Cuvée Extra brut de “Christophe Mignon”
Terroir: The vineyard is located in the minicipalities
of Festigny and Le Breuil.
Soil: A silty, clay limestone, characteristic of the
Marne valley.
Exposure: South / South West
Vines: the average age of the plots is 36 years.
Our working methods are « alternative » but without
any certification, we work in accordance with the
lunar calendar (see our website for explanation).
Harvest: Manually harvested in 2010/2009 (50%
from each year) with careful monitoring and control
of grape maturity. We use two pneumatic presses,
2000 and 4000 kgs capacity.
Vinification: In stainless steel or enamelled steel
tanks. Bottled in 2011 (the date chosen according to
the lunar calendar), with careful monitoring of the
second fermentation. The grape juice from each
parcel is vinified and stored separately before
« assemblage » after 5 mounts on the lees.
After an average « in bottle » ageing of 24 months
each cuvée is disgorged on a favourable date chosen
according to the lunar calendar. This date is indicated
on the label.

Tasting Notes:
This champagne, either with no sugar dosage or
discreetly dosed, is elegant, refined and indulgent,
with notes of spices, pear and dried fruit. Select the
level of dryness to complement the accompanying
dish.
