Cabernet Sauvignon
McLaren Vale’s great diversity of microclimates,
soils and topography allow it to play host to an
impressive assortment of varietals, both red and
white. The unifying factor for each of these areas
is their proximity to the Gulf of St. Vincent, whose
cooling ocean breezes prevent grapes from
ripening too rapidly, thus permitting them time to
develop even greater levels of flavour, colour
and tannin while maintaining acidity. For Cabernet
Sauvignon, this allows for the creation of wines of
considerable intensity and concentration, imparting
a purity to their cassis and black fruit flavours
that distinguishes McLaren Vale’s wines from those
produced in regions such as the Barossa. This
example, from Chapel Hill, perfectly communicates
this sense of freshness and precision.

a Pinot Noir specialist. This white barn
in one of Hidden Bench’s vineyards is a
local landmark. A gazebo at Rosewood
Estates Winery provides visitors with a
shady spot to enjoy the vineyard views.
Some of the most interesting Pinots
grown in Niagara come from vineyards
along the bench, a glacial-carved
extension of Niagara Falls – essentially
an enormous rocky step of the
escarpment – that adds an extra layer
of character and textural sensation
of minerality to a wine. The limestonerich Beamsville Bench is the
westernmost of these sub-regions, and
creates Pinots with a distinct mineral
quality. Its next-door neighbour is the
Twenty Mile Bench, which features
a distinctive double-bench formation,
clay-limestone soils and high elevation,
and tends to yield intense, bright
and fresh Pinot with mineral undertones. Further east between the
Welland Canal and Niagara River sits
St. David’s Bench, a gently sloping
bench of deep clay and sandstone
that sees generous rainfall and leans
towards slightly softer, silky Pinots.
Like all of Ontario’s wine regions, the
benches have a cool climate that
allows Pinot to retain plenty of foodfriendly acidity while developing its
complex flavours and nuances. Pinot
creates incredibly lithe and elegant
red wines, which is good news for the
foodie: these are wines that can
harmonize with subtly flavoured foods
without overpowering them, and
at the same time have the backbone
to stand up to red meats and aged
cheeses. These traits make Pinot
indispensable during the holidays,
as it’s a perfect accompaniment to
seasonal foods like autumn stews, root
veggies, and traditional turkey dinner
with all the trimmings.

Toro, the local name for Tempranillo, offers an
impressively complex nose of smoked meat, vanilla,
spice and violets. Boldly structured, rich and
flavourful with a light spicy note on the long finish.
