An Interview with Rod Rotondi of Leaf Restaurant
and Leaf Organics

od Rotondi, owner, founder, and chef
of Leaf Organics in Los Angeles, is a living
testament to the benefits of a raw food diet.
When my editor and I visited the restaurant,
Leaf, on a warm afternoon in November, my
impression was of a vibrant and radiantly
healthy man, somewhere in his mid thirties.
I had previously encountered some of Rod’s
creations at health food stores and become a
fan of the Atlantis Pâté — a taste of the sea
minus the fish — often making a lunch of it
alongside his raw flaxseed crackers. But my
previous encounters with raw food did
nothing to prepare me for the feast we
encountered at the restaurant: a cornucopia
of textures, tastes, and colors, ending in a
grand finale — a slice of Raspberry Cacao
Cheesecake swirled with pure raw raspberry
puree in a crust of dates and chopped nuts.
As a cook myself, I just had to know; in
spite of Rod’s insistence that anyone could
be a raw food chef, how easily could this
food be prepared?
WP: In your book, you described being able to
make a raw one that your dad liked.
RR: He loved it, yeah.

After reading Rod’s book, Raw Food For Real
People, and viewing his instructional DVD
series of the same name, I had an opportunity to speak with him about his culinary
background. Rod was raised in an Italian
household. There, he’d learned to cook and
gained an appreciation for food and
preparation. He went on to travel extensively
and lived all over the world, experimenting
with various cuisines. I wanted to know
how he’d made the switch from traditional
chef to raw food master, and why.
WP: One of the things you emphasize in the
book and the DVDs is how easy it is to make
raw foods and that it’s not complicated or
difficult. You said, “If you have a blender, you
can do it.” You also mention three necessary tools
for making raw foods.
RR: A blender, a food processor, and a
dehydrator. I think I said that you don’t really
need those; all you really need to be a
raw-foods chef is a good knife and a cutting
board. Human beings had been making raw
foods for thousands of years before the
invention of electricity. It’s just a lot easier
with electrical gadgets.

WP: Rod, how old were you when you first became interested in cooking?
RR: I started when I was a little kid. Everyone in my family did.
WP: Because you’re Italian?
RR: My Dad — on holidays or even weekends — was always up
early making something. He was a great baker. He could do everything in the kitchen, but he was especially good at baking. We’d be
coming down the stairs and he’d be making pizza dough, or apple
pies for the holiday meal. He’d get everybody involved. The littlest
one would mix the sugar and spices. When you were a little bit older,
you might be put to work peeling apples. When you’d graduated to
the next level, you might be put to work on the dough itself, putting
WP: Right. You wrote in your book that
humans have been eating their food raw since
before the discovery of fire — a really long time
ago.
RR: Six or seven million years. The discovery
of fire was approximately 60,000 years ago
— we don’t know the exact date. That may
seem like a long time, but it’s a tiny fraction
of the time we’ve been human. Think about
it: cooking our food is really an aberration,
in one sense. Because we live in a time period
where everyone eats cooked foods, we just
assume it’s the way to go.
WP: Well, I know there’s a controversy about
raw versus cooked. I’ve read nutritional
information that claims humans may lack the
ability — in terms of enzymes — to break raw food down in the gut,
and that cooking allows for easier digestion and assimilation.
RR: Actually, all food comes with its own digestive enzymes. Take an
avocado, for example; it contains lipase, a water-soluble enzyme that
breaks down plant fats. But, when food is cooked above 118 degrees
Fahrenheit, it kills the digestive enzymes.
WP: What about advocates of the macrobiotic diet who make claims
that, unless you lightly cook or ferment food, your body won’t digest it
thoroughly?
RR: Every animal in nature eats its food in the raw state. Yet, we
have the idea that, somehow, humans are not capable of digesting
food as it comes to us in its natural form? That just seems ridiculous

Moskovitz, a voice coach and spiritual counselor, uses the study of
voice as a vehicle for transformation. She teaches her clients to look
at their delivery to transform their persona: mind, body, and soul.
“An individual’s voice directly reflects their relationship with
themselves,” said Moskovitz, founder of Singing FromThe Heart.
Moskovitz guides her clients towards the un-impinged use of their bodies to produce a stronger,
clearer message. After speaking with several of
them, it is clear that they indeed have transformed
their voices and their lives in a meaningful way.
According to Moskovitz, a strong performance or speech is more than an accurate delivery
of a script or a presentation at a business meeting.
Moskovitz, a professional singer herself, learned
through years of performance and study that
being comfortable in one’s skin is just as important. The three students I spoke with agree.
“Carole brings out the heart in people,” said Carol Pilkington,
who went to Moskovitz after leaving a corporate job and is now a
transformational relationship trainer. “Working with Carole
definitely changed what I was doing, not just the work that we did
together but on a personal and professional level… It was at a time
when I needed to be recognized and listened to. Being able to
accept oneself is the first step in accepting others…She literally met
me with open arms. I use that same acceptance with my clients.”
Moskovitz is familiar with the professional stresses that face
many of her clients in everyday life. With her background as a
performer, she went through her own challenges. After a divorce,
health problems, and job loss, she developed her practical attitude,
accepting challenges as a constant condition of life. Moskovitz
began developing the techniques she now teaches to transform new
problems into opportunities.
Moskovitz actually established Singing From The Heart in 1986.
“It was after a serious health challenge that fortunately proved
not to be fatal, but I didn’t know it at the time,” said Moskovitz,
who was performing and working as a trained growth facilitator. “It
was a very difficult time in my life … I broke into tears and just
asked for some kind of guidance in what I needed to do next. “
Her answers came later in dreams. In one she saw her current
logo, an eighth note surrounded by a heart. She decided to open a
new direction in her life. She registered her trademark, Singing From
The Heart, and put an ad in a local spiritual magazine.
“I wasn’t exactly sure what I was doing at first,” said Moskovitz, who received her first client within days, “but it wasn’t as if I
was thrown into an area I knew nothing about. “
Moskovitz said she already knew that it took an openness and
a degree of self-knowledge to add that “something special” and
truly transform into an effective performer, speaker, and person.
According to Moskovitz, it took opening
herself to spirit and intuition in a very big way to
turn that into a business. Moskovitz now has a
Masters and Doctorate in spiritual science, a
Masters in Psychology, along with a Bachelor’s in
Sociology and Fine Arts.
“Intuition and trust is a really big part of
what I do,” said Moskovitz, “hearing the truth of
one’s heart.”
She uses a mix of physical, mental, emotional,
and spiritual techniques which focus on the
impact of the clients’ own minds and spirits on
their voices. She finds these are “frequently unconscious and
negative.”
“Often just being aware of them is enough,” said Moskovitz.
She directs them to think about what others have told them
about their voice and what they perceive others may think about
their sound and presentation style. Moskovitz also wants her
clients to think about “their own experience of their voice, sound
and presentation style,” what they feel are their strengths and

where they need to improve.
She asks them to tell her why they have come to her and
where they want to go. Being in “harmony” is one of Moskovitz’s
goals, but she wants her students to establish their own.
“Simply having a change in perspective often changes their
life,” said Moskovitz, “whether they make any other changes
immediately or not.”
Another of Moskovitz’s clients is a professional singer and
songwriter, Michelle Krell.
“When I moved down from San Francisco after getting
married I didn’t know a soul,” said Krell. “I had worked in New
York, Connecticut, and the Bay Area for years and I wanted to get
myself aligned with the L.A. area. When I saw Carole’s ad I called
her… This is a very difficult business and there are always people
trying to bring you down, going to Carole was the absolute
opposite.
“Over the years as an entertainer Krell has worked with several
voice coaches but, she explained, “Carole was different.”
“She immediately believed in me,” said Krell, who has since
released a CD and “found new doors opening I didn’t even know
existed.”
According to Moskovitz, she always asks her clients: “What do
you want? What goals and experiences are you seeking, inner and
outer? What, if anything, has stood in your way in achieving these
goals? What specific steps do you perceive necessary to take to
achieve these goals? Are you willing to take these steps?”
“She directed me to goals that I didn’t think I could even
attempt,” said Krell. “She believed in me when I didn’t.”
Krell said it took her years before she could put together “the
vision,” and without Moskovitz she doesn’t think she could have
attempted it.
“The whole thing with the voice is feeling self-assured and
Carole’s technique was wonderful,” said Krell. “She knows the
business of singing, but the element of feeling assured was what
sets her apart.”
Moskovitz uses an assortment of techniques: goal identification, affirmations, mirror work, scanning (mentally reviewing the
day), toning, and traditional vocal and breathing exercises with a
special emphasis on anxiety control.
“The first interview helps guide me to what is right for each
client,” said Moskovitz, adding every technique may not be
appropriate for everyone and some individuals need an even more
individual, spontaneous approach.
“I had an artist who couldn’t put the color into her voice, she
was monotone,” said Moskovitz. “So I gave her some of my son’s
finger paints, set her at the kitchen table and had her relax and
work with color on paper… Soon, I asked her to sing or sound the
colors and she started creating music, no words, but a melody with
a lot of range. Then at one point I asked to her to put more black
in her voice, then more red… It was a real epiphany for her.”
Moskovitz delights in helping her clients break things down
into daily, action steps and according to client Mark Samuel she is
“incredibly good” at it.
Samuel came to Moskovitz from a different direction as a
writer, consultant, and speaker on culture change and accountability.
“I worked with Carole on two levels, personal growth and singing,” Samuel said. “I remember one exercise so clearly and it was
so helpful in understanding my own personal vision. She had me
imagine that my ‘vision’ was outside of a window, and asked me to
walk towards that window, and as I was approaching the vision she
asked me what was happening. I said, ‘Wow, it was getting bigger
and more detailed.’ And she said, ‘Yes, that’s what is going to
happen. Now remember not to get so stuck on whatever vision
you’ve created and written down that you lose site of the real vision
as it is getting bigger and more detailed.”
According to Samuel, this exercise gave him a chance to
experience the concept for himself, and taught him to apply it in a
way he will never forget. Samuel said he is using that exercise in his
own talks today.
Moskovitz says she helps her clients “sing the message that is
inside of them.” I learned from her clients how truly transformational finding a stronger voice can be.
“I’ve been a back-up musician and part of bands all of my life,”
said Krell, who related the giant steps it took to actually getting out
on stage, front and center, to perform her own music from her new
CD, “but this is the first time I’ve had to be ‘the person’. “
According to Krell, she invited Moskovitz to lunch recently.
“I gave her my CD and told her that it was the result of her
setting me in this direction,” said Krell. “I don’t think she realized.”

eng Shui acknowledges that all locations, spaces, objects and humans are made of energy. The idea is to classify these energetic
qualities based on their compatibility with each of the principle five
elements — Metal, Water, Wood, Fire and Earth — a hidden
language so to speak. In the Western world, we misunderstand these
elements. For example, we believe a round wooden table is the
element of Wood, but in actuality, it is the energetic element of
Metal. Energy is not always related to an object’s material. Feng
Shui is a powerful science that quickens your pace and places you at
life’s next challenge; your next step in personal growth. Nothing
remains sustainable unless it receives sustenance. Our thoughts feed
us, the food we eat feeds us, and our surrounding environment
impacts us. How do the buildings we inhabit affect our lives? Do
the places we work, live and play nurture us? A building’s energy
comes from its design, which, when integrated with human energy,
has the power to sustain us, renewing itself day after day. Now that’s
sustainability!
We are energy. Space is energy. Location is energy. Direction is
energy. Time is energy. Placing all of these energies together in the
right place at the right time produces a continuing universal connection, while we are otherwise
engaged in everyday mundane affairs. Aligning
our vibrational energies with those of nature lifts
us into the path of the conscious vortex, thus
allowing us, you and me, to be a creative
transcendent pathway to absolute transformation. From that moment on, we are sowing the
seeds for our future with all that we can possibly
be.
A friend of mine utilized our design service
to turn his business around. Stan owns a
successful brand design and marketing company.
It all began with an on-site three-hour conversation. My partner Pamela and I first visited Stan’s
office building to meet his wife/business partner and staff. Do you
know what it feels like when you step into a space where you can’t
breathe? The building’s construction was strong and it had beautifully-designed decor, but Stan was positioned in the wrong office
location, the color co-ordination was incorrect, and the energy of
the space drastically needed to be activated. One mid-afternoon
phone call later, we were asked to proceed in redesigning a design
company. I was over the moon; a challenge to design the designed!
The first act of change was to trust Stan’s wife Tricia to strip
away Stan’s ego and to cement her power, importance and partnership in the business. Feng Shui uses numbers, sometimes called “the
law of attraction numbers,” to quantify a person’s GUA element.
These may appear as numerology to the outsider, but in fact, these
numbers are energetic qualities in symbolic form.
Quantum science explains that when two energies come
together, there exists possibility. In implementing Feng Shui
principles, we analyze energy’s relationship to a specific person; by
defining the outcome, possibility now becomes probability. This
creates the portal of opportunity — designed for that person’s
evolution. In Stan’s case, his opportunities have been noticable. In
removing Stan as the sole figurehead, the dynamic between the
supervisors and staff instantly shifted. Furthermore, Stan and Tricia
experienced a better compatibility working with one another, a
change that has allowed their business to flow on a smoother
stream.
What did we do to create balance within and outside the
structure? The first external change was to redesign the landscape
of the front entrance. Garden designs will act in one of two ways,
both of which have the potential to affect your business; it will
either be a liability or an asset to your success. Gardens are energies
that need to be compatible with a building structure.
Inside the building, we relocated Stan to a specific location
that relates to his position in the company. His new spot allows
for a permanent connection to the energy stream while at his desk.
Additionally, in order to lift the building’s internal balance for new
growth, walls changed color and pictures and decorative pieces
were rearranged according to their energetic qualities. The main
room was activated with a water feature. The entire direction of
the business is now focused on making a difference, remaining
open to diversity, creating a healthier environment and greater
accountability. These changes seem amazing in such a short period
of time, but it’s the norm.
Stan’s business now has fewer expenses due to new creative
changes within the business structure. An added bonus included
new avenues for income streams. The niche/
space we so often look for in business exists in
all areas of life; in our thought processes, in our
relationships and most importantly, in our
communication. Existing business and other
prospects have now increased for Stan, challenging him to find new ways of interacting in life.
So where is he now within this changeover?
Today, Stan is a new man. He looks
healthier, his life is full of purpose and potential,
and there is trust in the intangible unfolding
processes that we seem to have little control
over. As Tricia explained, “Stan has embraced a
transformation that’s beautiful to observe. I’m
grateful to be a part of this.” His business is now
about being as authentic as possible, and looking at sustainable
solutions: “My dream right now is not to have a huge team of
people working for me, but rather, to have a higher value that we
can offer to people and to make a lasting contribution to the
world. I was feeling a bit lost but now I have a road map. It’s not
completely crystal clear, but I can definitely feel there is something
solid, yet intangible, that I’m moving toward. I always thought
‘branding’ was intangible until I met you guys.”
Now open to new direction, Stan’s life is about cooperation,
as opposed to being in competition. His life is so much more
rewarding and doors to greater expansion have opened. As Tricia
states, “This has been a complete paradigm shift. I now have a
clearer sense of my purpose and contribution to the company,
transforming it from a perspective that this is solely Stan’s business
to our business. And Stan’s transition and acceptance of this
enhanced partnership is more fluid and comfortable than ever…
there’s no resistance.”

You Are a Rocket Ready to Launch
On Transformation, Transcendence and the True Purpose of Life

ou are a traveller, a
cosmic astronaut. But
to understand rightly,
you must realize that
your life — the living
of your life — is
actually not the goal or
the destination or even
the base of things. It’s
the launching pad. You
are meant to ascend
from it.
Most people don’t
recognize that it’s not
about perfecting this
life. The common idea
is that if you perfect it
well enough, if you fix
yourself, if you grow
emotionally and grow
psychologically, even
grow spiritually —
that somehow you will
get better and better
and in this human
form, as this human
form, as this life —
you will somehow get
perfected; you will “get
there.”
But this is
incorrect. You cannot
get there through this
life, as it is. This life is
the launching pad.
Therefore the goal is to
be launchable and to
launch for real: to take
off. All transformations are towards that.
And all subsequent
transformations after
that are for the furtherance of that.
Which is not to say that this life isn’t necessary. After all, you
can’t get off the ground without it, as obviously there’s no launch
without a launching pad. But people get stuck, essentially thinking, “Well, it’s about improving the launching pad, and then I can
take off.” The deeper understanding is that life has almost nothing
to do with the launching pad (other than getting launched), which
is utilitarian only.
You will never perfect this life. You will never make yourself so
good, no matter how hard you try, that what you really want —
the spiritual, the
ultimate, the “great
thing” itself — somehow comes out of that,
somehow happens
through some perfecting
process. That’s not true
transformation. Which
is not to say that there’s
no value in getting better
in certain ways; in
getting less emotionally
dramatic, in becoming
less argumentative, in
getting along better with
people. It doesn’t mean
there aren’t issues to
address. It means that
addressing those issues
isn’t in-and-of-itself what
transforms you, what
gets you to where you
really want to go.
Where you really
want to go has nothing
to do with the mundane
transformations that life
both brings and requires.
It is beyond that. And to
get there, it’s not that
you perfect this life. It’s
that you develop enough
understanding, enough
willingness, enough
openness, enough heart
(essentially, enough new
intelligence) that a day
comes when real
transformation has
occurred — when you
transcend this human
vehicle, this life.

Suddenly, whether it
takes minutes, years, or decades, this life is no longer the focus, no
longer has the hold on you that it did before. Suddenly, you know,
understand and feel that this is not what it’s about — that this is
just the launching pad. Then, this life starts to get lived from what
can rightly be called the transcendental position. Until that
ascension — that transcendence — is firmly in place and unless
that direction has been absolutely established, everything is a
movement toward that. All growth and transformation is in the
service of that transformation.

This can be precisely formulated as:
Sufficient growth = transformation;
Sufficient transformation = transcendence
Where the “equals” sign signifies “results in” — in the sense of
critical mass. Another way to say it is that enough quantitative
change can lead to qualitative change.
But first, for real transformation to actually occur, you will
have to come to the realization that this world is the way it has
always been, and the way it will always be. Things change in it, but
nothing really changes. The form changes, even our response to it
changes, but it is the same old thing. It is the same wine in a
different bottle. So your focus can be on the bottles, or it can
transcend the bottles. It can transcend being concerned with what
shape and what color and what age the bottle
it is, and it can concern itself with the essence,
with what is in that bottle — what can be
drunk, what can be taken in, what can be
tasted, what can become part of you, what can
flow through you. The vast majority refuses
to accept, or even consider, the truth of this;
that there’s nothing new under the sun. But
for those who do, a shift occurs. They begin
to see it as “the universe made me just as I am
— so how bad can I be?”
All your self-judgments are circular; they
do not get you anywhere. Spiritual maturity
means that you stop beating yourself up. You
start to see that things are how they are, and
that you are certainly free to focus on what’s
wrong and even spend the rest of your life
going around in that circle. Or, you can open
yourself even more to the higher call you have already heard, that
you are already responding to — which is calling you to transcend,
calling you to move beyond the concerns of personality, the
concerns of daily life, the (over) concern for worldly events.
That is transcendence: change of focus beyond only the
time-bound and space-bound and mind-bound (all of which,
together, comprise the material or materialistic level of things). You
develop enough understanding, enough maturity, that small things
no longer occupy all your attention. Whether you are a little richer
or a little poorer, a little better off or a little worse off, a little
friendlier or a little less friendly, a little healthier or a little less
healthy — these will not change anything important for you —
these don’t touch the essential. The essential, the ultimate, is way
beyond any of these material-level concerns. And this doesn’t mean
you shouldn’t have material concerns. It means attend to them in
the proper proportion.
Yes, you have to take care of yourself. You have to have a
certain minimum level of health to function. You have to have food
on the table. You have to have somewhere to sleep. But many of us
spend 99% of our life energy on these things. Spiritual maturity
means you spend only the time and energy needed, which is far less
than we usually think, whether it is 1% or 10% or even 30% —
but it is definitely not 99%.
This life is a calling to a higher life that has something more to
do with eternity and infinity than with your bank balance, or what
kind of car you drive, or whether you will die at eighty or at ninety,
or whether you will get married for a third time. Where most
people are stuck is in thinking that this life is about this life: “If I
can just be happier; if I could just change a few things; if I could
just get this or that; if I could have a little more pleasure and a little
less pain.” But this is immaturity — because this life includes all
of it — pleasure and pain are part of every life. Having more and
having less are part of every life. Everybody who has more has had
less, and will have more and less at another time. Everybody who
has less has had more, and will have less and more at another time.
So that is the first basic understanding, the initiatory element
of a new intelligence: it is not about this life. Once that is
understood — really understood and established — it starts to
fan out inside of you. It starts to touch everything that you touch.
It starts coming into more and more thoughts that are already
there, more and more feelings that are already there, more and
more experiences that would have happened anyway. But now it is
all happening from a different perspective.
The call gets louder; the call to the
beyond becomes more audible, the demand
of transformation becomes more insistent
and more urgent. And as you are more
responsive to it, consequently it responds
more to you. A deeper exchange between
you and the universe starts to take place. A
more direct connection starts and you begin
to see something different in a stranger’s
eyes, you begin to taste something different
in your dinner and you begin to feel
something different, for no particular reason
other than that now you have gone further.
There is nothing in this life or in this
world that is not teaching you something.
But are you a learner? Are you a rocket
willing to launch?
That’s not a frivolous question to ask
your self; we are often not the learners we think we are. We are not
as willing as we might tell ourselves, simply because it means
leaving the launching pad, it means actually giving up certain
concerns, it means actually allowing transformation — which
means actually stopping to focus so much on getting a better car,
or finding a relationship, or losing that ten pounds.
Get a better car — nothing wrong with that — but it
means you stop devoting your life to the pursuit of a better car, or
at least “X” amount of energy and time and effort and thought to
acquiring it. Give it the thought and the time and the energy it
needs: very little. But most of us give it fifty times what it needs.
Let go of that. It is not enough to understand; you have to do it.
And then you are lighter. Then your attention is freer for what is
more important. If you are moved by a sunset, can you be really
moved, all of you? Can you be willing in that moment of being
moved, to open your whole self totally to what is stirred in you?
Most of us are holding back. We “allow” only a little bit, we
allow here or there. This is a great clue. If something moves you
at all, let it move you much more. If something opens your heart a
little, throw yourself into it completely. We miss these clues
— we don’t interpret them rightly. Anything that stirs you,
anything that moves you, anything that opens you, is helping you
first towards transformation and ultimately towards transcendence.
Can you give yourself more fully when those moments happen?
Those moments happen to everyone. And they happen to you.
They can act as a signal: “Now — now is the moment, be more

willing now. Drop my defenses now.”
The universe is always ready to help
you, in any moment, in any form.
Everything is a message directly to you:
every word you hear from whatever
source, everything your eyes see, anywhere
you go, anything your skin touches or
feels, any experience or perception inside
or outside — let me say it bluntly — is a
direct message to you from God.
How huge is that! Every second,
every breath you take, God is trying to
reach you. How important is that! Every
second, there’s actually a force trying to
pull you upward, and it comes to you in
the form of everything that comes to you,
and anything that comes to you, good or
bad, painful or pleasurable. No matter
what your perception of it or your
interpretation of it, it is the beyond,
text-messaging you. The more you
recognize that, the more the message
becomes intelligible — the more clues
you get about what it means.
Of course, the launching pad is in full
communication with control-central.
Otherwise, how can there be a launch? So
every communication is about launching
and about climbing higher. Every
communication is about the flight plan
for transcendence. That includes every
thought that goes through your mind.
That includes every sensation that arises in
your body. That includes every emotion
you have ever felt or ever will feel.
I say to you; you lack absolutely
nothing. Nothing additional is required
for that launching pad ascent. Nothing
more required for that absolute transcendence. You are fueled and ready to go.
That is what being alive means:
fueled and ready to go. If you are alive,
that is the position you are in. But most
of us get stuck sitting on the launching
pad. Let me say it again: it is not about
this life. It is not about how this life turns
out. It is not about how good or bad this
life is, how bad it started and how good it
can be; how good it started and how bad
it is getting. It is not about any of that. It
is about transcending this life and starting
to see that this life is happening in
something that is much bigger than this
life, much truer and clearer than this one
little life. You have heard the call. Maybe
even you have deeply answered the call,
but have you given everything? Have you
allowed it to launch you?
And what is it we are transcending?
This limited life that arises and occurs in
an eternal, much larger life; this infinite
eternity that this life happens in; this
eternal infinity that this life happens in.
Yet again: it is not about this life. It is
about the eternity and infinity that this
life happens in. That is where you really
are, because that is where this life is. And
this is why everything carries the potential
for the divine. But that potential has to
be actualized.
And help is available for that, in the
form of a teacher, a philosophy, or beauty,
or nature, or art. So whatever form of
help allows you to climb higher, please
cooperate with it more fully. Let it take
you over. You have nothing to lose. It
may be the one that launches you once
and for all, so that there is no going back
and sitting on the launching pad.
It is not about this life, it is about what
this life exists in. Let everything that
comes to you help you to understand that
more deeply. Let everything that calls to
you or touches you bring you more fully
to that. Then life itself is transforming
you, existence itself is helping you
transcend. And you have the support of
all of existence. You always have, whether
you know it or not. And you always will,
whether you believe it or not.
Transformation is not what most
people think it is i.e., some sort of
“improvement” of you. The transformations you undergo are not the ends, they
are the means. The goal is transcendence.
Transformation is the technology of
transcendence.

January is a cold, cold month
– even in Southern California.
The feeling in the air is crisp and
the sky is generally clear, a treat
for Los Angelinos. This is the
time of year for warming and
nutritious foods. It is also
traditionally a time for cleansing
and setting new goals for health.
We try to eat more veggies, go
to the gym, drink more water,
and generally recover from the
holiday feasting and partying.
Kale is an often unappreciated
vegetable, but one that’s good
to incorporate for its high levels
of essential vitamins – like beta
carotene and C – as well as
packing a powerhouse of
minerals. One of my favorite
ways to cook kale is a modification of an Italian recipe. With the
addition of tomatoes for color
and texture, and the all-important garlic to help ward off what
ails you, this recipe should
please even the fussiest eater. I
tend to add a touch of heat in
my winter recipes. My favorite
addition is chipotle pepper, but
for a milder warmth, the addition
of chile powder works just fine.
To make it a complete meal,add
either tofu for vegetarians, or
sauteed sausage – I use
chicken or turkey. This provides
the protein, fat, and extra
calories many of us find comforting in these cold months.

In a large saute pan, heat the oil.
Add in the garlic and onions. Stir
until just browned. Add the
chipotle and stir over medium
heat for a few minutes. Add the
kale and half the water. Turn
down heat and let steam, stirring
occasionally. After 5 minutes,
add in the tomatoes. Steam
some more, then check. Kale
should have reduced in volume.
Continue to cook, stirring, then
add in sauteed sausage or tofu.
Kale is done when most of the
liquid has been absorbed and
before it starts to dry out. Add
salt, ground pepper and a splash
of vinegar to finish.

to me. Does that mean Nature made a
mistake?
WP: I’d heard somewhere that’s why humans
have such long digestive tracts — because it
takes more time for us to digest raw food.
RR: Virtually all herbivores have long
digestive tracts; long and folded intestines,
like humans have. Only the carnivores
have short, straight, smooth intestines.
They also have a very
high acid level in the
body. In fact, if you
judge just by our
intestines, we were
made to eat plants! I
don’t feel Nature
makes mistakes like
that. Humans
somehow managed
to live on raw foods
— just raw foods
— for millions of
years. And they did
it without fire or an
oven.
WP: I’ve seen this in some of the citified,
housebound pets of people I know.
RR: But, we’re no different; we’re animals
too.
WP: Yes we are. By the way, I noticed you
use a lot of tropical produce — things like
coconuts, mangoes, and bananas. Many
people feel eating local and seasonal as much
as possible is important — both in terms of
health, and to support local farming practices.
Could you talk about that?
RR: Well, that’s
certainly the ideal. But
if you can’t get
avocados locally — we
get avos from Mexico
when we can’t get
—
them here — does
that mean you can’t
—
eat avocados? I think
that would really be
taking it too far.

somehow managed
to live on raw foods

for millions of years.
WP: I’ve noticed people making cooked
meals for their dogs or cats, and now we see
pets coming down with the same kind of
diseases that humans have, like diabetes, high
blood pressure and kidney failure.
RR: There’s a very famous study known at
Pottengers Test.* He looked at three
generations of cats; one group was put on
cooked food and the other on raw. By the
end of the study, the cats put on cooked
foods couldn’t procreate; they had lost the
ability to reproduce. The implications are
staggering. In nature, it is very rare to find
animals with heart disease or diabetes.
WP: In your book you
have a section on
feeding kids and mentioned avocados as the
perfect baby food. I know that’s how my
relatives in the Chicago area feel.
RR: I personally think avocados are
enough of a reason to move to California!
WP: Is there any cause for concern about the
high levels of fruit sugar in the raw foods
diet? You use sweet fruits, coconut, dates,
agave nectar, and even chocolate. Is this a diet
suitable for someone with diabetes?
RR: There is nothing that combats or
eliminates the symptoms of diabetes as well
as the raw food diet. There’s a film called,
“Simply Raw,” in which a group of people
are put on a raw food diet for 30 days. By

the end of the trial, every person on the
diet had eliminated all their symptoms. My
dad is diabetic. He came to visit me and he
was on 52 units of insulin per day. For
nine days he just ate raw foods. By the end
of the nine days, he was down to 15 units
per day. He told me that he probably didn’t
even need it, but was afraid to let go of it
completely.
WP: That’s pretty amazing.
RR: Of course, you could just eat raisins
and that would be “raw food” or just dates,
and that obviously would not be a healthy
diet, There are raw foodists who just eat
fruit. But I’m not recommending that; I’m
recommending a healthy and well-balanced diet, and not even 100% raw in all
cases; that’s not necessarily what everyone
needs. But I know for myself, the more raw
foods I eat, the better I feel. But, it has to
be balanced.
WP: You consistently recommend balance. I
notice a wide variety of textures and flavors
in your food. As someone who loves to cook, I
really appreciate that.
RR: The words, “vegan” or “raw foodist”
or “vegetarian” really say more about what
you’re not eating than what you are. A
vegan doesn’t eat any animal products. A
raw foodist doesn’t eat cooked foods. It
doesn’t say what you are eating. In order to
get to a really healthy diet, you have to get
beyond what you’re not eating, to what
you are. That’s what’s important.
WP: I hear that. How old you were when
you first started the switch from a traditional
Italian diet, or other cooked cuisines, to a
more natural or raw foods diet? I know you
were eclectic — you traveled extensively
[Rod’s grandfather was the American
Ambassador to Italy], studied in Paris, and
learned to cook many different kinds of
cuisines. When did you start moving in this
direction?
RR: I was a vegetarian by the time I was 26
or 27. I didn’t become a raw foodist until
about 15 years ago, when I was 35.

RR: Well, the Mediterranean diet is
relatively healthy in comparison to the
typical American diet. But, one thing
became clear to me; when I’m not eating
raw foods, I tend to gain weight.
WP: I loved that you mention in your
introduction that Rotondi means “the round
ones.”
RR: I look at normal food and gain weight.
When I switch to raw foods, I lose any
extra weight and my body just starts
grooving. I don’t know how to explain it.
Within a few weeks
of eating raw, I feel
totally different; my
energy levels are what
they were in high
school. Hippocrates,
the father of
medicine, said, “Let
food by thy medicine.” It really is.
When you give your
body real fuel, then
it’s amazing what it
can do. Even after
years of abusing the
body with bad food,
the body has the ability to regenerate.
would people, if they wanted to, make an
all-raw holiday meal?
RR: There’s a lot of ways to do it. If you
wanted to emulate the typical meal, there’s
a lot of ways to do that. Or, just re-invent
the holiday meals. Look at what’s fresh,
what’s available in the season...what parts
of the traditional meal can I borrow and
put into the raw one? I have a pumpkin
spice cheesecake at the restaurant right
now, with the same taste you would get
from regular pumpkin pie, but even better.
WP: If it’s anything like the chocolate
raspberry cheesecake that I had when I visited
the restaurant...that
was fabulous. Can we
use it for a Valentine’s
Day recipe?
RR: That’s a great
idea. Chocolate is so
perfect for Valentine’s
Day.
I’m not saying
give cooking up 100%.
I found for myself
that the balance
is somewhere
in between.
WP: I really like to cook, but you are a
convincing argument for raw. I’d certainly
like to regain the kind of energy and vitality
you obviously possess.
RR: Look...cooking is wonderful. The
cuisines we have around the world are a
treasure; this is culture, this is art. I’m not
saying give up cooking 100%. I did go for
years just eating raw food, but I don’t give
up cooking completely. I found for myself
that the balance is somewhere in between.
My diet is mostly raw food but I love
making these foods, as a chef.

WP: That’s what keeps it interesting.
RR: By the way, I think that it is really
important to love your food no matter
what you’re eating. Enjoy it, and don’t be
fearful as your eating it. A lot of people
who eat healthy food tend to be afraid of
food, and that’s not good.
WP: I’ve seen that myself. I think of cooking
as an active form of love. When people get
afraid of some ingredient or other, I believe
it’s the mind driving them crazy, not the food.
RR: Exactly. I always sign my books for
people, “love your food, love your planet,
love yourself.”
WP: I have that in my copy! By the way, how
WP: So, there’s no
problem with using
raw for any time of the
year, or any season; it
can all be adapted. But
I could see how people
in Minnesota might say: I really need some
hot food in winter.
RR: Some people will say they need
cooked foods in order to stay warm, but
the warming or cooling to the body is
based on the minerals, not the temperature
of the food. What they probably need is lot
of calories to stay warm in colder weather.
WP: Anything else you’d like people to know
about, like a possible TV show?
RR: That’s still in development. I do teach
courses all around the country, but mostly
in LA. You can get this information from
my website.* I’m teaching four of the
Fundamentals courses in January; then a
course called Just Desserts. There’s also a
course on fermentation, and I’m teaching
an intermediate level course as a full-day
workshop. Then in Spring, I’ll be offering
courses leading up to an instructor
certificate. All of this information is

WP: Do you also travel and teach?
RR: I teach all over the place. I have taught
in Santa Barbara and New York — I have
offers to teach in Europe — I love
teaching.
WP: In your DVDs, you make it clear and
easy and you obviously enjoy teaching.
RR: Thank you; both the book and the

DVD were labors of love. I just know this
stuff works. There are so many people who
are suffering and sick and dying because in
part of the foods they eat. But, they just
don’t know how to do it for themselves. It’s
not hard; it’s not expensive, and it doesn’t
take that much time if someone shows you
how to do it. And that’s what the book and
the DVDs are there for.
WP: Well, we will put it out there. Hopefully, people will say: I want to do this. I’ve been
wanting to learn more about raw... Let me
take a course and stop by the restaurant. And
thanks again for the incredible meal I had
there. Next time I’ll bring some friends, too.
RR: You’re welcome. Just let me know
when you’ll be down. One more thing
about January; I’m starting a program
where people can get the full raw food
menu delivered to their home or offices.
I’m also doing a program where people can
sign up for a week of raw lunches or 10
days of raw food delivered to their house or
office.
WP: That’s a great idea. Thanks again Rod,

Mindful Business
Strategies

We now welcome 2011 and let’s do so in the spirit of new energy, expanded
awareness and fresh purpose.
Many of us who blaze forward on the path of spiritual entrepreneurship tend to be
an introverted lot. Introversion is effective when it drives us to contemplate our
connection with Source or when moved into action through inspiration. In the
extreme, we’re often caught in the nets of too much thinking, absorbing, planning
and doing. We’re like a toy top, perpetually spinning in no particular direction
across the landscape of thoughts, ideas and ditch efforts.
Instead, in this first month of the new year, I invite everyone to embrace their
extroverted nature.
By cultivating the extrovert in you, you expose yourself to a whole new realm of
activities, and invitations, ideas and professional collaborations. Once you begin
to activate a more overt presence in the workplace, you will immediately see the
results in new or enhanced interest in your enterprise and in relationships of all
kinds. As the moth is attracted to the flame, when we’re on, people notice.
I realize being deliberately extroverted creates anxiety in some and downright fear
in others. It’s actually very liberating when we step into these shoes once considered too big to hold our newfound, barely tapped potential. But, as we expand into
what we know is passionately true for us, finally heeding our call in the services,
products or opportunities we provide, we begin to wear these shoes with confidence and deep gratitude. Indeed, the gratitude we experience allows us to create
the space for others to step into their own shoes.
Here are some easy ways to set loose the extrovert in you — whether you work in
an office or at home:
1.Pound the pavement around your business to introduce yourself. Don’t sell
your services because defenses go up. Rather, sell yourself just by being a
vibrant, illuminating, positive presence.
2.Host an open house and invite every business owner or neighbor within a
three-block radius. Personally deliver the invitations and include a business
card.
3.Host a networking event for a group that supports and represents your
personal core values as well as your highest business and financial goals. As
host, this is where you get to share the fire of passion within you for the gifts you
offer.
4.Consciously create a sacred, uplifting experience for every customer or client
who walks into your space. Without words, be and build an atmosphere of love,
joy and service. You’ve hit the mark when people are compelled to share the
vibe they feel when they visit you.
In the midst of these or any events, listen with depth to what others share with you.
Someone who listens captures attention. Releasing your inner extrovert will lead
to new possibilities, out-of-the-box strategies or a single conversation that will
change everything in an instant.
