Les étudiants de première année officient au Charles, sous la direction de
notre Chef de Travaux Gaétan Guillot-Biani, formé chez les frères Pourcel.
L'année commence toujours par un banquet réalisé par les étudiants et
reproduisant l'un des menus historiques de notre collection...
La cuisine
First year students officiate at the restaurant supervised by our Chef de Travaux Gaétan
Guillot-Biani, who was trained by the Pourcel brothers. Each year starts with a formal lunch
reproducing one of the historical menus from our collection.

Le restaurant d'application fut nommé Le Charles en hommage à Charles Bouvier, grand-père du fondateur
de l'école, qui fut le chef de brigade du train présidentiel. Les menus qu'il a fait servir aux grands hommes
de la fin du XIXème siècle décorent les murs de notre restaurant.
