This was sent to all Directors in November
per suggestion of Candy Weaver. Seconded by Gene Goycochea. Weaver
tabled the motion for future consideration by the next Board.
NEW BUSINESS
Candy Weaver: I move that all e-mail addresses for kcbs.us be managed by staff at the KCBS office. Seconded by Mike Budai, motion
passed unanimously.
Candy Weaver: I move that KCBS consider the feasibility of and implementation of a members’-only bulletin board. The purpose of this
bulletin board will be to post notices of member events (births, deaths,
marriages etc.), buy sell area for BBQ equipment, judges looking for

Expectation Method Judging

It is an interesting part of human nature that we surround many of the
actions we take with routines. Sometimes, these aren’t the best habits
so we call them “ruts” because we do them so automatically we don’t
even have to think about them. I’m that way when I take out the trash.
I just do it. No brain required. But there are some things we care so
much about that we consciously invent ways to do them that make us
focus and do them well. Obviously, my example here is going to be judging barbeque!
Totally unconsciously over the years I’ve developed what I’d call an
“approach” that I use when I’m seated at the judging table, confronted
with a white Styrofoam box full of meat and garnish. This approach has
come on slowly, and it has adapted and grown – it didn’t all happen at
once. To say that it has come from experience would be the world’s
greatest understatement because the truth is that experience has caused
it. This starts with my expectations. . .
My “Expectation Method” requires an underlying assumption, then my
judging effort for each food item I evaluate deals with it either proving or
disproving that assumption – either it is or it isn’t. I use a base score of
7. I picked 7 because I want and expect the entries I judge to be “Above
Average” as the number implies. Why not logically “base” with a 6 (“Average”)? Well, as a judge I want to always be on the side of the cooks,
and no cook I’ve ever known (including me) ever set out to produce anything “average”. It can and does happen, but the truth is 6’s aren’t really
contest grade stuff. Any guy or gal in the cooking area can and will do
better more often than not. So 7 is more indicative of what I’m going to
expect and what I’m going to get, most of the time, in a contest.
Now, I have my base from which to evaluate each entry. If the ribs,
pork, chicken or brisket in the box just meet my expectation but that’s
about all, I’ll likely give them a 7. For instance, if I’m judging appearance and the meat presentation looks pretty good but I’ve seen better,
then that indicates a 7. More obvious care in arrangement, neatness and
uniformity in slicing, and attractive appearance will definitely move me
to an 8. If the box goes on to be one of the best looking I’ve encountered
and there’s really outstanding artistry and care apparent in the meat and
garnish presentation over and above just “good looking” I’ll give a 9.
Conversely, if the box looks slung together or the pieces aren’t very appetizing to look at, I’ll move down the scale as necessary.
I approach Taste the same way. When I take a bite I want and expect
“Above Average” efforts. Most of the time I’m not disappointed. Sometimes the two big cooking bugaboos (over-smoking and over-saucing)
creep into taste scoring but most experienced cooks know there’s a careful balance necessary. When the entry obviously has taste that comes
from the cook’s skill in using smoke, spices and sauce to augment the
natural flavor of the meat, that’s an easy 8 to me. And, when it all comes
together with something every experienced judge knows as that MAGIC
that creates an ultimate taste experience – a truly unique blend and balance – I move on to 9 for it.
Tenderness is, to me, the hardest quality to evaluate. Our judging instructions use the term “mushy” a lot. Mushy is when you don’t have to
chew – you can just press the meat with your tongue and it falls apart.
So, anything mushy (or conversely, tough) heads lower than 7 and, fortunately, that’s pretty rare. Basically, if the meat is chewable via an easy
bite but that’s about all then a 7 pretty well sums it up. To score an 8
or 9 requires presenting a mouth feel suitable for the meat in question.
For instance, the bone/meat separation for even a great rib can come in
several degrees – “pull away” and “snap” come to mind. And, meats
have a natural texture to them that can be pleasant. When I bite into
pulled pork I expect my teeth to meet some resistance and feel the meat
grain but not have to provide much pressure. Topping a 7 in Tenderness
requires keeping the natural meat texture along with cooking to the point
of superb mouth feel while avoiding “mush”.
Does this approach eliminate subjectivity? Hardly. A judge must still
concentrate on the key contest attributes of Appearance, Taste and Tenderness and rule according to his or her knowledge of the rules and
standards and that’s a mental exercise – so there will be differences of
opinion. But, a judge has to think. That’s what a method is all about
-- remembering to think consistently and systematically -- and apply
thought, not just write down a score. So, having a method or approach
keeps the mind sharp during the repeated activities we call judging.
A New Battle Between Iowa
and Minnesota
What could be more inspiring
than another rivalry between the
great states of Minnesota and Iowa?
College football games have been
battled between the two schools
going all the way back to 1891,
with many of the contests being
heated affairs. None more so than
the 1934 game which saw accusations that the Minnesota players
were extra rough on the Iowa running back. The Gophers prevailed
48-12. Words were flying and emotions high heading into the 1935
rematch, with both sides trading
barbs and threats. Cooler heads
took over and the Governors took
matters into their own hands and decided to soften the rhetoric and make
a friendly wager on the outcome of the game. A prize hog from each state
was decided upon to be awarded to the winner of the contest. A hard
fought, cleanly played game saw the Golden Gophers emerge victorious
13-6 on their way to a second straight National Championship. Governor Herring of Iowa obtained a prize hog from Rosedale Farms near Fort
Dodge, Iowa and named him “Floyd” after the Governor of Minnesota,
Floyd B. Olson. Floyd was delivered to Governor Floyd live and in person
as the Iowa Governor walked him into the Minnesota Governors office.
And so the legend began.
In the long running history
since- Floyd of Rosedale is
the much coveted prize for the
Hawkeye/ Gopher game each
year. It is often called one of
the most prized trophies in
college sports. At the present,
Minnesota holds a 41-34-2
edge on the Hawkeyes. And
currently, Floyd is resting comfortably in Minneapolis under
the watchful eye of Minnesota
Coach Jerry Kill. Rumor has it
that Coach Kill is taking quite a liking to the little porker and plans on
having him around for some time.
Enter BBQ. In secret closed door meetings, the leaders of both the
Minnesota and Iowa BBQ Societies devised a competition between the
two BBQ Societies for bragging rights. Here is the plan. Two contests,
Minnesota in May, May 18-19th, in Faribault, MN and the Iowa State
BBQ Championship in Marshalltown, Iowa, June 22-23rd. The team with
the highest combined score from both contests will be declared the winner. Along with entry into the 2013 Minnesota in May and 2013 Iowa
State Championship contests, the winner will also receive the first BBQ
Floyd Banner, a fitting award for such a long standing rivalry. Competing
teams must be a member in good standing of either the Minnesota or
Iowa BBQ Society prior to April 15th, 2012, in order to qualify for the
competition.
The Iowa teams have been somewhat vocal coming off a rather dominating season in 2011. Time will tell if this carries over to the 2012
campaign and produces a winner for the State of Iowa. Or possibly can
the Minnesota teams surpass them Will BBQ Floyd join his cousin in Minneapolis come June? Let the smokers begin and the best team prevail in
the newest Minnesota Iowa rivalry.

How many will you do?
To borrow a cliché from a popular soap opera or as they are known today, daytime drama, “Like sands through the hourglass... so are the Days
of Our Lives” as I gaze at the calendar, it is almost hard to believe that
spring is almost here and the BBQ season is kicking into gear. Where did
the winter or “off season” go? How many events will our team do this
year? How far will we travel? Or more importantly, what the heck does
sand and an hour glass have to do with a BBQ contest schedule?
Here in the northeast, we really never had a long slug of winter. In
Maryland, we have had very little snow and no real extended runs of
cold weather, which is okie dokie in my book. As of this writing, it is mid
February and time to get the 2012 BBQ schedule at least framed up. As
I glance over the growing list of upcoming events, it occurs to me that
there are more and more contests popping up each year. It wasn’t that
long ago when you sometimes had to search to find a contest that fit into
you schedule and was within your target driving area.
Today things are different in this neck of the woods. It seems there are
more and more events to choose from. There are even some weekends
when you have to choose between venues. There are even a couple of
times where, if you where extremely brave and somewhat mentally challenged, you could actually cook two contests in different locations in the
very same weekend. My question would be “why?” But there are some
that would ask, “why not?”
Of course I am just kidding about the mentally challenged part. As I
look at our schedule for possible events, I usually try to get in a contest at
least once a month between April and October. If you toss out July which
is tied up with the annual family vacation, we usually end up with around
6 or 7 events on the board. For me, a working stiff on the back side of
middle age, that is more than enough.
There are several reasons I make such a statement, the first is for me, a
contest weekend is very strenuous and taxing on my slightly rotund physique. Not that I am a complete couch potato, (not that there is anything
wrong with that), but I gotta tell you, come the day after returning home
from a contest, I am whipped. Cleaning up, putting a few things away,
and I am ready for a few days of rest in order to recuperate.
The second is taking time off from work. I usually have to take Fridays
off on most contest weekends and sometimes even slip out a few hours
early on Thursday. My employer is pretty understanding and is well aware
of my off time addiction. All that being said, when I do attend the regular
Friday afternoon team conference calls during BBQ season, inevitably I
will hear a comment or two about how unusual it is that “George is actually HERE on a Friday.” Nuff said about that.
The third reason, and probably the most important, is the cost. We all
know what it costs to cook one of these events, and unless you’re in the
money every time out, it is somewhat difficult to operate in the black. If
anyone out there has figured out a way around this one, please let me
know, the advice would be very much appreciated.
We all know folks that cook a ton of events each year. I know a team last
year that cooked something like 8 or 9 weekends in a row without a break
for a total of 20+ in the season. My hat is off to them and to any team
that cooks a similar schedule. All I can say is, I don’t know how you do it.
For us, a group of aging BBQ wannabes, 6 or 7 a year is a lot and about
all we can handle. There are probably teams that might say that 6 or 7 is
a lot, and if someone asks me if it is on the Sunday AFTER a contest, I’ll
probably tell them they are right.

Stop #21: Lynchburg, TN
The drive from Tullahoma, down the hills and winding roads towards Lynchburg, was prettier than the last few years Christine and
I made the trip to attend the Jack Daniel’s World Invitational BBQ
contest. This year, not only would we pass out samples to the thousands of attendees, but also we would be competing against some
of the best BBQ teams in the world! Back at the end of August,
the last qualifying weekend even, we surprisingly won a contest in
Lakeport, California. Even more surprising was the Jack Draw the
following Friday and finding out that we were the lucky wildcard
draw! So this trip to Lynchburg was a once-in-a-lifetime moment
for us.
With doing double duty this year, the planning started early. Lining up help with our team and to man the KCBS
sample tent, were just a couple of things we needed to prepare for. Lucky for us, family was more than ready to
pitch in and help. My parents, Bob and DeLonna and our daughter Katie, who have helped us before, cleared their
schedules to assist along with Katie’s friend, Jackie. Our helpers from last year, Kelly from the KCBS office and
Ashley would take care of the tent and our buddy Josh would man the grill! We even pulled in early to not rush set-up.
Friday came and the excitement of the moment started creeping up as all the teams had loaded in. That afternoon before the parade of teams
and heading up to the hill, there was a nice gathering in the International Village to honor two friends who did not make it back to their beloved
“Jack”. Tony Stone and Bob Carruthers passed away this year and were honored by friends and family who came together to raise a glass of Jack
Daniel’s and share fond memories of them. I was proud to fly the Australian flag at my cooksite in memory of Bob and the fun times Christine
and I shared with him.
Since Christine and I had frequented ‘The Hill’ in the past, we wanted to make sure our family got to enjoy the beautiful view looking out over
the Tennessee hills and see the stunning sunset over Lynchburg. After a quick dinner and salutations, we went to get ready for the long cook and
the once-in-a-lifetime experience that awaited us. Once the briskets were on and everything else was prepped and on schedule, Christine and
the family headed to Tullahoma and nice comfortable beds. I would be watching our Good-One Rodeo hold a nice steady temp through the cold
fall night. Preparing for the cold, I had a welding blanket that I laid over the cooker. I also put on a couple of moving blankets. When one of the
moving blankets started smoking and burst into flames, I should have taken it as a sign. Note to self – blankets should only go on the smoking
chamber and not the firebox.
At some point during the night, I had a surprise visitor. World Champion Scottie, of Cancer Sucks Chicago, stopped by on his way to a cookoff
in Dalton, GA. I ventured out at one point to see who was up at like 3 in the morning. I had a nice visit with Heath, of Pork Barrel BBQ, and
caught Ken, with Big Bob Gibson, checking his pit temp.
The other big note to self was to purchase a carbon monoxide detector for the trailer. You see, I was running the generator on the trailer through
the night since we had the refrigerator filled with supplies for the grilling demonstration and samples on Saturday. Sometime through the night
I got up for one of my hourly smoker temperature checks and was sick from the fumes. I knew that something was wrong so I opened the trailer
door, turned on the overhead vent and made sure that nothing was blocking the exhaust. Thinking everything was fine, I went back to sleep in
the trailer. Christine called me a little after 6 am to check on things and could not understand a word I was saying. Mike and Beth from Quau
came down to check on me. Finally Jason, Mike and the crew from 4 Smokin Butts talked me into visiting the EMT. During my absence, Kelly of
the World Championship team 4 Legs Up, Don and Sharon, of Smoker’s Wild, and Rex and Barbara, of Pork Barrel BBQ, stopped by and helped
Christine. Had I known the caliber of cookers offering to help, I might have taken the ride and we probably would have placed higher!
Once I made it back to the cooksite, things were rolling right along and I jumped in where I could. Lucky for us, the KCBS side of things was
going great as Veronica from MMA even jumped onstage to pass out food samples with Josh. Lots of folks stopped by to wish us good luck and
check on me. After the final turn-in, I jumped onstage and demonstrated to the crowds our Weber Chicago Steak recipe with a parmesan basil
drizzle, our version of Memphis-style Cavanaugh Sausage with Reser’s Coleslaw on top and our “Make it your own” Reser’s potato salad! We even
squeezed in a Grillmaster contest which pitted Memphis in May Grand Champion Chris Lilly, of Big Bob Gibson, against Washington DC’s own
Heath Hall, of Pork Barrel BBQ, in a head-to-head steak grill off! While Chris’ cast iron dish was fantastic, Heath’s steak and pineapple presentation swept the judges’ votes!
When Christine and I found out about our lucky wildcard draw, knowing that it is a privilege and not a right to cook in Lynchburg, our only wish
was to get our name called. Christine achieved that for our team with a 9th place call in sauce. We finished 31st overall with 31st in chicken,
33rd in ribs, 20th in pork and 62nd(?) in brisket. Huge congratulations to the Spitfire team
with their chicken win, Lakeside Smokers for first place ribs, our great friend from up north,
Diva Q and her World Champion pork entry and Brew-B-Q with their brisket win. Chris, Ken
and crew from Big Bob Gibson won Reserve Grand while Smokin’ Hoggz BBQ were crowned
World Champions of the 23rd Annual Jack Daniel’s World Championship!
Words cannot express the gratitude and humbleness that I feel about our time in Lynchburg.
I am so blessed to have such a wonderful family and great friends in this world of BBQ. I
am sure that I have forgotten to document some of the people and things that occurred that
weekend and will blame it on the carbon monoxide poisoning! I think I have about worn-out
that excuse with Christine though.
With Lynchburg being the last of the KCBS tour for 2011, Christine and I want to thank everyone for allowing us to travel and promote BBQ on your behalf. While it can be overwhelming
at times, there is nothing we would rather do! Thank you for putting your faith and trust in us
and as our good friend Richard says, “We’ll see you on the BBQ trail”!

Order of the “Ole’ Has Been”
Our first recipe is for Stu Carpenter of Ithaca, NY who is looking for a
Coney Island Chili Dog Relish that is better than his ole buddy Jazzy Joe.
CONEY ISLAND CHILI DOG
2 tablespoons salad oil
1/4 pound ground beef (round)
1 cup chopped yellow onion
1-15 ounce chili without beans
2 tablespoons bottled chili sauce
2 tablespoons minced parsley
1/2 cup pasteurized processed cheese spread
4 all beef hot dogs
4 hot dog buns, split on the side
4 teaspoons prepared mustard or to taste
8 pickled Serrano peppers
Sauté the ground beef and 1/2 cup onions in the oil over medium hot heat,
for 10 minutes in a large skillet or until well browned. Stir in the chili, chili
sauce and parsley and heat for another 5 minutes.
In a small saucepan, stir the cheese spread over medium hot heat for 5
minutes or until creamy. Grill the hot dogs over medium hot coals for about
10 to 15 minutes, turning about every 5 minutes to cook all over.
To serve place the dogs in the buns top with mustard and then the chili
mixture, top with cheese spread, onions and one or two chilies.

Our next recipe is for Tom Finn of Sycamore, IL for Brunswick Stew from
Chowning Tavern in Williamsburg, Virginia.
BRUNSWICK STEW from CHOWNING’S TAVERN
2 fryer chickens (3 to 4 pounds) skinned and cut up
2 quarts cold water
1 teaspoon salt or to taste
3 cups chopped yellow onions
3 cups diced peeled potatoes
1-28 ounce can chopped tomatoes, un-drained
1 tablespoon sugar
1 teaspoon black pepper
4 cups kernel corn
2 cups lima beans
2 cups sliced okra
In an 8 quart Dutch oven, bring the chicken water and ½ teaspoon salt to
a boil over high heat. Lower heat and simmer uncovered, for 45 minutes or
until the chicken is tender. Skim the foam from the surface as it cooks. Using a slotted spoon, transfer the chicken to a platter to cool.
Add the onions, potatoes, tomatoes, sugar, pepper and remaining salt.
Return to a boil. Reduce heat, cover and simmer for 15 minutes. Add corn
and lima beans, cover and simmer 5 minutes longer.
Remove and discard the chicken bones and cut the meat into bite-sized
pieces. Stir the okra and chicken into the pot, cover and simmer 5 minutes
longer or until the okra is tender and the chicken is heated through. Makes

Smoked Corned Beef

Saint Patrick’s Day in the USA is celebrated in such varied ways that
it would give the patron Saint Patrick a cognitive dissonance headache
were he alive to observe it. Here are some dissonant examples:
• “Snake Saturday” celebrations the week before Saint Patrick’s Day
commemorate the day Saint Patrick drove all the snakes from Ireland. “Wait a minute!” Saint Patrick could say. “That’s a myth.
Ireland never had snakes!”
• Corned beef, cabbage and potatoes are standard Saint Patrick’s
Day feast food in America. “Wait a minute!” Saint Patrick could
say. “Corned beef, cabbage and potatoes are more English than
Irish—which suits me fine, since my homeland is what you’d call
England today, not Ireland.”
Other Saint Patrick’s Day celebration traditions have emerged since the
saint’s death that would likely give him pause—such as drinking green
beer to excess. Since Irish priests invented whisky, Irish whisky would fit
the occasion more properly than green beer. And I’m only guessing, as
little is known about the many details of Saint Patrick’s life, but I assume
he would advise drinking Irish whisky in moderation, not excess.
Given that we have a long tradition in the USA of feasting on corned
beef, cabbage and potatoes on Saint Patrick’s Day, you can add a delightful twist to the tradition this year by smoking your corned beef.
Here are a few tips to get the best results:
• Boil your corned beef for at least 45 minutes & drain it before
smoking. Or, as Paul Kirk told me, you can get the same result by
soaking the meat overnight in water in the refrigerator. Either technique will eliminate excess salt from the meat. I skipped this step
once and the beef turned out way too salty!
• Smoke it without rubs, mops or slathers at 180 to 185 degrees F.
for 45 minutes to 1 hour per pound until tender. You can experiment with added seasonings on the next one, but first it’s important
to know the deliciousness of unembellished smoked corned beef
flavor. I serve it with condiments such as mustard, bbq sauces and
horseradish sauce on the side.
• Use your favorite smoke. I like equal parts apple & pecan wood.
• Sourdough or rye bread is ideal for smoked corned beef sandwiches.
• A tasty variation on traditional Irish stew is to use chunks of smoked
corned beef instead of lamb or mutton in your favorite recipe.

DOUBLE DUTCH BROWNIES
2 cups sifted all-purpose flour
2 cups cane sugar
1 teaspoon baking soda
1 cup (2 sticks) unsalted butter (not margarine)
1 cup water
1/4 cup unsweetened cocoa powder
2 large eggs beaten
1/2 cup buttermilk
1 tablespoon vanilla extract
Frosting:
1/4 cup (1/2stick) butter (not margarine)
6 tablespoons buttermilk
1 pound sifted confectioners sugar
2 teaspoons vanilla extract
1 cup chopped walnuts
Preheat the oven to 400 F degrees and butter a 15 1/2”x 10 1/2”x 2” baking pan. In a large bowl, sift the flour, sugar, and baking soda.
In a small saucepan, bring the butter, water, cocoa to a boil over medium
heat. Pour over flour mixture, whisking until smooth, blend in eggs, buttermilk, and vanilla. Pour into the pan. Bake for 15 minutes or just until the
top springs back when lightly touched.
Meanwhile, make the frosting. In a medium-sized heavy saucepan, over
medium heat, stir the butter, cocoa, and buttermilk for 4 minutes or until
the mixture begins to bubbles. Remove from the heat and stir in the remaining ingredients. When the brownies come out of the oven, immediately
spread the frosting on top. Cool in the pan on a rack for at least 1 hour, then
cut into 2-x 1 1/2 –inch bars. Makes 3 1/2 dozen brownies. From Kevin

Enid, OK
Enid’s Smokin’ Red Dirt returns in April, with a few changes

All serious competitors know KCBS-level barbecue requires showing up
in any weather, ready to play.
Smokin’ Red Dirt in Enid, Okla., has a reputation for testing that assertion, presenting teams with rain, sleet, snow and wind, sometimes
simultaneously.
“I think downtown Enid must be on Indian burial ground,” quips Jeff
Brown, a top 50 nationally ranked competitor who is from the area.
Brown got his start in big league barbecue in the mid-2000s by participating in the city’s first-ever food show and barbecue contest, where he
was a vendor promoting Traeger pellet grills.
That first event was
unsanctioned and included only five teams.
Brown cooked with a
former
brother-in-law
and served up meat
with the consistency of
a baseball mitt, as he
recalls it.
Still, within the year
he had smoked his first
top prize winning rib,
and he was hooked. “That’s when it re- Wildcatters Q Crew, Enid OK
ally grabbed me,” he says. Last year,
his team, which includes wife Tracy, parents Henry and Ann, and 6-yearold daughter Isabella, “Izzy,” finished 31st in the country.
Likewise, the Enid event, which will be held this year on April 20-21,
soon outgrew its humbling beginnings, blossoming into the communitywide Smokin’ Red Dirt festival that is now sanctioned by the KCBS and
attracts contestants from throughout the region. It offers the community
a wealth of activities including a people’s choice tasting, an art show,
entertainment, and an AMBUCS fundraising barbecue luncheon . The
diverse offerings have been met with vigorous enthusiasm.
While organizer Lynne Benkendorf is always hopeful contest weekend
will bring an outbreak of beautiful spring weather, this year she is also
planning it around one challenge that she can control. Construction of a
new downtown event center and renovation of historic Convention Hall
— part of an exciting $24.5 million re-development project — will introduce some minor changes to the layout of competition and parking areas.
Construction accommodations aside, another reputation the contest
has earned is for its professionalism and expert management, and Benkendorf is working hard with community leaders to make sure the event
will run as smoothly as ever.
As she notes, the barbecue festival now in its 7th year is proving a
perfect fit for the community. “You know the saying that the 7th year is
a make-or-break year in a marriage? Well, the marriage we’ve started between the barbecue contest and the Enid community is going strong and
continues to get better every year,” she says.
A New Contest in Canada….
Nanaimo, British Columbia!
July 14-15, 2012
Plans are in the making for KCBS’s newest contest in Canada-- in
British Columbia! The Nanaimo BBQ Fest will be held on Saturday and
Sunday, July 14-15th .This lovely city, known as the Harbor City of Vancouver Island, offers oceanfront scenery and mountain views. The route
to this contest will be beautiful with the promise of a fun and unique
event to follow!
The KCBS contest will be held in the picturesque downtown area of
Nanaimo and is a fundraiser for the Nanaimo and District Hospital Foundation. Teams will be treated to a meet and greet social and tours at the
Longwood Brew House. People’s choice contests, a rib eating contest,
music, pancake breakfast, a beer garden, kid fun zone and a 5K walk
and run will all be part of the fun. Several ancillary contests, including
sauce, chicken wings and desserts are being planned.
Malvern Makuyana, the contest organizer, and his staff are working
diligently to make this a smoothly run first time contest. Their concern
for the teams and judges is apparent in every step of their planning. We

First European KCBS
Sanctioned Contest!
April 21-22, 2012
The smoke wafting through the windmills and into the modern town of
Zaandam, Holland will signal the first KCBS sanctioned contest in Europe. The Tony Stone Low and Slow BBQ Competition, named after past
KCBS president and BBQ Aficionado, Tony Stone, will feature contestants from all around Europe AND even several from the United States
are even expected! This contest has been painstakingly planned and
built by its organizer, Harry Havinga. ([email protected]).
Last year was the first year for this contest. A mock contest was held
and judges and cooks were trained. It was so successful that Harry decided to apply for KCBS sanctioning. We expect that this year will be a
truly an international event with not only US teams, but also US CBJ’s
making the trip to join in the fun!
This year we will be holding an “official” KCBS CBJ course followed
by a KCBS sanctioned contest. Twiske Park, in Zaandam (a suburb of
Amsterdam) is the site for the contest. It is a great place for a contesteven featuring a beach! This park is privately run and its owners couldn’t
be more welcoming!

Sam’s Club
National BBQ
Tour Kicks Off
In preparation for the kick off of the 2nd Annual Sam’s Club National
BBQ Tour, The Bullsheet sat down with Tour Director Troy Black to talk
about the Sam’s Club National BBQ Tour and more.
The inaugural Sam’s Club National BBQ Tour was the talk of the BBQ world
in 2011. Why do you think it was so successful?
TB: The Sam’s Club National BBQ Tour generated a lot of excitement
because of the prestige, prize money and the tournament style format.
Teams had to work their way through the entire field to become National
Champion. With over 600 teams competing, all that prize money on the
line, and a different format for the competition, that brought loads of
interest to the entire competition, and with that interest there was also
plenty of excitement.
It’s been about five months since the National Championship in Bentonville.
Now you’re back for more in 2012. Did you miss it?
TB: Above everything, I missed the travel. I love being able to travel
across the country. I come into these cities and meet the teams. I see
old friends. I make new friends. My life is in competition barbecue. You
bet I missed it!
Last year’s National Champion, TippyCanoe BBQ Crew, went on a tear at the
end of last season. Do you think there’s a chance they can repeat?
TB: That would be one tough feat to accomplish. It’s going to be a
challenge for any of the teams that finished in the top 50 to make it back
to Bentonville. The field is so competitive. The scores are so tight. I’ll say
one thing. For any team that makes it to the National Championship, it’s
going to take a lot of hard work and a little luck to get there.
Looking at the field as it is currently, where do you think the hardest local
competitions are?
TB: I think the couple that immediately jump out to me are the Huntsville and Lenexa competitions. Both of those locations are major centers
for a number of successful barbecue teams.
What separates the Sam’s Club tournament-style competition from a more
traditional contest? Do teams prepare any differently?
TB: I think teams are definitely strategizing on where to compete. They
want to make it through to Bentonville, and so they look at where there
may be less teams competing. The prep, though, is no different. A contest is a contest. The judging is uniform and first class. So preparing to
cook should be no different from a local competition, for instance.
What can fans look for in terms of changes for 2012?
TB: One of the biggest changes is that teams can only participate in
one event. Last year teams had a second chance to register for an additional event. This year you only get one shot. It allows everyone to have
the same opportunity to win instead of some teams having a greater
advantage.
Another change is the field has expanded by five events. Now you have
five local events that feed the five regional events, and they feed the National Championship.
And finally the payout structure has changed. Now all the overall
top finishers are winning prize money. Every team that finishes in the top
six at a local event will receive a check.
If Troy Black were to put together a recipe for someone to win the Sam’s
Club National BBQ Tour, what would it look like?
TB: My recipe would have heavy amounts of details and consistency.
Make sure you keep your head in the game. No distractions. Trust your
process. Make sure that everything, and I mean everything, is accounted
for. Make sure that your cooking temps, your selection of meat, and your
timing are all rock solid. All of the details combine to create a winner.
Last year you travelled all across the country. What was your favorite tour
stop?
TB: My favorite was probably New Mexico. We travelled to Santa Fe
early in tour season. It’s my favorite partly because it was a great day of
competition and partly because I got to experience some local cuisine
I had never tried before. The food was a local Tex-Mex style. I had this
amazing sauce that was called a ‘Christmas sauce’ because it was red
and green. My world is surrounded by food. Wherever I get great food is
where I want to be!
What city are you looking forward to visiting this year?
TB: I’m probably most looking forward to Charleston, SC. Charleston
is one of my absolute favorite cities. It’s all about low-country food there.
If you were to tell someone to keep an eye on one particular thing this year
with the Sam’s Club National BBQ Tour, what would it be?
TB: I’d keep my eye on Region 1. Region 1 is the ‘west’ region that
finishes in Albuquerque. There are a lot of up and coming teams on the
west coast. Those teams combined with the already established teams

GBC BBQ Throwdown - Jan.28, 2012

Well, the 2012 BBQ season has kicked off, at least at the Brazier
house. We were honored to have been asked to rep the GBC BBQ Throwdown held in conjunction with the GBC Annual Banquet and Awards
Presentation at the beautiful Brasstown Valley Resort in Young Harris,
Georgia, on Jan. 28th.
This was our first trip to Brasstown
Valley Resort and, if you haven’t been
there, trust us, you are missing one
beautiful facility. Even in the dead of
winter, it was beautiful with the trees
and scenery and the mountains in the
distance. I can only imagine how magnificent it looks the rest of the year.
The GBC BBQ Throwdown was a first
year contest held at the lodge of the
resort, as stated before, in conjunction
with the Georgia BBQ Championship.
But, it was, also, part of one HUGE bbq
weekend. Along with the contest and banquet, there was a Table Captain
Certification class and KCBS judging class put on by Rich and Bunny
Tuttle. Also, Troy Black was present to put on a cooking class. It was
truly a bbqer’s weekend retreat.
Now, back to our contest . . . . .
There were 24 high-powered teams in attendance. The schedule of the
event required the teams to be flexible because the turn-ins started at
3:00 p.m. with the awards being the first order of business at the banquet, which started at 6:00.
The teams, and the reps, were pretty lucky. Although the weather was
on the cool side, with temps in the upper 40’s to mid 50’s both days
with some sunshine mixed in. I’m sure everyone was remembering in the
backs of their minds that there was snow at the banquet last year.
Organizer, “Big” Jim Stancil, with the assistance of his wife, Amy,
who was the judge’s coordinator, along with resort representative, Bobby Brumley, went way out of their
way to make everything great for
the teams. Everyone had been told
from the beginning that power and
water would not be available as
teams would be placed in the parking lot of the lodge, but when they
arrived, there was plenty of water
and power for everyone who needed
it. You can always tell when a cook
has a hand in organizing a contest,
they think of everything.
The later turn-in times were something Phillip and I were not used to,
but we loved the opportunity to spend a little more time on Saturday
visiting with familiar teams and making new friends.
Turn-ins went smoothly, thanks to the great volunteers we had from the
deep pool of available CBJ’s. We appreciate all their great help. As well
as the helping hands from our good buddies, Ernie and Linda Poland,
who were also there.
Finally, the banquet arrived and the winners were announced: taking
first place in Chicken was the Pig Whisperers; honors in Ribs went to
Que’n, Stew’n & Brew’n, top Pork belonged to Warren Co. Pork Choppers, and the Brisket winner was Rescue Smokers. Reserve Champion
was Rescue Smokers and Grand Champion of the day was Warren Co.
Pork Choppers. I don’t think anyone who attended would have a problem
with my saying we were all winners to be a part of such a great weekend.
And the great thing is we, along with the Polands, get to do the contest
aspect again in May when we get to work the 5th Annual Horsin’ Around
BBQ Showdown at the resort.

Any predictions for 2012?
TB: My prediction is that the unexpected will happen. Its anybody’s
game. The only prediction I know will come true is that there will be
some great competitive barbecue battles this year. I can guarantee that!
As of right now there are a few spots still available to compete in the tour.
It’s $500,000 on the line, for any teams out there that aren’t already
registered, you really don’t want to miss out on this opportunity.
Any last advice for teams competing this year?
TB: Bring your game face. You’re gonna need it!

If you don’t know or haven’t met Jennifer French it is your loss. Called
in two years ago, late in the program, to be the Ribs, Rods and Rock ‘N
Roll Contest coordinator she did a bang-up job, and the 2011 contest
was just spectacular. Behind the blonde hair and warming smile is a
very unassuming lady that is very humble and keeps none of the credit
but is very happy to share it with the people of Vermillion. Let me share
the list she gave to me.

See what I mean, she gave me a list that would and could go on forever. The attitude and sense of cooperation shown by everyone is incredible. You ask a question there is an answer, you need something and it
is there immediately.
Teams are recognizing this level of commitment and support to the
point that the list of champions from other contests are there to put their
skills to the test against other champions. It was hard to ignore Swine
Assassins, Parrothead, and Matt Burt’s crew from Lincoln, NE just to
mention a few of the teams that were in place cooking.
Friday night is a lot of fun as there is a street fair right next door that
brings out families from all over vermillion and the surrounding area. Of
course there is the University of South Dakota just a few blocks away
and music, music, music. I don’t know where Randy hammer finds the
bands but there is a terrific turnout to sit and listen. A People’s Choice
Barbeque Contest sells out quickly and everyone has plenty of the competition teams to taste and savor barbeque at its best. One last thing,
the Car Show was unbelievable. There was two city blocks of cars parked
on both sides of the street and then I found that side street and I’m not
a motor-head but these street machines were fabulous. Not only the
chrome all over under the hood and the impeccable interior work brought
back memories of the power machines of the 50’s and 60’s. Then you’d
hear an engine start and there was no doubt that there was “Muscle”
being demonstrated. Take a minute and go to their website, www.sdbbq.
us and take in the cars and ‘Que. It is a show and a half and definite
addition to the best barbeque and you can get a smatter of both on the
website.
Back to barbeque, and what a treat for our CBJ’s. The cook teams
were in competition form immediately after the meat inspectors, Hilary
Bergendahl and Cheryl Koch, left charm and goodwill at each site, and it
showed from the first turn-in. Everybody was on-time, in fact, all of the
turn-ins were very quick and smooth and one could see a bit of gaming
towards who was at the turn-in table at what interval. After all was said
and done here are the teams that rolled out on top.

People’s Choice Winner – Charcoal Loungers
Knowing Swine Assassins was in the hunt for “KCBS Team of the Year”
made it special and they assured me at the KCBS Annual Meeting in San
Diego that they would definitely be back. Toad Hollar was a back-to-back
Grand Champion at the LaPlatte, NE contest and everyone is hoping they
don’t take off another year. Lets get all the teams back and add about
twenty more and really stroke up the competition.
Haul your rig up the road and enjoy all the great things that Vermillion,
SD and the Rib, Rods and Rock’N Roll Barbecue contest has to offer.

Getting
Fired Up

2012 is definitely a political election year. Caucuses, Straw Polls, and
Elections all have politicians on their game. In searching for unique
stories of how teams begin, it is hard not to notice a story of two fatigued
Senate staffers dreaming for a tasty BBQ dinner while debating pork
barrel spending. This idea went from a hobby to a passion to a business.
Many of us in the BBQ community have thought about a rub or sauce
or even how we take
our love for BBQ to
the people. In 2006
this idea started to
grow. As dreams do,
they continue to appear and in 2008,
friends and family were invited to a
tasting. Out of that
tasting came Pork
Barrel BBQ and their
All-American Spice
Rub. Is it a sellable
product and the how to questions started to rise. Along with their answers to the “how to’s”, Pork Barrel BBQ began a meteoric rise on to the
national BBQ scene.
By December 2009, the company was official and producing and secured their first retailer (a neighborhood butcher shop that ordered a
dozen jars). Being aware of social media, Pork Barrel BBQ began a rise to
the most followed BBQ site
on Twitter (nearly 32,000
followers). This led to their
being discovered and found
to be a great fit for an ABC
TV show called Shark Tank.
A struggling local brand
quickly became a national
BBQ dream. Multiple sauces (Men’s Health magazine
named the Original Sauce
the Best BBQ Sauce in America and one of “The 125 Best Foods for Men”), rubs (in over 1000 stores
in 38 states) and merchandise with a competition BBQ team that made
it all the way to the Jack Daniel’s this year. They have had their Grand
Championship walks including the Safeway National Capital BBQ Battle
(the Chinet People’s Choice Award for best barbecue sauce), and also
managed to put out their own BBQ cologne called “Que” which has “An
Intoxicating Bouquet Of Spices, Smoke, Meat And Sweet
Summer Sweat.” Hundreds of
articles and comments ran on
Que in places like Sports Illustrated, MSNBC, Fox News,
The Tonight Show and Glamour Magazine. Sticking with
what proved successful in the
past, Pork Barrel BBQ created
the BBQ Social Network at
www.BBQBackyard.com. This is the world’s only social network dedicated 100% to BBQ and it is FREE. Wrapping up a product line that
is the envy of any BBQ fan, Pork Barrel BBQ Peanuts were introduced
and keeping the company tied to its Virginia location and its restaurant
opened this year in Alexandria, Virginia and had such an overwhelming
response that they sold out of meat in just over 3 hours.
If there can be a team to rise to the top any quicker, they will need a
stop watch. What is great about the BBQ
community, Pork Barrel BBQ has kept an
open and very friendly approach. Sharing
the stage with others at events to spread the
good BBQ word to the masses, interacting
with folks who have questions on their network, social media and an open and honest approach. These fellows have kept the
American pass time true to itself while leaving the politics our of Pork Barrel BBQ.

you were to relax the meat before grilling, it will stick less to your grill.

The Great Pacific Northwest

It may be a wet, chilly winter where you are but in the great Pacific
Northwest, it’s ALWAYS like this! Actually, winter’s been a comparatively mild one in the upper left corner of the country and BBQ fever has
driven normally dormant teams out of hibernation. Just recently, cook
teams gathered in two Washington cities to shake off the season and
compete in Face-the-Judges events. In Vancouver, teams from Oregon, Washington and British Columbia met for the 2nd Annual NW Winter Blues Rib Rally, to raise funds for
the firefighters of that Washington city and the Leukemia Society. Clear
skies and fifty degrees even saw a smaller number of them in a “Hot
‘n Fast” beef brisket side event. Head Judge Jane Biehl assembled an
experienced panel and each cook team enjoyed, if nervously, the process
of sitting face-to-face with judges while they evaluated each entry. Cooks
and judges alike not only enjoyed the encounter but walked away with
feedback good enough to use. Head judge Biehl remarked, “We get as
much or more out of this exchange than the cooks do. Our judges love
doing this and we end up, better for the experience.” Initially a three way tie for first in ribs was broken, each team being separated by one point. “Leukemia Sucks, Too” placed third, being
named “Jack of Ribs”. Maddog’s BBQ, just one point higher was “King
of Ribs” and the “Aces of Ribs”, a solo point in the lead, were Paul Glavanits and Kodey Fitzgerald of “Home on the Range”. The brisket honors
went to Gary Herrera of “Big Kahuna BBQ” and a people’s choice rib
event judged by firefighters was dominated by “Leukemia Sucks Too”. Meanwhile, up north in Snohomish, Washington another Face-theJudges competition was held simultaneously under the banner of the 2nd
Annual Winter Burnoff. Both chicken and ribs were the order of the day in
the similarly formatted event. Head Judge Deb Staley convened the panel
and ended up awarding from fifth up. Finishing order was Lakeside BBQ,
Smoke ‘n Steel, Kolander Grubbs, Smokey’s BBQ (Ladies of the team)
and Grand Champ was Smokin’ Ty’s. Two more early season events are on the March calendar. Chilliwack,
British Columbia will host a full two-day competition under the Pacific
NW BBQ Association (PNWBA) banner, organized by Angie Quaale and
David Gassaway, on the 24th and 25th. In Redmond, Washington, organizer Saffron Hodgson will host a Whole Hog event, that same weekend. Other recent news items from our neck of the woods saw the team of JD
and Rhana McGee, “Wine Country Q” take 2011 Team of the Year honors
for the PNWBA and the association elected Head Judge Jane Biehl as our
new President.
So, it’s clear to see that while the winter winds may have pits under wraps... somewhere, in the great Pacific Northwest, BBQ fever never
fades! There’s a lot of events, both KCBS and PNWBA, on the calendar
this year. Y’all are more than welcome to come join in where, contrary to
popular belief, BBQ never really takes a month off! We’ll wrap this inaugural column on a less than joyous note but one
that ought to be said. While we all celebrated family and friends through
the holidays, a good friend to the KCBS and certainly the BBQ’ers of
the Northwest, slipped away. A long time KCBS rep by the name of
Jim Monihan, from Boise, Idaho, lost his battle with a deadly disease,
December 12th. To many, Jim will always be remembered for his piratestyle eye patch but to more, he’ll be warmly thought of for his smile, sincerity and the help he always offered anyone in need. We’ll remember Jim
for the high road he always took and he made sure his events did, too. He
wouldn’t want us to dwell on his loss but I’m sure he would appreciate us
remembering him each time we see a fellow competitor needing a hand.
Jim would be helping with a canopy or bolstering a new team with advice
or he’d be cheering up somebody who just produced mushy pork, a leather brisket or chicken skin
worthy of Wrigleys. He
was that omni-present
smile, a joke, a hug in Boise State orange and blue
or more often, an Aloha
shirt and cigar. He just
always seemed to be there
especially when you needed him. Ol’ “Cyclops” is
undoubtedly off blue water fishing somewhere or
enjoying the unmistakable
smell of hickory and pork.

Holds CBJ Class

69 people signed up to take the CBJ class taught by Bunny Tuttle and
hosted by the Beta Beta Que Society. The class was held at the Columbia Senior Center. Volunteers from the local BBQ Society
assisted with the preparation
of the turn-in boxes. Jamey
Johnson cooked all the meat
and transported it to the Center. Rich Tuttle cut the meat
and oversaw the preparation
of the turn-in boxes. Organizer, Mike McMillen, noted that
the Beta Beta Que Society has
aided in helping some
550+ persons to become
Certified Barbecue Judges over
the past 7 years of hosting CBJ
classes.
