Luxurious Fairmont Hotel Vier Jahreszeiten Hamburg has become an epitome of European grandeur.
Since 1897 the elegant hotel welcomes guests from all over the world with refined style and
timeless grace at the Inner Alster Lake in the heart of Hamburg. Numerous cultural and architectural
sights, shopping facilities and the Hamburg Convention Center (CCH) are situated within close
distance. 156 luxuriously furnished guest rooms and suites combine international standards with
exquisite materials and fine fabrics, which are sequenced in different color concepts. The hotel’s
philosophy is simple: service, service and service. Friedrich Haerlin who founded the hotel in 1897 is
believed to have told his wife Thekla Toussaint: “Everything is just like as it is at our home. When we
invite guests everything is nice and tidy, the table is set, we serve good food in sufficient quantity
and we are dressed neatly; looking forward to welcome our friends. We do not do anything different
at the hotel – only the scales are a little bit larger.”
General Manager Ingo C. Peters adheres to this intuitive and caring principle: “It is our employees

HERITAGE & TRADITION
On 24 February 1897 the South-German entrepreneur Friedrich Haerlin bought the „Hotel zu den
Vier Jahreszeiten“ for 420.100 Mark at an auction. Running an own hotel had been a vision of his for
a long time. Maybe the German quote “At the age of forty one gets wise.” influenced his decision at
the auction – as it was also the day of Haerlin’s fortieth birthday.
The intention to at most spend a further 30’000 Mark on new furniture and curtains turned out
unrealistic. The city’s authorities demanded a full renovation of the estate. The hotelier of a few
hours’ standing zestfully invested another 100’000 Mark into his product – a token gesture adding
significantly to the hotel’s success.
Back then Friedrich Haerlin had no premonition of the worldwide recognition his hotel should later
receive. Nevertheless, he certainly knew what he wanted the slender house at Inner Alster Lake to
be. With typical South-German entrepreneurism within a few years he regularly welcomed members
of the international jet set as well as locals at his hotel: Celebrities from the entertainment industry,
politicians and members of the high society were amongst the regulars as were representative of the
European Royal Families and influential affiliates of the global economy.

The slender building turned into one of Hamburg’s most beautiful edifices and today seems to have
been constructed as one harmonious unit. Actually, Friedrich Haerlin as well as his son Fritz, who
took over his father’s business in 1934, has extended the original hotel steadily over many years.
Adjacent buildings were bought and walls were removed in order to accommodate more rooms and
new restaurants.
Thus, in 1912 the former reception hall, then referred to as “Gesellschaftshalle mit Alsterblick“
(Society Hall with Lakeview), was formally opened as “Wohnhalle” (The Living Room). In 1918 the
grand opening of Restaurant Haerlin followed and in 1925 the first dish was served within the
elaborate Art-déco ambience of Jahreszeiten Grill. During the early Thirties the whole building was
equipped with a copper saddle roof. It was also around this time when Café Condi and Jahreszeiten
Basement – today known as Restaurant Doc Cheng’s – were introduced next to a private garage for
modern automobiles.
In 1989 the heirs of Friedrich and Fritz Haerlin eventually sold the hotel to Japanese Aoki
Corporation. In the summer of 1997 Hotel Vier Jahreszeiten changed ownership again when the
Singaporean hotel chain Raffles International Hotels & Resorts took over and the hotel was named
Raffles Hotel Vier Jahreszeiten Hamburg. In 2006 Colony Capital as the owner of Raffles
International Hotels & Resorts announced their cooperation with Kingdom Hotels International in
taking over the Canadian hotel chain Fairmont Hotels & Resorts. Finally, on 30 April 2007 Raffles
Hotel Vier Jahreszeiten Hamburg was rebranded as Fairmont Hotel Vier Jahreszeiten Hamburg.
Six years later the white building at Inner Alster Lake is sold by Fairmont Hotels & Resorts to Dohle
Vermögensverwaltung while the management contract remains unchanged. Entrepreneur Kurt Dohle
as the new proprietor commands full renovations of all 156 guest rooms and suites as well as of
Restaurant Haerlin, Café Condi, Wohnhalle and Vier Jahreszeiten Spa & Fitness. Another glamorous
chapter in the history of Hotel Vier Jahreszeiten Hamburg has begun.

THE HOST
Ingo C. Peters has been General Manager of this Hamburg landmark
hotel since October 1997. Born and raised in the Hanseatic city of
Hamburg, he graduated high school here and started his career in the
hospitality industry back in 1982 when he joined Hotel Vier
Jahreszeiten Hamburg for the first time – as apprentice. Later, Ingo C.
Peters continued his education when he went to study hospitality
management at renowned Cornell University in Ithaca, New York.
Before returning to Hamburg, Ingo C. Peters was active within the
Mandarin Oriental Hotel Group as General Manager first at Mandarin
Oriental Phuket Yacht Club in Thailand and later at Mandarin Oriental
Jakarta in Indonesia. Previously, he had opened the Ritz-Carlton Philadelphia as Deputy General
Manager for the Ritz-Carlton Hotel Company before he was offered the same position with FiveStar/Five-Diamond Hotel Ritz-Carlton Laguna Niguel, California. Preceding his time with the RitzCarlton Hotel Company, Ingo C. Peters had gathered practical experiences at The Westin Hotel in
Boston, Massachusetts, as well as at The Berkley Hotel in London, United Kingdom.

Recently, all guest rooms and suites have been thoughtfully renovated with great attention to detail,
designed to meet the highest and most demanding standards. The traditional Hamburg landmark

Kids under the age of 11 stay in their parents’ room for free (up to one child). For adolescents
between 13 and 18 years of age, a roll-in bed is provided for EUR 80 per night and including
breakfast. Babies and kids receive special welcome amenities, such as bathrobes, stuffed animals,

RESTAURANT HAERLIN & THE CHEF’S TABLE
Named after hotel founder Friedrich Haerlin, the hotel’s first restaurant has been repeatedly
recognized with two Michelin Stars and 19 Gault-Millau Points. Also 4½ F (Der Feinschmecker) and
the titles German Restaurant of the Year 2014 (Der Feinschmecker), Hamburg’s Best Chef 2014
(Great Gourmet Prize Hamburg) and Chef of the Year 2015 (Gault-Millau), Gourmet Restaurant
Haerlin have added to the restaurants great reputation far beyond the city of Hamburg.

Real highlights for oenophiles are the built-in wine closet made of glass and polished brass, which
contains precious liquids and rarities as well as the associated Sommelier’s high table. The Four
Seasons are represented in form of four Nymphenburg porcelain statuettes from 1919.
The adjacent Haerlin Salon lends itself as séparée for private dinner, informal meetings or cocktail
receptions. One floor below, right in the center of the redesigned event kitchens, the Chef’s Table
accommodates up to eight guests who may enjoy a champagne aperitif or even a full gourmet dinner
while watching the Haerlin chefs at work.
Right in the center of the newly designed kitchen event space, up to eight guests have the
opportunity to watch Christoph Rüffer and his team at work behind the scenes of Restaurant Haerlin
at Fairmont Hotel Vier Jahreszeiten. The twist: Not as commonly placed in front of the kitchen close
to the entrance to the restaurant, the Chef’s Table is set up in a separate semi-transparent room
amidst the working stations. Large sliding windows give view to the kitchen operations and allow for
direct interaction with the Haerlin team.

DOC CHENG’S® BAR
The Doc Cheng's® Bar has 30 seats and is part of Restaurant Doc Cheng's®. Exotic cocktails on a
sake-basis are served as well as classic long drinks and Japanese Whisky. Additionally, a variety of
international beers and wines from all around the world can be found on the menu. The atmosphere
and fixtures are reminiscent of the foregone times of 1920’s Shanghai. Numerous black and white
photographs from Doc Cheng's own Asian and European travels decorate the paneled walls. Brass
lamps with red fabric shades cast warm light, producing a comfortable atmosphere between the
palm trees, allowing guests to relax in the lush lounge area.

CAFÉ CONDI
“Once we would go to visit the Condi on Sundays” – many locals recollect their first memories of
Hotel Vier Jahreszeiten fondly. After an extensive walk around Alster Lake or a stroll through the
inner city’s elegant shopping passages, one met at Café Condi for a cozy chat over a good cup of
coffee. Sitting on the so-called “hayloft” – which previously allowed traveling horses the pleasure to
experience the hospitality at Hotel Vier Jahreszeiten – one would blink at the sparkling water of Inner
Alster Lake. The air was sweet with the scent of fresh coffee and one’s heart would skip a beat when
the Condi Ladies, dressed in starched white aprons and small bonnets, set down artful cakes and
gateaux on the table.
By opening “Café Condi“ in 1934, Fritz Haerlin, who had just taken over his father’s business,
succeeded in reviving the époque of Biedermeier style. The various objects of art, chandeliers and
lamps are all originals dating back to the year 1830. They have been carefully refurbished to match
the new interior design and they still embellish Café Condi today. The ambience is reminiscent of
sunlight caught by the purling water of the Inner Alster Lake. It makes waking up a pleasantly
sensual experience. Fresh egg dishes are prepared in front of the guests and according to their
choice – naturally and solely by using produce complying to the highest organic standards of their
respective category.

WOHNHALLE
The traditional lobby lounge Wohnhalle is often referred to as "Hamburg's Salon". With its original

Since 2002 the gourmet menus at Restaurant Haerlin bear the signature of Head Chef Christoph
Rüffer. The focus is set on visionary compositions which distinguish themselves by fresh, mostly

At age 42, Christoph Rüffer looks back on a
successful career and has established himself as
integral part of the German culinary scene. He
learned classic haute cuisine at restaurant Le
Gourmet in Munich (1 Michelin star by then) and
deepened his knowledge under the guidance of
Henri Bach at Hotel Résidence in Essen (2
Michelin stars) as well as with Claus-Peter Lumpp
in the Hotel Bareiss in Baiersbronn (3 Michelin
stars). Still in Baiersbronn, Rüffer gained more experience at Harald Wohlfahrt’s restaurant Traube
Tonbach (3 Michelin stars).

What are your goals for 2016? Developing new, flavorful dishes.
What is your secret favorite dish?
Creamed soup of maroons with smoked eel; seared vegetable with coco sauce
What was your biggest success in the kitchen? There is no such thing as one biggest success. The
daily work with my team where many friendships have started feels like my biggest success.
What was your biggest faux pas? I really once did confuse sugar with salt.

SPECIAL EVENT-LOCATION: THE KITCHENS
Carefully designed and with real passion for details, the kitchens at Fairmont Hotel Vier Jahreszeiten
present themselves as unique and exciting back-of-the-house event location. Cocktail receptions for
up to 15 persons can be accommodated by the Grill kitchen, which like the restaurant features
decorative elements of Art-déco. The Butchery is furnished as cozy hunting lodge with a high table for
up to 12 guests. A live band can be booked and the working stations may be wheeled out to make
room for banquettes with up to 50 guests. Themed decorations, such as horn lampshades, a
traditional Schwarzwälder Kuckucksuhr or a little burbling fountain are just some examples of for
The Butchery’s set-up, which is quite different to a regular hotel kitchen. Likewise, through the open
curtains guests can watch the chefs at work in the neighboring pastry kitchen.
The Pâtisserie itself is designed in memory of the opulence at the historic court of Versailles back in
the days of the extravagant French king Louis XIV. Chandeliers are sparkling between wrought-iron
ovens, floral tapestries and playful decorations. The possibilities for events are plenty. Whether a
private celebration, a client event or a company festivity – the individual kitchen party can be
