Food & Wine
Pairing Guide
Food and wine is the perfect partnership, so ensuring your wine list compliments your menu is of paramount
importance. It would be important here to mention that your wine selections need not be huge in number. Most
wine menus can be perfectly adequate (and even preferred) listed on one page, consisting of a few sparkling
wines, 5-10 dry to off-dry whites, 8-15 dry reds, 2-3 roses plus 2-3 dessert wine or Port selections. When
deciding on by-the-glass selections it makes perfect sense to severely limit selections unless you have a good way
of keeping the wines fresh after opening.

The flavour of most fish can be tricky
to match with reds – especially the
oily ones like salmon. It depends
on the sort of fish but also how it is
cooked and sauced. Generally the
milder the fish, the lighter the wine
needs to be unless there is a robust
sauce. Red wine can work with full
flavoured fish but beware of reds
with considerable tannic structure.
So look to lighter reds like Beaujolais,
new world Pinot Noir (authentic
Burgundy rarely works with salmon),
fruity reds with no oak and low
tannin levels. Matching most fish to
white wine is much safer with a wide
assortment of options. Some of the
best ‘fish wines’ are unoaked and can
support elevated acidity which makes
them ‘clean’ tasting. Often these wines
are also lower in alcohol (10-13%)
which is always nice, we think. With
pure Asian fish cuisine like Sushi,
there is no better match than a good
sparkling wine or a nice cool and crisp
Sauvignon Blanc or French Chablis.
For meat dishes there are fewer places
to ‘trip up’ and so matching with
wine is less stressful. What we find is
that for the really ‘big’ wines (those
over 14.5%) most food can be easily
overpowered. So pairing similar ‘wine
and food weights’ can be helpful. This
is really the only major tricky spot. The
other tricky spot is choosing the right
‘age’ to drink your red wine. Drinking
young red wine that is meant to age
(i.e. higher end Bordeaux, Burgundy,
big California reds, big Italian reds
from Piedmont and Tuscany, etc.)
can be disappointing because these
wines truly need time to develop
added complexity, nuances, etc. Just
ordering or grabbing from the cellar
a good 2005 Brunello di Montalcino
to have with pasta will undoubtably
be unsatisfactory because the wine
probably is at least 14.5%, the ‘weight’
comparison is wrong and the wine is
too young. For the white meats like
roast pork and chicken try serving a
‘bigger’ Chardonnay, French White
Burgundy or even dry Riesling from
Alsace or Austria. Of course for the
more ‘meaty’ chicken and duck dishes
there is usually no better match than
Pinot Noir, especially good Burgundy.
Salads are actually quite easy to match
with wine as long as the dressing isn’t
too vinegary or there is too much of it
sloshing around (this is a big problem
today). Most good German wine (or
other good Riesling) is excellent with
salads as are most Sauvignon Blanc
wines and unoaked Chardonnay.
Often, the best match if the sun is
shining (a little on the romantic side),
is a dry rose. Light to medium red wine
like a classic Beaujolais cru (Moulin
a Vent, Fleurie) can be delicious for
the red wine wine lover who refuses
anything white. For Veggie dishes the
best matches are often the unknown,
little, regional wines, including dry
white, red and rose.
The preparation of pasta and rice in
North America has come a long way
in a short time. It can be a complex
subject but totally fun since often
the best flavours are bold and direct.
Pasta with red or meat sauce is good
with almost anything Italian and
red provided the alcohol levels are
between 12-14.5% and lighter in
tannins. The current ‘poster wine’
could very well be good Chianti
or almost anything red from the
Veneto area like Ripasso (except
not Amarone, too big). The ‘newer’
areas in the central-south of Italy
including Marche, Latium, Abruzzo,
Puglia and Sicily are all coming on
and often are nice matches as well.
White Pastas with cream, butter and/
or cheese are often perfect with clean
dry whites (Lots of great examples
from northern Italy like Soave). Rice
and Risotto dishes call for something
that is usually white and can be easily
matched with a snappy, dry selection
like a good Pinot Grigio. Risotto con
funghi needs something bigger and in
the red zone.
Spicy Food that is not too, too hot
is really fun to match wine with. We
are surprised that there are not more
Asian style restaurants with good
wine lists. Generally, good German
Kabinett level wine is terrific with
Asian food as is simple Alsace Pinot
Blanc or Pinot Gris and simple
Austrian Gruner Veltliner. Again, if
not too spicy, Viognier (the hawaiian
shirt wine) and Gewurztraminer can
also be a fabulous match. Plush, richly
fruity reds with lower acidity can also
be good.
For some reason in North America,
cheese is most often matched with red
wine when in fact it is far better with
most whites! Some exceptions are
old parmesan cheese with Piedmont
(Barolo, Barbaresco) wine and
some soft ripened creamy cheeses
(good Brie and Soumatrain) with
red Burgundy. Otherwise a good,
concentrated white is best with most
cheese. Blue veined cheeses can be
exceptional with Port wine.
Egg
Egg dishes can be perfect with wine
especially the classics matches like
regional French wine. The best
matches in the 1950’s and 1960’s are
still the best ones today. Julia Childs’
amazing cookbook has wonderful egg
recipes complete with classic French
wines like Sancerre, Pouilly-Fume, St.
Emilion, Pomerol, Cotes du Rhone,
Alsace whites, some simple red
Burgundies.

With three major brands to choose from now, our Argentina section showcases the complete range of what is
possible from this major producing country. Argentina has very quickly becoming a major player in the Alberta
market – not unlike what happened when Australia burst on to the scene 10-15 years ago. It seems that the deep,
dark and handsome Malbecs and Cabernets’ have seduced everyone! For a unique flavour treat try the white
and aromatic Torrontes varietal.
KEY FACTS
Argentina is the world’s fifth biggest producer of wine. The
country’s wine regions are widely dispersed and found to
the west of the country, bordering the foothills of the Andes. Argentina has four major wine regions: Mendoza,
San Juan, La Rioja and Salta. Mendoza though is the most
significant region and the home of virtually all the wineries of importance, contributing 70% of Argentina’s wine
production.
The most typical grape of Mendoza is Malbec, producing reds with grip, structure and density. The small region
of La Rioja is Argentina’s oldest wine producing region.
It specializes in producing the intensely aromatic white
grape Torrontes.
FOOD & WINE MATCHING
Typical Argentine Malbec and Cabernet are ideal when
served with red meat and in particular Alberta beef, lamb
and bison. These red wines generally are quite robust and
can also be substituted for some of the more modern Italian wines and served with pasta and pizza. The ‘Argento
classic wines’ are a little bit ‘softer’ and can be matched
with a wide assortment of foods including chicken and
pork.
The local white variety, Tapiz Torrontes is best enjoyed
either by itself, or as a wonderful partner with lightly
smoked meats, mild to medium-strong cheeses, and seafood. It is also a great partner for spicy food and Thai cuisine. The local Pinot Grigio wine from Argento is also a
great buy and easy to match with a variety of foods. Recently we have just added two Tapiz sparkling wines that
are absolutely delicious!

Vistalba
Vistalba represents the blends identified as Corte A, Corte B and Corte C, characteristic of the terroir
and obtained from the best grapes of each harvest. They are made with Malbec, Cabernet Sauvignon
and Bonarda grapes from our land in Vistalba, Luján de Cuyo. The climate conditions of each year and
the labors performed in each of the plots of land define the structures of the grapes to be used in each
of the blends. After the fermentation in concrete vessels, each of the three blends of each harvest is
defined, to later start their aging in French oak barrels as the final blend
which will be bottled.

Australia has had much to cope with during the last couple of years, not least the ever-increasing hot climate.

wineries particularly in the Yarra Valley region near Melbourne. Despite this, total crops are not as low as initially anticipated. More than ever the best buying strategy is to find quality, family oriented brands where attention
to detail is of foremost concern. With a growing lake of lower priced brands and lower quality, look for ‘a notch

Australia is still one of the most popular wine producing
countries in the world, delivering a wide range of wine
styles at all price points.
e majority of Australia’s vineyards are clustered into
the southeastern part of the continent, and in particular
key regions such as Barossa Valley, Adelaide Hills, Clare
Valley and Coonawarra. In addition, becoming ‘hotter’
now is the cool climate region of the Mornington
Peninsula.
e most significant and best loved grape everywhere
seems to be Shiraz, which in the warmer sites can
make seductive and jammy, mouth watering wines
which are packed with fruit flavours. In the cooler
sites the wines tend to be more ‘reserved’, maybe
more European in style? When blended with other
varieties Shiraz seems to be a very willing partner with
a capacity to show itself deliciously and differently.
e leading white grape is Chardonnay, which is made
into wines at all levels from the simple, fruity quaffer
through to robust, complex wines. Indeed Riesling, Pinot
Gris and Sauvignon Blanc can be quite delicious as well,
unoaked and very good value.
FOOD & WINE MATCHING
e ‘soness’ and silkiness in most entry-level Aussie reds makes
them delicious as aperitifs, even if a little unconventional. e
better reds are dense and richly flavoured which makes them
ideal for grilled and roasted meats. e very best wines show
unique personality and are best served with fairly simple but
high quality foods which would highlight the natural beauty in
the wine.
Australian whites can be delicious as casual aperitifs. e better
wines often from cooler sites have higher acidity that makes
them better suited to a wide range of seafood and poultry dishes.

Fox Creek premium wines are sourced entirely from grapes grown in the famous McLaren Vale region
and most of them from their own vineyards. The McLaren Vale Region has a Mediterranean style
climate with a strong maritime influence and is frost-free, being 7 km from the sea. It is an ideal
location for growing grapes. Fox Creek owns three separate vineyards and approximately 60 hectares
of vines. Shiraz is the specialty here with many different examples to choose from.

Renaissance specializes in wines from the Okanagan region in British Columbia. e planted area under vine
(about 10,000 acres now) has grown substantially in the last twenty years with distinct climate conditions and
soil types throughout the area. Generally there are four distinct zones, the North Okanagan (in and around
Kelowna/Vernon area), the Naramata Bench, the South Okanagan (Okanagan Falls, Oliver and Oysoyoos), and
the Similkimeen valley. Each has unique conditions, which stamp the local wines with specific character. Once
considered mostly a white wine-producing region, the Okanagan has emerged recently as a credible source for

Canada benefitted from the signing of the free trade agreement
with the United States in the late 1990’s, which resulted in the
“great pull out” of largely old stock vines of less than ideal quality.
These were replaced by high quality vinifera vines from Europe,
which resulted in the development of a much more successful
domestic industry accounting for about 42% of all wine sold in
Western Canada from 460 wineries across the country.

The whites from the Okanagan have proven to be quite
consistent for their nice fruitiness, clean acidity and purity
of flavour. Very appealing is the uniquely fruity and off-dry
Ehrenfelser, popularized by Summerhill. Summerhill makes
delicious Okanagan Pinot Gris wine as well. Successful Reds
from the Okanagan valley are mostly Bordeaux styled wines
made from Merlot and Cabernet Franc. Other red varieties to
watch are the Pinot Noir and the Syrah – both enjoying success
in the higher end price between $18-35 retail.
Most of the best Okanagan whites are lightly oaked, if at all.
This makes them excellent aperitifs or as by-the-glass offerings.
Often they have tiny to small amounts of residual sugar, which
helps to ‘round’ them out. Paired with fish and shellfish they
make excellent companions. The reds make ideal partners for
grilled and roasted meats. The Merlot based blends are usually
better with a year or more of bottle age and pair very nicely
with Alberta beef, bison and lamb. The Pinot Noir wines are
still trying to find their way but the softer and fruitier ones like
Summerhill organic Pinot Noir are excellent with BC salmon.

When owner Stephen Cipes first visited the Okanagan in 1986, the New York developer believed he’d

Chile has become one of the world’s leading producers of wines
with a high ratio of value to price. This is due to ideal grape
growing conditions, meaning good wines are relatively easy to
make, coupled with the relatively low cost of vineyard land and
labour.
The vineyards of Chile are located in numerous valleys; the
most important of these are the Aconcogua, Casablanca and
Colchagua in the northern part of the country and Maipa,
Rapel, Curico and Maule Valleys, which make up the Vallee
Central.
The key grape varieties of Chile are Chardonnay, Sauvignon
Blanc, Cabernet Sauvignon, Carmenere, and Merlot. In addition
Syrah/Shiraz is now starting to gain in popularity.
More expensive, blended reds, such as Quinta Generacion,
are starting to also gain respectability with collectors and

It would be easy to completely miss the significant changes in the Italian wine culture over the past two decades.
There is just so much wine in Italy with so many individual directions and concepts. We can’t think of any other
country with as much diversity and depth as Italy. The sheer number and frequent use of different grape varieties
(well over 200) are mind numbing. As with almost every ‘product type’ (fashion, cars, furniture, food, drink)
in Italy – there are hugely fragmented levels of quality. An excellent ‘filter’ is a must when dealing with Italian
wine. Today, quality Italian wine is being made almost everywhere throughout the country. We like to concentrate from Rome north for the table wines, even though there are gems throughout the south too. We like Sicily
for the dessert wines and the odd ‘table wine exception’ to our rule.

The viticulture story of the Tessari family began in the early years of the 1900’s when Amedeo Tessari,
known as “Midéo”, rented an osteria in Presina, a small area of Albaredo d’Adige. He started out selling
wine from the family’s own production. At the end of the 1980’s Ca’ Rugate is given life. The name

Already known by the Etruscans and subsequently referred to in Roman times as “Fons Rutolae” and
“Fons Rutilant”, it was considered a stopping-off point where travelers between Florence and Siena
could find refreshment. It was here, in 998, that Otto III, Emperor of the Holy Roman Empire, issued
an edict transferring the possessions of the church of Arezzo to the Siena Committee. Fonterutoli
was again the site, in 1202 and 1208, of the signing of the peace treaties that determined the historic
assignment of the Chianti region to the Republic of Florence. Today many generations later, in the
Mazzei family since 1435, Fonterutoli is a shining example of Chianti wine and indeed, Italian wine
making in general.

New Zealand is made up of two islands, the North and
the South. The main vineyard regions in the North
are Gisborne (Chardonnay), Hawkes Bay (Cabernet Sauvignon, Merlot, Sauvignon Blanc, Viognier)
and Martinborough (Pinot Noir), and in the South:
Marlborough (Sauvignon Blanc, Chardonnay, Pinot
Noir) and Central Otago (Pinot Noir). New Zealand
is synonymous with some of the world’s finest Sauvignon Blanc. Pinot Gris is another white grape that

South African wine changed dramatically in the years just prior to Apartheid and after. Once the ban was lifted
– it is hard to believe we once were not allowed to buy this wine in Alberta – sales recovered nicely. Today the
industry has grown in quality; of this there is no doubt. The wines themselves have a unique stamp not unlike
those from Chile. They share a forward and fruity quality together with a certain ‘gout de terroir’ as the French
would say– a flavour from the soil – as many good regions have. The country has many famous Estates and
many newcomers like Graham Beck. This richly diverse country is rightly proud of its wines. We are too.

Spain continues to be a great source of reasonably priced dry wines, which seem to fit the modern taste profile
for generously flavoured, soft with structure, red wine. While Rioja and Navarra still dominate the quality offering for Spanish wine in Alberta, there is increasing interest in regions such as La Mancha, Toro, Priorat and
Ribera del Duero for full-bodied reds, and Rueda for fresh, crisp whites. We believe there is a tremendous future
for Spanish wine in Alberta even though today it is ‘punching below its weight class’. For great value look to the
wines of Chivite, one of the best known producers from Navarra and de Punctum from La Mancha for organic
offerings.
KEY FACTS
Spain is the third largest producer of wine in the world
and is able to offer a huge variety of wine styles due to its
very diverse climate. It offers crisp, aromatic whites in the
cool Atlantic regions of the northwest to fiery, full-bodied
reds of the hot southern regions.
Tempranillo is regarded as the most important grape for
quality reds and makes up the largest proportion in blends
for red Riojas.
The wine label term ‘Crianza’ means that the wine has
been aged slightly – often in wood barrels. This style is
very popular and modestly priced.
FOOD & WINE MATCHING
Offering tapas is a simple way to add value and increase
spend – almost anything goes here including sardines,
squid, vegetables with or without sauce, sausages, meatballs, etc. Some Spanish restaurants do this and count the
toothpicks to arrive at the bill!
Red Navarra and Rioja wines are superb with lamb, sausages and many lighter meat dishes. Surprisingly these
wines stand up nicely to bold food so don’t be shy.
La Mancha also is gaining ground with its spicy organic

Caymus Vineyards is a third generation family vineyard that since 1972 has consistently produced

Bankers by profession, Jim and Mary Dierberg have owned one of America’s oldest wineries,
Hermannhof, located in Missouri, since 1974. After searching throughout the Santa Barbara region for
the ideal vineyard site, the Dierbergs purchased just shy of 10,000 acres near Santa Inez in California
in 1996. This site, now called Star Lane is ideally suited to growing excellent Cabernet and Sauvignon
Blanc grapes. ‘All the local farmers knew this was one of the warmest spots in the area,’ Jim recalls.
Later in 1996, they bought a cooler vineyard site best suited for Pinot Noir and Chardonnay a bit
farther north in Santa Maria. And in January of 2004 they added another new property in the Santa
Rita Hills, also suitable for Pinot Noir and Chardonnay.

Red Schooner
Red Schooner is a “Red Wine of the World,” an experiment of more than five years in the making.
The wine is made from Mendoza Malbec grapes, yet produced into wine and barrel aged at Caymus
Vineyards home location right in the center of the Napa Valley. The Red Schooner label and name
evoke the challenge – along with the thrill – of voyage and discovery. Since the experiment falls outside
the normal rules Caymus Vineyards was unable to use standard labeling practices. You won’t find a
vintage date, varietal or grape origin on the label. Instead Red Schooner will be known by the voyage
from which it was produced. The first bottling was sold as Voyage 1, and now 2 follows. Sequential

Ports
The Port trade started in earnest as a result of the serious bickering
that was going on between France and England a few centuries ago.
Essentially England was buying a great deal of table wine from France
at the time and as a result of the ongoing conflicts with France, England was searching for alternative sources and discovered Portugal
as a potential source of supply. The concept of ‘fortifying’ these table wines with brandy did two delicious things for the wine. One: it
raised the alcohol levels and at the same time arrested the fermentation leaving a sweeter wine. Two: it ‘travelled’ better and was in better
condition on arrival than many lower alcohol table wines taking the
same trip.
Wood Port
Characterized by the fact that they do most of their ‘maturing’ in
wood casks. As a result they give up their deep red color for a more
tawny or auburn hue depending on the time spent in cask. Wood
ports do not need decanting since any sediment is captured in cask

Vintage Port
Characterized by the fact that the grapes are from a single harvest
and they do their maturing in bottle. As a consequence vintage port
is deeper colored and needs to be decanted off its sediment prior to
serving. Vintage Port is certainly the most famous (and expensive)
‘style’ of Port but only represents a small percentage of the total Port
production.
Vintage Character Port
A relatively ‘new’ style of Port and is a response to demand in the
market for a deeply colored, richly flavoured Port with similar characteristics to Vintage Port but softer and without the need for decanting. Often these Ports are much less expensive as well. Many restaurants and hotels offer a vintage character by the glass, which has
raised the profile of these excellent Ports.

Distillates

Grappa
Grappa is made from the pomace (pressed out left overs of wine berries) of wine. The best ones are made by artisanal methods often in
copper stills like those used by Poli. In Italy because there are so few
grappa artisans left, they are quite busy distilling the pomace from
many famous wine makers in addition to their own production. The
best Grappas are often quite delicate in aroma but still, sometimes
surprisingly, very strong in alcohol. These should be consumed neat
in a special glass (check out the great Riedel grappa glass) like a fine
cognac or scotch. The more ‘pedestrian’ types often need espresso to
calm them down as in ‘cafe coretto’ (corrected coffee).
Tequila
The very finest Tequilas like Trago, are made from the Blue Agave
plant grown in the traditional red volcanic soils (close to Guadalajara) in higher altitudes and carefully tended by traditional farming families (the Jimadores). The key to making great tequila lies in
the quality of the plants and their harvest condition. From there the

Blue Agave ‘pinas’ are crushed and fermented in artisanal stills into
the base Tequila usually called ‘Silver’, the most pure form. The best
houses make a pure and lovely Silver that is best served like a good
Grappa – i.e. in a proper glass such as a Riedel Grappa glass. It seems
wrong (?) to use great ‘Silver’ like Trago in a Margerita but the result
is amazingly delicious. Often good Tequila can be aged slightly in
barrels with positive results. ‘Reposado’ is an example of slightly aged
Tequila and seems ‘bigger and richer’. Or for a longer aged Tequila
try the ‘Anejo’ which has a deeper color still and carries a powerful
aroma and flavour.
Bitters
Bernardino Branca created the original “bitter”, in 1845 in Milan –
Fernet Branca then became popular all over the world. Its unique
and secret formula has been passed down five generations within
the Branca family to the present day, remaining unchanged over the
years. Unique, bitter liquor produced from roots and herbs from
around the world.
