Wine Name: SettimoCielo Extra Brut Country: Italy Region: Lombardia (Lake Garda) Appellation: Vineyard: San Rocco, San Pietro, Casalin located at an altitude of about 820 ft (250 m) Varietal: 50% Chardonnay, 50% Trebbiano di Lugana Trellising: Guyot Soil: Morainic, calcareous clay, stoney Farming: Traditional (organic farming is being field tested) Harvesting: Hand-‐harvested in August Yields: Average of 11 tons/ha = 4.45 tons/acre Vinification: Hand picked and selected grapes are cooled in a refrigerated room. Soft pressing in vacuum tanks, cold static decantation and fermentation in temp controlled stainless steel tanks. Atmospheric pressure 4.5 bars. Aging process: 9 months of aging prior to bottling. Secondary fermentation in bottle and minimum 36 months of refinement on yeasts. Hand riddling on pupitres.
