4 pike-perch filets, skinned, à 120 g · salt · 1/2 lemon ·

25 ml balsamico, 12 years old · 250 ml vegetable broth · salt · freshly ground pepper ·

Savoy cabbage strudel · 1 head of Savoy cabbage · 500 g potatoes · 30 g clarified butter ·
2 shallots, peeled and finely diced · salt, pepper · 1 tsp. thyme, chopped · 80 g cream · 250 g
frozen phyllo dough · 20 g melted butter ·
Separate the breasts and the legs from the quail. Remove the skin and
bones from the breast. Pull out the thighs and clean the drumsticks. Now
turn the breast so that the skin side is down. Spread the dressing evenly
onto it. Cut the foie gras into slices, place one slice on each breast and put
the thigh on top of it. Spread the rest of the dressing over it and season
with salt and pepper. Wrap all of it in pork caul and brown in olive oil in a
hot pan. Add the herbs and the garlic. Roast in a preheated oven at
160° C for approx. 8 minutes with the thigh sides down. Then remove from
oven and keep warm.
Rinse pike-perch filet under flowing cold water, dab dry, rub with salt and lemon.
Asparagus salad · 12 asparagus tips, boiled · small amount of walnut oil · salt ·
freshly ground pepper ·
Asparagus salad · Marinate the asparagus tips with some walnut oil and
season with salt and pepper.
Morel-tarragon chutney · Dice the morels, brown lightly in butter with
shallots and garlic, then pour some asparagus broth onto it. Let it simmer,
thicken with cold butter and season to taste with salt, pepper and minced
tarragon.
Arrange the asparagus salad with the carved quail-foie-gras crepinette and
the morel-tarragon chutney on plates and garnish with the endive salad
and fried tarragon.
Menu Classic ART.
Saffron ice cream · 250 ml milk · 250 g whipping cream · 100 g sugar · threads of saffron · 2 eggs · 2 egg yolks ·
Olive-oil zabaglione · 4 egg yolks · 150 ml white wine · salt, pepper · 125 ml olive oil ·
1 pinch of garlic paste · 1 pinch of olive paste · 12 tomato filets · 2 sprigs of thyme ·
2 sprigs of rosemary · 3 tbsp. olive oil · salt, pepper ·
Potatoes au gratin · Peel the potatoes, wash and cut into 1-mm thick slices. With
a cutter, cut out circles about 1.5 cm in diameter, coat the pike-perch filets with the
whisked egg yolk and cover scale-like with the potato slices. Brush on the melted
butter and place in the refrigerator until the butter has solidified. Brown the filets with
the potato side down in a pan with hot clarified butter. Let them brown and then stir
in the herbs. Carefully turn the fish over and then put into the 200° C preheated oven
for 3-5 minutes. Then season the potatoes with salt and pepper.
Balsamico lentils · Soak the lentils overnight in water. Lightly brown the diced
shallots in butter and add the drained lentils. Put in the balsamico, pour in the broth
and let simmer for about 30 minutes until the lentils are cooked. Season the lentils
with salt and pepper, and then add butter to taste. If so desired, add some chopped
parsley.
Lamb carré in a vegetable-crêpe coat · Season the lamb carré with salt and
pepper and brown briefly on both sides in hot olive oil with rosemary and thyme.
For the crêpe roulade, spread the prepared pancake on a flat surface. Distribute the
prepared vegetables on it, one sort at a time, and spread with poultry dressing. Finish
up with the swiss chard leaves and roll all of it tightly into a roulade. Wrap in transparent foil and aluminium foil, press well and poach in the double boiler for approx.
10 minutes. Let cool and cut into thin slices. Now lay this out on the spread-out pork
caul, thinly brush some dressing onto it and then put the browned lamb carré onto it.
Wrap all of it well and carefully fry in hot olive oil until lightly browned. Place onto a
baking-sheet covered with aluminium foil and put into the preheated oven at 160° C
for approx. 15-20 minutes. Then remove and keep warm.
Savoy cabbage strudel · Clean the savoy cabbage and cut into fine stripes. Wash,
peel and coarsely grate the potatoes. Heat the clarified butter in a pan and brown the
potatoes in it. Add the diced shallots and briefly stir them in. Add the Savoy cabbage
and let simmer for approx. 5 minutes. Take the pan away from the heat, season with
salt, pepper and thyme. Add the cream and let cool. Spread the strudel dough onto a
flat surface and brush with the melted butter. If necessary, squeeze some of the juice
out of the filling and distribute the filling onto the strudel dough. Now roll it up and
put it on a baking-sheet covered with parchment paper. Bake the strudel in the preheated oven at 180° C for approx. 25 minutes.
Olive-oil zabaglione · Whisk the egg yolks with the white wine in the double boiler
until the mixture has thickened with foam. Season with salt and pepper. Take from the
stove, continue to whisk a little longer, slowly let the olive oil drip into it and season
to taste with garlic paste and olive paste. Carve the lamb carré, cut open the strudel
and arrange with roasted tomatoes, which have been seasoned with thyme, rosemary
and olive oil - and salt and pepper – then braised in the preheated oven at 90° C for
approx. 15 minutes. Serve with the zabaglione.

Caramelised phyllo pastry · 300 g phyllo dough · 80 g powdered sugar ·
Caramelised phyllo pastry · Roll out the phyllo dough into a square
about 3 mm thick and place on a baking sheet that has been sprinkled with
water. Weigh down with another sheet so that the dough does not rise too
much. Bake well in the oven at about 240° C (convection oven at about
200° C) and use a cutter to cut out circles of 4 cm diameter. Now sprinkle
generously with powdered sugar and let them caramelise under the grill
until they are golden yellow. When the circles have cooled off, repeat the
process from the other side.
Crème · Bring the whipping cream with the sugar and the Bourbon vanilla
seeds to a boil. Add one third of the boiling liquid to the egg yolks and stir
until smooth. Put both back into the pot, place on the stove and stir
continuously on the stove until the entire mixture thickens (should never
continue to boil!). Immediately strain mixture through a sieve into a cold
container. Dissolve the gelatine in cold water and mix in with the crème.
Allow everything to cool. Stir the cooled crème together with the lemon
juice and the orange liqueur until smooth and then mix with the whipped
cream. – To serve, place a puff-paste circle in the centre of a plate and
place the crème on top of it. Carefully press the strawberries into the
crème, add more crème on top of it and cover it with a second caramelised phyllo circle. Repeat the process and serve with marinated wild
strawberries and saffron ice cream.
Saffron ice cream · Boil milk, whipping cream, sugar and saffron. Add
one third of mixture to the egg yolks and stir until smooth. Put this mixture
back into the pot and whisk until it thickens on the stove while stirring
constantly (do not let it boil!). Immediately strain through a sieve into a
cold container and freeze in the ice-cream maker.
