The perfect barbecue delight starts already in the supermarket or
at the refrigerated counter of your trust. Thus, a barbecue evening
is only as good as the barbecue items, which end up on your plates.
Charcoal Barbecue
• Never pour petroleum or gasoline over the barbecue coal, use
special barbecue lighters in liquid form, as paste or bar
• Do not place barbecue starter on the floor but always light it on
the barbecue grill in the barbecue itself
• Let the coal cool out overnight and dispose only after 12 hours
The best barbecue meat? A question of personal taste.
Pork meat is the favorite meat of the Germans and perfect for
barbecue beginners since pork meat almost always works out
fine and becomes well tender. Also beef meet is well suitable for
barbecueing. It is rich in protein and minerals and has less fat than
pork meat. For beef meat to become well tender, you should use
foremost parts from the hip, the back and fillet parts.
Poultry tastes best if you barbecue the individual parts with skin.
Since you get rarely poultry parts with skin in the supermarket,
Tenneker® recommends to buy whole chickens und turkeys and cut
them yourself! Lamb meat is the exact right thing for the special
barbecue delight. Since it comes from very young animals it is not
only very lean and fibrillar but also has an extremely descreet,

VEGETARIAN BARBECUEING

It does not have to be meat always. Next to steak & co. it is worthwhile to place also vegetables on the barbecue! Thus, filled paprika,
pumpkin-skewer, marinated zucchini and tomatoes with Mozzarella
filling get a wonderful smoky flavour on the barbecue and are an
alternative bite, rich in vitamines.
Best serve piquant sauces, salsa and butter with it and the barbecue plate is already more colourful and diversified.
This is how it gets crisp and delicious:
• Potatoes, paprika, peperoni, tomatoes (cocktail), mushrooms,
zucchini, eggplant, fennel and corn on the cob are particularly
suitable for barbecueing.
• Vegetables take longer than meat. Thus, depending on the cooking time, they should be on the barbecue 10-12 minutes before,
so that you can serve everything together. Potatoes should be
pre-cooked and the vegetables should not be cut too thick.
• In general the following applies: Solid vegetables, such as corn
on the cob, should be placed in the middle of the grill, were the
heat is the greatest. Sensitive vegetables, such as mushrooms,
tomatoes or zucchini should be placed further outside on the
grill to cook slowly.
• Marinades based on oil and soy sauces are suitable for barbecue
vegetables. Soak the vegetables for some hours in it or spread it
directly onto the barbecue.
• During barbecueing with charcoal the vegetables should be
placed on aluminium foil or on an aluminium tray, so that it does
not get burned or stuck.
• Vegetables must be turned several times to prevent the burning

gourmet delight from the sea on your barbecue yourself.
Barbecueing fish – here is the trick:
• The barbecue grill should hang above the fire in a greater
distance.
• Oil the fish and the barbecue grill well.
• It is best to use a Tenneker® fish tongs, so that the fish does not
fall apart during turning.
• You can add wine or fish fond for the fish to become specially
juicy.
• Cut whole fishs 3-4 times on both sides before barbecueing.
• According to the taste add parsley, dill, lime, basil or garlic –

• Let the marinade soak in for 2-3 hours, thereby turn the fish

• If it has to be quick, you can fill the cuts simply with herbs,

• To test whether the meat is cooked, put the tip of a knife into it
