Beets are usually available all year long, but their delicious greens peak in Nova Scotia during the Spring
and Summer. These earthy greens have a hint of the sweet taste beets are known for. They have a mild flavour and taste a lot like chard; you can treat them exactly the same way in the kitchen. Steaming or blanching quickly, then sautéing in olive oil with garlic and red pepper flakes or in bacon fat, are popular preps. The
stems take longer to cook than the leaves, so chop them up and let them cook for a few minutes before you
add the leaves. Many like to combine beet greens with the beets they came with for a dish of striking color
and flavour contrasts.
Season: Beets are available all year long, but
their peak season, particularly for local and
specialty varieties, is June through October. It’s
also the time of year when beet greens will be
at their peak.
Purchase: Beet greens should be bright, dark
green, and fresh looking. Look for relatively
smooth, hard, round beets with deep color. The
surface should be unblemished. The taproot
should be slender and whole. At least half an
inch of the stems should remain, or the color
will bleed from the tops.
Avoid: Limp, yellowed leaves have lost their
nutritional value; however, beets with wilted
greens may still be acceptable, because the
leaves deteriorate more quickly than the roots.
Storage: Because the greens draw moisture from the root, cut off greens before storing, leaving at least 1
inch of stem attached. Discard any damaged leaves before refrigerating the greens in a perforated plastic
bag for no more than 2 days. Leaf-topped baby beets can be stored for 1 or 2 days with
their tops intact. Store unwashed beet roots in the refrigerator for up to 3 weeks. Check
for firmness; as they age, they will soften.
Flavor Affinities: Basil, dill, goat cheese, herring, horseradish, orange, potatoes, slowcooked beef or ham, sour cream, spinach, tarragon, vinegar, yogurt.

Marc Riant, were inducted into
the Academie Culinaire de France
last month. As two of only three
culinary professionals from Nova
Scotia to hold membership in this
elite group to say it is an honor is
an understatement. The third is
Eric Norman, a private chef who
recently located to Halifax.
Founded in 1883, the Academie
Culinaire de France represents the
elite of the profession. Its members
are the cream of the crop of the
pastry and culinary arts. Members
of the academy hold national prestige and in foreign countries, they
play an important role as ambassadors of the culinary and pastry
professions.

Blomidon winery's
blow-me-down now
available
The new look of the 2010 Blow Me
Down is now bottled and for sale in
limited quantities at the Halifax and
Wolfville Farmers’ Markets.
Cape Blow-me-Down was an early
18th century name used by sailors
and English setlers in Annapolis
Valley which evolved into the current name Cape Blomidon. Now a
Nova Scotia Provincial Park, the
iconic cliffs of Cape Blow-me-Down
preside over the Minas Basin and
are just a short drive from the Blomidon winery.
These wines are offered in limited
quantities and are a great opportunity to experience new products
that are not regularly listed at the
NSLC.
