One of my goals for the next few years is to put Latah Creek back into everyone’s mind as one of the best small wineries in Washington State. I want to make people aware of the fact Latah Creek is still around making the same, award-winning wines that helped push Washington State into the international wine scene 32 years ago. My dad was trained by two of the most well-known California winemakers. Their level of dedication to perfecting their art was passed along to him, and he taught me that as well. Since I was born, he has aspired for me to become one of the top winemakers in the state. Therefore the past 10 years have been spent concentrating on how to make the best wines possible. One of the ideas he ingrained in me is this, “Everyone can take good grapes and make good wine, but few can take good grapes and make great wine.” These past few vintages Mother Nature has taken this to heart and given us some of the most interesting and challenging growing seasons my dad has ever seen. The awards we have won speak volumes to the testament that we are among the best. This past February I was invited to be a part of Women Stars of Food and Wine, an event featuring the northwest’s best women winemakers, chefs, and sommeliers. I was honored to be involved and I know my dad was beaming. I have also made submitting our wine into competitions, wine magazines, and wine bloggers a must. As a result, we have already seen a dramatic change. Last year, Sunset Magazine used our Monarch Red for one of competitions of the year, we took a Best of Gold and Best of Class at Savor NW Wine Awards; and our Huckleberry d’Latah took Gold and Best of Class at Great Northwest Wine Competition. We received a total of 18 awards from these two events (3 gold, 8 silver, and 7 bronze) and expect similar results from other competitions. You can also see us on the cover of Spokane Sizzle, and the Spokesman did an article on our recent winners as well. We are here to stay for at least another 32 years. ~ Natalie Ellena’s Recipe Steak Au Poivre (Peppersteak) 2 1-lbs New York Steak Strips freshly ground sea salt 4 tbsp cracked peppercorns 2 tsp extra-virgin olive oil 1 tbsp unsalted butter Cut both steaks in half crosswise. Season top and bottom of each piece with salt. Place peppercorns onto plate and press both sides of each piece into peppercorns. In heavy sauté pan over high heat, warm oil and butter. When pan is hot, fry steaks until the undersides are well seared, 2-3 minutes. Turn the meat and cook the other side for about 1 minute. Press rare. Cook to desired doneness and transfer steaks to warmed individual plates. May Food of the Month: 1 small bay leaf 3 sprigs fresh parsley 1 cup Latah Creek Monarch Red Heat all ingredients in a nonstick skillet over low heat; cook, without simmering (liquid should be steaming but not bubbling), until mixture reduces to 1/2 cup, 15 to 20 minutes. This sauce can be doubled or tripled and then kept for up to two weeks in an airtight container in the refrigerator. Ellena’s notes: If you love pepper, this is the steak for you! And nothing complements beef like a red wine reduction sauce. You can experiment with variations to personalize your own sauce or use the one I like above. A wonderful change is adding a few tablespoons of corn syrup to make a tasty glacé. It’s great drizzled over seafood, poultry, steak and even cheese. Wine pairing: Serve with any of our Monarch Series Reds or if you prefer a white wine, a drier white such as our Chardonnay would be wonderful. Gluten free: Both of these recipes are gluten free! to 40 people, and wine glasses. Seating may be limited depending upon space available. Ellena is thrilled to have her Sangiovese back. Hopefully there will be some left, as she keeps sneaking back to the tank to steal some for her night’s meal. - We are so excited to have this wonderful Wahluke Slope AVA Merlot. Upcoming Monarchs Monarch Series Reserve Reds a series of intriguing, small lot, reserve quality red wines. Our Monarch Reserve program was started to give Natalie an opportunity to learn an individual grape intimately. She also wanted to adapt Latah Creek’s reputation as a sweet wine only producer. “My dad has received so many awards and top 100 Wines recognitions for his red wines in the past that I wanted to remind everyone that we produce amazing, highquality red wines. When we started making our Huckleberry wine, it quickly became the number 1 wine in Spokane (which is fantastic, Thank You Spokane!), but it also over-shadowed the other wines we make. I am hoping that the Monarch Reserve lineup will help put Latah Creek on everyone’s mind as a producer of some of the best red wines in the state.” - From Zephyr Ridge Vineyards in Horse Heaven Hills AVA, this Primitivo is a big, bold wine. At less than 150 cases produced, this wine will sell out quickly. - Also from Zephyr Ridge Vineyards, this dark, inky red produced. We have the pleasure of partnering with Nothing Bundt Cakes. They will provide us with some of their yummy bundt cakes for you to taste and pair with our wines. During Spring Release Weekend, taste our Natalie’s Nectar and Moscato with their White Chocolate Raspberry Bundt Cake - a scrumptious white chocolate cake swirled puree. We can’t sample all of them during the ever Tempranillo! Incredibly fruity and full-bodied, this wine is wonderful! melt-in-your-mouth cakes so that we could give you other wine pairing recommendations. Look for these wines to be released over the next 6 months. If you are WineClub Member, be on the lookout for pre-release sales during Pickup Parties. Our Riesling and Muscat - their Lemon Spokane Blush is back! Our classic White Wine Blend with Monarch Red will be released in May. If we can get bottles, caps, and the wine ready in time, we hope to have it available during Spring Release Weekend!
