Marinated Ginger Chicken & Spinach Salad
Ingredients for the ginger marinade:
• 1 1/2 pounds boneless chicken thighs, skin on or off
Marinade:
• 8 TB red wine vinegar
• 2 TB dark soy sauce
• 2 TB light soy sauce (I used 4TB of the one pictured)
• 2 TB Asian sesame oil
• 2 TB grated fresh gingerroot
• 2 tsp minced garlic
• 2 scallions (green onions, spring onions), finely chopped
• 2 tsp brown sugar
• 1 tsp crushed red pepper, or to taste
I mixed it in a large bowl and soaked two large chicken breasts.
I cut them in half, they were big ones! I let it marinate for about
two hours before grilling. About 15 minutes or so on each side
on medium heat, or however you like your chicken. I prepared
the salad when the chicken was on the grill.
Mock Trader Joe’s Super Spinach Salad
• Spinach
• Quinoa
• Shredded or grated carrots
• Pumpkin seeds
• Craisins
• Edamame
• Avocado
• Cucumber
• Ginger Pear Salad Dressing

I have had the wonderful opportunity of writing this article on
amazing pets that live in our fabulous community for just about
a year now. Not until this month (other than when my own
Jack Russell terrier, Cricket, was featured), have I found a dog
that I know both my husband and I would absolutely love! He
loves chocolate Labs and I am a huge fan of German shorthair
pointers. With that in mind, I am excited to feature Jaden, a
six-and-a-half year-old chocolate Labrador and German shorthair pointer blend that lives with Keysa Machado, Sean Turner
and 6-year-old Sydney.
Keysa had wanted a chocolate Lab for many, many years so finally
decided to look for an available female puppy. Unable to find
a female, Keysa decided that she would consider a male puppy
instead. While looking at the available male puppies, a beautiful
chocolate female came springing out of the house and plopped
right into Keysa’s lap. It was Keysa’s lucky day! Another family
Jaden Machado - - A Mix of Two Amazing
Dog Breeds in One Beautiful Chocolate Girl
had reserved this female puppy but never returned with payment.
So, at that moment, Jaden found a new loving home.
Jaden is extremely loyal and absolutely loves her daily walks
around Bressi Ranch. She is very tolerant and patient with
children. She loves living with her sister, Sydney, and wakes
Sydney up each morning with a big huge slobbery kiss. She is
extremely spoiled and expects daily massages and patiently waits
at the pantry for special treats. In fact she is so spoiled that
even though she has her own dog bed, she prefers to share the
California king with her human family.
Keysa finished by saying that “Jaden is such a wonderful, loving,
loyal, protective part of our family! Nothing is better after a challenging day than to come home to her. She has a way of making
everything better. A perfect reminder that life can be so simple…
eat, sleep, play, sleep, walk, sleep, eat, sleep and of course, love.”

Meet the Bailey-Gentzler Family
By Stacy Morea,

If you’ve experienced even one Halloween
in Bressi Ranch, you have no doubt heard
about and probably experienced “The Pirate
House” on Peppertree Way. If you’ve been
in the neighborhood for any number of
years, then you have seen this iconic house
evolve into what is now “The Pirates of
Peppertree” and includes not just the home
owned by Ron and Tamara Bailey but a few
of their close neighbors as well.
Ron and Tamara met through mutual friends and will celebrate their 10-year anniversary this December. When they
were first married, they lived in Aviara and at the time, Ron’s
work schedule was such that he would spend two weeks in
Hawaii every fifth week. On one of the days he
was scheduled to fly out, he managed to accompany Tamara to the Bressi Ranch model grand
opening and that was the day they fell in love
with their beautiful home with the large wraparound front porch. Ron and Tamara were one
of the first families to buy in Bressi Ranch, along
with Tamara’s parents who live right around the
corner. Ron and Tamara were drawn to wide range
of architectural styles that Bressi offered as opposed
to the Spanish style red-roof homes with the garage
as the predominant feature that you see so often
throughout San Diego. Ron and Tamara love traveling the
South and when you visit their home, you get the distinct
feeling that you’ve been transported to Georgia, Louisiana or
South Carolina with all if its southern charm.
When they first moved into the neighborhood in 2005, there
was still a great deal of dirt and construction happening around
them so they have literally watched Bressi Ranch grow step by
step into what it is today. Their son, Nick, was just 11 years of
age at the time and is now in Santa Barbara attending his first
year of college.

When Nick was growing up, Ron and Tamara shared their love
of Disneyland with him and that is where the idea of the pirate
theme began; with their adoration of The Pirates of the Caribbean. They are both very creative people and rather than buy
store bought props, they added their own twist on the pirate
theme by configuring tiki torches together with skulls and adding hand-painted signs. Every year, they challenge themselves.

North County Wine Company

I had the pleasure of attending a North County Wine Company wine tasting
event in San Marcos a few weeks ago. We pulled up to a charming brick
red building to take the last available parking spot in the lot. As we entered
through the door, my eyes were amazed to see rows of bottles stacked and
categorized, packing in all shelf space around the room. Honestly, I wouldn’t
have known where to start if it weren’t for the friendly owner/store manager
named Bill Tobin, who greeted me warmly at the door.
We sidled up to the cozy tasting counter to learn more. A comprehensive list of available white and red varietals was presented
in a list that was well crafted – from light to bold and then
ending with a sweet dessert-type option if desired. There were
so many options, it seemed overwhelming. Yet, with the wellguided direction of the owner, who inquired of my flavor preferences, he poured me a taste of one wine which was exactly what
I was looking for to start my night.
As the luscious wines flowed and conversations about the tastings lingered, we moved our party to the outdoor patio seating.
A quaint sitting area outside offers some tables surrounded by
chairs and further down are some long patio benches arranged to
sit back, relax, and leisurely taste wine. The area would be a fun
place to host either a girls’ night out, date night, or any festive
occasion. There are wonderful daily specials offered to encourage
getting out for some wine education and socialization.
The friendly owners and operators of the NCWC, Jim and Bill
Tobin, are very knowledgeable (claiming 60 years of wine related
experience between them) about the wine varietals and labels, both
domestic and foreign, they carry to best serve you and your wine
needs. It was brought to my attention as I perused the informative website that they offer shipping services for a reasonable
price. They maintain competitive wine pricing to encourage others to enjoy the countless wines as much as they do. I personally
appreciate having such an accommodating, easy to access, well
priced and enjoyable wine merchant so close to where I live.
As I relaxed to recount once again my fabulous wine experience,
it became clear to me that the Tobin Brothers take great pride
in making wine “an enjoyable and accessible part of everyday
life.” I do believe they have achieved their goal and can only
hope you indulge yourself and others in a wine experience at
North County Wine Company.
With over 600 wines from around the world, all marked down
to the lowest everyday price in town, the bottle shop has something to please every palate and budget.
This is also a terrific venue for birthday parties, showers, retirement parties, fundraisers… or just impromptu gatherings. The
bar is always stocked with at least 40 selections available by the
glass, or for tasting. You may also take advantage of the shop’s
selection of delicious Boar’s Head meats and cheeses. Or you
may order food to be delivered, or bring your own.
North County Wine Company presents wine tasting events
every Friday evening, including a lineup of at least seven
delicious wines plus appetizers. Details can be found on the
website, or via the shop’s email newsletter. Tasting and bythe-glass specials are available every other day as well. In the
fall of 2012 North County Wine Company will expand its
patio to double its current size, at which time the venue will
continued...
