Leccino — Originating in the areas of Brindisi and Lecce in the rugged and arid landscape of Basilicata, Italy,
Leccino has a medium, fruity aroma and sweet taste, balanced with peppery and spicy undertones.
Arbequina — This popular, high-yielding oil comes from the Spanish region of Catalonia. It has a mild, fruity
aroma with a nutty, sweet flavor.
Picual — The province of Jaén in the region of Andalucia is the homeland for this popular Spanish variety.
The high-yield crop of Picual olives produces a golden-colored olive oil with a fruity aroma, grassy herbal
notes and a spicy-sour finish.
Garlic-Infused Olive Oil — The medium, fruity aroma of our imported Italian olive oil is flavorfully
enhanced by the robust essence of garlic, giving this oil a great depth of flavor.
Lemon-Infused Olive Oil — The crisp, fresh aroma of Mediterranean lemons infuse the mild

5J (Cinco Jotas) Purebred Ibérico de Bellota — One of the finest flavors on earth
JAMÓN !
(says I), Ibérico de Bellota is very hard to come by. Made from pata negra, or black hoof pigs,
who graze on the acorns (bellota) that give this jamón its truly exquisite flavor — umami at
its highest level — this ham has been cured the same way for more than 100 years. Serve at room temperature with
ABSOLUTELY NOTHING! Just bask in the glory of a truly one of a kind food experience. Trust me.
Crested Duck — Local Cured Specialties
Crested Duck is one of Pittsburgh’s culinary gems, especially when it comes to holiday meats. Owner Kevin Costa
prepares and preserves his artisan-cured meats with locally sourced products and handcrafts them in small batches
using traditional 15th century techniques. For this year’s festivities, I recommend:
• Moroccan Lamb Coppa — A highly unique item, this lamb is from Jamison Farm in Latrobe, PA. Dry-aged for
3-4 months and cured with a blend of North African spices, it is a show-stopper on any holiday table.
• Duck Breast Prosciutto — Made from certified organic duck breast and salt-cured for just under a month,
this air-dried treasure has a silky texture and delightfully salty flavor. Slice thin and serve with Parmigiano
Reggiano®, or with melon and a drizzle of our famed balsamic vinegar.
Cognac BellaVitano Cheese — Get it while you can, because we
have only nine wheels of this outstanding cheese — but we’re not
complaining. This extraordinarily buttery BellaVitano is steeped in
LIMITED TIME Rémy Martin Cognac for 7-10 intoxicating days AND THEN aged

lasagna and cannoli.
• Old-Fashioned — Handcrafted and hand-dipped to protect its delicate curd, which is then placed in baskets

Sturgeon, this caviar comes from the Pacific Coast of North
America between Baja and Alaska from sturgeon that are a

shades. Its texture is compact, firm and consistent and its
character — buttery, delicate, elegant and nutty with fruity

Siberian — Harvested from 6-8 year old Siberian Sturgeon

wild American Paddlefish is found in the northern Mississippi
River. They take a minimum of seven years to produce

Like fondue, Raclette is a participatory, social experience, best shared with friends
and good wine — hellooo, holiday party! It comes from the French word “racler,”
which means to scrape — hence the scraping of cheese on everything. The cheese,
itself, has a mellow, slightly earthy flavor and its texture is — you guessed it — ideal
for melting.
