דגן לעבוד באולמות אירועים ואחר כך בקייטרינג¨ וכך מתפקיד לתפקיד רכש ניסיון וידע עד שהגיע לצבא Æבמחצית השנייה של השירות עבר תפקיד ונכנס למטבח” Æשם נתנו לי את היסודות לבישול לכמות גדולה של אנשים¨ אבל As part of this project, Fattal Chain general managers and department heads visited the schools to teach courses on the Hotel Industry and Self-Marketing. The students involved in this joint project spent an intensive day of study at the Leonardo Basel, right before the exams. The Leonardo Basel also hosts needy families and single mothers throughout the year, as well as special events organized by various not-for-profit associations. These have included a conference for the Magellan Association, which helps integrate soldiers from special Israeli army units into the workplace. Hotels in the North Fattal Hotels Chain properties in the North also contribute to the community in which they are situated, with love and a smile. The Leonardo Haifa has been pampering the pupils at Carmiel’s “Kfar Hayeladim” boarding school for the past five years. The hotel staff throws a party each year to celebrate the youngsters’ bar/bat mitzvah (the Jewish coming of age ceremony) with them, and brings them presents. Also, the hotel hosts lower-income families of child cancer patients, hosting them on its premises. The Leonardo Plaza Tiberias Hotel has adopted “Bayit Kham,” a home for at-risk girls, and the staff takes care of maintenance work on the building from which it operates. It also initiates various activities for the girls’ welfare. In the North too, the Leonardo Tiberias has adopted the umbrella organization comprising all of the organizations in the city that have been set up to assist youth, as well as those in the city comprising volunteers. The hotel also serves as a venue for all the events and meetings held by the umbrella organization, helping it as much as possible. Donations of Food This year as well, all the hotels of the chain will continue their sacred task of donating hot meals to the needy. For example, all the chain’s Eilat hotels contribute dozens of hot meals daily to the city’s Beit Raphael soup kitchen, and the hotels’ chefs prepare festive meals for the Jewish New Year and Passover holidays for the people that regularly eat there. Hotel representatives report that a visit to Meir Panim shows how important this contribution is to Tiberias’ needy population, people that are unable to support themselves honorably. In addition, the Leonardo Haifa, in cooperation with the “Histadrut” labor union, donates food on a regular basis to low-income families in the city, while the Leonardo Jerusalem donates hot meals every day to Meir Panim. Based on David Fattal’s explicit request, each hotel employs workers with various disabilities, whether these be students from special needs frameworks in schools, or adults that fit in well in the hotels’ warm, loving and caring homelike environment. Two Herods Dead Sea employees come from Dimona’s paraplegic center, and the hotel reports that they have become part of the staff. They have developed ongoing normative relationships with other employees, on both personal and professional levels, and their contribution of energy and willingness to the hotel is of no lesser value than what the hotel offers them. Four employees with special needs work at the Leonardo Privilege Dead Sea, and they are some of the hotel’s best and most service-minded employees. Eight students from the “Dekalim” school, which educates teenagers with various disabilities, have been employed at the Leonardo Club Tiberias these past five years. They work one day a week at the hotel; two other employees with special needs report for work every day. And this is not all: Two young men with special needs have found steady employment in the Leonardo Haifa’s Maintenance Department, while children from a school for youngsters with special needs work at the hotel one day a week. Four people with special needs work at the Leonardo Jerusalem, and the Le Méridien Eilat employs people with disabilities in the staff dining room, bakery and restaurant. Two members of “AKIM” have found jobs in the Leonardo City Tower Housekeeping Department. Two people with special needs that came to the hotel under the auspices of Chimes Israel work at the Leonardo Boutique Rehovot and five are employed at Herods Tel Aviv. All in all, about 1000 people with special needs have found work at properties belonging to the Fattal Hotels Chain. They hold down different positions and are an integral part of the chain’s activities and success. The Fattal Hotel Chain assists a long list of groups and organizations. The relationship the Leonardo Club Eilat has developed with the “Or Shalom” foster home finds expression throughout the year. The hotel staff visits the home on a regular basis, offering help with anything that is needed. The girls are invited to the hotel for meals and for days of indulgence, and some of them have even been integrated into the staff of the hotel, where they work on holidays and school vacations. Members of the hotel staff can attest to the fact that the relationship forged between them and the girls is unique, solid and warm. Fattal Dead Sea Hotels Not long ago, Herods Dead Sea adopted the Center for the Promotion of At-Risk Youth in Dimona and, working together with the staff of the Center, this connection is taking shape. The cooperation, which is still in its infancy, started during Hanukah holiday last year, with a party, and the hotel staff anticipates many more emotionally charged social events. All of the Fattal Chain’s Dead Sea hotels have taken under their wings Arad’s “Kadima Association,” which extends assistance to difficult children and youth. Leonardo Privilege Dead Sea employees relate that they donate food to the youngsters, celebrate Jewish holidays with them and run cooking workshops for them. In addition, the hotel’s maintenance staff repairs all the defects and damage at Kadima’s headquarters. Fattal Jerusalem Hotels Activities by the staff of the Leonardo Plaza Jerusalem in support of the “Ezrat Avot” golden age center have been going on for the past decade. The hotel distributes food every week at the association’s enrichment center, and the hotel kitchen staff prepares a home-style meal with great love on weekends and holidays, which warms the heart of the elderly members. The hotel also extends assistance to the “Zichron Menachem” Association, which supports cancerstricken youth. A member of the hotel’s kitchen staff took part in the Zichron Menachem summer camp and prepared meals for the campers. “The resort camps and the special events that we organize take these youngsters to new, unfamiliar places,” the hotel employees explain. “It’s not hard to see the striking changes in functioning that they undergo; their motivation and mood improve too, and this empowerment, so to speak, helps them to cope with their hardships.” These past few years, the Leonardo Jerusalem has adopted the branch of the AKIM Association in the city, a non-profit volunteer organization that operates services for the welfare of Jews, Arabs and Christians under its care. As part of their activities within the framework of the chain’s organizational culture, members of the hotel staff pay visits to the AKIM House in Jerusalem to lend a hand with various activities. They celebrate birthdays with the residents and send them qualified professional personnel to perform the maintenance duties deemed necessary to transform the place into a warm, loving home. The residents are also invited to the hotel every once in a while for days of indulgence. Hotels in the Center The staff at Leonardo City Tower has been in ongoing contact with AKIM’s Ramat Gan-Givatayim branch these past few years. Representatives from the hotel take part in plays, parties, and special events, and in joint activities with AKIM members - and they always come laden with gifts. The Fattal Chain purchased gift packages from AKIM this past Purim, to distribute to children of hotel guests, and it also donated excellent food for the AKIM branch’s own Purim party. The hotel also donates days of indulgence and overnight stays all through the year to the “Kav Lehayim” Association, and to women supported by the Municipality of Tel Aviv-Jaffa’s Welfare Department. Soldiers without families in the country are also hosted by the hotel on various holidays. Herods Tel Aviv donates one of its banqueting halls for the annual “Abba Bekhavod” (“Distinguished Father”) event, a day of indulgence and fun for bereaved fathers, organized by the “Or LeMishpakhot” Association. Additionally, members of the Elwyn Association, which strives to integrate people with limitations into the community, initiated a meeting whereby young people for whom it cares were invited to the hotel to receive individualized explanations on the various tasks carried out by the staff. Some were later employed by the hotel. Also, the hotel organized a training program for soldiers enrolled in an Israeli Air Force officers’ training course; it too hosts lone soldiers on Jewish holidays. The Leonardo Suite Bat Yam Hotel has been cooperating with the Ya’ad School for youngsters with learning difficulties, for the third year in a row. Four of its students report for work at the hotel one day a week, which helps them acquire a lifetime profession. The hotel management and its workers do everything in their power to instruct the youngsters, paying particular notice to their age and special situation, and the students are seen as an integral part of the operation of the hotel. The hotel also maintains an ongoing relationship with the “Latet” Association, helping its members with donations of food and by carrying out ongoing maintenance work at the homes of members, when necessary. Last Hanukah, the hotel hosted Holocaust survivors at a party organized by an association looking after their needs, which also included a meal and the lighting of festive holiday candles. Annual activities for the community are included in the yearly work plan of each hotel of the chain, and the activities are never ending. Fattal for the Community T he Leonardo Plaza Eilat received letter a few months ago from the International Fellowship of Christians and Jews, requesting assistance for a couple living in the city that was facing financial difficulties. “The woman suffers from breathing problems,” the letter said. “The carpets in their home are saturated with dust and they haven’t been cleaned for quite a long time. Please help; please do something to alleviate her breathing difficulties.” Chana Drori, the hotel’s housekeeping manager, came to the rescue; she arrived at the home of the couple together with members of her department and all the equipment they needed, and spent the next few hours thoroughly cleaning all of their carpets. And they did even more: The volunteer cleaners couldn’t ignore the penury in which the couple lived so they informed hotel General Manager Chen Sandlon and Director of Human Resources Liat Golan of their plight, and the two gave their approval for the couple to be hosted at the hotel until a crew of hotel maintenance workers painted their apartment and carried out other repair work there. In addition, the crew outfitted the place with a living room set as good as new, mattresses and bedding. Moreover, the hotel decided to “adopt” the couple and to send them dinner each Friday evening, and food for Saturday, the Jewish Sabbath. At each hotel that is part of the Fattal Hotels Chain, all over Israel, activities are undertaken to help the community, founded on a true desire to give. According to Fattal Training Manager Ganit Buchman: “The world view of our company with regard to activities for the community begins with our owner David Fattal, for whom love of humanity is a cardinal principle, and who has transferred this belief to every single employee. Each hotel takes upon itself to be involved actively in the life of the community in which it is located.” During a large storm that hit Jerusalem last December, the city came to a standstill, as though under siege. Many people were left without electricity, and the low temperatures were life threatening. A., age 74, who lived in the Kiryat Moshe neighborhood, was one of them. He remained closed up in his apartment for four whole days, with no electricity, and he was at his wits’ end until he heard that the Leonardo Plaza Jerusalem had come to the aid of the residents of the city and was welcoming families in distress. Fattal’s Eilat Hotels The U Coral Beach Club Eilat has become part of the lives of the support group for cancer patients and their families that belong to the Latet Association. The hotel hosts the group for its scheduled meetings, invites them and their children for days of indulgence and dinners, and does its best to give them whatever they need. Moreover, the hotel hosts a Special Education class and it donates food based on a menu devised specifically for the class. The event, which was staged for the 10th year in a row, took place at the Magic Palace Eilat, and 90 of the chain’s managers and staff members were invited to attend. Diligent employees that had been with the chain for five years were honored with a certificate of appreciation and an elegant watch. “A hotel’s success is based, first and foremost, on the people working in it, and that is why we have such great appreciation for workers that believe in the chain, and why we mark five years of their employment,” said the chain’s General Manager Reuven Elkis. “We will continue to nurture our next generation of managers from within the chain.” In order to select the best dishes to be served its guests this coming summer, the Fattal chain decided to organize a competition among the chefs of its 34 properties. The finals, held at the Tadmor School, Herzliya, were judged by chefs Meir Adoni, Aviv Moshe, Yoram Kastenbaum, Moshik Roth and Mika Sharon. Chain owner David Fattal, General Manager Reuven Elkis and Doron Zilberstein, general manager of Unilever Foodsolutions, which partnered the event with the chain, also sat on the panel of judges. They tasted, deliberated, and then announced a winner. First place was awarded to the team of chefs from Herods Tel Aviv, which won a trip to train in the kitchens of a Michelin-starred restaurant in France. The Leonardo Plaza Jerusalem team came in second and was rewarded with a trip to a Leonardo property in Europe, to train there; and third prize went to the kitchen staff of the Leonardo Privilege Eilat, who will train at a prestigious chef’s restaurant in Tel Aviv. The French chef, who visited the country as part of “French-Israel Culinary Week,” prepared kosher gourmet cuisine with Israeli-Mediterranean touches, in the kitchens of the hotel’s legendary Cow on the Roof restaurant. Gomez and Kadosh designed the menu together with Lionel Levi, chef of the InterContinental Marseille, Israeli Chef Aviv Moshe of Messa, and Le Fantin Latour (Grenoble) Chef Stéphane Froidevaux. When dinner ended, France’s Ambassador to Israel Patrick Maisonnave, who was a guest at the event, thanked the chefs for the excellent meal and praised the tight-knit cooperation. News in Review Michelin Stardust Fattal Hotel Chain Head Chef Shalom Kadosh continues to bring the world’s A-List chefs to Israel, and he recently hosted three chefs from abroad, all of whom run Michelin-starred restaurants. The idea for the visit developed after Kadosh had been selected to receive the coveted Eckart Witzigmann Prize, one of Germany’s most important culinary awards. Witzigmann, who met Kadosh in Germany, was excited by what he was told about Israeli cuisine, and he came for a visit, together with Chef Marc Haeberlin, owner of a one-star Michelin restaurant in Illhaeusern, in the Alsace region of France, one of only three chefs in the world to have received this rating for more than 45 years in a row, and Heiner Finkbeiner, owner of one of Germany’s most appreciated three-star Michelin restaurants, located in his own Black Forest hotel. The high point of the visit was when some of Israel’s finest chefs, gathered at the Cow on the Roof restaurant, at the Leonardo Plaza Jerusalem, to prepare an Israeli gourmet meal for their colleagues from abroad. The hotel dining room was renewed by the replacement of carpeting with parquet flooring, new lighting, and additional, artistic, touches. Leonardo Privilege Winter renovations at the Leonardo Privilege Eilat focused on its 90 pool-view rooms. Elegant parquet flooring replaced the carpeting there and decorative fabrics were added. All the corridor carpeting was replaced too. Leonardo Club Both Presidential suites at the Leonardo Club have been extensively renovated. They were outfitted with new furniture and flooring, and the bathrooms and balconies were renewed. Magic Sunrise Club Most of the rooms in the Magic Sunrise Club were renovated recently. The final stage included a total refurbishment of 100 “Deluxe” rooms: replacing the furniture, installing parquet flooring, and adding special lighting fixtures and decorative fabrics. Ideal Renovations at the Lowest Spot on Earth The Fattal chain manages five hotels by the Dead Sea; three of them were renovated this past winter. New foliage was planted throughout the Leonardo Privilege Dead Sea, and the spa’s outer appearance was changed. More intensive renovations took place at the Leonardo Club, where 200 rooms were renewed and six deluxe duplexes were developed on the sixth floor. The dining room was refurbished and equipped with new furniture, and an interactive water compound for toddlers was built near the swimming pool. However, the most substantial renovations were carried out at the Herods Dead Sea. Rooms on the second and third floors were refurbished, and spa renovations were completed. The Experience of Double Pleasure: Jerusalem & the Negev Leonardo Plaza Jerusalem The Fattal Hotels Chain invested NIS 20 million these past two years in a wide-ranging renovations program at the Leonardo Plaza Jerusalem. Work was recently completed, encompassing a total renewal of 100 rooms, to upgrade them to “Executive” and “Deluxe”; reopening of the hotel’s legendary Cow on the Roof signature restaurant overseen by (the no less legendary) Chef Shalom Kadosh, where private meals may be booked; refurbishing of rooms and suites, including the hotel’s Presidential Suite; developing a new banqueting hall; and renovating the swimming pool and the pool area. In addition, two clubs were added for the benefit of the children of guests. One has been designed in the spirit of Noah’s Ark and includes a number of activity spaces, while the other, which sports a hi-tech look, features PlayStation and Wii games. Leonardo Jerusalem A new modern spa was developed at the Leonardo Jerusalem as part of the program of renovations implemented at the hotel not long ago. The spa compound comprises two treatment rooms (one for couples and the other for individuals), as well as a sauna and a fitness room outfitted with high-quality modern equipment. In addition, hotel rooms were upgraded and a PC station was installed in the lobby, enabling guest to surf the web free of charge. The furniture and lighting fixtures were replaced, as was the kitchenette; elegant parquet flooring was installed and decorative fabrics were added. A few new unique suites were added and all the spa treatment rooms were refurbished. Moreover, the Lawrence restaurant, where hotel guests are served breakfast and dinner, has been expanded with additional seating. And the lounge has been enlarged as well, to create new sitting areas. The lounge furniture and buffets were renewed. Herods Palace Work that began at Herods Palace in 2013 to renovate all the rooms in the hotel was completed this winter. The furniture and lighting fixtures were replaced, elegant parquet flooring was installed, the kitchenettes were replaced, and decorative fabrics were added. Le Meridien Eilat The 109 suites in the Le Meridien Eilat’s Royal Wing have undergone massive renovation that included replacing furniture in the rooms, public areas and patios; the installation of quality flooring; and upgrading of the air-conditioning system and the corridors too. Magic Palace About 100 rooms in the Magic Palace underwent wide-ranging renovations this winter. Leonardo Plaza The lobby was the primary focus of renovations carried out this winter at the Leonardo Plaza Eilat. A program of wide-ranging renovations in guest rooms and public areas of our hotels throughout Israel was completed; most of the properties remained open for business as the improvements were being made – with the utmost consideration for guests of the hotels. By Galit Edut “ We act consistently and unceasingly, always working to improve our level of service,” states Roni Aloni, the chain’s Vice President, Marketing. “We invested more than NIS 150 million this winter in upgrading our hotels. I believe that this step will continue to lead us to higher and higher levels of guest satisfaction.” And this is what we have accomplished: A new star will shine in the sky before long The big news emanating from the North is the development of a new hotel – Leonardo Boutique Tiberias. Anticipations are that the hotel, with 60 five-star level, exquisitely appointed rooms and suites and being developed at a cost of about NIS 50 million, will truly be one of a kind in the region. The hotel is scheduled to open in March 2015. The chain’s other hotels in the North underwent renovations and were upgraded this winter. The elevators in the Leonardo Club Tiberias were renovated, as was the pool area at the Leonardo Haifa, where the carpeting was replaced and the rooms were outfitted with wood decks. The elevators at the Leonardo Plaza Tiberias were replaced, as was the carpeting in the lobby and dining room. Dining room buffets were replaced too, and the pool area was upgraded by the addition ±∞µ The Magazine The Resort and Leisure Magazine for the Fattal Hotel Chain of a deck and the creation of chill-out area equipped with seesaws and additional seating. The Heart in the Middle Renovations took place this past winter in half of the Fattal Chain’s hotels in the center of Israel. The spa area in the Leonardo City Tower Tel Aviv, the chain’s prestigious business hotel, was upgraded and its Arugula restaurant was redecorated. In addition, the hotel’s luxuriously renewed Presidential Suite was inaugurated. There’s no waiting at Herods Tel Aviv, situated on the seashore, for time to take its toll. Even though the hotel opened just two years ago, work to refresh and renew it has started, with improvements to its first six floors. A luxurious business lounge has been launched at the Leonardo Basel Tel Aviv, offering guests a host of business services and pampering extras. The hotel’s swimming pool area was also renovated, with a new, well-designed seating area, a patio for the use of bar patrons, and special sunbathing areas. The Hotels in Eilat – Unrecognizable Eight of the Fattal Chain’s 11 Eilat hotels underwent renovations this winter, at a total investment of more than NIS 35 million, so that guests may enjoy the ultimate vacation experience. A fternoon. When I pick up the phone to Chef Shlomi Dagan, he doesn’t answer, and he only gets back to me about two hours later. “These are the two hours a day that I devote to my children, and I don’t allow anything to get in the way of the quality time I spend with them,” he explains. “When you work as a chef in an all-inclusive hotel and prepare gourmet food for hundreds of guests every day, seven days a week, you have to find quiet time too, with your children.” Dagan lives with his family in Eilat. His firstborn daughter is four years old; the family welcomed a second child not long ago, and the chef cannot wait for the moment when both of his children will join him in the kitchen. In the meantime he cannot help but return to his own memories from childhood, when his great love for cooking was formulated and developed: “True, on both sides of my family, the Libyan and the Tunisian, the women were in charge of the cooking, but when the holidays rolled around, my grandfather would take over the kitchen to prepared the traditional festival meals, and I recall how I would go to the market to shop with him. Then we’d return home; he would cook and I would peel, chop and do all sorts of other things too.” Never-ending When Dagan was 16, he started to work in the neighborhood pizza parlor, and from then until now, 22 years later, his love for the profession has never flagged. “It’s a field that continues to interest me,” he explains, “one that reinvents itself all the time. It is a very dynamic profession and always has been a source of fascination for me, a field in which you work both with and for people. For me, cooking is a true form of art, but as opposed to a drawing or painting, which can only be seen, food is appreciated via all of the senses.” After a stint making pizzas, Dagan started to work in banquet halls and then moved over to catering. Going from one job to the next helped him garner a wealth of kitchen knowledge and experience even before he was drafted into the army, where he eventually ended up in the kitchen and was trained in the basics of preparing food for large numbers of people; it was then that he also understood how wonderful it is for a person to work at something he or she loves. After being discharged, Dagan tried his hand at other professions, but before long he returned to what he loved and knew how to do, or, as he says, “The profession called me and I also chose it.” He was only 24 - an age when many of his generation were whiling their time in journeys to the Far East - and opened his first business, a workers restaurant in Ra’anana. He lorded over the kitchen with an iron hand, working with suppliers and battling against bureaucracy, but he does not believe that he did anything out of the ordinary. “This wasn’t my first time managing a restaurant,” he says in a modest tone, “and I was familiar with the field.” In any case, it took him just a year to get in touch with his burning desire to do something on a large scale, and much more professional. He sold the restaurant and started to work at Herods Eilat. In Seventh Heaven Dagan has worked in Eilat and its hotels for the past 14 years. “I took to it immediately,” he declares. “It’s hard and demanding, but there is nothing that’s more rewarding. When you see guests that are pleased with the food, you’re in seventh heaven.” Dagan’s path to the top has taken him via a wide range of food & beverage positions: managing both the hot and cold kitchens, and serving as banqueting chef, sous chef, and chef. He has worked these past four and a half years as the chef of the Leonardo Privilege, Eilat, an all-inclusive hotel offering guests an upgraded culinary experience, with three meals a day that are as pampering as they are plentiful, including an excellent meat buffet featuring delicacies like foie gras, entrecote and filet of beef. Food is prepared in front of the guests’ eyes, plated in personal-sized dishes. Coffee is served together with cakes baked in the hotel’s own bakery, one of the best in the city, and that’s not all. There’s a bar where natural shakes are prepared, ice cream and yoghurt are available poolside, nighttime snacks are available, and Dagan and his staff are always concocting all sorts of surprises. “We work with the finest products,” he says, “and I’m pleased that guests realize that they have come to a place that is out of the ordinary.” The fact that the hotel is kosher (meaning that it operates in accordance with Jewish dietary strictures) and that Dagan himself adheres to these laws in his personal life, does not get in the way of his flashing his talent from time to time with surprising dishes that are variations of non-kosher favorites. For instance, guests may be treated to a dish resembling stir-fried shrimp, though the fish on their plate is a different fish, specially chosen to look like the original. An Upgraded Experience Dagan’s daily routine is quite crowded. He arrives at work at 8:30 AM, just in time to check out breakfast. Then the meetings begin with his staff and the hotel’s department managers, to discuss what has been scheduled for that day. These continue until lunch, followed by the chef’s quality time with his children. He then returns to the hotel to begin the feverish preparations for dinner, before finishing work at 9 PM. After more than a decade working in hotels, Dagan sees the world changing before his very eyes. “Hotel cooking has become more like restaurant cooking. TV programs have given guests a greater understanding of food, and they demand - and get - the highest-quality products. “We work in accordance with the newest approaches and we offer a large number of frontal stations where food is prepared and served a la minute,” Dagan remarks. “You might say that we have upgraded our service, as well as our guests’ culinary experience.” The Magazine The Resort and Leisure Magazine for the Fattal Hotel Chain ±±¥ Cuisine Master Chef Food Prepared with Love A tightly packed schedule and cooking for hundreds of guests every day does not trouble Shlomi Dagan, the Leonardo Privilege Eilat chef. “I was beckoned by this profession, and I chose to follow,” he says, speaking of what has become a great love.
