M. Barrie I am writing this at the end of a cold, rainy week in May. Looking ahead to the thought of our summer concerts and seeing all the trips Jenn has scheduled in this brochure plus all the classes that will be taking place is a good feeling. We are always glad to hear that people enjoy coming here as much as we enjoy working here! Thank you, Mrs. Desmond! I hope you will enjoy looking through these pages and find many things that interest you. We not only try to offer a great variety of things but to do so at different times so that everyone can partake. As always, we look forward to seeing you at Desmond Campus during the months ahead and thank you for coming. & Joan McAdam Coordinator, Community Education [email protected] Jennifer Laubach Coordinator, L.I.F.E. From Peru we struck off inland to Bolivia and Chile, went over the Andes to Buenos Aires, and returned home by way of Uruguay and Brazil. Somehow during the long days of traveling and sightseeing I managed to find time to write a series of articles on South America that I mailed back to the New York Sun and the North American Alliance. They syndicated them to newspapers all over the country. When I returned home George Brett, president of the Macmillan Company, suggested I bring them out as a book. They became South American Adventures published by Macmillan in 1934. Join us for a two week session as we look at the lives and paintings of Vermeer and Dali, and discover how Dali’s obsession with Vermeer began in his youth and traveled with him throughout much of his painting career. 2 Wed., beginning Oct. 19 1-3 pm L. By Lincoln’s inauguration, in March of 1861, two thirds of the “Confederacy” had been formed. Now action, on his part, would be required as he had vowed to “preserve, protect and defend.” However, with the firing on Fort Sumter he would be spared having to make the first move to war. Come view Ken Burns’ award-winning, “The Cause” which presents the history of events which led to war, and Lincoln’s first response to it. Thursday, August 25 9:30 am-1:30 pm G. Underwood $35 European Cool-Climate Wines and Their Food Mates, Part II Cool-climate wines are light in body and usually lower in alcohol (compared to those from warmer regions), and as such are ideal companions to the lighter foods of our warm-weather season. This is the “second edition” (Part II) of this class. As in last year’s class, we’ll focus on wines from primarily northern and western Europe, but this year we will incorporate a wine or two from eastern Europe, the Mediterranean Islands, etc. In all likelihood we will taste some wines made from grapes that are unfamiliar to you. Class begins with a lecture (about 45 minutes) with a comprehensive handout. The talk starts promptly at 6 p.m., and will be followed with a light meal (vegetable soup, pasta, and other seasonal foods) and a tasting of at least 6 cool-climate wines. Tuesday, July 26 6-8 pmT. Free $60 Tim Free is a 1995 graduate of the Culinary Institute of America. Since that time, he has worked in the wine industry (wholesale, retail, and education). He has taught wine courses at Desmond Campus since 2003, and has given corporate wine seminars as well as training programs for wine professionals in the wholesale and retail business. He has traveled to many of the world’s wine regions, including those in France, Portugal, Spain, Italy, Germany, Chile, Switzerland and the US (New York, California, Oregon, Washington, etc.). He has also written for various websites. His specialty is food and wine pairings, focusing mostly on traditional European cuisine. 24 Community Education (Noncredit) Courses Summer/Fall 2016 Introduction to the Wines of Germany’s Rhine & Mosel with “Little Foods” and Cheeses Germany’s wine country looks like a dream landscape: its steep-sided river valleys are thickly forested and dotted with ancient castles. We’ll learn about these two great wine rivers and their long history as quality wine sources. The wines make the picture all that much more otherworldly: light, almost ethereally-aromatic, and mostly low in alcohol. These are mainly semi-dry white wines, but there are some good reds, and some of the whites are dry. Although it is the star, Riesling is not the only grape grown here, and wines made from these other grapes are becoming more popular both in Germany and outside. The class will begin with a wine talk (about 1 hour) and then proceed to a tasting of at least 6 wines. A meal will not be served, but we’ll sample some “little foods” (small appetizers and cheeses) to pair with the wines. The food in this class is vegetarian-friendly. Weather-permitting, this class may be held outdoors. Saturday, August 20 2-4 pmT. Free $40 Introduction to the Wines & Foods of Northern & Central Portugal & Northwestern Spain This class will introduce you to the wines of the northwestern part of Iberia, those regions that are climatically-influenced by the Atlantic. In a similar way to our own west coast, the marine influence changes with colder water creating more rainfall and lower land temperatures as you head north (think Los Angeles to Seattle). Many (but not all) of the wines are white and light-bodied, with reds being dominant in central Portugal. The regional cuisines show marked similarities, leading to the conclusion that political boundaries are sometimes artificial- these parts of the two countries have more in common than their proximity. The class begins with an explanatory, comprehensive “wine talk” (about 1 hour), followed by a light meal accompanied by at least 6 wines from the region, paired with the different courses. Tuesday, October 25 6-8 pmT. Free $60 Cooking with Herbs Food is always better when properly seasoned. Fresh herbs are bright, bold, and they transform a dish. You’ll enjoy cooking a lot more once you’ve mastered the herb and spices basics. Friday, August 12 10 am-Noon Master Gardener $15 Master Gardener Cornell Cooperative Extension will teach this class. Composting No sane person would throw away riches, right? But we do every time we toss our kitchen scraps into the disposal or blow away and bag fall leaves. Combining these “wastes” with garden clippings, weeds and shredded paper provides the very best “fertilizer.” It not only feeds your soil but also your plants. It’s also an invaluable element in growing the most beautiful flowers and the tastiest, most nutritious veggies. Composting is so easy. Learn how. Thursday, July 7 10 am-Noon Master Gardener “Instructor was very knowledgeable and excited about the content.” $15 Summer/Fall 2016 Community Education (Noncredit) Courses 25 Poetry: Varieties of Religious Experience The common expression in literature is to refer to “religious poetry” as a specific type, but although the term “religion” can refer generally to worship of a higher being, it conveys the association with “organized religion” and specific dogma and practices. Poets are rarely confined by such specifics, and even when they are allied with an orthodox faith expression, as with the Jesuit Gerard Manley Hopkins, their poetry is influenced mainly by the soul of the poet and his/her unique spirituality. In our sessions, we will explore and discuss the spirituality of some poets know as “religious,” like George Herbert, John Donne, Hopkins, and T.S. Eliot, as well as those less usually considered ‘religious,’ like Blake, Emily Dickinson, and W.H. Auden, observing the varieties of religious experience reflected in their work. Copies of poems will be distributed for discussion in class. No outside reading is required. 4 Fri., beginning July 8 10:30 am-NoonA. Gandolfo $40 Anita Gandolfo, Professor Emeritus of the United States Military Academy at West Point, has a Ph.D. in English Language and Literature (City University of NY), as well as an M.A. in Religious Education (Wheeling Jesuit College). The Esoteric History of Poetry An in-depth exploration of how poetry from all time periods and throughout the world serves as a path of spiritual initiation. Both the lives of poets and the poems themselves will be studied, demonstrating this process and showing the impact that it can have on the lives of readers. It will be made apparent that poetry is particularly suited to the purpose of spiritual renewal and understanding. 3 Tues., beginning July 12 2-4 pmN. Rosenblum $40 Nathan Rosenblum is a doctor of metaphysical philosophy and a scholar of the esoteric. He is also a poet and author and is currently preparing a collection of essays for publication. All of this and much more will be discussed, making clear how this knowledge can profoundly help in understanding the nature of existence. 3 Tues., beginning August 9 2-4 pmN. Lawrence $35 Classical Music of the Romantic Era Around the years 1820-1910, attention turned to the expression of intense feeling in classical music. With less emphasis on the structural concerns of classical forms, Romantic composers focused on melodic styles, richer harmonies and ever more dissonance in their quest to move their audiences. Come listen, enjoy and learn about the giants of this musical period. Chopin, Schumann, Dvorak, Smetana and Tchaikovsky are among the greats to be admired from this era. 3 Tues., beginning October 11 10 am-Noon M. Lawrence $45 English Poets of the Romantic Era The early 19th Century saw the blossoming of the great English Romantic poets. When reference is made to Romantic verse, Keats, Blake, Coleridge, Shelley, Byron and Wordsworth all race to mind. Theirs was an aesthetic style, and an attitude or spirit, reacting against the rationalism of Enlightenment culture and searching for freedom in personal, political, and artistic life. We’ll read and consider some of the best that poetry has to offer. 3 Wed., beginning October 12 10 am-Noon M. Lawrence $45 Art History Lectures can be found in the Art section of the brochure, see pages 15-16 Penned: Behind Bars, Prison Writers This class will highlight award winning poets and essayists who are or were incarcerated. Serving his distinctive blends with inn guests, he soon found they were coming back for more. Never did John Harney imagine that his small homerun business in Salisbury, Connecticut would turn into a global operation, now headquartered in Millerton, filling 90,000 square feet of warehouse space, and employing over 155 people, making it one of the largest employers in the Hudson Valley. Members of the Hudson Valley Region Model “A” Restorers Club will be visiting the Desmond Campus this October 8th. Model “A” Fords were produced from 1928 through 1931 with nearly 5 million cars and trucks being built during that time and over 100,000 still in existence around the world. Following the Model “T” Tin Lizzie, this ‘new’ car was so revolutionary Ford went to the beginning of the alphabet and named it Model “A” (the first Model “A” was produced in 1903)! A worldwide sensation at the outset, many body styles of cars and trucks (called “AA”s) were offered making the Model “A” one of the most popular and collectable vintage vehicles to own and drive. A most significant piece of automotive history, the Model “A” Ford found its niche not only because it was affordable by most, but also because it was one of the most innovative automobiles ever produced. With four-wheel brakes, tapered roller bearing wheels, sliding gear transmission and other features, this was truly a car for the masses and couldn’t have been produced at a better time. The Hudson Valley Region Model “A” Restorers Club, Inc. was formed in 1958 and is part of the national Model “A” Restorers Club based in Garden City, Michigan. International membership totals about 7,500 and our region has about 80 members. They are the keepers of a part of American history that cannot be duplicated. Their hobby represents an era of excitement, pain, economic boom and collapse, and the expectation of something better through hard work and an honest living. Members are restorers, mechanics, enthusiasts and they love to tune and drive our old Fords at almost every opportunity. The group participates in local, regional and national activities and believe the Model “A” was meant to be driven. This grass roots group appreciates what the Hudson Valley has to offer and promotes and respects its beauty and ecosystems as they enjoy activities on its roadways and throughout its towns and villages.
