Distillery Overview Rolling River Spirits is a family-‐owned and operated craft distillery located in Portland, Oregon. Founded in 2011, the company offers artisan organic spirits made from the freshest ingredients. The name, Rolling River, is inspired by the majestic rivers in the Portland area and underscores the importance of pure water in the distillation process. Tasting Room Located on Distillery Row in Southeast Portland among five other distilleries, our tasting room features many artistic touches such as a hand-‐carved tasting bar in the shape of a ship’s hull. Additionally, we display the work of a select local artist each month. Tasting room hours are Friday from 4:30 pm – 7:00 pm and Saturday and Sunday from 12 pm – 5 pm. Weekdays are by appointment. Craft Spirits & Philosophy “We handcraft our spirits with only the finest ingredients in Portland, Oregon. Our family’s Master Distiller, Tim Rickard, personally creates each blend using his own custom-‐built stills and Portland’s renowned pure water, which stems from our tallest peak and one of the city’s most revered icons -‐-‐ Mt. Hood.” Rolling River Vodka The company’s first bottling, Rolling River Spirits Vodka, is 40 percent alcohol by volume and distilled from Winter Wheat using a small reflux column still. Future bottlings will include Gin and Whiskey. Management Team Rick Rickard, Co-‐owner and General Manager Rick enjoys all spirits, and especially kicking back and enjoying a fine drink – from a clean vodka or a sweet and oaky scotch, to a Reposado Tequila or a neat, smooth and creamy rum. He has always had a ceaseless interest in spirits and art, so combining the two is natural for him. In so many ways, distilling spirits is a true art form. Tim Rickard, Master Distiller Tim started with home brewing many years ago and has created a vast array of beers, from traditional lager’s, porter’s, and IPA’s, to fruit and spice flavored exotic blends. As time progressed, his interests expanded into the world of spirits distillation. Tim started to explore the industry, trained in the art and science of distilling, and began tasting spirits and requesting information from distilleries in Oregon, Washington and all the way to New York. Joan Rickard, Co-‐owner and Distiller Joan will never pass up an opportunity to visit small craft distilleries and try new spirits — especially if that spirit is Gin. Joan’s craft focus for Rolling River is perfecting Gin recipes using a custom-‐built small Reflux column still, handmade by her son, Tim.

White spirits are oil-derived complex substances consisting of aliphatic, alicyclic, and aromatic-hydrocarbons with carbon numbers mainly in the range of C7 to C12. These are clear, colorless, and flammable liquids with a flash point of approximately 21- 68°C. White spirits have density of approximately 0.8 g/ml, slight water solubility, and vapor pressure in the range of 0.3 - 3.0 kPa. They have a distinct odor with an odor threshold of 0.5 - 5.0 mg/m3 in air, due to their high content of aromatic hydrocarbons.
