Willkommen im Fabisch!
Lehnen Sie sich zurück und genießen Sie die Zeit bei uns,
während draußen das Leben tobt. Wir lieben moderne,
saisonale und frische deutsche Küche und wir verarbeiten wann immer möglich - Produkte aus der direkten Umgebung.
Deshalb passt sich unsere Karte den Jahreszeiten an, was dem
Geschmack zugute kommt und nebenher Transportwege um
die halbe Welt einspart. Dieser Philosophie folgend, beziehen
wir unser Fleisch aus artgerechter Haltung ausschließlich bei
der Neulandfleischerei „Bauch“. Frische und Qualität zählen für
Küchenchef Roman Bigalke und sein Team, dazu der Anspruch,
Altbewährtes neu zu interpretieren – Tradition mit Twist eben,
bodenständig und doch raffiniert Im Fabisch geht es natürlich
nicht nur ums Essen. Unser Barmanager Jared Goldman lässt
sich jederzeit gerne inspirieren, darum finden Sie neben modernen Klassikern auch immer wieder Exotisches auf unserer
Karte. Sorgfalt und viel Liebe zum Detail in der Zubereitung
verstehen sich von selbst. Und nicht nur bei den Cocktails
machen wir uns viel Gedanken… Gleiches gilt für unsere Weinauswahl - so kommen unsere Hausweine beispielsweise von
den heimischen Weingütern Max Müller und Thomas Hensel.

Welcome to Fabisch!
In our restaurant we want you to be relaxed and spend some
enjoyable time right in the heart of our vibrant city. We love
modern, seasonal, and fresh German cuisine and we make
sure to use products from our surrounding area wherever
possible. Therefore, our menu changes seasonally not only to
add taste to our dishes but also to save transporting ingredients half way around the world. In line with this philosophy we exclusively source organically grown meat from the
Neuland Butchers ‘Bauch’. A very important element for Head
Chef Roman Bigalke and his team is the freshness and quality
of the ingredients alongside providing guests with a new
interpretation of the tried and trusted - tradition with a twist,
down to earth yet refined. Fabisch is of course not all about
food. Our Bar Manager Jared Goldman will delightfully inspire
you any time with both modern classics and exotic creations.
The attention to detail and scrupulous care put into the preparation of our drinks is clear to see. Alongside our cocktails
we also put a lot of thought into our carefully selected wine
menu – for example, we source our house wines from the local
vineyards of Max Müller and Thomas Hensel.

Fabisch Geschichte Das Gebäude des The Circus Hotels
wurde in der zweiten Hälfte des 19. Jahrhunderts vor dem
Hintergrund des schnellen Bevölkerungswachstums der
Stadt auf dem Gartengrundstück der ehemaligen „Judenherberge“ errichtet.
Seit 1879 beherbergte das Gebäude das Herrenausstattergeschäft „Ph. Fabisch“. Dem jüdischen Kaufmann Philipp Fabisch und seiner Familie gelang es in den folgenden
Jahren, dank guten wirtschaftlichen Erfolgen, die Entwicklung des vitalsten und kreativsten Bezirks Berlins – der
Spandauer Vorstadt – mitzugestalten.
Enteignung, erzwungene Emigration und Deportation
beendeten die Geschichte der Familie Fabisch
an diesem Ort.
Wir leben und arbeiten hier im Wissen um ihr
Schicksal und im Respekt für das von ihnen
Geleistete.
The Fabisch Story Against the background of a rapid
growth in the city population, the building that now
houses the Circus Hotel was built during the second half
of the 19th Century on the grounds of the garden of the
former “Jewish Hostel”.
From 1879 the Fabisch Clothing Store for Men – “Ph.
Fabisch“ – was located on the ground floor. The Jewish
merchant Philipp Fabisch and his family found great
economic success during the following years, and actively
participated in the shaping of one of Berlin‘s most creative and vital neighbourhoods – the Spandauer Vorstadt.
Dispossession, forcible exile and deportation during the
Nazi dictatorship brought the Fabisch family story at this
address to an end.
We live and work here with the knowledge of
their fate, and in respect for their work.
