MEDITERRANEAN CHICKEN WITH PICO DE GALLO

Spanish Rice Mix with Tomato
Tomatoes, diced in juice

Bell Peppers, small dice

Tomato, small dice
Cilantro, chopped

Olive oil, divided
Salt, divided

Boneless, skinless chicken breast

For the Rice: Combine the rice mix, tomatoes in juice, water, diced
carrots, bell peppers and celery and cook according to instructions
on the bag.
For the Pico: Combine the jalapeños, red onion, diced tomato, cilantro,
lime juice, half the olive oil, half the salt and half the Mediterranean
seasoning in a bowl and toss.
For the Chicken: Combine the remaining olive oil, salt, smoked
paprika, and Mediterranean seasoning and marinate the chicken
breast. Grill the chicken to an internal temperature of 155 degrees
F and dice into 1”x 1” cubes.
To Serve: Plate the rice and top with the diced chicken and pico de gallo.
Chef’s Tip: This recipe can also work great with fresh fish like tilapia
instead of chicken.

GRILLED PORK T-BONE STEAK W/ GOCHUJANG ASIAN PEAR COMPOUND BUTTER

Pork t-bone steaks

Whip butter to light and fluffy consistency; add Gochujang (hot pepper
paste) and dice Asian pear; mix thoroughly. The butter can be used
immediately, or wrapped in parchment paper like a Tootsie Roll, twist
ends to close Pepper Steak. Season Pork T-Bone with Lawry’s Touch
of Sea Salt Asian Seasoning on both sides. Cook on grill to desired
doneness.
Chef’s Tip: This compound butter works great on steak as well.
