DANIeL KrASA
Urdu is the national language and lingua franca of Pakistan and
one of the official languages of India, with about 70 million
native speakers. Urdu is a part of the Hindustani language family, and is mutually intelligible with Hindi. Using the Nasta’liq
style of the Persian alphabet, Urdu is traditionally associated
with the Muslim population of the region, while Hindi (using the
devangari script) is connected with the Hindu community.
Urdu is also spoken as a second and third language in Pakistan
and neighboring countries, although it is difficult to determine
the number of those speakers. For example, ethnic afghans in
Pakistan may know dari or tajik, and also become fluent in Urdu.
Pakistani immigrants have brought their language to many
countries, with the largest populations in the United states and
the United Kingdom.

FrAN oSSeo-ASAre AND BArBArA BAëTA
With its fast-growing economy, Ghana is becoming a popular
destination for travelers and its cuisine has caught the attention
of food writers and celebrity chefs like anthony Bourdain. there
are virtually no mainstream cookbooks that focus solely on
Ghana’s cuisine, but authors Osseo-asare and Baëta intend to
remedy that with this offering. The Ghana Cookbook explores
the flavors, ingredients and techniques most common in
Ghana. With an emphasis on fresh, local ingredients—especially
vegetables, fruits, and legumes—Ghana’s cuisine is vibrant,
healthful and eminently appealing. also, since Ghana cannot
grow wheat, most of its traditional recipes are gluten-free.
the authors highlight flavor principles, seasoning techniques,
and basic stocks, with later chapters dedicated to snacks, soups
and stews, protein entrees, beverages, baked goods, and much
more. among the 140 recipes, you’ll find Kofi Brokeman
(roasted ripe plantain and dry roasted peanuts), Fante-fante
Fisherman’s soup, Jollof rice with Chicken, Atadwe Milkye
(tiger Nut Pudding), and Lemongrass tea. Historical and cultural notes throughout put the cuisine in its broader context.

since ancient times, seafarers and traders have been drawn by
the lure of spices to Kerala, a verdant, tropical state on the Malabar Coast of south India. saint thomas also traveled this spice
route, converting several Brahmin families who later intermarried with syrians who had settled here; thus was born the vibrant syrian Christian community of Kerala. today, ayurvedic
massage resorts and backwater cruises make this scenic land a
top tourist destination, and spices still draw both travelers and
gourmands to its rich culinary heritage. It is this legacy that The
Kerala Kitchen brings us, through 150 delectable recipes and the
unforgettable stories that accompany them. authentic and
easy to prepare, these recipes are adapted for the North american kitchen, and accompanied by a guide to spices, herbs, and
equipment, as well as a glossary of food terms.

the cuisine of estonia, the northernmost of the Baltic nations, is
little known outside the country’s borders. simple and satisfying,
the cuisine is based on such staples as potatoes, pork, preserved

onions, and fresh herbs. estonians today still observe the old culinary traditions. Christmas eve (Jõululaupäev) is still celebrated
with roast pork (seapraad), blood sausage (verivorstid), sweetbreads (magussaiad), and gingersnap cookies (piparkoogid).
Visitors are welcomed with a “coffee table” (kohvilaud) of open
face sandwiches (võileivad), filled turnovers (pirukad), and sweets
