An Early Thanksgiving at Beta Gamma’s
November meeting in Greenville
By: Bethany Lucas
The November 6th meeting of Beta Gamma
will be appetizing and delightful as members
participate in a covered dish lunch, which
will benefit our chapter. Each group will be
bringing these designated items to the
luncheon:
Donations For Projects To Be
Collected At November Meeting
Beta Gamma Chapter is helping Psi State celebrate
its 75th anniversary by collecting at least 75 canned
foods to be distributed to the Greenville-Woodbury
food pantry. We will continue our projects of
children’s book and Bingo prizes. Great Bingo
prizes are individual packs of sugar free and regular
snacks like crackers or cookies. The donations for
this months Bingo prizes will go to the local nursing
homes of the Greenville-Woodbury area. Collection
boxes will be located near the sign-in table at our
November meeting. You will want to be part of
these worthwhile projects. Please be sure to mark
your calendar with a reminder to bring
donations!
Greenville: three entrees (or meats)
Harris/Talbot: four side items (can be salads)
Thomaston: four desserts
Manchester: two beverages and two breads
Remember, your dishes do not have to be
homemade, and not all group members need
to bring a dish; talk and plan with your group
members.
A short presentation will be delivered on how
to make your Thanksgiving beautiful,
delightful, and peaceful.
The meeting will be held at the church in
Greenville. The business meeting will begin
at 11:00; the program and luncheon will
follow. The cost of lunch is $9.00.
Fellowship is free .

-----------------------------------------------------Dawn’s Delicacies
Apple Dapple Cake
(6 servings)
2 cups sugar
2 teaspoons vanilla
1 cup vegetable oil
3 cups peeled chopped apples
3 eggs
2 cups flaked coconut
3 cups sifted Martha-White Self Rising Flour
1 cup chopped dates
1 cup chopped pecans
1 teaspoon ground cinnamon
Caramel Topping, below
Preheat oven to 325 degrees. Grease and flour a 9 or 10 inch tube pan. Mix together sugar and oil. Add eggs and
beat well. Blend in flour, cinnamon, and vanilla. Stir in apples, coconut, dates, and pecans. Spoon batter into
prepared pan. Bake 1 1/2 hours or until wooden pick inserted in cake comes out clean. Remove from oven and
immediately pour hot caramel topping over hot cake and allow to soak in. Let cake cool completely before
removing from pan. Chill for easier slicing. (Note: If using Martha White All-Purpose flour, add 1 teaspoon soda
and 1 teaspoon salt with flour.) Caramel Topping: 1 cup firmly packed brown sugar, ½ cup
butter or maragarin e, ½ cup milk Combine 2all ingredients in saucepan. Heat and stir
until blended. Boil 2 minutes. ***I like to place apple slices around the cake tray and then drizzle them
with a little of the caramel topping to make it look nice. This cake is great for the upcoming holiday gatherings
Merle’s Minutes
Hello, ladies. I hope everyone’s school year has started off well. Mine has. It has been hectic
this year with a family of my own and teaching school all at once. Wow! Those of you, who have
been doing this for years with families, BLESS YOU! There is never enough time in the day.
Our next meeting is November 6th at the Greenville Methodist Church that is on Broad Street
in Greenville, GA. We are planning a scrumptious program. This will be a great way to get new
ideas on different recipes that our talented sisters whip up for us.
Our theme is “Thanksgiving.” As many of you know, Mrs. Margaret Johnson passed away.
This makes it even clearer to realize what we have and that we should stop and give thanks. We
never know when we won’t have that something or someone anymore. Please try to come to our
November meeting and give thanks that we are lucky to be in a society that values women educators
and that also values friendship and hope.
Hope to see you at the August meeting,
Merle
