PREPARATION - MACHINE OR HAND MIX
Preferred Method - WARM Refresh
Stove Top or Microwave
1. Heat 1 quart water, 1/2 cup butter and 1/2 teaspoon
salt to boiling in a 4 quart saucepan (or in a bowl
in microwave).
2. Remove from heat (or microwave).
3. Stir in 1 quart cold milk.
4. Add full pouch of potatoes stirring gently until
thoroughly moist, about 15-30 seconds.
5. Transfer potatoes to 4" deep half steamtable pan.
6. Heat in 350°F convection oven for 5-10 minutes
(or steamer/combi oven) until potatoes reach a
minimum of 135°F.
7. Place in steamtable and serve.
Optional Method - COLD Refresh
Handle temperatures according to Food Code.
1. Combine 1 quart cold water, 1 quart cold milk and 1/2
teaspoon salt into bowl or 4" deep half steamtable pan.
2. Stir in 1/2 cup melted butter with quick motion or
a mixer on low setting.
3. Add full pouch of potatoes stirring gently until
thoroughly moist, about 15-30 seconds.
4. Allow potatoes to sit for 5 minutes.
5. Keep refrigerated until ready to portion, pump, or
heat for service.

Steamtable Pan
1. Cut 1/2 cup butter into slices and place with
1/2 teaspoon salt into 4" deep half steamtable pan.
2. Pour 1 quart boiling water over ingredients and stir
to melt butter.
Follow steps 3, 4, 6, and 7 above.

Mashed Potatoes
Pour 2 gallons boiling water in mixing bowl.
Pour 11 1/2 quarts boiling water (and other
ingredients) in mixing bowl.
Hand Mix: Add product, stir constantly
with whisk.
• Machine Mix: Using whip attachment, mix on
low; slowly add product. Scrape bowl, whip
on high until fluffy (3 1/2 minutes). Serve.
• Country Style: Use 1 gallon of boiling water.
Using whip attachment, mix on low; slowly
add product, mix 1 minute. Scrape bowl,
whip on high until fluffy (1 1/2 minutes).
Hold covered at 150-160°F, 20-30 minutes.
