Fun and tasty recipes for children Cooking is cool! In this book you’ll find tasty ideas for you and your friends to enjoy making – and eating! The recipes use delicious lean Welsh Lamb and Welsh Beef. We’ve tried to make them balanced by adding: fruit and vegetables to help you reach your five a day! There’s wraps, noodles and even a fab Berry Smoothie for you to enjoy. Great recipes for you to cook for your family, brilliant for a party or sleepover with your cool mates! Just read through each recipe carefully following each step. Remember to ask a grown up for help with some tasks, for example: using knives for chopping and using the cooker. Have fun! Let’s get ready to cook * Tie back long hair * Roll up long sleeves * Remove all jewellery and nail varnish * Wear an apron to protect your clothes * Wash your hands before, during and after cooking * Get all your ingredients ready and weighed out, these are what you need to make the recipe * Wash fruit and vegetables * Get all the equipment you need ready * Be careful with sharp knives. If you are not used to using a knife, ask a grown up to help or chop for you. You can always grate a carrot or onion instead of chopping it. Wash up and wipe the work surfaces as you go along. Beef Welsh bolognaise in Cheesy Jackets Basic Bolognaise Mix Cheesy Jackets First you need to make up the Beef bolognaise. Cooking time 20-25 minutes, (then cool before using). Makes 8 potato jackets, cooking time 60-80 minutes for the potatoes, 10-15 minutes to finish. What you need 450g (1lb) lean Welsh beef mince 2 cloves garlic, peeled and crushed 1 onion, peeled, chopped into small pieces 400g can chopped tomatoes 15ml (1 tbsp) tomato puree or 30ml (2 tbsp) tomato ketchup 150ml (1/4pt) beef or vegetable stock 5ml (1 teasp) mixed herbs Sprinkle of black pepper a y tart witwh ill r f o fry. Place the mince in a non-stick wok or saucepan and dry fry for 6 minutes, until browned. 2. Add the onion and garlic and cook for a few minutes more. 3. Add tomatoes, puree or ketchup, stock, herbs and pepper. 4. Cook gently over a low heat for 15 minutes. 5. You could serve with cooked spaghetti as spaghetti bolognaise or cool the mixture slightly to make mini pizzas or bolognaise jacket potatoes. How to make them it 1. Preheat your oven to Gas Mark 6/200°C. 2. Wash the potatoes and prick with a fork, place on a baking tray and cook in the oven until cooked – they should be soft inside with crispy skins (approx 60-80 minutes). 3. Cool slightly, cut in half and using a spoon, scoop out the soft inside into a large bowl. You may need to hold the potato with an oven glove. 4. Mash the potato, add the butter and black pepper. Put a spoonful of the bolognaise mixture into each potato skin, mix the rest with the potato mixture and spoon back into the shell. Sprinkle the grated cheese on top of the potatoes. 5. Pop them back into the oven for 10-15 minutes until they look crispy and golden. 5 Ingredients P Makes 4 Cooking time 10-12 minutes. What you need 2 bread muffins cut in half (you could use white, wholemeal or cheese muffins) or 4 mini pizza bases 30 ml (2tbsp) tomato puree 15 ml (1tbsp) tomato ketchup ½ of bolognaise mixture (on page 5) Selection of vegetables to make the faces – sweetcorn, peppers, mushrooms, courgettes You may also want to use; olives, pepperoni slices, 90g grated cheddar cheese, you can also use mozzarella slices. You can make them into animals or funny faces 6 How to make them 1. Preheat your oven to 200°C Gas Mark 6. 2. In a small bowl mix together the tomato puree and tomato ketchup and spread a spoonful of this over the muffin halves. 3. Put a spoonful of the cooled bolognaise mixture on top of the tomato mixture and spread evenly. 4. Sprinkle the grated cheese over the bolognaise. 5. Use the other ingredients to make up your funny or animal faces – sliced olives are great for eyes, strips of thinly cut peppers for a lion’s mane or hair. 6. Carefully place them on a baking tray and cook in the oven until bubbling – 10-12 minutes. 7 These can be served in a bap with some salad and a spoonful of the creamy curry dip, or for fun - why not make them into scary or smiley spiders! You can then dip the legs into the delicious curry dip. Creamy apricot and curry dip What you need 1 small carton of plain yogurt 15ml (1 tbsp) of mango chutney 5 ml (1 teasp) mild curry powder 4 dried apricots cut up into very small pieces. How to make it In a small bowl mix together the yogurt with the curry powder, then add the apricots and mango chutney. Cover the bowl and keep in the fridge. Makes: 6 burgers or 12 meatballs Cooking time: Approximately 10-15 minutes What you need 450g (1lb) lean minced beef 1 small onion, chopped into very small pieces 5ml (1 teasp) dried mixed herbs or you can use a handful of chopped fresh herbs a sprinkle of ground black pepper ½ red pepper, chopped into very small pieces 30ml (2 tbsp) tomato ketchup or brown sauce How to make them 1. Place all of the above ingredients in a large bowl and using your hands mix well, making sure the vegetables are mixed into the meat. 2. Divide the mixture into 6 and shape into burgers. 3. Cook under the grill or on a baking tray in a hot oven or in a frying pan, turning once until they are brown and piping hot in the middle. Approximately 10-15 minutes. P 8 Ingredients How to make a spider For legs use thin strips of peppers, carrot or cucumber and push into your burger, you can use pieces of peppers or tomatoes and olives for the mouth & eyes. 9 Meatball Cones P Serves: 4 10 Ingredients r e v o p Slee es i t r a P What you need The burger mix recipe (on page 8) How to make them 4 flour tortilla wraps some salad-lettuce leaves, thin slices of cucumber 2. Then shape them into 12 small balls the same size, and cook them on a baking tray in the oven (Gas Mark 6, 200°C) or slowly in a frying pan for approximately 10-15 minutes, make sure they are nice and brown and piping hot in the middle. 3. Roll up a tortilla wrap into a cone shape, hold the bottom and then fill with some salad, 3 meatballs and top with a spoonful of the delicious curry dip. large spoonful of the creamy curry dip (on page 9) 1. You make these exactly the same way as you make the burgers. Enjoy! 11 What you need 4 sausages (try delicious Welsh lamb & mint, beef or pork) 5ml (1tsp) Oil 1 small tin baked beans in tomato sauce 1 courgette cut into small cubes ½ red or orange pepper cut into small cubes 1 large tomato – cut into chunks 10ml (2tsp) sweet chilly sauce P S A U S A G E S Ingredients How to make them 1. Put the sausages under the grill, or bake in an oven, until cooked thoroughly, approximately 10-15 minutes. Cool slightly. 2. Heat the oil in a small saucepan, add the pepper and courgette, stir gently for 2-3 minutes to soften the vegetables. 3. Add the other ingredients and heat through until piping hot – 5 minutes. 4. You can serve the sausage and a spoonful of the chunky sauce in a bap or for a party you can cut the sausages into chunks, give your mates a little bowl of sauce and sausages. 12 Quick easy sausage meal to make when time counts 13 Beef & Noodles Serves: 4 Cooking time: Approx 10 minutes What you need 2 lean Welsh beef steaks – rump or sirloin are ideal – cut into thin strips 15ml (1tbsp) oil 15 ml (1tbsp) low-salt soy sauce 30 ml (2tbsp) clear honey 2 cloves of garlic, peeled and crushed selection of oriental style vegetables, e.g: 1 bunch pak choi (or 1/2 crispy green cabbage) 2 stalks of celery 1 red pepper ¼ cucumber pack pre-cooked medium white noodles (or pre-boil some noodles) 1 lime, juice and rind (skin of lime) a little chopped fresh coriander How to make it P Ingredients 14 1. Cut the beef steaks into thin strips and place in small bowl. Wash your chopping board or use another board to chop the vegetables. Cut the pepper into cubes or strips, chop up the pak choi and celery, cut the cucumber into strips. 2. Pre heat your wok (or large frying pan), add the oil and then the beef strips, cook the strips for 3 minutes, giving it a few stirs, add the garlic and vegetables (keep the cucumber until the end), stir for another 3 minutes. 3. Add the soy sauce, honey and the juice and rind of the lime – stir. 4. Add the cooked noodles, cucumber and stir until it’s all piping hot – a few minutes. 5. Serve in individual bowls and sprinkle with chopped coriander. Eat with a fork or chop sticks! er v e cl using s k Be - try pstic ho c 15 Welsh Lamb yummy Kebabs Makes: 8 kebabs Cooking time: Approx 10 minutes How to make them These are great fun to make and so tasty! If you have time it’s best to marinate the meat for at least an hour before making them. If you can’t wait! use the marinade to brush over the kebabs. What you need for the marinade 90ml (6tbsp) olive oil 45ml (3tbsp) lemon juice 1 garlic clove, peeled and crushed Good sprinkle of ground black pepper 30ml (2tbsp) chopped fresh herbs, such as basil for the kebabs 450g (1lbs) lean Welsh lamb, cut into 3cm cubes (boneless leg steaks are ideal) Selection of vegetables of your choice, we’ve used: 2 thin courgettes 1 long thin aubergine 16 cherry tomatoes 1 red pepper, 1 yellow pepper 1. In a small bowl mix together the marinade ingredients, add the cubes of meat, stir well, cover with cling film and put in the fridge for at least an hour. 2. Prepare the vegetables, cut the peppers into 3cm squares, wash the tomatoes. Slice the courgettes and aubergines along the length to make long strips, try and cut them fairly thinly approximately 5mm thick. You want the strips to be long enough to wrap around a cube of meat, trim the strips to the correct size. 3. Remove the meat from the marinade and put on a plate. 4. Wrap some of the lamb cubes with the courgettes slices and the others with aubergine slices, then very carefully (as the skewers are sharp!) push them onto your skewers, adding the tomatoes and peppers to make them look attractive and colourful. 5. Preheat the grill, place them on the grill pan and brush with the marinade. (These can also be cooked on a BBQ). 6. Cook for approximately 10 minutes, turning them now and again to ensure they are cooked evenly. B BBB Remember to soak kebab sticks fruity Kebabs 16 P How about making Chop up some fruit into chunks & push them onto your skewers You can grill them for a few minutes or serve them cold They are yummy served with a melted chocolate dip! Or with a dip made by mixing together a small pot of plain yogurt, a teaspoonful of runny honey and a sprinkling of cinnamon P Ingredients Serve these kebabs with a delicious fruity coleslaw, which is so easy to make. You’ll need 450g (1lb) cabbage cut into thin strips, 1 small onion cut up into very small pieces, 1 apple washed and cut into small cubes (leave the skin on as it adds colour) 175g (6oz) of grated carrots, 150ml (5 fl oz) mayonnaise and a handful of washed and halved grapes. Just mix everything together and keep it in the fridge until you need it. 17 Welsh Lamb Yes, a savoury crumble! Most people think of a crumble as being sweet such as apple or rhubarb crumble. The base of this is like a Shepherds pie but instead of a mashed potato topping we’ve added a crispy, cheese and oaty crumble. Crumble Serves: 4 Cooking time: Approx 45 minutes A great dish for you to make for your family. What you need 450g (1lb) lean minced Welsh lamb 1 onion, peeled and chopped 2 carrots, peeled and chopped up into small pieces 30ml (2tbsp) plain flour 300ml (1/2pt) lamb or vegetable stock 15ml (1tbsp) tomato puree 5ml (1tsp) dried mixed herbs a little ground black pepper Crumble 150g (6oz) plain flour 75g (3oz) butter, cubed 50g (2oz) oats 50g (2oz) grated cheddar cheese Rub in To rub butter into flour, using your fingertips to make a mixture that looks like breadcrumbs. Pastry is also made this way. How to make it 1. Pre-heat your oven to Gas mark 5/190°C. 2. Place the mince in a non-stick saucepan and dry fry for 5-6 minutes until browned. 3. Add the onion and carrots and continue frying for 3 minutes. 4. Add the flour and stir in well, then slowly add all the stock, tomato puree, herbs and black pepper. Bring to the boil and stir until thickened. 5. Pour the mince mixture into an ovenproof dish (dish that can go into the oven). 6. Make the crumble by putting the flour in a bowl, add the butter and rub in the flour. It should look like breadcrumbs. 7. Then add the cheese and oats, mix well and spoon the crumble over the mince mixture. 8. Bake in a pre-heated oven for 25 mins until it’s a golden colour and crispy. This is lovely served with cooked peas or broccoli. 18 P Ingredients 19 Serves: 2 Cooking time: Approx 10 minutes What you need How to make them 225g (8oz) Welsh lamb leg steak cut into very thin slices 5ml (1tsp) oil ½ aubergine, cut into thin slices 1 onion, cut into thin slices 3 mushrooms, sliced 15ml (1tbsp) mild curry paste 15ml (1tbsp) mango chutney 1 tomato, thinly sliced a handful of fresh coriander leaves, chopped up 2 flour tortilla wraps 1. Heat up the oil in a non-stick pan or wok. Add the lamb strips, aubergine, onion and mushrooms and cook, stirring until the meat is browned, about 6 minutes. 2. Add the curry paste and the mango chutney, stir and cook for a further 2 minutes. 3. Add the tomato and coriander. 4. Spoon the mixture into the middle of the wraps, roll them up and enjoy! STIR FRY means to cook quickly over a high heat in a little oil, stirring constantly. A healthy method of cooking. P 20 Ingredients This is a stir fry which you can serve in wraps like this recipe or you could serve it with cooked noodles or rice. 21 Makes 1 large glass or 2 smaller glasses 22 P Ingredients J in ust to th put e w bl eve iz en ry z up der thin . an g d This only takes a few minutes to wizz up. You can also make fab smoothies with fruit juice and fruit. Experiment with different fruits such as bananas and mangos to see whatto flavours How make and it colours you can come up with! 1.
