It would be important here to mention that your wine selections need not be huge in number. Most wine menus can be perfectly adequate (and even preferred) listed on one page, consisting of a few sparkling wines, 5-10 dry to off-dry whites, 8-15 dry reds, 2-3 roses plus 2-3 dessert wine or Port selections. When deciding on by-the-glass selections it makes perfect sense to severely limit selections unless you have a good way of keeping the wines fresh after opening. Fish Meat Salads Pasta & Rice Spicy Cheese The flavour of most fish can be tricky to match with reds – especially the oily ones like salmon. It depends on the sort of fish but also how it is cooked and sauced. Generally the milder the fish, the lighter the wine needs to be unless there is a robust sauce. Red wine can work with full flavoured fish but beware of reds with considerable tannic structure. So look to lighter reds like Beaujolais, new world Pinot Noir (authentic Burgundy rarely works with salmon), fruity reds with no oak and low tannin levels. Matching most fish to white wine is much safer with a wide assortment of options. Some of the best ‘fish wines’ are unoaked and can support elevated acidity which makes them ‘clean’ tasting. Often these wines are also lower in alcohol (10-13%) which is always nice, we think. With pure Asian fish cuisine like Sushi, there is no better match than a good sparkling wine or a nice cool and crisp Sauvignon Blanc or French Chablis. For meat dishes there are fewer places to ‘trip up’ and so matching with wine is less stressful. What we find is that for the really ‘big’ wines (those over 14.5%) most food can be easily overpowered. So pairing similar ‘wine and food weights’ can be helpful. This is really the only major tricky spot. The other tricky spot is choosing the right ‘age’ to drink your red wine. Drinking young red wine that is meant to age (i.e. higher end Bordeaux, Burgundy, big California reds, big Italian reds from Piedmont and Tuscany, etc.) can be disappointing because these wines truly need time to develop added complexity, nuances, etc. Just ordering or grabbing from the cellar a good 2005 Brunello di Montalcino to have with pasta will undoubtably be unsatisfactory because the wine probably is at least 14.5%, the ‘weight’ comparison is wrong and the wine is too young. For the white meats like roast pork and chicken try serving a ‘bigger’ Chardonnay, French White Burgundy or even dry Riesling from Alsace or Austria. Of course for the more ‘meaty’ chicken and duck dishes there is usually no better match than Pinot Noir, especially good Burgundy. Salads are actually quite easy to match with wine as long as the dressing isn’t too vinegary or there is too much of it sloshing around (this is a big problem today). Most good German wine (or other good Riesling) is excellent with salads as are most Sauvignon Blanc wines and unoaked Chardonnay. Often, the best match if the sun is shining (a little on the romantic side), is a dry rose. Light to medium red wine like a classic Beaujolais cru (Moulin a Vent, Fleurie) can be delicious for the red wine wine lover who refuses anything white. For Veggie dishes the best matches are often the unknown, little, regional wines, including dry white, red and rose. The preparation of pasta and rice in North America has come a long way in a short time. It can be a complex subject but totally fun since often the best flavours are bold and direct. Pasta with red or meat sauce is good with almost anything Italian and red provided the alcohol levels are between 12-14.5% and lighter in tannins. The current ‘poster wine’ could very well be good Chianti or almost anything red from the Veneto area like Ripasso (except not Amarone, too big). The ‘newer’ areas in the central-south of Italy including Marche, Latium, Abruzzo, Puglia and Sicily are all coming on and often are nice matches as well. White Pastas with cream, butter and/ or cheese are often perfect with clean dry whites (Lots of great examples from northern Italy like Soave). Rice and Risotto dishes call for something that is usually white and can be easily matched with a snappy, dry selection like a good Pinot Grigio. Risotto con funghi needs something bigger and in the red zone. Spicy Food that is not too, too hot is really fun to match wine with. We are surprised that there are not more Asian style restaurants with good wine lists. Generally, good German Kabinett level wine is terrific with Asian food as is simple Alsace Pinot Blanc or Pinot Gris and simple Austrian Gruner Veltliner. Again, if not too spicy, Viognier (the hawaiian shirt wine) and Gewurztraminer can also be a fabulous match. Plush, richly fruity reds with lower acidity can also be good. For some reason in North America, cheese is most often matched with red wine when in fact it is far better with most whites! Some exceptions are old parmesan cheese with Piedmont (Barolo, Barbaresco) wine and some soft ripened creamy cheeses (good Brie and Soumatrain) with red Burgundy. Otherwise a good, concentrated white is best with most cheese. Blue veined cheeses can be exceptional with Port wine. Egg Egg dishes can be perfect with wine especially the classics matches like regional French wine. The best matches in the 1950’s and 1960’s are still the best ones today. Julia Childs’ amazing cookbook has wonderful egg recipes complete with classic French wines like Sancerre, Pouilly-Fume, St. Emilion, Pomerol, Cotes du Rhone, Alsace whites, some simple red Burgundies. Oen they return superior margins and can be easily mistaken (in a good way) as wines which are far more expensive than they are! e key, as always, is to choose the good ones to run with. »» Argentine reds are perfect for ‘Steak and a Bottle of Wine’ promotions and offers. »» Make the premium Argentine wines more visible to the consumer, try dedicating back bar space to encourage sales of these better margin wines. Or place these mid shelf for better sales results in your store. With three major brands to choose from now, our Argentina section showcases the complete range of what is possible from this major producing country. Argentina has very quickly becoming a major player in the Alberta market – not unlike what happened when Australia burst on to the scene 10-15 years ago. It seems that the deep, dark and handsome Malbecs and Cabernets’ have seduced everyone! For a unique flavour treat try the white and aromatic Torrontes varietal. KEY FACTS Argentina is the world’s fifth biggest producer of wine. The country’s wine regions are widely dispersed and found to the west of the country, bordering the foothills of the Andes. Argentina has four major wine regions: Mendoza, San Juan, La Rioja and Salta. Mendoza though is the most significant region and the home of virtually all the wineries of importance, contributing 70% of Argentina’s wine production. The most typical grape of Mendoza is Malbec, producing reds with grip, structure and density. The small region of La Rioja is Argentina’s oldest wine producing region. It specializes in producing the intensely aromatic white grape Torrontes. FOOD & WINE MATCHING Typical Argentine Malbec and Cabernet are ideal when served with red meat and in particular Alberta beef, lamb and bison. These red wines generally are quite robust and can also be substituted for some of the more modern Italian wines and served with pasta and pizza. The ‘Argento classic wines’ are a little bit ‘softer’ and can be matched with a wide assortment of foods including chicken and pork. The local white variety, Tapiz Torrontes is best enjoyed either by itself, or as a wonderful partner with lightly smoked meats, mild to medium-strong cheeses, and seafood. It is also a great partner for spicy food and Thai cuisine. The local Pinot Grigio wine from Argento is also a great buy and easy to match with a variety of foods. Despite this, total crops are not as low as initially anticipated. More than ever the best buying strategy is to find quality, family oriented brands where attention to detail is of foremost concern. CANBERRA MELBOURNE YARRA VALLEY MORNINGTON KEY FACTS Australia is still one of the most popular wine producing countries in the world, delivering a wide range of wine styles at all price points. e majority of Australia’s vineyards are clustered into the southeastern part of the continent, and in particular key regions such as Barossa Valley, Adelaide Hills, Clare Valley and Coonawarra. In addition, becoming ‘hotter’ now is the cool climate region of the Mornington Peninsula. e most significant and best loved grape everywhere seems to be Shiraz, which in the warmer sites can make seductive and jammy, mouth watering wines which are packed with fruit flavours. In the cooler sites the wines tend to be more ‘reserved’, maybe more European in style? When blended with other varieties Shiraz seems to be a very willing partner with a capacity to show itself deliciously and differently. e leading white grape is Chardonnay, which is made into wines at all levels from the simple, fruity quaffer through to robust, complex wines. Indeed Riesling, Pinot Gris and Sauvignon Blanc can be quite delicious as well, unoaked and very good value. FOOD & WINE MATCHING e ‘soness’ and silkiness in most entry-level Aussie reds makes them delicious as aperitifs, even if a little unconventional. e better reds are dense and richly flavoured which makes them ideal for grilled and roasted meats. e very best wines show unique personality and are best served with fairly simple but high quality foods which would highlight the natural beauty in the wine. Australian whites can be delicious as casual aperitifs. e better wines often from cooler sites have higher acidity that makes them better suited to a wide range of seafood and poultry dishes.
