Comunità Montana delle Valli del Taro e del Ceno is pleased to offer a wide selection of Farmhouse
and Bed&Breakfast facilities over a territory which is not just worth a visit for its unspoilt nature,
country traditions, trattorias and restaurants featuring genuine food, but which is also the perfect
retreat for rest and quiet under a starry sky, where forgotten flavours can be rediscovered, where
it is pleasant to recover the vital need of an almost instinctive return to nature, far from the hustle
and bustle of modern life, oppressed by air and noise pollution.
A break in a farmhouse or B&B guesthouse is the source of pleasure, which may come from spending
the night is a really quiet place or tasting genuine home-made food as cannot be found even in the
best supplied or original store, or just from having a chat with the owners and learn about the
environment and local history or get advice about nearby places worth a visit. Just a stone's throw
is the Apennine with its typical products such as Parmigiano-Reggiano, porcini mushrooms boasting
European P.G.I. designation, the black swine or the unrivalled flavour of bread from Pellegrino
Parmense. Other attractions are the castles of Valceno and Valtaro, the wine and taste trail featuring
Borgotaro's porcino mushroom; the long and varied hipporoute or the trekking and mountain-bike
paths and tracks. And then there is Art: Parmigianino in Bardi, Lanfranco and Traversi's Via Crucis
in Borgotaro, Carraccis in Bedonia's diocesan Seminary, charming in their spiritual inspiration. The
historical routes are also worth mention: the Via Francigena, with its superb Romanesque churches,
from Medesano to Fornovo, Terenzo and Berceto and the Abbots' Way, from Bardi to Borgotaro
and Borgallo, with its “Mistà” (Majesties) and specimens of rock architecture that revive memories
from the past. Children can excitingly enjoy their stay by getting familiar with those animals they
may have only seen in cartoons or portrayed in books, such as poultry, all sorts of pets as well as
tame and wild animals.
All this means a return to our most solid, often long-forgotten values, linked to the beauty of our
land and to the thousand crafts that have marked the history of men through the centuries, which
may magically result in a really refreshing and invigorating experience, if we are interested in such
a break not just as an alternative to a visit to the round-the-corner restaurant.

vitality in the whole area and of the warm hospitality traditions of its inhabitants.

Our B&B retreat lies in the verdant Upper Taro Valley at Gotra di
Albareto. The independent cottage, which has a large living room
equipped with TV set and video recorder and a fully-furnished
kitchen, can sleep up to six guests in the spacious airy rooms. La
Casetta is surrounded by a fir-lined garden. A rich breakfast is served
at agreed time (not later than 12 a.m.), to add to the pleasure of a

“La Pineta” B&B guesthouse is located at 500 metres of altitude, in
the heart of green Val Gotra (the homeland of P.G.I. porcino
mushroom), by the road to Albareto, about 6 km from Borgo Val di
Taro. La Pineta is equipped to host families with babies in its three
spacious rooms, where baby-changing tables and high chairs are
available, as well as a kitchenette, should mothers with babies require
it. Outdoors there a wide play ground, a yard with poultry, a solarium
area and a shaded portico which is ideal for picnics. Pet-therapy
with a donkey is also available, run by the host, doctor Elena Roncarati,

“Cà d'Alfieri” is a self-contained rural retreat, in a beautifully restored
19th-century stone building. Up to 20 guests can be comfortably
accommodated in stylishly furnished rooms. The restaurant, housed
in the converted cowshed, can seat up to 30 guests, whereas 10
more visitors can be confortably seated in the lounge with large
inglenook fireplace. The farm breeds black Parma pigs and rabbits
and grows organic vegetables: they are the ingredients of a tasty

“Cà del Fuoco” is beautifully located, about 12 km from Bardi, in
the heart of the green countryside, with a bubbling stream flowing
on one side and a lovely pond where trout can be fished for. Our
specialities are: black piglet roasted in wood-burning oven, homemade pasta, truffles and mushrooms (in season), grilled steak of

If the main merit of rural tourism is the
promotion and accessibility of widespread
hospitality, equally important and significant is
the quality of food and cuisine. A farmhouse
break or holiday offers relaxation in natural
environments rich in human history or simply
beautiful, but also a dining table lavishly laid
with tasty dishes, full of flavour and usually
freshly cooked with home-produced
ingredients. Dishes are prepared according to
local cooking habits, following family recipes
meant to enhance genuine traditional flavours.
In a farmhouse food is usually prepared the
same way it is, or was, for the family, which is
now extended to include the guests. Dishes
are simple, in accordance with the season: the
food is prepared and immediately eaten, which
is what simple things require. The secret, (an
open secret, that is) lies in the high quality of
the ingredients, which are lavishly supplied by
the favourable climate and the human talent
the Taro and Ceno valleys can boast. Starting
from the foothills in the lower valleys we
gradually climb up to over one thousand metres
of the mountains that overlook the sea.Thence
comes the salty breeze that gently blows
through the pine, beech and chestnut woods
and absorbs those balmy fragrances that are
ideal for the microclimate where mushrooms
grow and cured meats are seasoned; but it is
also laden with humidity, necessary for the
growth of truffles, of delicious season berries
and of the scented, fragrant grass that is an
essential component for the production of

(excellent specimens are also found all across
the Apennine) is the only type of mushroom
that can boast the Protected Geographical
Indication (P.G.I.) designation, thanks to its
special organoleptic quality and fragrance.
Porcini will fill of flavour the sauce for your
tagliatelle, or you could taste them as finely
sliced, breaded and fried crisp half-moons,
firm and tasty in a parsley-and-garlic-flavoured
stew or as superbly scented grilled caps. In
winter, then, dried porcini will make a creamy
risotto absolutely mouthwatering. Parmigiano
has also been for centuries the pride of hill
and mountain dairies. It is crumbly and mild
in flavour, with faint savoury notes, an absolutely
wholesome nourishment. It is made with milk,
salt and rennet and is aged from 18 months
to twenty-four, thirty-six months. Salumi (cured
pork meats) are the perfect ingredient of any
meal during the day; they are excellent as a
snack, at lunch, at tea time and for a light
dinner. The “art” of making them follows an
ancient rite, the memory and secrets of which
are kept jealously alive: the first sweet hams
were made here, as were salami and “coppa”
(pork neck salami), or big “pancette” and rustic
“cicciolata”; nowadays they are also made with
meat of wild living pigs of the ancient black
Parmesan breed.There are chestnuts (roasted
or boiled in milk), good truffles to make a fried
egg or polenta really delicious; there is honey
of different flavours, bread made with yeast
mother and baked in wood-burning ovens and
more, and more, and more...
Il Fungo di Borgotaro I.G.P.
Borgo Val di Taro e le sue valli sono famose in tutto il mondo per il suo fungo; da anni infatti la ricchezza principale
dei boschi appenninici in Provincia di Parma, nello spartiacque tra l’Emilia, la Liguria e la Toscana, non è più la
legna da ardere (peraltro ottima e ricercata in tutto il Nord Italia) ma piuttosto i prodotti del sottobosco. In particolare
i funghi porcini di Borgotaro sono conosciuti ovunque, addirittura da fine Ottocento allorquando molti montanari
emigrarono in America e Inghilterra, esportando e facendo conoscere questo prodotto. Nonostante quest’antica
notorietà, il Fungo di Borgotaro è un marchio molto giovane: il riconoscimento I.G.P. (Indicazione Geografica
Protetta) è stato ottenuto nel 1993 dal Ministero dell’Agricoltura e Foreste e nel 1996 dalla CEE. Nel 1995 è
stato costituito il Consorzio per la Tutela dell’I.G.P. “Fungo di Borgotaro” per garantire e promuovere il porcino.
Il prodotto è rappresentato dal carpoforo (ossia il frutto) di quattro specie di Boletus (B. edulis, B. aestivalis, B. pinophilus e B. aereus) allo
stato fresco, raccolto nei boschi all’interno di un’area delimitata che comprende i territori dei Comuni di Albareto e Borgo Val di Taro in Provincia
di Parma e Pontremoli in Provincia di Massa-Carrara. Il porcino di Borgotaro è considerato superiore per qualità organolettiche, olfattive ed
aromatiche, rispetto ad altri provenienti da diverse zone sia italiane che estere.
La provenienza del prodotto è tutelata attraverso una serie di controlli all’interno dei diversi elementi della filiera fungo che sono rappresentati
dai produttori (i proprietari dei boschi all’interno dell’area I.G.P.), dai raccoglitori (cioè chi svolge attività di raccolta dei funghi) e dai commercianti
(coloro che acquistano il prodotto dai raccoglitori per poi confezionarli e commercializzarli).
La fama del Fungo di Borgotaro attrae in valle migliaia di appassionati cercatori provenienti da ogni parte d’Italia. Per far fronte ad un’invasione
indiscriminata dei boschi (con conseguente distruzione dell’ecosistema fungo-pianta) dagli anni Sessanta le Comunalie, che rappresentano le
maggiori proprietà boscate a vocazione fungina del comprensorio, hanno istituito apposite riserve per la raccolta dei funghi: le regole che
occorre rispettare sono, tra le altre, i giorni di chiusura, il massimo raccolto consentito ed il pagamento del tesserino (il cui ricavato viene
reinvestito in opere di forestazione). Grazie alla promozione effettuata da alcuni anni a seguito del riconoscimento dell’IGP, il territorio sopporta
carichi di cercatori con punte di trentamila presenze all’anno, esclusi quelli locali.
Il veicolo promozionale più importante è il sito www.fungodiborgotaro.com al quale sono registrati circa duemila utenti che ricevono
periodicamente tramite e-mail notizie su eventi locali e sulla crescita dei funghi nella vallata. La sezione del sito più visitata è il Forum nel quale
si confrontano oltre mille appassionati di funghi di tutta Italia e che inviano oltre centomila messaggi ogni anno.
La mancanza di abbondanti quantità marchiate “Fungo I.G.P.” fa del porcino un prodotto di nicchia molto rinomato; sostanzialmente si è deciso
di premiare la qualità piuttosto che la quantità, sperando che il consumatore ci dia ragione!
