About the Jalapeño Report
The pepper chart on the next page describes 10 popular Jalapeños varieBes. Although there are many others, the ones listed in the chart were selected for their flavor, resistance to viruses, range of heat levels and ability to grow in containers.
The “Variety” column in the chart contains the Jalapeño pepper variety name and descripBon, while the “Hotness” column describes the kind of heat it has. The “SHU” listed a]er the numbers in some of the entries stand for “Scoville Heat Unit,” which is the scale that measures the spicy heat of a chile pepper. When hotness is described with a term, such as “milder,” this is in comparison to the average heat of a Jalapeño pepper.

BILLY BIKER JALAPEÑO: Green to red peppers packed with flavor and high heat. Peppers grow to be 3.5 inches long and are prolific growers. High heat, although some peppers may be sweeter than others.
BLACK JALAPEÑO: Peppers turn green, black and eventually red. Tastes sweeter than other Jalapeños. Sweeter flavor.
CONCHOS JALAPEÑO: Common variety Moderate heat.

NUMEX PINATA JALAPEÑO: MulBcolored Average heat of a Jalapeños that grow from bright green, to Jalapeño.
bright yellow to orange and ulBmately red. Ideal for colorful salsas. PURPLE JALAPEÑO: Vibrant chillies turn from a brilliant emerald green, to dark purple and finally scarlet red. Up to 50 pods per plant with white and purple flowers. 6,000 SHU. Twice as hot as a regular Jalapeño. TAM JALAPEÑO: Peppers mature from green to red on 2-­‐foot tall plants. Fruits grow to 3 to 4 inches and retain the Jalapeño flavor without the heat. 1,000 to 3,500 SHU. Mild taste.

Carolina Reaper: Bred by Ed Currie, these habanero-­‐sized, red peppers may or may not have tails at the end. Flavor is described as a roasted sweetness, with instant heat and increased Bdal waves of scorching fire.
1,569,300 SHU. Declared hodest pepper by Guinness World Records in 2013.
Trinidad Scorpion Butch T: Small, plump peppers go from green to orange to red and have a lidle tail at the bodom. Somewhat fruity taste with a biBng flavor and a lasBng burn.
1,463,700 SHU. Hodest pepper in the world as of 2011, according to Guinness World Records.
7 Pod/Pot: Rare Trinidad variety from the Over one million Chaguanas region that has bumpy texture SHU.

Bhut Jolokia (Ghost Pepper): Orange to 1,001,304 SHU.
red chillies that grow up to 3 inches long. Strong vegetable smell and somewhat sweet tasBng. Sets the throat and tongue on fire. Red Savina Habanero: Large, deep red flavorful pods that cause burning sensaBon in mouth, throat and stomach. Peppers typically measure 2 inches long.

Chocolate Habanero (Congo Black): Lantern-­‐shaped pods go from green to chocolate brown. Peppers have a rich fruity/ smoky flavor. 425,000 SHU. Fatalii: Pendant-­‐shaped pods go from pale Up to 325,000 SHU.
