RETOUR SITE Bandol - Cuvée Cabassaou APPELLATION AOC Bandol – Red GRAPE VARIETIES Mourvèdre (95 %), Cinsault (1%), Syrah (4%) Vines are about 50 years old. SOIL Small south-facing parcel located on the hillside bellow La Tourtine. The vineyard climate benefits from being sheltered from the frigid mistral and cooled by summer breezes. This unique microclimate allows the Mourvèdre grape to reach its potential and make an exceptional wine. Mix of clay and limestone, SANTONIEN era (about 100 million years). CULTIVATION Traditionally tilled soil in terraces (both mechanically and by hand) without the use of herbicides. The vines are treated without any chemical fungicides. Yields are kept to 25 hectolitres per hectare. HARVEST The grapes are manually harvested and carried in small bins (30 kg). Clusters are handselected in the vineyard and in the cellar. VINIFICATION After destemming, the grapes are traditionally fermented with natural yeast; vinified for 2 or 3 weeks in temperature-controlled stainless steel or concrete vats. Once pressed, the wine is put in large oak casks (25 to 75hl) to complete malolactic fermentation and to mature for 18 to 20 months. Bottled without fining nor filtering. TASTING A deep dark color. Subtle bouquet while young, but developing notes of violet, leather and dark fruits with age. Complex flavours of fruit and spice with smooth, round tannins. A wine that will age for decades.
