All the regular workers for our local
Bingo hall were tied up in a meeting, so
they asked Kate and I to open the hall for
the Saturday night game. We picked up
LeeAnn, who has the key, and made our
way to the hall and around to the back
door. There we discovered a tent pitched
so it completely blocked the entrance.
Kate and I walked over to the tent which
was a dome, zipped closed, to inspect it.
LeeAnn dug out her cell phone and
turned away from us to make a call.
“Hello in there,” called Kate.
“I’ve just called 9-1-1,” announced
LeeAnn.
The zipper came open fast and a tousled
looking man appeared followed by a
young woman, also in disarray. “Tell me
you didn’t call the cops,” the man said,
scowling at LeeAnn who was still holding her cell phone.
“Well you had no business camping
here,” sputtered LeeAnn.
“Somebody told us this place wasn’t
gonna be used this weekend,” he said.
“We weren’t hurting anything.”
“Oh my gosh, Eddie,” said the young
woman, clutching his arm. “We’ll be in
such trouble if we get arrested.”
“Okay, okay,” said Kate. “Get that tent
down and folded and stow your gear in
our car. Then you can help us open up
for Bingo. The cops aren’t here yet and
that sure isn’t the only false alarm
they’ve ever had.”
They did as she said while we opened
the hall, turned on the lights and fans and
got ready for the evening session.
“Everthing’s stowed,” said Eddie, “but
Marnie and I don’t know where to go.
The cops will surely be looking all
around in this area.”
“Come on in and play Bingo,” I suggested. “Do you have enough money for
the buy-in?”
We had to lend them six dollars and two
daubers, and soon others arrived and
they were anonymous players. We let
LeeAnn deal with the police officer who
came by himself, asked questions,
wanted to know if she had seen where
the tenter had gone and went away again.
Those kids turned out to be the luckiest
Bingo players ever. They won twice and
at intermission came over to talk. “First,
here’s your money back,” said Eddie, a
smear of mustard on his mouth. “You
sure saved our bacon. I don’t know how
to thank you.”
They won again—the final jackpot worth
$250. They were both flushed with excitement as they helped us clear away
trash at the end of the session.
“Why don’t you camp on our lawn
tonight?” suggested Kate. “Then you
won’t be in danger of being arrested.”
“Oh, no,” said Marnie. “That’s very nice
of you, but we have enough money now
to stay in a bed and breakfast. We passed
one about six blocks from here.” She
sighed and a dreamy expression came
over her face. “And I can have a bath.”

It is important for people to remember
how valuable the social element of Bingo is
for many players, and that Bingo can, and

but I rarely succeed. It may require that your

Dear Aunt Bingo,
I am recently retired and a widow, and
after retirement found myself stumped over
social activities to get involved in that
would be entertaining and get me out of the
house but would not require a commitment
that might limit my freedom to travel or visit
my kids and grandkids.
Well, all I can say is thank heaven for
Bingo!
I saw some ads for Bingo in the paper at
places fairly close to me, and one afternoon
bit the bullet and drove to one of them. I
went in and explained to one of the workers
that I didn’t know a lot about the game and
asked her if she thought that would be a
problem. She said “no way” and walked me
through buying my Bingo paper, then sat
me with a friend of hers. The friend was
nice and clearly enjoyed showing a beginner the ropes. It was a little stressful keeping
up with everyone, but I did come close to a
Bingo, which was exciting.
Since then I have tried Bingo at two
other places and do have to say it is quite
social and fun. People who recognize me
from other games always say hello and I am
almost to the point now where I don’t worry
about keeping up and can just have fun. My
next goal is to play two packs instead of
one…but that won’t be for a while.
Anyway, I’m loving Bingo and my new
reading friend—the Bingo Bugle Newspaper—very much. Bingo is such an awesome
way to get out with people and have a good
time. I wonder how long it will be before I
shout out: “Bingo!!” —Angela C., via

Dear Aunt Bingo,
Sometimes I wonder why Bingo isn't
more of a family event for more people.
My mom, my brothers and I go together
all the time, and now two of my nieces have
joined in. We use the time to catch up on
personal stuff—and yes, we have been
shushed more than once for being too
chatty—and it has struck me that there is
something about being out and about on
neutral ground instead of at home that
makes everybody feel they are on equal
ground and relaxed about sharing news and
joking around like we might not do otherwise.
If I had my way I think I would play
Bingo with my family every week if I could.
But we’re all pretty busy, so once a month
is about the best we can do—except for my
mom and me, who play together more
often.
Anyway, I’m just passing this along as
an idea for other Bingo players who may want
to try and turn their Bingo playing into a family

Types of Trusts
A pet trust is a legal instrument that allows you to designate a specific amount
of money for your pet’s care and name a
trustee to carry out your wishes. There
are two main types of pet trusts you can
set up. One option is a “traditional pet
trust,” which is effective in all states and
is similar to a trust you’d set up for a
child, but it’s expensive costing anywhere from $500 to $1,500.
Or, you could opt for a “statutory pet
trust” which is a much cheaper option
and is currently allowed in more than 40
states and the District of Columbia. To
create a statutory pet trust you simply
add a few lines to your will, such as, “I
leave $5,000 in trust for the care of my
dog and two cats.” State law will fill in
the gaps, so that the simple provision
may be effective.

If you want to set up a pet trust, talk to
an estate-planning attorney, preferably
one who has experience with pet trusts.
Or, you can work with a company like
Peace of Mind Pet Trust (peaceofmindpettrust.com) or Trusted Pet Partners
(trustedpetpartners.com). Some factors
you’ll need to consider before setting up
a pet trust include:
The trustee and caretaker: Most pet trusts
designate both a trustee to manage the
money and a caretaker to handle the dayto-day care of the pet. The trustee can
make sure the caregiver is doing what
they’re supposed to do. It’s also a good
idea to name an alternate trustee and
caregiver in case your first choice is unable or unwilling to serve.
Caregiving details: With a traditional
trust, you can specify the things you
want your pets to receive like their favorite foods, how often they should be
taken to the vet, their burial arrangements, etc.
Funding the trust: You can set aside
money from your estate to cover the
costs, or if you’re short on funds, another
option is to buy or use an existing life insurance policy and name the trustee as
the beneficiary.
Other Options
Another legal option to consider is a “pet
protection agreement,” which is much
less complex than a formal pet trust. This
allows you to name a guardian to take
care of your pets, and gives you the ability to leave funds to care for them. You
can make a pet protection agreement online at legalzoom.com (800-962-7490)
for $39.
If, however, you don’t want to create a
legal tool, you should make informal
arrangements by asking a trusted friend
or relative to take care of your pets if
something happens to you. In addition,
you could set up a separate bank account
to cover expenses and name the caretaker as the beneficiary.
Or, if you don’t have anyone who would
be willing to take care of your pets after
you’re gone, you can make arrangements
to leave it to a rescue, humane society,
pet care program or other animal welfare
group. Many of these organizations find
new homes for pets or offer lifetime care,
but may require a fee or donation. Talk
to your veterinarian about options in
your area.

Talk show host Conan O'Brien was on
hand in San Diego to kick off a raucous
Bingo tournament he sponsored while in
town to tape his TBS talk show during
the four-day Comic-Con 2015 pop-culture extravaganza. “It’s nice to see so
many people refusing to enjoy something
in the moment," O'Brien teased the
rowdy crowd as he was surrounded by
smartphones when he arrived on stage to
ceremonially draw the first Bingo ball.
O'Brien’s after-hours, invite-only Bingo
tournament was held for super-fans at a
top-secret gallery space in downtown
San Diego. The raucous affair, which
featured plenty of comedy and showy
back-up dancers called the Conads, was
hosted by Michael Stauffer, who has organized similar over-the-top Bingo
games at The Standard Hotel in New
York.
Gaming Facility on Hold
A U.S. district court judge issued a preliminary injunction that ordered the
Wampanoag Tribe of Gay Head (Aquinnah, Massachusetts) to stop work to turn
an unfinished community center building
into a gaming facility without first complying with permit requirements. The
tribe had hired a contractor and said it
planned to move forward with a plan to
turn a 6,500-square-foot building just off
the entrance road to Wampanoag tribal
lands into a Bingo parlor. The tribe contended that it does not need a building
permit to proceed because it meets federal gaming requirements. A town attorney claimed that the tribe had refused a
town building inspection and that current
zoning for the facility does not include
use as a casino. An attorney for the tribe
argued that the Indian Gaming Regulatory Act, a federal bill signed in 1988,
gave the tribe the right to establish a licensed casino.
Bingo Argument
Police in Salem, Massachusetts, responded to a report of two women who
were involved in an argument over a
table at St. James Church Bingo Hall.
Once on the scene, police spoke with the
women and advised them to stay away
from each other. No further action was
taken.

Chicago Theater Works has debuted We
Gotta Bingo, a production where audiences enjoy a hearty Italian dinner while
playing Bingo and singing along with the
show’s characters. We Gotta Bingo follows a Bingo bonanza set up to raise
money for the merging of two rival
Chicago parishes—one Irish and one
Italian. It was originally presented by the
Actor's Theater of Minnesota in 2004.
Though the show is designed for actor
improvisation and audience and performer interaction, audience participation is optional so no one feels pressured
to join in. Those who wish to participate
get opportunities as Bingo winners, amateur singers and more.

Hi Guy,
I am a Bingo hall staffer at a busy Indian casino. I enjoy working at Bingo and
also enjoy playing during my free time.
When I win I always include tipping
the caller and the floor worker(s) because
I know from experience how hard they
work to make an outing at Bingo pleasant.
And I have to say that I am surprised by
how many players do not tip. Yes, I understand that many people consider tipping
optional and may or may not do it depending on their mood, jackpot amount or
whatever. But the fact is, hard work for
low wages deserves a tip in appreciation
for service.
At some of the places I attend, the floor
workers will be tipped but the caller
won’t. This I absolutely do not understand.
Players must think that the caller just sits
there and calls out numbers. But there is
much more to it. And folks seem to have
no problem blaming the caller for their
bad luck and shouting insults at him or her.
But rarely does a caller get a thank you or
an expression of appreciation for doing a
good job, or get compensated when a
player has good luck and wins big. —

Dear Hard Worker,
I agree with you that players should be
more thoughtful of callers and not blame
them for a run of bad luck. It has to be
awkward and embarrassing to be sitting in
full view at the front of gaming room and
be verbally slapped with complaints and
grumpy insults for things that are simply
not under a caller’s control.
The topic of tipping at Bingo is a tricky
one. People who currently, or at some time
in their lives, worked at a job that relied
on tips, understand how important tipping
is and make sure to tip appropriately in
service situations. Those who have not
been at the receiving end of a job that includes tips may sometimes perceive it as
an option they choose not to exercise.
This becomes particularly true in a
Bingo hall. For one thing, lots of people
spend the majority of their gaming time in
not-for-profit, charitable Bingo halls
where tipping is not allowed. When they
switch to a for-profit Bingo, they may simply not be aware that tipping is appropriate, what to tip, when to tip or whom to
tip, so they just ignore the tradition and do
not tip at all.
Others resist tipping because Bingo is
gaming, where players rack up lots of
losses between wins. Many feel that most
of a jackpot is just recouping past losses,
and “giving away” any portion of it in the
form of a tip to a Bingo worker is basically
just giving more money back to the casino
or hall.
Finally, the question of whom to tip is
a very slippery slope. You clearly are a
caller, and would like to get a tip. So
would the runner who brought the player
his or her winnings, the front-desk worker
who sold the winning paper, the vendor
who sold them that lucky pink dauber, and
the staffer at the front door who gave the
player a fist bump and said, “Tonight’s
your night!”
I’m afraid that I do not see an early end
to the ongoing controversy over tipping at
Bingo. But I hope your letter will at least
encourage more players to keep tipping in
mind during their next trip to a for-profit
gaming establishment. —Guy

Here’s eye-opening news: While wearing
sunglasses to protect against the sun’s ultraviolet (UV) rays may not seem necessary during cloudy, cold-weather months,
harmful UV rays that can damage your
eyes are actually present all year-round.
Like your skin, your eyes can also be sunburned, which can cause blurred vision,
redness, tearing and temporary vision loss.
Exposure to UV rays may also contribute
to the development of long-term vision
conditions, such as cataracts, macular degeneration and, in some cases, skin cancer
on and around the eyelids.
In fact, light actually intensifies as it
passes through the eyes and is 22 times
stronger at the outer edges of the eyes and
eight times stronger at the inner edges of
the eyes. These are the most common
places for pterygium (a thin tissue over the
white part of the eye) and cataracts to develop, both of which are associated with
chronic UV exposure.
Children’s eyes are especially sensitive to
UV exposure, and it’s never too early for
them to wear proper sun protection. In a
study published in Review of Optometry,
vision changes due to UV damage were
found in children as young as age 9.
What’s more, 71 percent of parents reported they do not ensure that their children wear sunglasses outdoors, according
to a recent survey conducted by the American Optometric Association.

Q: Now that Jennifer Esposito has
reappeared on Taxi Brooklyn, why did she
ever leave Blue Bloods? I thought that it
was reported she was ill? —Tony via

A: Back in 2012, Jennifer collapsed on
the Blue Bloods set due to complications
from celiac disease and missed a week of
work. Her doctor advised her that she
needed to cut back her work schedule.
Rather than work around her schedule,
CBS put her on an unpaid leave of absence
(and even implied that her collapse was a
stunt to get a raise), and refused to let her
obtain limited work in the meantime.
When her contract with the show expired,
she was able to look for work elsewhere.
Jennifer currently is co-starring in the
action-drama Taxi Brooklyn, which is
based on Luc Besson’s feature film called
Taxi.

screens, and other aesthetic improvements.

Work has begun on the first new “village” in Summerlin in more than a decade.
The Cliffs will have 1,700 homes in 11

The historic Virginia Street Bridge,
built in 1905, is being torn down and
will be replaced with a new $18 million
bridge spanning the Truckee River. It
was famously known as the “wedding
ring bridge” in reference to women who
came to Reno to avail themselves of its
quickie divorce laws in the 1920s and
’30s and were said to cast their wedding
rings off the bridge upon receiving their
decrees. The ritual that some say is
mostly urban myth was portrayed in the
movie The Misfits, in which Marilyn
Monroe considers, but decides against,
the ring fling. Regardless of how often
it actually happened, treasure hunters
have for years scoured the river and its
banks with metal detectors looking for
the rings.

The rapidly rising $375 million 20,000seat arena behind New York-New York is
beginning to attract attention. With less
than a year to go till its April 2015 opening, the structure’s frame has been completed and work has begun on the interior.
Negotiations for naming rights and opening events are also in motion. The structure is easily visible from I-15 and you can

was a little stressful keeping up with
everyone, but I did come close to a
Bingo, which was exciting.
Since then I have tried Bingo at two other
places and do have to say it is quite social
and fun. People who recognize me from
other games always say hello and I am almost to the point now where I don’t
worry about keeping up and can just have
fun. My next goal is to play two packs instead of one…but that won’t be for a
while.
Anyway, I’m loving Bingo and my new
reading friend—the Bingo Bugle Newspaper—very much. Bingo is such an
awesome way to get out with people and

Dear Aunt Bingo,
I am recently retired and a widow, and
after retirement found myself stumped
over social activities to get involved in
that would be entertaining and get me out
of the house but would not require a commitment that might limit my freedom to
travel or visit my kids and grandkids.
Well, all I can say is thank heaven for
Bingo!
I saw some ads for Bingo in the paper at
places fairly close to me, and one afternoon bit the bullet and drove to one of
them. I went in and explained to one of
the workers that I didn’t know a lot about
the game and asked her if she thought
that would be a problem. She said “no
way” and walked me through buying my
Bingo paper, then sat me with a friend of
hers. The friend was nice and clearly enjoyed showing a beginner the ropes. It

up on personal stuff—and yes, we have
been shushed more than once for being
too chatty—and it has struck me that
there is something about being out and
about on neutral ground instead of at
home that makes everybody feel they are
on equal ground and relaxed about sharing news and joking around like we
might not do otherwise.
If I had my way I think I would play
Bingo with my family every week if I
could. But we’re all pretty busy, so once
a month is about the best we can do—except for my mom and me, who play together more often.
Anyway, I’m just passing this along as an
idea for other Bingo players who may
want to try and turn their Bingo playing

The Look of a President
As a child I wasn’t fond of any teacher
I ever had, but I can still hear my parents
saying. “Whether you like the teacher or
not you have to be respectful because of
who she is…a teacher, and a nun.” Oh, I
was always respectful, but for a different
reason. She had that yardstick. I also figured God wouldn’t like it if I was not respectful to that nun. Then I learned that I
was expected to be respectful to a whole
parcel of folks because of the “office” they
held in my life. Besides my parents and
teachers, there were police officers, the
President, grownups, the people next door,
my grandparents, baby sitters, big kids and
bullies, the Easter bunny and Santa and
most of all God. Eventually I deleted the
Easter bunny and Santa from the line-up.
As I grew older and became a voter, I
found there was one person who got a huge
dose of disrespect even though he held the
highest office in the land and that was the

president of the United States. This seemed
strange to me at first, till I realized that we
have never had a president who left us in
tears on his last day in office. Yet looking
back, there has always been someone who,
further on down the line, recalled something special about each of them, which
leads me to believe that the griping is all
part of the game called politics. It gets
pretty exciting when it comes close to time
to choose the person who is next that is
eager to serve and then be condemned for
every good thing he tried to do in office.
We discussed this at Bingo last night
and we all agree that there are two questions one should ask himself/herself before
throwing that hat into the ring. Do I look
presidential? A red baseball cap and bill
atop a $5,000 suit does not look presidential to me. Neither does a see-through
evening gown, even if the view is only
from behind.
Question number two is a little more
complicated. Is my last name easy to make
embarrassing jokes about? For example,
the name Bieber translates to pimples, acne
and inexperience, the name Kardashian
causes a slight nauseating sensation in the
pit of the stomach, the name Jenner indicates an aura of indecisiveness. Lewinski
is not a good name for a president.
After discerning these two questions
and you still want the job, you are a target
for every comedian. Just remember that the
name-calling isn’t personal. It’s just part of
the game. That’s why all Presidents secretly play Bingo. It gets them over the
tough spots.

A: It would appear so…and thus I begin
my semi-regular lament of “Why can’t
Hollywood think of new ideas?” Production is set to start in early 2016, with Zac
Efron in talks to don the famous red
bathing trunks alongside Dwayne Johnson.
Q: I haven’t seen Nikki Reed much
since The Twilight Saga. Does she have
any TV or movie appearances coming up?
—Nan T., via email
A: Nikki is joining the cast of Fox’s
Sleepy Hollow for season three. She’ll
play Betsy Ross, the famous flagmaker
who crafted the first American flag, which
was presented to then Gen. George Washington in 1776. For the purposes of the supernatural historical-drama series, Betsy’s
13-star flag will have supernatural properties that will help Crane and Abbie
throughout the 18-episode third season.
4 T. fresh parsley, minced
2 T. fresh basil, chopped
1 c. grated Parmesan cheese
salt and pepper to taste
Scrub zucchini and cut in half lengthwise.
Scoop out and reserve pulp, leaving shells
1/4 inch thick. Drop shells into boiling
water and boil for 5 minutes. Chop pulp
and sauté in margarine. Add scallion and
mushrooms; sauté 3 minutes longer. Add
nuts and remove from heat. Beat eggs with
parsley, basil, salt and pepper to taste. Add
egg mixture and fresh bread crumbs to
pulp mixture. Spoon into zucchini
shells—which have been drained. Top
with grated cheese. Use your choice of
cheese; Parmesan is only one suggestion.
Place into a baking dish—which has been
greased with margarine. Add 1/2 inch of
water and bake, uncovered, in preheated
350F oven for about 30 minutes. Let stand

BAKED STUFFED ZUCCHINI
SUASH
8 1/2 lb. each or one 4 lb zucchini
1/4 c. margarine
1 small onion, chopped
1 lb. mushrooms, chopped
2 c. soft bread crumbs
8 eggs
Personal Peeves

The second week of October is Pet Peeve
Week, or so I’m told, or read somewhere, or
heard on the news. Who knows? I’m so old
I need to sew my name on my pajamas to remember who I am in the morning. Anyway,
I’ve started thinking about my pet peeves at
Bingo. Now I admit, I’m a little obsessive,
more than a little superstitious, and actually
believe that good and bad luck can be
summoned or shooed away by our actions.
Since those things all contribute to my
perspective, my pet peeves must be viewed
in that context.
First, I like to get to Bingo early, lay out
my daubers and luckies, buy my cards, and
generally get situated. The later I arrive, the
more anxious I become. My husband does
not feel the same, but bless his heart, most of
the time he accommodates my time schedule.
Arriving late and not having a choice of seats
is a problem for me and causes Robert to call
me peevish when that happens. I like to sit
closer to the front with the caller in my line
SQUASH PANCAKES
2 sm. yellow squash
2 eggs
flour
salt and pepper
baking powder
butter
Cut the squash into quarters and peel. Scoop
out the seeds and grate down to a mush. Add
flour to make a soft batter. Add salt and pepper.
When ready to make pancakes, add a tiny bit
of baking powder and two eggs. Heat a skillet
with butter. When the pan is very hot, drop in
2 tablespoons for 1 pancake. Turn over and
cook on both sides.

of sight. I like to sit on the aisle. Partly this is
so I have easy access to the bathrooms, the
instant ticket sellers, and the snack bar; the
other part is that I feel claustrophobic if I’m
surrounded by too many people in the middle
of a room. However, even worse than that situation in Nancy’s world is when I have to sit
in an entirely different room from the caller
and the majority of the other players. One
time in another state, the non smokers like
me were relegated to a small room separate
from the main hall. There were large monitors, but it wasn’t the same. That small enclosed room gave me the heebie jeebies. At
a different Bingo I had to play in a separate
room, but it had a glass wall where I could at
least see the other players. I still felt like I was
disconnected from the action; and that Lady
Luck was not going to blow me kisses, but
rather tell me to kiss her you know what.
Second, I love my cell phone as it is a
useful and convenient tool. However, it is not
an extension of me like my arm. Even though
the Bingo caller announces that players
should mute their phones or turn them off,
not everyone does. There are always jarring
ringtones and even long winded conversations about nothing while other players glare
and holler at the offenders. One time in
Florida it was announced before Bingo
started and again at intermission that anyone
whose cell phone rang would be asked to
leave with no refund. Sure enough, it
happened and the person was booted out. I
don’t feel it’s necessary to go that far, but a
little empathy and compassion from obsessive cell phone users to fellow players would
be very nice indeed. Until next month may

“What is that?” This is what someone is
sure to ask you at the checkout counter
when you load your Jerusalem Artichoke, better known as a Sunchoke, on
the conveyor. You’ll proudly do a little
promotional pitch for the vegetable.
“You should try them. They’re delicious!
Like a cross between an artichoke heart
and a potato.”
Like many tubers, sunchokes look a little
strange. But when it comes to food,
looks often can be deceiving. A sunchoke
is the tasty, knobby root of a sunflower.
Until recently, this native of North America was more popular in Europe than in
the United States.
The sunchoke is a hardy perennial that
can grow in a variety of conditions, and
is not frost tender. With water shortages
and the growing cost of agriculture,
farmers were looking for ecologically
sustainable crops, and the sunchoke fit
their needs. Sunchokes now are being
grown both commercially and by home
gardeners. Many small organic farms
also are successfully growing sunchokes,
so look for them at farm stands and
farmers’ markets (they resemble a ginger
root). The crop does have its downside:
It has a tendency to grow wild, and can
be invasive, presenting challenges for
farmers and backyard gardeners alike.
As a healthy addition to our diet, sunchokes are a low-glycemic food, and
possess a significant amount of protein
and very little starch. They also are rich
in inulin, a natural fructose type of carbohydrate. Inulin is thought to be better
tolerated by those with Type 2 diabetes.
When shopping for sunchokes, look for
firm, brown-colored tubers. If they’re beginning to darken, they’re not fresh.
After you get them home, store in paper
towels in a plastic bag in the refrigerator
for up to two weeks. Don’t wash your
sunchokes until you’re ready to use
them, as moisture can lead to spoiling.
Sunchokes have a thin skin and don’t
need to be peeled.
Sunchokes are extremely versatile. You
can use them in the same way you typically use a potato. They have a crunchy
texture and are delicious raw. When
roasted, their nutty flavor comes out.
Steamed sunchokes can stand alone or
mixed with other vegetables, used in a
gratin or to make a delicious soup. If
you’re using sunchokes in a creamed
soup or puree and want to remove the
peel for presentation color, pass them
through a food mill or a fine mesh
strainer.
This recipe for Sunchoke Chips With
Parmesan and Parsley is a delicious alter-

pounds unpeeled sunchokes
(also called Jerusalem artichokes),
scrubbed
1 1/2
teaspoon salt
1/2
cup grated Parmesan
1 1/2
teaspoons minced fresh parsley
Vegetable oil (for frying)
1. Fill a large bowl with cold water. Slice
sunchokes into thin rounds (about 1/16
inch thick), immediately dropping into
bowl of water to prevent browning.
Rinse and drain 3 times to remove some
of the starch for a crisper chip. Pat dry
with paper towels.
2. Pour enough oil into large deep skillet
to reach depth of 1/2 inch. Submerge
bulb of deep-fry thermometer into oil;
lean top of thermometer against skillet
rim. Heat oil to 375 F. Mix salt, Parmesan and parsley together in small bowl,
blending well, and set aside.
3. Working in batches, fry sunchoke
slices until golden brown, 3 to 4 minutes,
stirring occasionally. Using a skimmer,
transfer chips to a wire rack placed over
a paper-lined baking pan to drain. While
chips are hot, sprinkle with the Parmesan
and salt mixture. The chips won’t be
crispy immediately out of the fryer, so
wait a few minutes for them to crisp up.
Mound chips in bowl and serve. Serves
8.
To bake the chips:
1. Preheat oven to 400 F. Line two baking sheets with foil and lightly grease
with cooking-oil spray. Place slices in a
single layer on the two sheets. Spray
each slice with oil, then sprinkle salt on
top.
2. Bake for 10 to 15 minutes. If they
aren’t golden brown and crisp, bake in 3
to 5 minute increments until done. Sprinkle with topping of your choice.
Alternate toppings:
For protein boost and cheese flavor:
sprinkle chips with 1/2 cup nutritional
yeast
For spicy flavor: sprinkle with 1 tablespoon chili powder and 1/4 teaspoon
cayenne pepper
For salt and vinegar chips: soak sunchokes in vinegar for 2 hours before frying. Drain and pat completely dry. Fry or
bake as directed, and sprinkle with salt.
