A CURIOUS CONTEMPLATION OF FERMENTATION THROUGH THE LUSTFUL
STUDY OF CHEESE AND CHOCOLATE
Three years ago, I began a quest to create one of my most avant-garde collections, a study of sweet chocolate juxtaposed to savory mates—
Taleggio cheese, first-press olive oil, aged balsamic vinegar, fennel pollen. Cheese + Chocolate? In that moment, the seed had been planted
and the coupling was so intoxicating that it dominated my thoughts and dreams for years to come. How could I stop with Taleggio? So I
delved deeper, tasting chocolates aside triple crèmes, umami laden Sottobosco; tangy Crottin de Chavignol and salty Roquefort…
Suddenly, I realized that chocolate and cheese had a commonality: Fermentation. I began thinking about the American diet…how often do
we acknowledge that many foods are fermented? How many fermented foods do we eat? Are fermented foods some of the most addicting
indulgences to be had? Chocolate, wine, cheese, tobacco, miso, tea, pickles…perhaps there was something to this. This fall, I have chosen to
explore cheese and chocolate in grave detail, paralleling their course in fermentation and my love affair and addiction.
Behold the result: a study of fermentation through a collection of Cheese + Chocolate, a tasting concept that traces fermentation from black
garlic to chocolates, and including all my favorite cheeses paired with chocolates from a variety of our most-loved collections...even a special
new truffle that follows in the steps of the original Rooster, bearing creamy Bleu d’Auvergne within its ganache center.

t all started under the guidance of the full moon. Inspired by a necklace made by the Nagaland tribes of northeast India, the girl’s hand

ver time, the girl’s friendship with the magical cacao bean became more and more intimate. Her exploration expanded as the nuances
of chocolate unfolded. Each ingredient begged for the perfect chocolate counterpart…deep milk chocolate to balance salty, hickory smoked
almonds; single origin chocolates with notes of tobacco and pumpkin to reveal the land upon which cacao grows. Finally conventionality is
usurped and applewood smoked bacon was dipped in chocolate. Critics gasp. But surely, this girl is on to something…curious?

dventures and explorations of new places with novel & quirky people continued to bend her mind to the edges of culinary reason. Cheese
& Chocolate? Yes. Born from a wager of ghastly personas and night after late night in the kitchen greeted by the rising sun, the flavors of

Travels through the
world of cacao brought the girl to the lone
star state of Dallas, Texas, and Erykah Badu.
Welcoming with a thick sauna of heat. Luggage in the
back seat, maps askew, the girl stopped the rental car.Ugh!
She left her iPod on the kitchen counter! Being that she could not
live without music at every moment, she turned on the radio and flipped
through the stations in the hopeful search of a good tune. Hip hop. Rap.
Hip hop again, with a hint of soul. Hmmm, “what’s going on here??” she
thought, who is influencing this pop music trend? Everything connected back
to African-Americans and their huge mark on American music. The
story had to be told. Beginning with the Jay Z song that was blasting
through the speakers evoking visions of gold leaf and Champagne, she
traveled back through each musical genre in culinary time: soul was
sweet churned butter, rock ‘n’ roll was tobacco smoke, gospel
was pecan praline, New Orleans jazz was chicory
coffee. 12 flavors and 12 songs later, the girl
grooved on.
THE GROOVE COLLECTION
From the work and field songs of the 1600s to our modern day
melting pot of hip-hop, soul, rap and rock, African-Americans
have created some of the most progressive sounds shaping our
country’s unique music history. The Groove Collection is
a multi-sensory approach to the culturally vital American genres

THE AZTEC COLLECTION
The History of Cacao: Chocolate’s long lost secrets can be traced back over 2,000 years to Mexico and Central America. First discovered
by the Aztec, Mayan and Olmec peoples, the original chocolate brew, xocatyl, was made by grinding the cacao (kah-KOW) bean with
water, chillies, herbs, annatto and cornmeal. The frothed tincture was held in the highest regard, believed to bestow wisdom and virility to
all who sipped it. When Spanish conquistadors made an offering of xocatyl to Queen Isabella, she instantly declared her distaste for the
spicy and bitter drink. However, when Cortez presented the court the cacao drink having substituted the spices with sugar, it was accepted.
The Spanish aristocracy concurred and the popularity of chocolate spread like wildfire throughout Europe—lost was the marriage of chili
peppers and chocolate for 500 years. Now it’s back.

The girl meandered along a winding
cobblestone pathway just inside the rusted iron
gates of the ancient cemetery of San Felipe del Agua,
her irises glowing with the reflection of flickering candlelight.
El Día de los Muertos at midnight, her moment of introspection.
Subconsciously, she is tiptoeing. Her eyes can just barely discern
the outlines of millions of yellow marigolds arranged in the shape

ff and on a plane to Vail, Colorado for a trip, she stopped in a lovely little shop, Eat! Drink! near the mountain slopes.. The girl skimmed

Experience Vosges Haut-Chocolat’s latest
venture: the world of organic and Rainforest
Alliance certified chocolate. It has become
increasingly important that we source our
own cacao beans in a sustainable manner,
focusing on the most luxurious beans available
in the world. We are proud to announce our
first organic vintage of pure Criollo and
Trinitario cacao beans, harvested in the
Dominican Republic from a small farm of
only 100 hectares. The Elvesia Plantation
is located in the tiny town of El Valle on the
eastern side of the island of Hispaniola.
Grown in a sub-tropical climate on beautiful
lands, these cacao beans are organic and full
of flavor. The cacao beans that thrive on this
land originated from Criollo and Trinitario
trees brought to this part of the world by
Swiss settlers almost 100 years ago. The beans
are harvested, fermented for five days and
slowly dried in the sun. Due to the size of the
Elvesia Plantation (with only 10-30 workers!),
I was able to specify the particular beans,
taste and flavor profile I found most exciting.
This first series of Organic Exotic Candy Bars
made with Dominican beans, Dominica Lait
and Dominica Noir, focuses on nuances of
sour, fruity plum skin with a lingering sensation
of vibrant cocoa.

through the eyes of her childhood, and is suddenly
within the confines of her grandmother Bapchi’s

n her way back from Fiji, the girl stopped in the sister land of the luau, Hawaii. On a hike through the Kiawe forest she met Richard Spiegel, beekeeper
.extraordinaire. She found Richard and his team, bowing their heads in meditation and then watched them scurry off to harvest their white volcano honey. In awe
of its creamy, opaque hue, she closed her eyes and took a spoonful in her mouth, straight from the hive itself. Tropical notes of young coconut and pineapple foam
arrested her senses and immediately made her think of chocolate. She pleaded with Sir Richard to sell her just a few pounds every December and finally, he agreed. Now
there is a waiting list for months! The girl tells all to taste the truffle in two bites, with a flute of Moscato d’Asti in hand, as layers of apricot and orange blossom linger
on the tongue.

The magic of Beer + Chocolate began with a soirée at our Chicago Purple House. Tables with mini pilsners brimming with ice cold, frothy
beer alongside row upon row of chocolate . Each pairing carefully contemplated—tart and tangy Flemish Sour with balsamic vinegar and dark
chocolate truffles, Wattleseed Ice Cream bobbing in a bath of Rogue Chocolate Stout. After about 10 minutes, the few cynics in the room
were immediately believers. Now, we’ve decided to roll out the Beer + Chocolate party in a portable purple gift box for all to enjoy. We selected
two artisan beers from Rogue Brewery, an Oregon-based brewmaster that charmed us with its Chocolate Stout, then swept us away with
