LORDS OF THE MANOR
The Hapimag Resort Pentolina is located
in the country with the sea and cities
worth visiting within a comfortable ­driving
distance. In the holiday village there is
something on offer for all ages.
The medieval village of Pentolina (425 metres above
sea level) is idyllically located on a small hill of ‘Alta
Maremma’ in the Chiusdino district. Hapimag purchased the village in 1998 – including 22 hectares of
land in the hunting area of the same name. This area
has been well-known for wild boar hunting for 200 years. The dense holm oak forest surrounding the
resort hides one or two secrets ...
Pentolina is approximately 25 km from Siena, 80 km
from Florence and 60 km from the coast, thus
offering a wide range of activities and excursions.
Small villages such as Chiusdino, Torri and Stigliano
are ­located nearby. Here the inhabitants still live
like decades ago. The Hapimag Resort itself is a converted earldom boasting modern comforts. In
the holiday village you can expect a combination
of c­ ulture, sport, nature and dining facilities.

History
HISTORY
AND CULTURE
The history of Pentolina dates back
to 1321. Before Hapimag purchased the
­village with the old farming estate in
1998, it belonged to Count Scroffa.
Nello D’Inghiramo, feudal lord of the castle of Pietra
and owner of Pentolina, laid the foundation stone
for the village on 9 February 1321. The oldest local
historic monument is however the small chapel La
Pieve of St. Bartholomew from the 11th century, where
Hapimag regularly organises classical concerts.
The last owner of Pentolina was Count Dadi Scroffa.
His grandfather Bruno Scroffa purchased Pentolina
in 1853. The family made their living from agriculture
and hunting. Wild boar hunting with the Count was
so famous that even hunters from far away travelled
to go hunting with him. Since 1998, Hapimag has
been the owner of the farming estate.
Another historic feature of the region is the ruins
of San Galgano Abbey (Abbazia di San Galgano) not
far from Pentolina. It was built at the start of the
13th century.

Only 15 minutes by car from the
Hapimag Resort is the new golf resort
’La Bagnaia’ – a five-star resort with
a view of Siena.
The Royal Golf ’La Bagnaia’ near Siena offers golf
­enthusiasts an 18-hole course on over 130 hectares.
Large hills covered in woods shape the landscape.
None other than the famous golf course architect
Robert Trent Jones Junior designed the course.
The par 71 course is 6101 m long and has one of the
most interesting routings in Italy.
The driving range with 60 outdoor tee-off bays and
6 sheltered tee-off bays is 300 metres long and has a
target green and target bunker. A perfect short play
zone with two pitch and putt holes, as well as a putting
green, complete the breathtaking golf course. The
ideal place to practice golf at the highest standard.

or Florence directly from the Hapimag
Resort. Or head off on an excursion
which combines culture, nature and
­enjoyment.
Fancy some city air instead of country air? Travel in
the comfortable bus from the Hapimag Resort to
Siena or Florence and marvel at the cultural cities
on a guided tour.
Our excursion to the Abbey of Monte Oliveto Maggiore, Pienza and Montepulciano takes you through
the picturesque hilly landscape of Crete Senese, as
well as to the huge monastery, which impresses with
its frescos and the gigantic library. Then you head
to Montepulciano, where you sample the fine wines
with the Crociani family which are typical of the region. You will also have a chance to take a look in the

HORSEPOWER AT THE
PALIO HORSE RACE
CULTURE
Bareback horses, medieval costumes,
drums, rituals and the untamed emotions of the enthusiastic spectators:
This sums up the Palio – a traditional
horse race in Siena.
Twice a year – on 2 July and 16 August – horse riders
compete for the city wards of Siena, the so-called
’contrade’ at one of the most famous and at the same
time toughest horse races in Europe.
The Piazza del Campo, a square in the centre of Siena
with impressive architecture, is transformed into a
sizzling competition arena. The Palio is fun and entertaining – but one thing that’s taken seriously is
the victory. Television broadcasters transmit the race
live, during which the horses and riders race three
times around the square.
The battle for the victory flag (Palio) only lasts 75 seconds. The preparations for the traditional event
which has fixed rules start months ahead of the race.
The tradition has been celebrated since the 13th
century.

A classical concert in the small ‘La Pieve’
chapel is indeed music to the ears:
­Wonderful acoustics and the mystical
ambience of the 11th century create
a special atmosphere.
Regular classical music concerts organised by
­Hapimag take place in the ‘La Pieve’ chapel, which
is steeped in history. Performers from Siena,
Florence or Venice appear with interesting repertoires from September to June.

BRUNELLO:
A PRESTIGIOUS WINE
CULINARY
The people in Montalcino are proud of
the 2000-year-old history of the village.
One can also be proud of the viticulture:
The red wine Brunello originates from
here.
The Brunello from before cannot be compared to
that of today. The name of the former simple table
wine already appeared back in the 14th century.
The grape variety Sangiovese, from which one presses
the single-variety wine, was not yet known at the
time, however.
In addition to the full-bodied Brunello di Montalcino,
its younger brother Rosso di Montalcino is also
pressed around the small town of Montalcino. It is
also a single-variety Sangiovese, but slightly lighter
and less complex. Another well-known product from
the wine region is the Vino Nobile di Montepulciano.
It consists of 70 percent Sangiovese grapes and can
be blended with other grape types.

CHIANTI:
THE CLASSIC
CULINARY
The mild, sun-drenched climate
of T
­ uscany produces excellent wines.
The most prominent is the Chianti
Classico.
Those who like a full-bodied red wine will love the
local wines. Every wine connoisseur is familiar with
the Tuscan wine: Chianti. It was previously the
synonym for Italian wine per se and was traditionally
sold in a squat bottle enclosed in a straw basket,
called a ‘fiasco’. There are still nostalgic memories
of the bottle, but it is history, just like the earlier
simple ­table wine.
Whereas one previously added white wine to the
­Chianti, today it is only pressed from red grapes,
mainly Sangiovese. The quality and shelf life were
improved considerably with the DOCG status.
Today the Chianti Classico pleases the palates of
connoisseurs.

Only wines from the area of
origin of Chianti can be
sold with the brand name
Chianti Classico. The best
of these wines bear the
trademark ‘Gallo Nero’
(black rooster), which is
monitored by the consor­
tium ‘Chianti Classico’ in
Greve in Chianti.

Many people have already tried the
Italian dumplings called gnocchi. But
homemade? Our chef shows you how!
The entire family lends a hand during this small
cooking course in our restaurant. You prepare a really
good gnocchi dough with the chef. Then we shape
the artful gnocchi from the dough. The recipe with
the chef’s secret tips is the reward for passing the
‘test’. Trained chefs learn the trade on the wooden
board. Working with the special gnocchi wooden
boards is easier, for example for our younger chefs.
You can also purchase these wooden boards to
prepare gnocchi at home time and again. Work first,
then the culinary delight: We cook the gnocchi and
eat the homemade Italian speciality.

THREE TREES WITH A HISTORY
CITY
The three splendid lime trees which
add a special flair to the square in front
of the ‘I Tre Tigli’ restaurant give the
restaurant its name. And they are a part
of the family history of Count Scroffa.
It was grandfather Bruno Scroffa who planted the
three lime trees, is how Count Dadi Scroffa tells
the story. He still remembers well: Dadi Scroffa and
his brother had great fun at the time jumping over
the still small trees.
The trees grew into splendid, shady trees, and a
trendy restaurant was built in the former garage of
the Count. Here we treat you to all kinds of Tuscan
specialities. As well as the À-la-carte menu, you can
expect various culinary special events.

Don’t miss out on two special kinds of
culinary evenings: Local specialities
await you on the Tuscan evening, and
traditions and meals from a bygone
era await you at the medieval feast.
In Tuscany one uses a spoon to take up a ribollita
from the soup dish, a pasta speciality is called pici and
the fine porcini mushrooms refine many typical
Tuscan dishes. And there is still lots more to discover
there … On the Tuscan evening our chefs prepare
typical, but unusual regional meals for you. Our sommelier recommends a good wine to complement
the dish.
Another special highlight awaits you in the summer
months. At the medieval feast you join the gracious
ladies from the court on a historical evening of dancing, games and other attractions. There is of course
outstanding food with several Italian specialities
from that time.

‘SUGO ITALIANO’
RECIPE
CULINARY
‘Yes! Spaghetti with sauce!’ You can
hear the kids rejoice. Very few ingredients are needed for a real Italian Sugo,
just a little time.
Ingredients for 4 people
Olive oil
1 – 2
cloves of garlic, peeled
1 – 2
carrots, cut into small cubes
1 stick
of celery, cut into small cubes
1
onion, chopped
400 – 500 g
of lean mince beef
1 tinof passata (can also use fresh
­tomatoes, cut small, and add
some tomato purée)
Fresh oregano, basil
Salt, pepper
Preparation
Cover the base of a large pan with oil. Sauté the full
garlic cloves, celery, carrots and onions. Add the
mince and cook. Add oregano and basil and season
with salt and pepper. Add tomato sauce or finely
sliced tomatoes. Allow to simmer and season to taste.
Place the lid on the pan, insert a wooden spoon between the pot and the lid. Simmer for ­approx. 1 hour,
stir occasionally. Serve with pasta (for e.g. spaghetti
or penne) and freshly grated parmesan. Buon appetito!

A pizza party and barbecue evenings in
the summer with live music. The evening
meal turns into a party with excellent
company!
Guests from all different cultures meet every week
for the rustic pizza party near the attached group of
buildings ‘Montelandi’. This culinary get-together
carries on the tradition of the weekly meeting of the
Count’s family with all peasant families. Back then
bread was baked, today we conjure up a delicious
pizza according to our chef’s secret recipe. The
pizza obtains its irresistible taste and crispness from
the stone oven of Count Scroffa.
Do you love barbecued meat? Then you shouldn’t
miss out on our barbecue evening during the summer.
There is live music and a surprise programme from
our Active Team to add to the ambience.

Our supermarket ’La Bottega’ is a
small gourmet heaven. Here you obtain
­Tuscan specialities, vegetables from
the garden and everything for day-today use.
Tuscany has a few things to offer when it comes to
culinary delights: ’Cinta Senese’ sausages, sheep’s
cheese from Pienza, Cantuccini or Panforte from
Siena, jams and honey from Montalcino – those who
want to sample the specialities or bring items back
as gifts have come to the right supermarket.

Scroffa family, located directly in Pentolina, and are
brought to the shop every morning by the gardener.
