Classic
Cocktails
For a rather sophisticated,
yet fun festive tipple.
Why not serve your guests one of our classic cocktails,
each a wonderful accompaniment to stylish seasonal
celebrations. Kir Royale is arguably the most elegant
cocktail: a simple combination of indulgent Champagne
and luxurious Créme de Cassis.
Our hot summer screams out for thirst-quenching refreshment;
so when the sun is high, serve our Pink Grapefruit Margarita,
Gin and Tonic or the perfect punch, Sangria. For a classic
seasonal sun-downer, celebrate with the spicy and delicious
Egg Nog or simply add the gorgeous and aromatic Wild
Hibiscus Flowers to Champagne flutes.

Quality Mexican food and

cool in Australia in recent times
– get onboard the taco truck.
We suggest: Jose Cuervo
Especial Tequila
A modern take on an old classic
requires a quality Tequila with real
character and complexity.
How to:
Salt rim
Salting the rim of a glass
adds a unique character to
a Margarita and enhances the
flavour of the Tequila. First, rub the
outside rim of a cocktail glass with
a wedge of lime or lemon. Carefully
rotate the rim (outside area only) around a
salt dish. Allow a few moments for the salt to
dry, then shake gently to remove the excess.
Egg Nog
Whilst arguably more appropriate
to a cold northern Christmas,
die-hard traditionalists couldn’t care
less, so try a cold Egg Nog instead.
We suggest: St. Agnes 3 Star Brandy
Use the freshest free-range eggs and a
premium Australian Brandy to make this
classic favourite.
Gin and Tonic
A liberal wedge of lime, 60mL
Gin, 120mL Tonic and four ice
cubes is all you need for this
classic summer cocktail. For a truly
authentic taste, have trays of Tonic
ice cubes ready beforehand and
layer them high in the glass.
We suggest: Gordon’s London Dry Gin
Is there a more refreshing or instantly
recognised classic cocktail than a G&T?
Try serving it with a slice of cucumber.
Hibiscus Flowers
Exotic, elegant, exquisite – there is
nothing quite like the beautiful bloom
of Wild Hibiscus Flowers. Upscale your
party by placing a single flower in the
base of a Champagne flute and watch
as the petals gently unfurl amongst the
dancing bubbles of Sparkling Wine.
We suggest: Wild Hibiscus
Flowers in Syrup 250g
Wild Hibiscus Flowers look festive
and fun in all their red glory.
Get your celebrations started right.
The perfect punch
Sangria is both mellow and refreshing with a perfect blend of
citrus fruits, Red Wine, soft drink and Brandy. This traditional
festive punch will add a little holiday cheer to any celebration,
so why not share some with your loved ones over Christmas?
We suggest: Red Truck SA, Shiraz
Wine quality is important when it comes to cocktails.
For Sangria, look for a soft, juicy wine like this.

Catering for
Food
Drinks
Party planning is partly art, partly science.
But just follow these simple guidelines to
plan how much food you need for your
event. If you’re entertaining during meal
hours, ensure you have enough food for
your hungry guests. But don’t forget the
importance of having food at any time that
alcohol is being served.
It’s a question we’re often asked – “How
much alcohol should I purchase for my
party?” Consider that on average each
guest might enjoy two drinks in the first hour
and one each hour thereafter. Quantities
will depend on the length of the party, the
strength of the beverage, the day of the
week and the size of your party. But a few
simple guidelines will help you decide how
much to purchase.
Some easy suggestions of hors d’oeuvres
include tomato bruschetta, chicken skewers,
or corn chips with dips or cheese plates.
Also, younger men tend to eat more than
women and seniors, so if your guest list
includes a football team, add a few extra
items to your menu!
• A bottle of wine has around seven
standard drinks, a stubby of beer around
1.5 and a one-litre bottle of spirits yields
approximately 22 mixed drinks, so if you
know how many guests are attending and
what kind of bar you are going to have,
you can easily figure it out.
• As well, to accommodate those not
drinking cocktails or beer, remember that
Whites tend to be more popular than
Reds, particularly in warmer weather.

• If you plan to have a toast with
Champagne, you obviously need to
purchase additional bottles so that
everyone has a glass to raise – one bottle
fills seven regular Champagne glasses.
• Most importantly, make sure there’s plenty
of chilled water and soft drinks on hand –
vital so that you’re catering for those who
are driving, as well as keeping everyone
else well hydrated.
• Garnishes are relatively inexpensive and
it’s always smart to buy extra; plan on
a half a lemon and half a lime and two
olives, cherries and onions per guest.
And, depending on the drinks you plan to
serve, fruit and herbs (like mint) could also
be included.
• And last of all, don’t forget to organise
lots of ice – to serve with drinks and to
chill the bottles.

Quantities
Choosing the right quantities for your party is not an exact science and depends on
the kind of event you’re throwing, and knowing what your guests are likely to prefer.
The quantities below are the suggested basics for a 3-hour cocktail party for 15
people and for 40 people, with each person, on average, having about four drinks
during the party. The clever host strikes a balance between generosity and being
mindful of sensible volumes. You may be more comfortable over catering, rather than
running out of beverages – remember, you don’t have to open everything you buy!
As always, Dan Murphy’s promotes the responsible service of alcohol. (If you’d like

Sparkling Wines from Australia and New Zealand are a must for every festive season gathering. Sparkling
Wines offer exceptional value at every price. Look out for Sparklings from Tasmania, Adelaide Hills, King and
Yarra Valleys for the best of Australia, or something from Marlborough in New Zealand. Sparkling made from
Pinot Noir and Chardonnay grapes are well known, but don’t forget Sparkling Shiraz — unique to Australia

Invite an international guest to your table.
Just as Australians increasingly appreciate and demand new and interesting cuisine from far and wide, we
also appreciate a diverse range of beverage styles, including of course Sparkling Wine. While Champagne
is unquestionably the most famous Sparkling Wine style of all, there is a plethora of Sparkling Wine styles,
unique and worthy. Current favourites include Prosecco and Moscato, but don’t overlook Lambrusco or Asti
Spumante. While exploring other examples, why not also try the highly regarded Cava from Spain, named
after their famous underground cellars, or the relatively recent phenomenon, Sparkling Sauvignon Blanc.

Christmas in a bottle.
Selected Stores
Selected Stores
Champagne is undoubtedly the most celebratory Wine of all, so it’s no wonder we reach for that bottle of French during the
festive season. Whether toasting the Spring Racing Carnival or Season’s Greetings, Australians love to pop a Champagne
cork; with much to celebrate, we’re the fifth greatest consumers of Champagne in the world. Champagne comes from the
appellation of the same name in north-eastern France. In 1908 the region became officially recognised and the world has
fallen in love with Champagne’s effervescence, delicate aromas and sense of celebration. Champagne Houses account
for the greatest production; buying grapes from growers and blending different parcels, according to their house style.
Whatever your preference, make sure there’s a bottle or two on your festive table.

need a view of Santorini to fully
appreciate this national treasure.

Dan Murphy believed that it was a ‘love of wine’

international wine styles that make for a competent

their hot tips for you this Christmas.

‘One of Australia’s finest Riesling labels; minerals, hints of lime marmalade
and toast, this is a blinder and with over 5 years bottle-age this Eden
Valley Riesling is just drinking a treat. Perfect with fresh prawns and lime
hollandaise or just on its own as a pre-lunch tipple.’
Ata Rangi
Martinborough NZ, Pinot Noir 2010
‘If New Zealand had a Grange equivalent for Pinot Noir then this
could be a contender. It’s exotic, it’s spicy, it’s silky, it’s just downright
delicious. Deceptively powerful. One to share with favourite relatives
and close friends.’
Chateau de Fargues

Sauternes FRANCE, 2006 375mL
‘Often referred to as poor man’s d’Yquem, a Wine selling for many
times the price. There are few people who taste Sauternes of this
quality for the first time who are not bowled over by the intensity and
complexity of this Dessert Wine. For something different, serve it to your
guests with dried fruit and nuts as a starter.’

Richard Moore, WA
Voyager Estate
Margaret River WA, Sauvignon Blanc Semillon 2011
‘Intense fruit purity, minerality, texture, powerful acidity and fruit
structure. Aromas of passionfruit and nettles accompany superb
structure and a finely balanced, yet creamy palate. A wine
this fresh cries out for herb and chicken salad, oysters or
chilled crustaceans.’
Jim Barry McRae Wood
Clare Valley SA, Shiraz 2006
AWARDS: 1 Gold – Clare Valley Wine Show 2010
‘From the outstanding 2006 vintage, this is a sensational
example of Clare Valley Shiraz. Red fruits, blackberry and
mint with a lovely backdrop of cedar. A Christmas star.’
Pio Cesare
Barolo Piedmont ITALY, Nebbiolo 2006
‘Some people refer to Barolo as Italy’s answer to Burgundy
and you can see why - like decent Pinot Noir, a lighter than
Shiraz colour belies a powerful and complex Wine. Aromas
and flavours of roses, bitumen, earth and spice. A Wine that
is often a revelation for the uninitiated. Decant.’
Adam Hicks, NSW
Oliver’s Taranga Vineyards
McLaren Vale SA, Shiraz 2009
‘Oliver’s Taranga make big, cuddly, soft Reds of tremendous
regional McLaren Vale milk chocolate character. Put them on your
Christmas table and light up the room. The sweet rich fruit should
drink very well with ham, though this is so juicy it will be enjoyed
simply on its own merits.’
Savaterre
Beechworth VIC, Chardonnay 2009
‘Grilled cashew, citrus, grapefruit and oatmeal in a beautifully balanced,
complex, concentrated Wine with endless length. Will make the driest
Turkey taste fantastic. This is the sort of world-class modern Australian
Chardonnay that will convert even the most determined cynic.’
Joseph Perrier
Cuvée Royale Champagne FRANCE, Vintage 2002
‘Beautifully balanced with remarkable freshness. Rich and aromatic
with light honeyed notes and scents of warm brioche. The palate is
rich and powerful enough to match foods however its fine acidity
makes for a fine apéritif style. This is supreme vintage Champagne.’

Yarra Valley VIC, Pinot Noir 2010
‘One of the most highly awarded and best recognised Pinots in Australia.
Cherry, raspberry aromas and underlying oak complexity. Plum characters

length. A great drink now, or in 5 years. Perhaps it’s too good for the boss!’
M. Chapoutier
Châteauneuf-du-Pape FRANCE, Grenache Shiraz 2008
‘The classic Châteauneuf-du-Pape bottle shape is a winner, as is the Wine.
Flavours of cassis and cherry with a rounded complex and deceptively
long, minerally palate. The Wine is soft and juicy enough to drink young,
however equally it has the structure to evolve positively over 5 – 10 years.’
Penfolds St. Henri
$80+
Regional SA, Shiraz 2004
‘St. Henri always makes a statement and rarely disappoints. The 2004 is up there
with the best and is starting to hit its groove. A big, dark-fruited, flavour-crammed
monster with cedary oak and firm but fine tannins. Penfolds might be the safe
choice, but rarely one that is not immensely appreciated.’
25
Ann Kirton, WA
Devil’s Lair
Margaret River WA, Chardonnay 2010
‘Stylish, classy and well-balanced; melon and grapefruit sit alongside ripe
stonefruit supported by top notch quality French oak. Quality-wise this
wine is deservedly considered a Margaret River benchmark. Also a
distinctive, well recognised and respected brand name.’
Saltram No. 1
Barossa SA, Shiraz 2006
‘Barossan to its very soul, Saltram No 1 is a seriously structured Wine but
certainly not unapproachable. A veritable swimming pool of black fruits.
The tannins and concentration is formidable but everything is in perfect
balance. Your boss can happily enjoy it anytime soon or over the next decade.’
Mark Samaha, VIC
Turkey Flat
Barossa SA, Shiraz 2009
‘This Wine is a winner. Cracked black pepper, savoury butcher-shop nuances
and blackcurrant. Smooth as silk, surprisingly elegant. The concentration of
aromas and flavours declare both its Barossan heritage and benefits of
significant vine age. How could anyone not love drinking this?’
Cape Mentelle
Margaret River WA, Cabernet Sauvignon 2008
‘This is widely regarded as one of Margaret River’s finest Cabernets, thereby
making it one of Australia’s and the world’s finest. 2008 was a marvellous vintage
and this will age well for many years. Cape Mentelle have long been a regional
icon however the last few vintages have seen them reach even greater heights.’
Château Canon
Louis Latour
1er Grand Cru Classé Bordeaux FRANCE, 2008
1er Cru Chassagne-Montrachet Burgundy FRANCE 2007
‘If you are looking for something a bit more interesting and less obvious, consider
a Bordeaux. The tannins are generally firmer, drier and more savoury than
Australian Cabernets. Ideal for medium to long term cellaring. If they are going to
drink it young, insist on plenty of time in the decanter, say 2 – 3 hours minimum.’
‘Very appealing lemony nose with some subtle nuttiness. Lovely savoury,
nutty characters follow through on the palate. Good precision, intensity
and length yet restrained and subtle throughout. This is the very definition
of Chassagne-Montrachet. Recommend that it be served with the finest
lobster and hope you get an invite.’

Dinner Party
etiquette!
We know that Dinner Parties come
in all shapes and sizes. So what to
do when you’re invited to something
‘traditional’? Here is some formal
advice for a formal event, to make
sure you don’t commit a wine faux
pas or upset any of your nearest
and dearest (or worse, your boss).
What should I bring when I’m invited
to a dinner party?
When you’re invited for dinner, it’s very thoughtful to bring a small
present for your host, to show your appreciation – and a nice bottle
of Wine makes the perfect gift. If you don’t know your host very well,
it’s best to stay neutral – it could be as embarrassing to bring an
expensive bottle of Bordeaux as your favourite BBQ cleanskin.
A medium-priced ($20–$30), medium-bodied Wine will do the trick
perfectly. As to style, use this simple rule of thumb: Red during winter,
White during summer and Sparkling Wine for a special
or festive occasion.
Can I drink the bottle of wine I bring?
As a guest, you shouldn’t expect to drink the bottle you brought as a gift
for your host, since it’s in gratitude for all the hard work they put into
entertaining. Your host isn’t obliged to open it; since you brought it as
a gift it is then entirely up to them.
If it’s a big occasion, they probably have wines already planned for
dinner, Whites chilling or Reds opened to decant. So, don’t bring a bottle
of White Wine that you have previously chilled. It makes it clear that you
brought it to drink and the whole object of the gift disappears.
Are there any dinner table ‘do’s and don’ts’?
It’s always good taste to never ask either the cost of the bottle of wine you
are drinking, or to volunteer the price of the wine you’ve bought with you.
Resist the temptation to move your glass to the person pouring wine – let
them serve it to you. And in a more formal setting, it’s best to wait until
your glass is filled – don’t help yourself.
Also remember that you’re at dinner – not a wine judging competition.
Curb any enthusiasm to swirl, snort and slosh your wine – and certainly
don’t spit!
If I don’t like the wine, do I have to drink it?
As a guest, you probably won’t have the opportunity to choose what
you’re going to drink. If your host pours you a wine that you don’t like,
it’s good manners to at least try it. And if the worst thing that happens
is that you’ve tried something new, then things can’t be that bad!

There’s nothing better than
celebrating the Christmas
festivities and long summer
holidays than with a
beautifully brewed Craft Beer.
Although these Beers are usually made
with traditional ingredients, today
boutique brewers from around the world
re-interpret traditional styles with unique
twists, techniques, and in some cases
unheard of flavour combinations to
develop exciting, distinctive new styles.

Alcoholic
Beer
Ginger Beer has existed for hundreds of years, created from the ancient
spice, ginger. From the humble Ginger Snap biscuit to aromatic, spicy
noodle dishes, ginger is one of the most travelled ingredients in the world.
Alcoholic Ginger Beer has a long heritage, but thanks to recent
popularity in the northern hemisphere summer, it’s set to be one of
Australia’s most popular tipples during our warmer months. Already
dubbed the ‘New Cider’, Ginger Beer is the perfect refresher for
nostalgic drinkers who remember the traditional style of yesteryear
and the curious younger set looking for the ‘next big thing’.
Brewed Ginger Beer originated in Great Britain in the mid-18th
century and (originally influenced by British colonial soldiers who
brought the drink with them) is now popular throughout the world.
A traditional Victorian-era recipe calls for just sugar, lemon, yeast,
ginger and water to produce this historical drop. With exotic,
spicy ginger flavours and highly refreshing, thirst-quenching bubbles,
it’s perfect for sipping by the pool or at a barbeque with friends.
Ginger Beer is sensational served over ice, or try the classic
Dark & Stormy cocktail, with Dark Rum, Ginger Beer and lime.
It’s also delicious on its own or with food, and the good news
is you’ll be seeing even more of this drink over summer.

The gift that keeps
on giving.
“…buy your table wines or vintage port
from a merchant or storekeeper who has
more than the four walls of his shop to
store his wine. Make sure he gets them for
you from some cool recess, or if he has
aged them himself for some time, from an
underground cellar or thickwalled room
where the temperature is always low.”
Dan Murphy, The Australian Wine Guide 1966
Almost fifty years ago Dan Murphy espoused the virtues
of a decent wine cellar, believing that there were few gifts
as worthy as that of a bottle of well-cellared, aged wine.
Today we honour that memory by cellaring over
3 million bottles of the very best wines in optimum
cellaring conditions of around 14°C and 70% humidity.
Wines are selected by the Dan Murphy’s Wine Panel
based on the strength of the vintage and the producer,
and only released from the cellar when deemed to be
entering their optimum window of drinkability.
Here we feature a range of outstanding wines from
the Dan Murphy’s Cellar that would make an excellent
gift — a gift of which Dan Murphy himself would almost
certainly have approved.

The Spirit
of Christmas
The discovery and exploration of Malt Whisky is a journey that we all should experience in our
lifetime. For years, the sensuous pleasures of hundreds of distilleries throughout Scotland never
made it past the ‘bulk blends’, or shipped as far as Australian soils. Like wines, the Single malts
of Scotland have traditional regionality and embrace certain typical characteristics of aroma,
body and flavour. We are proud to offer to you the finest, rarest and oldest Malt Whisky and
hope you will come on a journey with us this Christmas, to uncover the secrets of Scotland.
GLENMORANGIE
The Glenmorangie distillery famously uses the tallest stills in Scotland, where only
the lightest and purist spirit vapours reach the top, giving Glenmorangie its hallmark
floral and fruity character. It‘s also built a reputation for quality based on their
fastidious selection of quality oak casks – using each cask only twice in its lifetime.
More recently Glenmorangie has produced a range of limited production Special
Wood Whiskies, where each Whisky is aged in secondary-use oak sourced from
some of the world’s finest Bourbon, Cognac, Port, Sauternes and Sherry producers,
imparting a distinctive and unique character.

RED
Sparkling Shiraz is a uniquely Australian Wine
style, the vinous version of the Hills Hoist. The first
example was produced in Australia in the 1880s
and has since grown in popularity with over sixty
versions now available. Today, perhaps because
of its vibrant Christmas-red colour and celebratory
bubbles, many Australians now consider Sparkling
Shiraz an essential part of the Christmas tradition.

fORTIFIEDS
Port remains the most popular Fortified Wine style today. An array of grape
varieties, blends and winemaking techniques adopted both here and abroad
result in a multitude of interesting and unique styles; from dry nutty Tawnys,
to sweet juicy Ruby Port and Late Bottle Vintage, through to phenomenally
long-lived structured Vintage Ports, this is a serious and rewarding category.
We are fortunate to have a wider array of outstanding examples of fortified
wine than ever before; Barossan Tawnys, Rutherglen Muscats and Topaque

Holiday Liqueurs
Christmas is the perfect time to enjoy a Liqueur.
Liqueur comes in an array of shapes, sizes, colours and flavours, all
allowing a different twist on the usual accompaniment to food, or
even as a tasty addition to festive treats. Liqueurs like Cognac can be
enjoyed as a sophisticated after dinner digestive, either neat or with
ice. Liqueurs also make an excellent base to many cocktails: try the
Alizé Bleu with its distinctive blue colour, or a Tuaca Liqueur with its
fruity flavour. And don’t overlook Liqueurs in a dessert: an Irish Cream
or a Chocolate Liqueur makes a delicious dressing for cake or
ice cream. Any way you choose, a Liqueur is the perfect festive
season match.

Match your
festive flavours
Christmas Ham
Mince Pies
A minimally oaked, fruit-laden Red such as a modern
Barossan GSM would be terrific with a salty Ham.
Or, you could try something different like Cider –
see page 40 for some perfect options.
Nothing matches a Mince Pie better than
a delicious Fortified Wine. Page 51
showcases some of our festive favourites.
Seafood
Roast Lamb
We all know that seafood and White
Wine go together like hand and glove.
This season we can’t go past something
delicate, crisp, young and aromatic – try a
Clare Riesling or Hunter Semillon.
The lamb might be local, but a great match
is something from further afield. Earthy lamb
calls for a more rustic approach – try a spicy
Rhône Syrah or a Tempranillo from Rioja.
59
When the hard work is done, it’s time to sit back, relax and enjoy festive food, family and friends.
It’s also time to bring out the very best flavours in your festive fare with a perfectly matched Wine,
Beer or Spirit. We have some suggestions from the Christmas Companion below, as well as a
world of choice online at danmurphys.com.au and in every Dan Murphy’s store.
Trifle
Christmas Pudding
Trifle and a good quality Moscato
is a dessert match made in heaven. An
Asti Spumante also works perfectly.
For suggestions on what to use to cook your
Pudding, start on page 16. And for what to match
it with, we can’t go past a top-notch Cognac or
even an Irish Cream Liqueur – have a look
on pages 54 and 55.
Rum Balls
A premium Rum from the West
Indies would be a surprise match here,
however a Coffee Liqueur would
also work well. See our online recipe to
make your own Rum Balls this Christmas.
Turkey
The signature Christmas dish deserves a signature
Christmas Wine – we can’t choose between a fullbodied Margaret River Chardonnay or a light
to medium-bodied Victorian Pinot Noir. And
don’t forget Sparkling Red is also a perfect match
for Turkey. See page 50 for some of our favourites.
Fruit Platter
A Dessert Wine or a
much-loved Liqueur is just
the ticket to finish your meal.
